    Partendo dal concetto di coesistenza rappresentato da Giulia Capasso negli scatti del suo lavoro "COEXISTENCE. La botanica dei corpi", l'articolo insiste sul potere che hanno le immagini d mettere in forma e comunicare pensiero critico più di mille parole. L’importanza educativa del reportage di Capasso consiste nel mettere in evidenza, attraverso l’analogia formale, il legame tra nature, culture e architetture diverse all’interno di uno stesso ambiente, nella fattispecie Palermo, che diviene modello storico-geografico e antropologico particolare al quale guardare per pensare alla coesistenza come a una realtà presente e possibile a livello universale. L'insegnamento che se ne trae è di natura formale, dialettica e antropologica tale da porre bene in evidenza come solo la mutua dipendenza, la tolleranza e, quindi, la coesistenza possono essere basi solide per una società più umana

    Clusters as actors of change in the SMCs: economic, institutional infrastructures and industrial policy strategies

    This chapter aims at providing an in-depth analysis of the policy issues related to the process of cluster formation and performance in seven selected SMC: Algeria, Egypt, Jordan, Lebanon, Morocco, Palestine and Tunisia. We propose a review study of cluster development and policies, which focuses on the analysis of the institutional infrastructure and the policy framework at country level. An overall assessment will be proposed on the systemic factors that are responsible for the level of cluster agglomeration and performance in the various countries. Particular emphasis will be placed on the constraints that prevent the establishment of clusters and retard the innovation process, the role of different economic agents and institutions, as well as policy options to foster innovation and growth and to enhance the firms’ performances and their competitiveness. This type of comparative analysis to our knowledge has never been proposed for the SMC. We focus on two key issues: the first concerns two direct mechanisms of transmission: Innovation and competitiveness. This allows an evaluation of the clusters policies to enhance capacity building and networking activities, the level of internationalisation of clusters, the connection of clusters organisations with key actors. The second regards the environment framework/indirect mechanisms: promoting infrastructure and favorable business environment, simplification of administrative procedure, fiscal and legal frameworks

    Antioxidant Activity of Beef, Pork and Chicken Burgers before and after Cooking and after In Vitro Intestinal Digestion

    The aim of the present work was to evaluate and compare in vitro the antioxidant activity of raw, cooked and cooked–digested pork, beef and chicken burgers. The cooking process influenced the antioxidant capacity of the meat by decreasing the values of ABTS, FRAP and the content of free thiols. Conversely, a positive effect was observed after in vitro gastrointestinal digestion which increased the biological activity of the meat, characterised by greater antioxidant activity. The type of meat influenced the chemical composition and biological capacity of the burgers. In fact, both before and after the cooking process, beef burgers showed higher thiol content and, consequently, a higher oxidative stability of proteins than chicken and pork burgers. In vitro gastrointestinal digestion also improved the nutraceutical quality of beef burgers, which showed higher ABTS values and thiol content than pork burgers, which showed higher FRAP values. This work aims to support the potential of meat constituents as a natural antioxidant component that is essential to counteract the oxidative stress responsible for imbalances in the human organism and several cardiovascular diseases

    Chemical and Functional Characterization of Propolis Collected from Different Areas of South Italy

    This study investigated the chemical and functional characterization of propolis collected in southern Italy, in particular in Basilicata, a region rich in ecological and vegetative biodiversity. Sixteen samples of propolis, collected within a radius of 40 km from each other in the Basilicata region, showed significant differences between the chemical and functional parameters investigated: color index (L*, a*, b*; p < 0.05) and variation in chemical composition and antioxidant activities by ABTS and FRAP assays. In general, Lucanian propolis had a low content of waxes (p < 0.05) and a high content of resin (p < 0.05) and balsams (p < 0.05). The content of the total phenolic compounds and flavonoids was highly variable, as was the biological capacity. In conclusion, Lucanian propolis showed remarkable variability, highlighting significant diversification according to the geographical position and the diversity of the flora surrounding the apiary that the bees use as a source of resin. This study, therefore, contributes to the enhancement of the quality of propolis, laying the foundations for the production and marketing of propolis not only in the food industry but also in the pharmaceutical and cosmetic industries

    L’autore ricostruisce il metodo di lavoro di due storici, Bartolommeo Capasso (1815-1900), uno dei fondatori della Società Napoletana di Storia patria, e Luigi Volpicella iunior (1864-1949), attraverso le loro carte, custodite dalla Società, contenenti appunti e spogli delle fonti primarie e della bibliografia. Verrà evidenziato il legame tra il modo con cui Capasso classificava le informazioni e il metodo umanistico dei notabilia. Per Volpicella ci si soffermerà sulle carte geografiche che predispose come atti preparatori dei profili biografici da lui pubblicati a corredo di un’edizione documentaria. The author reconstructs the working method of two historians, Bartolommeo Capasso (1815-1900), one of the founders of the Società Napoletana di Storia patria, and Luigi Volpicella junior (1864-1949), through their papers preserved by the Società. These documents contain notes and extracts from primary sources and bibliography. The connection between Capasso’s information management and the humanistic method of notabilia is highlighted. As for Volpicella, emphasis is placed on the geographical maps he produced as preparatory acts for the biographical profiles he published in a documentary edition
