Meer kalium nodig in de Nederlandse voeding
Hypertensie is één van de aandachtsgebieden van dr. Marianne Geleijnse, universitair docent en onderzoeker bij de afdeling Humane Voeding van de Wageningen Universiteit. Geleijnse vindt dat er vaak te lichtvoetig wordt omgegaan met een verhoogde bloeddruk: `Hypertensie wordt wel behandeld met leefstijladviezen en medicatie. Maar een kwart van de Nederlanders heeft pre-hypertensie, met een bovendruk tussen de 120 en 140 mmHg. Meestal krijgen zij geen leefstijladviezen van de huisarts. En dat terwijl met de juiste maatregelen de bloeddruk met wel 20 mmHg kan dalen. En daarmee komt deze grote groep precies weer in de ¿veilige¿ zone.¿ Geleijnse benadrukt het positieve effect van kalium in de voeding. `De gemiddelde Nederlandse voeding bevat 3,5 gram kalium. In het bekende DASH dieet is dat ongeveer 4,5 gram, net zoals in het mediterrane voedingspatroon. En natuurvolkeren zoals indianen in het Amazonegebied eten wel 8 à 10 gram per dag! Een kaliumrijke voeding verlaagt de bloeddruk. Een verhoogde inname is goed te realiseren door een gezonde voeding, met veel groenten, fruit, aardappelen.¿ Ook minder natrium is belangrijk, aldus Geleijnse: `Het huidige streven is 6 gram zout per dag en dat moet haalbaar zijn. Het is onzin dat zout nog wordt gebruikt als conserveermiddel, we hebben toch koelkasten tegenwoordig? En ik bestrijd ook dat zout zo¿n belangrijke smaakmaker is. Met minder zout komt de pure smaak van de ingrediënten beter tot zijn recht. Zout is geen smaakmaker, het is vaak een camouflage van slechte smaak. Driekwart van alle zoutconsumptie komt uit industrieel bereide producten. De voedingsindustrie ontplooit weliswaar initiatieven om het zoutgehalte van producten te verlagen, maar er valt nog veel te verbeteren.

Whose story is it anyway? The ethics of narration and the narration of ethics in Summertime and Die Sneeuslaper
Includes bibliographical references.This dissertation analyses and compares the narrative strategies in J.M. Coetzee’s Summertime and Marlene van Niekerk’s Die sneeuslaper and considers the implications of these strategies for the authors’ exploration of the ethics of writing. Much has been written about the literary oeuvres of both Coetzee and Van Niekerk, including studies of the translations of Van Niekerk’s Afrikaans novels into English. There are few “interlingual” comparative studies of contemporary works in Afrikaans and English, however, and certainly none to my knowledge which compares the work of Coetzee and Van Niekerk. My contribution to the conversation about Coetzee’s and Van Niekerk’s work, but also to an increasingly multilingual and interconnected South African literary criticism, will be a comparison of one recent work by each of these two authors, written in English and Afrikaans respectively. I draw on the theories of Bakhtin, Barthes and Levinas to consider the ethical dimension of texts in which “double-voicedness”, a questioning not only of existence, but of the self is fore grounded in the content and narrative structure; where there is a shift in focus from the author to the reader (“the birth of the reader”) and “utterances” are made with the response of “the other” in mind
Habitual coffee consumption and blood pressure: An epidemiological perspective
This paper summarizes the current epidemiological evidence on coffee consumption in relation to blood pressure (BP) and risk of hypertension. Data from crosssectional studies suggest an inverse linear or U-shaped association of habitual coffee use with BP in different populations. Prospective studies suggest a protective effect of high coffee intake (4 or more cups per day) against hypertension, mainly in women. Furthermore, the risk of hypertension may be lower in coffee abstainers. Randomized controlled trials, which are mostly of short duration (1¿12 weeks), have shown that coffee intake around 5 cups per day causes a small elevation in BP (~2/1 mmHg) when compared to abstinence or use of decaffeinated coffee. With regard to underlying biological mechanisms, most research has been devoted to BP-raising effects of caffeine. However, there are many other substances in coffee, such as polyphenols, soluble fi bre and potassium, which could exert a beneficial effect in the cardiovascular system. Although the precise nature of the relation between coffee and BP is still unclear, most evidence suggests that regular intake of caffeinated coffee does not increase the risk of hypertensio
"The day of the great writer is gone for ever": Author surrogacy in Martin Amis’s Money and J.M. Coetzee’s Summertime.
This study focuses on the use of author surrogacy in the novels Money: A Suicide Note by Martin Amis and Summertime: Scenes from Provincial Life by J.M. Coetzee. It addresses the connection between their use of author surrogacy and their comments on what scholars classify as the postmodern cultural condition. Both authors have written themselves into their novels with a different purpose but both used strikingly similar themes to incorporate this purpose, although the stress on these themes varies. Authorial power, the distinction between the real and the imagined, and the fading line between high- and lowbrow culture are examples of the topics discussed in this study with regards to author surrogacy and the postmodern cultural condition. This study concludes that, through their use of author surrogacy, J.M. Coetzee mainly aims to critique, while Martin Amis satirises postmodern culture.
