    Impact of saccharides on the drying kinetics of agarose gels measured by in-situ interferometry

    Agarose gels are viscoelastic soft solids that display a porous microstructure filled with water at 90% w/w or more. Despite an extensive use in food industry and microbiology, little is known about the drying kinetics of such squishy solids, which suffers from a lack of time-resolved local measurements. Moreover, only scattered empirical observations are available on the role of the gel composition on the drying kinetics. Here we study by in-situ interferometry the drying of agarose gels of various compositions cast in Petri dishes. The gel thinning is associated with the displacement of interference fringes that are analyzed using an efficient spatiotemporal filtering method, which allows us to assess local thinning rates as low as 10 nm/s with high accuracy. The gel thinning rate measured at the center of the dish appears as a robust observable to quantify the role of additives on the gel drying kinetics and compare the drying speed of agarose gels loaded with various non-gelling saccharides of increasing molecular weights. Our work shows that saccharides systematically decrease the agarose gel thinning rate up to a factor two, and exemplifies interferometry as a powerful tool to quantify the impact of additives on the drying kinetics of polymer gels

    Nonlinear Viscoelasticity and Generalized Failure Criterion for Polymer Gels

    Polymer gels behave as soft viscoelastic solids and exhibit a generic nonlinear mechanical response characterized by pronounced stiffening prior to irreversible failure, most often through macroscopic fractures. Here, we describe this scenario for a model protein gel using an integral constitutive equation built upon the linear and the nonlinear viscoelastic properties of the gel. We show that this formalism predicts quantitatively the gel mechanical response in shear start-up experiments, up to the onset of macroscopic failure. Moreover, we couple the computed stress response with Bailey's durability criterion for brittle solids in order to predict the critical values of the stress σc and strain γc at failure. The excellent agreement between theory and experiments suggests that failure in this soft viscoelastic gel is a Markovian process and that Bailey's failure criterion extends beyond hard materials such as metals, glasses, or minerals.MIT-France Seed FundCentre National de la Recherche Scientifique (France) (PICS-USA Scheme 36939

    Les dispersions à base de colloïdes et de polymères permettent la conception de nombreux matériaux notamment pour le stockage d’énergie. Cette thèse concerne les dispersions aqueuses de particules de suie hydrophobes, du noir de carbone (CB), à l’aide d’un sel de sodium de carboxyméthylcellulose (CMC). La CMC est un polymère chargé, semi-flexible et hydrosoluble qui présente des régions hydrophobes le long de sa chaîne et forme ainsi des liaisons physiques avec les particules de CB. Nous montrons qu’il est possible de former des hydrogels de CB-CMC, c’est-à-dire des solides viscoélastiques sur une large gamme de concentrations en CB et en CMC. Ces hydrogels présentent deux types de comportements radicalement différents de part et d’autre d’un ratio massique critique entre CMC et CB. En-deçà de ce ratio critique, les colloïdes de CB forment un réseau percolé stabilisé par la CMC, alors qu’au-delà de ce ratio, les colloïdes de CB servent de réticulants physiques dans la matrice de CMC. Nous rapportons ici une image détaillée de ces deux types de structures par le biais de mesures rhéologiques linéaires et non-linéaires, couplées à des mesures diélectriques et structurales (diffusion de rayons X).Enfin, pour élucider le rôle singulier de la CMC dans les hydrogels CB-CMC, nous avons étudié un système complémentaire constitué de suspensions acidifiées de CMC qui gélifient du fait d’interactions hydrophobes. Ces études mettent à profit deux techniques complémentaires, la relaxométrie et la diffusion de neutron, qui offrent un éclairage original sur le rôle du polymère au sein de ces gels composites.Dispersions based on colloids and polymers enable the design of numerous materials, particularly for energy storage. This thesis concerns aqueous dispersions of hydrophobic soot particles, carbon black (CB), using a sodium salt of carboxymethylcellulose (CMC). CMC is a charged, semi-flexible, water-soluble polymer with hydrophobic regions along its chain, forming physical bonds with the CB particles. We show that it is possible to form CB-CMC hydrogels, i.e., viscoelastic solids over a wide range of CB and CMC concentrations. These hydrogels exhibit two radically different types of behavior on either side of a critical mass ratio between CMC and CB. Below this critical ratio, CB colloids form a percolated network stabilized by CMC, whereas, above this ratio, CB colloids act as physical cross-linkers in the CMC matrix. We report here a detailed picture of these two types of structures through linear and non-linear rheological measurements, coupled with dielectric and structural (X-ray scattering) measurements.Finally, to elucidate the singular role of CMC within CB-CMC hydrogels, we studied a complementary system consisting of acidified suspensions of CMC that form a gel due to hydrophobic interactions. These studies make use of two complementary techniques, relaxometry and neutron scattering, to shed new light on the role of the polymer within these composite gels

    Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed.     “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship

    This manuscript gathers experimental results of three different experiments, all involving quasistatic flows of complex fluids. A first experiment tackles the creep motion of a granular pile induced by thermal cycling. We report a time-resolved study of the dynamics associated with the slow compaction of a granular column submitted to thermal cycles. The column height displays a non trivial behavior: for a large amplitude of the temperature cycles, the granular column settles continuously, experiencing a small settling at each cycle; By contrast, for small-enough amplitude, the column exhibits a discontinuous and intermittent activity: successive collapses are separated by quiescent periods whose duration is exponentially distributed. Interpretations involving the relative thermal expansion of the container and previously proposed by others, are ruled out by our results. A plausible scenario for the compaction is given: the grains are subjected to a periodic vertical-shear due to the imposed radial thermal-gradient, which induces local rearrangements, and, accidentally, internal avalanches. The finite-temperature transition observed is a finite-size effect which involves the grains surface properties (roughness). The role of the frequency of the cycles of temperature is also qualitatively discussed. A second experiment focuses on a plane shear flow of an immersed slurry. We bring to the fore a large set of experimental results which indicate that, over a few decades of values, the effective dynamical friction coefficient depends neither on the viscosity of the interstitial fluid nor on the size of beads in the sheared layer, which bears out the analogy with the solid-solid friction in a wide range of experimental parameters.We also discuss our results in the frame of the Inertial parameter and demonstrate that this number might not be relevant to describe immersed granular flows, in the quasi-static limit. Finally, in a third experiment, We report an experimental study of the intermittent dynamics of a gas flowing through a column of a non-Newtonian fluid. In a given range of the imposed constant flow rate, the system spontaneously alternates between two regimes: bubbles emitted at the bottom either rise independently one from the other or merge to create a winding flue which then connects the bottom air entrance to the free surface. The observations are reminiscent of the spontaneous changes in the degassing regime observed on volcanoes and suggest that, in the nature, such a phenomenon is likely to be governed by the non-Newtonian properties of the magma. We focus on the statistical distribution of the lifespans of the bubbling and flue regimes in the intermittent steady state. The bubbling regime exhibits a characteristic time whereas, interestingly, the flue lifespan displays a decaying power-law distribution. The associated exponent, which is significantly smaller than the value 1.5 often reported experimentally and predicted in some standard intermittency scenarios, depends on the fluid properties and can be interpreted as the ratio of two characteristic times of the system.Cette thèse, de nature expérimentale, porte sur l'étude des écoulements de matériaux mous vitreux. L'expérience consiste à injecter de l'air à la base d'une colonne d'un fluide non-newtonien. Nous montrons que le gaz peut être relâche au travers du fluide soit sous forme de bulles, soit sous forme d'un canal connectant la buse émettrice de gaz au bas de la colonne à la surface libre du fluide. On observe que dans certaines conditions, le système oscille spontanément entre ces deux états. L'intermittence entre ces deux modes de dégazage est relié à la rhéologie non-linéaire du fluide et nous prenons le temps d'une mise en perspective de ces résultats dans le contexte de la géophysique

    Appropriate Similarity Measures for Author Cocitation Analysis

    We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.     Identification and study of boehmite paste kneading descriptors for the design of new solids

    Le contrôle des propriétés mécaniques et texturales des supports de catalyseurs hétérogènes est essentiel pour la conception de matériaux catalytiques innovants et efficaces. En particulier, la microstructure poreuse du support affecte fortement le transport de masse et la résistance mécanique. Industriellement, la fabrication de supports en alumine peut être mise en œuvre par un procédé de malaxage-extrusion, qui vise à passer d’une poudre de précurseur aluminique (la boehmite) à des objets micrométriques (taille finale du support). Ce procédé permet également d'optimiser les propriétés mécaniques et texturales du support en jouant sur les conditions opératoires de chacune des opérations unitaires. Le but de cette thèse est d’abord de caractériser l’influence du malaxage sur les propriétés des pâtes de boehmite. En particulier, les effets de la vitesse et de la durée de malaxage, ainsi que celui de la composition des pâtes, sont quantifiés sur leurs propriétés mécaniques et texturales des pâtes de boehmite. Cette étude expérimentale, réalisée sur un malaxeur pilote, a permis d’identifier deux paramètres de contrôle des propriétés analysées : le pH des pâtes et la déformation cumulée, équivalente au nombre de tours appliqués pendant le malaxage. Ensuite, une modélisation des pâtes de boehmite a été élaborée grâce à une méthode par éléments discrets, afin de représenter leur microstructure (difficile à caractériser expérimentalement) et de simuler leur comportement mécanique. Dans ce modèle, les pâtes sont représentées comme des empilements de sphères dures polydisperses, et les propriétés mécaniques dépendent de paramètres numériques élastiques et visqueux. Ces derniers, tout comme la taille des sphères, ont été ajustés itérativement pour reproduire au mieux les caractérisations expérimentales.Controlling the mechanical and textural properties of heterogeneous catalyst supports is essential for the design of innovative and efficient catalytic materials. In particular, the porous microstructure of the support strongly affects mass transport and mechanical strength. Industrially, alumina supports are manufactured using a knead-extrusion process, which aims to go from an alumina precursor powder (boehmite) to micrometric objects (the final size of the support). This process also enables the mechanical and textural properties of the substrate to be optimized by adjusting the operating conditions for each of the unit operations. The aim of this thesis is to characterize the influence of mixing on the properties of boehmite pastes. In particular, the effects of mixing speed and duration, as well as paste composition, are quantified on the mechanical and textural properties of boehmite pastes. This experimental study, carried out on a pilot mixer, identified two parameters controlling the properties analyzed: paste pH and cumulative deformation, equivalent to the number of revolutions applied during kneading. Then, a discrete-element model of boehmite pastes was developed to represent their microstructure (difficult to characterize experimentally) and simulate their mechanical behavior. In this model, pastes are represented as stacks of polydisperse hard spheres, and mechanical properties depend on numerical elastic and viscous parameters. The latter, like the size of the spheres, have been iteratively adjusted to reproduce experimental characterizations as closely as possible
