Viaggi enogastronomici e sostenibilità
No full textIl 2017 è stato l’anno del turismo sostenibile e il 2018 è l’anno dedicato al cibo italiano: partendo da queste sollecitazioni gli undici saggi che compongono il volume costituiscono un’occasione importante per riflettere scientificamente sul nesso che lega il viaggio enogastronomico alla sostenibilità; si tratta di un binomio che sempre di più appare centrale, a livello nazionale e globale, nella costruzione di innovative filiere turistiche.
Gli autori offrono un articolato corpus di dati scientifici, riflessioni teorico-metodologiche, analisi di buone pratiche, delineando anche suggerimenti e proposte operative, per cercare di dare delle risposte ad alcune delle problematiche irrisolte del nostro turismo enogastronomico.
Il volume mette in relazione il turismo con la dimensione gastronomica, descrivendo una realtà dinamica oggi in forte crescita e sviluppo; a fianco di eccellenze territoriali e di best practice, vi sono però ambiti e contesti che, seppur ricchi di patrimoni enogastronomici, mostrano una maggiore difficoltà a essere valorizzati, soprattutto a causa di una scarsa volontà e capacità di costruire reti e relazioni sovralocali. Il libro analizza luci e ombre del viaggio enogastronomico, tentando di offrire uno sguardo articolato e aggiornato su una molteplicità di aspetti e situazioni che caratterizzano il turismo nel nostro Paese: una serie di riflessioni che gli autori propongono, quale fattivo contributo di analisi critica e dibattito, a quanti, a vario titolo, studiosi e operatori del settore in primis, sono interessati a comprendere cosa accade realmente nell’appassionante e variegato mondo del turismo enogastronomico.
Un libro quindi che unisce teoria e pratica, indagine di campo e riflessione critica e che può diventare un utile strumento di comprensione del fenomeno
Quando il cibo si fa benessere Alimentazione e qualità della vita
No full textQuesto volume vuole essere un’occasione di riflessione scientifica sui molteplici fili che legano il cibo e l’alimentazione al benessere e alla qualità della vita. Vi concorrono una pluralità di ricerche condotte in ambito sociologico, antropologico e medico che, nell’insieme, contribuiscono a delineare quanto il cibo sia uno degli elementi che oggi maggiormente incide nel definire la qualità della vita di individui e comunità. Nel corso dell’ultimo decennio, gli studi sulla qualità della vita, da un lato, e il complesso delle scienze gastronomiche, dall’altro, hanno conosciuto in Italia un notevole sviluppo, ma ancora mancavano studi finalizzati a investigare in maniera approfondita il rapporto che lega tra loro i due ambiti disciplinari.
I saggi che compongono il libro costituiscono una serie di riflessioni teoriche e metodologiche, unite ad alcune significative esperienze di ricerca sul campo, che contribuiscono, nel loro insieme, a restituire al lettore un quadro aggiornato di come il cibo e le pratiche alimentari siano intimamente legate al benessere sociale, alla qualità della vita e alla sua percezione nella complessa società del tempo presente. Una pluralità di punti di vista, certamente non esaustivi, ma comunque rappresentativi della complessità delle tematiche su cui scienziati sociali e gastronomi sono chiamati a riflettere ed intervenire. Disturbi del comportamento alimentare, stili di vita in profonda e rapida trasformazione, sostenibilità delle scelte nell’ambito del cibo sono solo alcuni dei temi affrontati dal libro e che fanno intendere quanto approfondire la comprensione del nesso che lega cibo e qualità della vita non sia un inefficace esercizio accademico, ma un fattivo contributo interpretativo per l’oggi e il domani
Going Beyond Counting First Authors in Author Co-citation Analysis
Full text linkThe present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation
counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed
Variations on the Author
Full text link“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
Blended divergences: local food and medicinal plant uses among Arbëreshë, Occitans, and autochthonous Calabrians living in Calabria, Southern Italy
Full text linkA study focusing on traditional uses of wild plants for gastronomic and medicinal purposes was carried out among three linguistic communities in Calabria, southern Italy. Ninety interviews with local elderly informants were conducted among Occitans and Arbëreshë, two linguistic minorities, and the dominant culture of autochthonous Calabrians. We recorded 85 taxa belonging to 39 botanical families and 66 different detailed use-reports including 35 culinary and 31 medicinal uses. Our overall data show the permanence of traditional ecological knowledge related to wild and semi-domesticated food and medicinal plants; however, high similarity indices among the three communities demonstrate that traditional ecological knowledge is following the pathway of homogenization and standardization toward the dominant culture, facilitated by a context of linguistic erosion, limited intergenerational transmission, and a centuries-old diffusion with Calabrian culture. Moreover, our study calls for further field surveys in isolated areas of Calabria to analyze how traditional ecological practices can be key tools in the development of local small-scale economies through the promotion of artisanal food entrepreneurship of wild food plant transformation
Appropriate Similarity Measures for Author Cocitation Analysis
Full text linkWe provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature. Dispelling the Myths Behind First-author Citation Counts
Full text linkWe conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued
use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation
counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases.
