    Food health branding : the role of marketing mix elements and public discourse in conveying a healthy brand image

    The soaring rates of dietary-related diseases have increased the need for interventions in consumers' healthy eating behaviour. The two main avenues followed so far have focused on either making consumers change their food choices or improving the nutrition content of food products. Both avenues are said to have limitations since consumers often base their choices on heuristics that simplify their choices, such as brands. Therefore, branding is considered an important tool in communicating the value of health and contributing towards healthier food choices. However, branding a food product based on the value of health is not an easy practice as strategies employed may often fail to convey the value of health. Based on a case study approach drawn from the Danish food industry, this paper has two objectives: (1) to provide a line of insight on how marketing mix elements are used to convey a healthy brand image; and (2) to explore how brands that are positioned as healthy are dealt with in the public discourse.

    Les entreprises investissent de larges sommes dans la fidélisation de leur clientèle. La raison en est simple : les clients fidèles font partie des plus profitables pour les entreprises. Il est donc essentiel de comprendre ce qui amène les consommateurs à être fidèles. La recherche a ainsi considérablement étudié les antécédents de la fidélité à la marque. Ceux-ci peuvent être divisés en trois classes : les antécédents liés à la catégorie de produit, ceux liés au marketing mix du produit et ceux liés au consommateur. Cependant, et malgré l’intérêt des chercheurs pour ces questions, une étude plus approfondie est nécessaire du fait de la mutation des marchés ces dernières décennies. Un des changements les plus marquants est le développement des marques de niche. Le but de cette thèse est ainsi de mieux comprendre ce qui amène les consommateurs à être fidèle à la lumière de ces marques de niche. Nous étudions plus particulièrement les marques bio et de distributeur. Cette thèse comporte quatre études, chacune s’intéressant à une classe particulière d’antécédents. Nos résultats nous permettent, tout d’abord, de réexaminer l’effet de certains antécédents grâce à des données de panel récentes. Ils nous donnent ensuite des indications sur les effets des marques de niche sur la fidélité à la marque. Plus précisément, ils démontrent que le développement des marques de niche a un effet sur la fidélité à un niveau agrégé. De la même façon, on observe un effet modérateur du type de marques de niche sur l’effet de certains antécédents. Nous discutons les implications théoriques, méthodologiques et managériales de ces résultats.Firms invest heavily in building and maintaining relationships with their customers. This is due to loyal customers being among the most profitable ones for firms. It is thus essential for managers and researchers to understand what drives customers to become loyal. Researchers have investigated brand loyalty antecedents at great length. These antecedents can be divided in three classes: product category, marketing mix and customer-related ones. Despite the large body of research on these antecedents, an update is necessary as markets have been changing in the last decades. One of the major changes has been the apparition and proliferation of niche brands (such as organic and private label brands) that are positioned to serve segments of consumers with specific needs. The aim of this Ph.D. research is to fill these gaps and get a better understanding of what influences brand loyalty in the light of niche brands’ development. We specifically focus on two types of niche brands: organic and private label brands. This Ph.D. research is comprised of four studies, each one investigating one class of antecedents. Our results first enable us to reassess the effect of certain antecedents of brand loyalty using recent panel purchase data. It also gives us some insights on the role of niche brands. It shows that the proliferation of niche brands and more specifically the proliferation of private label brands has an effect on brand loyalty at an aggregate level. In the same way, niche brands have a moderating effect on the impact of some antecedents of brand loyalty. Theoretical, methodological and managerial implications of these findings are discussed

    An exploration of loyalty determinants in Greek wine varieties

    Purpose: This paper aims to provide a deeper understanding of the market structure of red and white wines from Greek wine varieties and measure loyalty behaviour of frequent wine buyers in Greece. Design/methodology: The study concerned measuring brand performance and loyalty of 4 different Greek wine varieties. Based on stated preference data, basic brand performance measures are estimated through Juster purchase probabilities of brand choice. To measure loyalty behaviour, the polarisation index φ (phi) is used as a measure to model loyalty both at the brand name and specific wine attributes and attribute-levels. Findings: The findings of the present study point to the conclusion that each one of the four Greek wine varieties under examination exhibits its own market structure and loyalty profile, whereas price, quality certification and winemaker’s size seem to function as loyalty stimulators more effectively for white wines. Moreover, it is also clear that the origin or type of the wine variety per se does not constitute a particularly important loyalty component in the wines’ marketing mix. Research limitations/implications: The wine category has always been one of the most challenging product categories to investigate. Many attributes contribute to building loyalty that is often hard to delineate and take into account each. Moreover, the present methodology is based on stated preference data, whereas revealed preference data could be the ideal for applying the specific methodology. Originality/value: Few studies, if any, have explored the issue of loyalty using the present methodological approach in the case of wine.

    The reporting of food hazards by the media: the case of Greece

    This study focuses on the coverage of food hazards by the Greek mass media. During the study period of three years, 311 articles from two daily and one Sunday newspaper were identified and analysed. The most important results drawn from the analyses are the following: (a) genetically modified foods was the most referenced food hazard; (b) there was often a simultaneous reference to more than one food hazard in the text; (c) most of the articles had informative content; (d) a periodicity existed in the media coverage of food hazards; and (e) the articles’ content was dependent upon the food hazard that was covered.     Repertoire and frequency of consumption in wine: are heavy buyers more loyal to product attributes?

    Frequency of consumption has always been an important criterion for characterising and segmenting buyers. The aim of this paper is to provide a deeper understanding of the repertoire and loyalty structures between heavy and light wine buyers. Based on a study conducted with stated preference data, basic brand performance measures are estimated through Juster purchase probabilities of brand choice. The polarisation index φ (phi) is used as a measure to model loyalty. Results show that light buyers have a wider repertoire than heavy buyers, buying more small brands. In terms of loyalty, heavy buyers are more loyalty prone than light buyers, both as regards the brand name and the wine attributes examined in this study.
