Evaluation of the spraydrying process as a spraying technique for polyphenol extracts obtained from cocoa shell*.
No full textEn los últimos años el Grupo de Investigación en Ciencia y Tecnología de Alimentos CICTA ha trabajado en la valorización de la cacota de cacao como fuente de polifenoles. Una de las etapas involucradas en la obtención de estos es la etapa de secado por aspersión, la cual ha sido poco explorada y estudiada de forma preliminar por el Grupo CICTA. Por esta razón, el presente trabajo buscó evaluar la técnica de secado por aspersión, considerando el uso de agentes encapsulantes, en extractos de polifenoles previamente concentrados obtenidos a partir de la cacota de cacao, y su potencial en la industria alimentaria. Se evaluaron distintos agentes encapsulantes: maltodextrina, leche descremada en polvo, goma arábiga y quitosano, donde los mejores rendimientos fueron para la maltodextrina (47,19%) y para la mezcla maltodextrina/goma arábiga (37,81%). El contenido de polifenoles totales y capacidad antioxidante (ensayo ORAC) para los pulverizados estuvo entre 1,18 3,81 mgEAG/g y 73,6 171,88 µmolET/g, respectivamente. Las mejores condiciones encontradas para la obtención de pulverizados fueron: agente encapsulante maltodextrina, contenido de sólidos en solución del 15% p/p y temperatura de entrada de aire 130°C. Se escogió como aplicación de estos pulverizados tres diferentes coberturas de chocolate (blanca, semiamarga y con leche) debido al contexto de este proyecto. Las coberturas registraron contenido de polifenoles. La adición de este pulverizado no pareció afectar las características de olor y textura de las coberturas. Sin embargo, el color de la cobertura blanca se vio afectada al adoptar una tonalidad blanca perlada opaca. Del presente trabajo se puede concluir que fue posible encontrar condiciones de operación que mejoraran el proceso de secado de los extractos de polifenoles, aumentando rendimientos y protegiendo dichos compuestos; además, por las características fisicoquímicas tienen gran potencial en la industria alimentaria como es el caso de las coberturas de chocolatePregradoIngeniero QuímicoIn recent years, the Food Science and Technology Research Group CICTA has been working on the valorization of cocoa shell as a source of polyphenols. One of the stages involved in the process to obtain polyphenols is the spray drying, which has been little explored and was preliminarily studied by the CICTA Group. For this reason, the present work searched to evaluate the spray drying technique, considering the use of encapsulating agents, in previously concentrated polyphenol extracts obtained from cocoa shell, and the potential in the food industry. Different encapsulating agents were evaluated: maltodextrin, skim milk powder, gum arabic and chitosan, where the best yields were for maltodextrin (47.19%) and for the maltodextrin/gum arabic mixture (37.81%). The total polyphenol content and antioxidant capacity (ORAC) for the pulverized products ranged from 1.18 - 3.81 mgEAG/g and 73.6 - 171.88 µmolET/g, respectively. The best conditions for obtaining pulverized products were: encapsulating agent: maltodextrin, solids content in solution: 15% w/w, and air inlet temperature: 130°C. Was decided to use the pulverized products obtained in different chocolate topping (white, semibitter and milk). The topping chocolates recorded polyphenols content. The addition of this spray did not appear to affect the odor and texture characteristics of the toppings. However, the color of the white chocolate topping was affected adopting a dull pearly white shade. From the present work it can be concluded that it was possible to find operating conditions that improve the drying process of polyphenol extracts, increasing yields and protecting these compounds; in addition, due to their physicochemical characteristics, they have great potential in the food industry, as in the case of chocolate topping
Going Beyond Counting First Authors in Author Co-citation Analysis

counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed

Get PDF“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
Appropriate Similarity Measures for Author Cocitation Analysis
Get PDFWe provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature. Note that the objective for the hut study was to evaluate the IRS treatment applications for residual efficacy against Anopheles mosquitoes, including the local An. coluzzii mosquito population. Cows were only used to attract mosquitoes into the huts and no tests were carried out directly on the cows. The author checklist is intended for use with studies where experiments are carried out on animals, which is why we have had such difficulty in completing this for the hut study, as many of the questions do not relate to how the cows were used
