    Desigualdad espacial, trabajo y tareas de cuidado: exclusión laboral y soluciones comunitarias para jóvenes en barrios populares del AMBA

    Este trabajo se propuso indagar en la construcción de proyectos de vida juveniles en los que inciden las brechas de acceso a bienes y servicios urbanos, en especial en las posibilidades de participación en la actividad económica. Para esto, se llevó a cabo una investigación cualitativa con jóvenes mujeres y varones de entre 15 y 35 años que habitan en barrios populares de la periferia de Buenos Aires y participan de las actividades que llevan a cabo colectivos y organizaciones sociales, principalmente la FGHC. A través de una metodología de investigación entre pares se buscó indagar en los distintos modos de obtención de ingresos por parte de las personas jóvenes, incluyendo iniciativas de trabajo realizadas en proyectos comunitarios. A su vez, se indagó en las trayectorias laborales personales por fuera dela organización y, en algunos casos, en los modos de generación de ingresos vinculados con la ilegalidad y el uso de la violencia. Además, se analizaron las estrategias de generación de ingresos y las responsabilidades familiares diferenciadas según el género. De este modo, la propuesta fue realizar un aporte a los estudios de las transiciones juveniles y de las trayectorias educativo-laborales, especialmente en el análisis de las restricciones y barreras que dificultan el grado y tipo de participación en la actividad económica.Fil: Arancibia, Milena Maia.     Desde principios del siglo XX, las ciencias sociales se han propuesto estudiar las adolescencias y juventudes en tanto fenómenos sociales, culturales e históricos que forman parte de un proceso asociado al crecimiento de las ciudades e intermediado por la extensión de la esperanza de vida. Las obras de varias disciplinas de las ciencias sociales, como la psicología, la antropología, la educación, la sociología, los estudios culturales y la economía, hicieron foco en las personas jóvenes y en sus trayectorias vitales teniendo en cuenta las diferentes coyunturas y temporalidades.     In this interview, Carla Trujillo discusses her roots, which include being born in New Mexico and growing up in Northern California. Carla received her M.S. and Ph.D. degrees in Educational Psychology from UW-Madison and became an established author. It will help determine which audio file(s) to download & listen to.Carla Trujillo was born to a working class family in New Mexico and grew up in Northern California. Her extended family and roots are New Mexican (Chicana). She received her B.S. degree in Human Development from UC Davis, and her M.S. and Ph.D. degrees in Educational Psychology from the University of Wisconsin, Madison. Her dissertation focused on assessing differential treatment of underrepresented students in college classrooms. She is the editor of Living Chicana Theory and Chicana Lesbians: The Girls Our Mothers Warned Us About (Third Woman Press), winner of a Lambda Book Award and the Out/Write Vanguard Award. Her first novel, What Night Brings (Curbstone Press 2003), won the Miguel Marmol prize focusing on human rights. What Night Brings also won the Paterson Fiction Prize, the Latino Literary Foundation Latino Book Award, Bronze Medal from Foreword Magazine, Honorable Mention for the Gustavus Meyers Books Award, and was a LAMBDA Book Award finalist. Carla has also written various articles on identity and higher education. Her latest novel, Faith and Fat Chances, was a finalist for the 2012 PEN Bellwether Prize for socially engaged fiction and is forthcoming from Curbstone/Northwestern University Press. Carla works as the Assistant Dean for Graduate Diversity Program at U.C. Berkeley and has focused some of her recent activities on improving the work and classroom climate using Interactive Theater. She has lectured in Ethnic Studies at U.C. Berkeley and Mills College, and in Women’s Studies at S.F. State University. She has also taught fiction for the Sandra Cisneros Macondo Writers Program and the Lambda Literary Foundation’s Emerging Writers Program

    Although Argentina went through a socially inclusive cycle of economic growth during the first two decades of the twenty-first century, differences have continued throughout its population, resulting in unequal living conditions according to gender, social sector, and residency status, causing young people to face a broadly segmented opportunity structure. This article presents a study about the social trajectories of young people living in marginalized neighborhoods in Argentina. It considers gender inequality as a factor that structures and runs through the various dimensions of the daily life of young people as the focus for this analysis. This work presents the results of an action-research conducted through the application of a survey to young people between 18 and 35 years of age organized in community neighborhood centers. They show labor trajectories marked by instability, informality, and long periods of inactivity, tendencies that are especially prevalent in the case of women. The findings revealed that due to the prevailing unemployment and job insecurity, marginalized neighborhoods grew where the expansion of the drug market took place. This, together with the persistence of a traditional gender model and increased violence, intersected and defined misguided trajectories in youth groups exposed to continuous segregation.Fil: Miranda, Ana.     Fat replacers in low-fat carboxymethyl cellulose dairy beverages: Color, rheology, and consumer perception

    Low-fat foods are an interesting option for consumers interested in health-related issues or in maintaining adequate body weight; however, fat reduction may influence consumer acceptance of the end product. This study aims to obtain information about the effectiveness of λ-carrageenan and a blend (50:50) of short- and long-chain inulin as fat replacers in dairy beverages prepared with carboxymethyl cellulose (CMC) and to determine to what extent consumers perceive instrumental color and rheological differences among samples. Results showed that both λ-carrageenan and the inulin blend could be used as fat replacers in CMC-based dairy beverages and that consumers could distinguish among samples that differed in color and rheological behavior.The authors acknowledge Fondo Social Europeo for financing the contract of author S.     Combining Cluster Analysis, Surface Response Methodology and JAR Scales to Increase Consumer Input in Optimizing Acceptability of a High-Protein Soy Dessert

    Acceptance of a new high-protein (6.75g/serving), citrus-flavored, soy-based dessert with different concentrations of sucrose (5-17%) and citrus flavor (50-350ppm) has been optimizing using the response surface method (RSM) in conjunction with consumer segmentation and with just-about-right (JAR) scales. Relationships between acceptability scores and composition variables were determined for the overall consumer population (130 consumers) and for two subgroups of consumers with different preference criteria, identified by cluster analysis. While for subgroup I (44 consumers) the composition factors did not show a clear influence on acceptability, for subgroup II (86 consumers) acceptability was well explained in terms of sucrose and citrus flavor contents (R2=94.4). Results obtained using JAR scales showed that the main differences between both consumer subgroups were related to adequacy of citrus flavor, sweetness and consistency data. Relating JAR percentages and hedonic data provide useful information for explaining differences in hedonic scores.The authors are grateful to Sistema Bicentenario Becas Chile for the fellowship awarded to author C.     Comparing Carboxymethyl Cellulose and Starch as Thickeners in Oil/Water Emulsions. Implications on Rheological and Structural Properties

    The study reported here aims to obtain information on how thickener type and concentration, and oil content influence rheology, particle size, particle charge and microstructure in o/w model emulsions. Emulsions were prepared at two oil concentrations (5 and 30 % wt/wt), each with three CMC concentrations (0. 2, 0. 3, and 0. 4 % wt/wt), or three starch concentrations (2, 3, and 4 % wt/wt). For each oil concentration, a sample without any added thickener was prepared as reference. Both CMC and swollen starch granules showed a dominating effect on emulsion flow behavior, although the presence and concentration of fat droplets also played an important role. Viscoelasticity of CMC-based emulsions mainly depended of oil concentration whilst in starch-based emulsions the most influential ingredient was starch. A similar situation was detected in terms of particle size distribution; CMC effect was dependent on oil content and starch effect was mainly related to the volume occupied by swollen granules. Differences in microstructure and particle size distribution between CMC and starch emulsions were related to their rheological behavior. Apart from enabling the acquisition of food emulsions with different composition but with similar rheological behavior by adding different hydrocolloids, here we consider thickener effect on other properties in order to obtain food emulsions with adequate characteristics.To Sistema Bicentenario Becas Chile for the fellowship awarded to author C.
