Le parole in cucina. Storia di parole e gastronomia
Pare quasi infinito il numero dei termini che caratterizzano una sfera fondamentale dell’essere umano come l’alimentazione. Pratica certo utile e necessaria, di recente sempre più ai confini col dilettevole. Un vocabolario immenso e in continua evoluzione non solo per l’affacciarsi di cibi e piatti esotici, ma anche per la riscoperta di parole rimaste a lungo confinate in cucine locali, o addirittura in ambito familiare nella nostra lunga tradizione alimentare che pesca talora oltre l’antica Grecia.
Molti sono i nomi legati al cibo che portano con sé un’antica storia, costellata da diversificazioni, specializzazioni e contaminazioni. Ripercorrerne la nascita e lo sviluppo ci aiuta a meglio comprendere la direzione di una parte dell’agire umano nel tempo, e a scoprire che alcune di queste parole sono indelebilmente scritte in un altro vocabolario, quello di un lessico familiare che attiene più alla sfera emotiva personale che a un vocabolario gastronomico

Szakmai gyakorlatom során, melyet a Boscolo New York Palace Hotel Spa részlegén töltöttem, mélyebb betekintést nyerhettem annak működésébe, ezáltal a problémák is hamarabb szembetűntek, mely leginkább a vendégforgalomban mutatkozott meg. Véleményem szerint a vendégforgalom növelése a marketing segítségével megvalósítható. A spa szolgáltatásainak minőségével és mennyiségével a vendégek többsége elégedett, melyeknek az ár-érték aránya is megfelelő.
A Boscolo Spa-t a marketing-mix 7 P-jén keresztül szemléltetem, továbbá a SWOT-analízisét is ábrázolom. Primer kutatásként kérdőíves felmérést végeztem a vendégek körében, ezáltal következtetéseket vonhattam le a hatékonyabb működés érdekében. Ezeket a konzekvenciákat és javaslataimat is megfogalmaztam, melyek figyelembe vételével a Spa még sikeresebb működése elérhető.
Kutatómunkám célja tehát az volt, hogy a Boscolo Spa működését bemutassam, vendégei elégedettségét és véleményét kutassam, melyekből konklúziókat vonhattam le. Javaslataimat megfogalmazva a spa hatékonyabb működését szeretném elősegíteni.
---------------------------------------------------- During my professional practice in the Spa of the Boscolo New York Palace Hotel I allowed to inspect the working of the spa. In my opinion the increasing of the customer turnover could be achieved with marketing. The guests are satisfied with the quality and quantity of the spa services which price-value proportion is suitable.
I demonstrate the spa with the 7P of the marketing mix furthermore the SWOT analysis is also representated. Primary research was carried out as a questionnaire survey among the guests, making conclusions in the interest of the more efficient operation. I also formulated these conclusions and proposals which taking into account the spa more succesful working could be achieved.
So the purpose of my essay was to introduce the operation of the Boscolo Spa and to quest for the satisfaction and opinion of the guests which from I colud make conclusions. Phrasing of my suggestions I would like to help the operation of the Boscolo Spa
Seasonal and gender-related differences in morphometric features and cellular and biochemical parameters of Carcinus aestuarii from the Lagoon of Venice
In this study, the seasonal variations in the morphometric features and in the cellular and biochemical parameters of the haemolymph were investigated in both male and female crabs (Carcinus aestuarii). Crabs were seasonally (November 2010 to August 2011) collected from the Lagoon of Venice, and the moult stage, weight, width and length of the carapace, and width and length of the bigger chela were evaluated. In addition, the total haemocyte count (THC), haemocyte diameter and volume, haemolymph glucose and total protein levels, and haemolymph phenoloxidase (PO) and N-acetyl-β-glucosaminidase (NAG) activities were measured. The results demonstrated that the collected crabs were all in the intermoult stage and that the males were bigger than the females. A two-way ANOVA analysis revealed a significant effect of season on the THC and the haemocyte volume and a significant influence of gender on the haemocyte diameter. Season and gender significantly affected the haemolymph glucose concentration, whereas haemolymph protein levels were dependent only on the season. In addition, both season and gender significantly influenced the PO and NAG activities in the haemolymph. Overall, the results demonstrated that crab morphometric features as well as haemolymph cellular and biochemical parameters varied markedly as a function of both season and gender
Going Beyond Counting First Authors in Author Co-citation Analysis
The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation
counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed
Variations on the Author
“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
Appropriate Similarity Measures for Author Cocitation Analysis
We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature. Dispelling the Myths Behind First-author Citation Counts
We conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued
use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation
counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases.
