"Le strane vicende di mia vita un po' militare, un po' letteraria". Giuseppe De Blasiis e i suoi corrispondenti
ITALIANO: In questo saggio è ricostruito il carteggio di Giuseppe De Blasiis (1832-1914), primo professore di Storia dell’ateneo napoletano. Protagonista della storiografia ottocentesca italiana, a lui si deve l’assetto scientifico della Società Napoletana di Storia Patria, di cui fu socio fondatore e in seguito presidente. I suoi studi sul Medioevo, senza tralasciare l’Età moderna, e soprattutto la sua vasta conoscenza delle fonti documentarie e bibliografiche napoletane lo resero interlocutore privilegiato per chiunque volesse accostarsi alla storia del Mezzogiorno continentale. / ENGLISH: This essay focuses on the correspondence of Giuseppe De Blasiis (1832-1914), the first professor of History at the University of Naples. In his leading role as a 19th century Italian Historian, he was responsible for the scientific structure of the Neapolitan Society of National History, of which he was a founding member and later president. Thanks to his studies on Medieval History and Modern Age, as well as to his vast knowledge of the Neapolitan documentary and bibliographical sources, he became the privileged interlocutor for anyone who wanted to approach the history of southern continental Italy
La Napoli angioina e le sue relazioni con il Regno d'Ungheria nella storiografia ungherese tra tardo Ottocento e primo Novecento
ITALIANO In questo articolo si prende in esame lo sguardo che gli storici ungheresi a cavallo tra XIX e XX secolo hanno posato sulle relazioni che nel corso del tardo Medioevo collegarono, in maniera spesso inscindibile, il Regno di Sicilia con quello d’Ungheria. Si ricostruiscono così le varie facce di un prisma storiografico in cui il nesso angioino Napoli-Ungheria si venne a costituire come un tema di ricerca piuttosto privilegiato, oggetto di costante attenzione negli studi storici ungheresi fin dall’Età moderna, ma soprattutto in un’epoca in cui il nazionalismo aveva necessità di nutrirsi di un passato medievale pieno di gloria, in cui riconoscere, quasi paradossalmente, nei re venuti da Napoli uno degli elementi di spicco dell’identità ungherese. / ENGLISH: This article examines the interest of Hungarian historians at the turn of the nineteenth and twentieth centuries for the relations that linked the Kingdom of Sicily with that of Hungary in an often-inseparable way during the late Middle Ages. Thus, the various aspects of a historiographic prism, where the Angevin connections between Naples and Hungary became a rather privileged research topic, are reconstructed here. The subject of a constant attention in Hungarian historical studies since the Modern Age, such connections were particularly stressed in an era when nationalism needed to refer to a medieval past full of glory. Almost paradoxically, one of the prominent elements in the Hungarian identity was therefore identified with the kings who came from Naples

Throughout the study, an evaluation of the shelf life of different food matrices was carried out by means of metagenomics, the DNA extraction adjusting it to different food matrices. The main microbial groups responsible for spoliage during the shelf life were determined.
On the other hand, an exhaustive evaluation has been carried out to know the hygienic state of the raw materials.
Once the different processes have been evaluated, flow diagrams of various food categories have been defined, identifying in each case the initial level of danger H0, its reduction (∑R) and its increase ((I).
With the results obtained, a joint evaluation has been carried out to determine how the raw material-matrix-workflow interactions are in relation to the microbial growth curves. Process flows have been established for various categories of food, establishing which are the most relevant microbial families at each critical point of production.
After the selection of the products to be tested, empirical tests have been carried out to determine the effectiveness of specific treatments for each microbial group - selected matrix useful life.
The presence of biofilms on real food industry surfaces was also evaluated by macroscopic staining. After detection, preliminary tests were performed with various methodologies to establish elimination strategies. Work protocols were established to apply in the industry and mitigate the risk of cross contamination by biofilms
Acerca de la heterogeneidad léxica del siciliano contemporáneo: Influjos griego, árabe y otras influencias menores
Even if the use of Sicilian has been linked to traditional lore on too many occasions, Sicilian has been a decisive language in the development of the Sicilian people, a community that still uses it nowadays as a sign of identity. As a matter of fact, the use of Sicilian is more and more frequent in
contemporary insular literature, which represents a reappraisal of an Italic
linguistic variant that reflects in a true, reliable way the defining linguistic
features of Sicily. Aware of this situation, the introduction of this article highlights the linguistic and cultural relevance of Sicilian, conspicuous in it being used by the main intellectuals of the island. This is the literary technique that is present in L’Assaggiatrice (2007), the debut work of
Giuseppina Torregrossa, an author who uses this book to portray her homeland from a linguistic viewpoint, including Sicilian words both from a Romance origin as well as others coming from Greek, Arabic and other
lesser sources.
The methodology followed is based on the detection and compilation of the Sicilian dialect expressions used by Torregrossa in L’Assaggiatrice, words analyzed from a semantic and etymological perspective that have revealed the extent to which Greek, Arabic, Turkish and Gothic influences –without neglecting items of unknown origin or formed from onomatopoeia– have been key to the current lexical configuration of the island.El siciliano ha sido una lengua clave en el devenir del pueblo sículo, una comunidad que aún hoy la utiliza como signo de identidad pese a que, en múltiples ocasiones, su uso haya quedado reducido a un ámbito puramente
folclórico. En cualquier caso, el empleo del siciliano es cada vez más frecuente en la literatura insular contemporánea, un modo de revalorizar una variante lingüística itálica que refleja de forma real y fidedigna las
características idiomáticas definitorias de Sicilia. Atentos a esta coyuntura, la introducción de este artículo pone de manifiesto la relevancia lingüística y
cultural del siciliano, patente en su utilización por parte de los principales intelectuales de la isla. Esta técnica literaria está presente en L’Assaggiatrice (2007), primera obra de Giuseppina Torregrossa, una autora que se sirve de este libro para retratar lingüísticamente su tierra natal, usando tanto voces sicilianas procedentes del ámbito romance como otras
procedentes del griego, del árabe y de otras influencias menores.
La metodología empleada se basa en la localización y en la recopilación de los dialectalismos utilizados por Torregrossa en L’Assaggiatrice, voces analizadas desde una perspectiva semántica y etimológica que han revelado hasta qué punto las influencias griega, arábiga, turca y gótica –sin descuidar las palabras de origen desconocido o formadas a partir de onomatopeyas– han sido sustanciales en la actual configuración léxica de la isla

Informe final del programa asturias dentro de la línea 1 lanzamiento y consolidación de las líneas de actividad del centro del "Programa Asturias" de ayudas económicas a Centros Tecnológicos y Centros de Apoyo a la Innovación Tecnológica en el Principado de Asturias durante el periodo 2018-2020A search and selection of healthy and nutritionally and technologically appropriate ingredients has been carried out to reconstitute food matrices of animal origin with others suitable for the vegan and vegetarian community. First, characterizing those products of animal origin that the vegan and vegetarian market demands as substitutes, paying special attention to the exhaustive search for ingredients with technological and functional capacity with which prototypes can be developed.
After that, different technological process strategies were carried out to give rise to structures similar to those produced by foods of animal origin and with a palatability and flavor that resemble them. Subsequently, a preliminary characterization of the tests was carried out both at the organoleptic level and at the physical-chemical level, to assess their acceptance and study the needs of incorporation of certain nutrients based on the composition of products of animal origin that they intend to simulate. In the latter case, a study was carried out on the forms of incorporation of these nutrients in the matrices, either through the use of carbohydrate-based bulking agents (hydrocolloids) that can be used as a gelling agent and allows the retention of the ingredients they contain. the nutrients to be added, or the use of techniques that protect said compounds from oxidative phenomena and promote bioavailability (use of microencapsulates), all depending on the matrix and the technological processes to obtain them. Proyecto: IALVEGANSe ha llevado a cabo una búsqueda y selección de ingredientes saludables y adecuados tanto nutricional como tecnológicamente para reconstituir matrices de alimentos de origen animal por otras aptas para el colectivo vegano y vegetariano. Primero caracterizando esos productos de origen animal que el mercado vegano y vegetariano demanda como sustitutivos, prestando especial atención en la búsqueda exhaustiva de ingredientes con capacidad tecnológica y funcional con los que se pueda desarrollar los prototipos.
tras ello se realizaron las diferentes estrategias de proceso tecnológico para dar lugar a estructuras similares a las producidas por alimentos de origen animal y con una palatabilidad y flavor que se asemejen a ellos. seguidamente se realizó una caracterización preliminar de las pruebas tanto a nivel organoléptico como a nivel físico-químico, para valorar su aceptación y estudiar las necesidades de incorporación de determinados nutrientes en función de la composición de productos de origen animal a los que pretenden simular. En este último caso se realizó un estudio sobre las formas de incorporación de esos nutrientes en las matrices, bien a través del empleo de agentes de carga de base carbohidratos (hidrocoloides) que se pueda usar como gelificante y permita la retención de los ingredientes que contienen los nutrientes a añadir, o bien el uso de técnicas que protejan dichos compuestos de fenómenos oxidativos y favorezca la biodisponibilidad (uso de microencapsulados), todo ello en función de la matriz y los procesos tecnológicos para la obtención de las mismas. Por último se realizó para esas matrices desarrolladas y enriquecidas un estudio de biodisponibilidad y bioaccesibilidad con el objetivo de valorar la eficacia de los compuestos añadidos y obtener productos saludables y nutricionalmente completos
Screen-Printed Electrode-Based Sensors for Food Spoilage Control: Bacteria and Biogenic Amines Detection
Food spoilage is caused by the development of microorganisms, biogenic amines, and other harmful substances, which, when consumed, can lead to di erent health problems. Foodborne diseases can be avoided by assessing the safety and freshness of food along the production and supply chains. The routine methods for food analysis usually involve long analysis times and complex instrumentation and are performed in centralized laboratories. In this context, sensors based on screen-printed electrodes (SPEs) have gained increasing importance because of their advantageous characteristics, such as ease of use and portability, which allow fast analysis in point-of-need scenarios. This review provides a comprehensive overview of SPE-based sensors for the evaluation of food safety and freshness, focusing on the determination of bacteria and biogenic amines. After discussing the characteristics of SPEs as transducers, the main bacteria, and biogenic amines responsible for important and common foodborne diseases are described. Then, SPE-based sensors for the analysis of these bacteria and biogenic amines in food samples are discussed, comparing several parameters, such as limit of detection, analysis time, and sample type

ITALIANO: Nei secoli XIV e XV si avverte lo sforzo verso una resa più nitida e sistematica dei confini della danza, espressi in termini di non interferenza con lo spazio e con il tempo sacro, di intenzione onesta, di pudicizia e di disciplina corporea. Mi occuperò nel seguente saggio di analizzare i documenti che trattano delle ripercussioni della trasgressione coreutica sull’evoluzione delle performance, ed in particolare della sospensione della sfera temporale e della dilatazione del ballo. Tratterò il tema attraverso il confronto di testimonianze esemplaristiche e letterarie bassomedievali provenienti dall’area franco-italiana, ovvero dal territorio che accolse i primi tentativi di codificazione della danza. / ENGLISH: During the fourteenth and fifteenth centuries efforts were made to codify a language of licit dance, by reorganising and controlling gestures and making the boundaries of choral dancing clearer and more systematic in terms of non-interference with sacred space and time. The article analyses documents that deal with the repercussions of transgression in choral dancing on the evolution of performances, and in particular on the suspension of the temporal sphere and on the expansion of dance. Vita Gerardi episcopi Potentini (BHL 3429)
ITALIANO: La "Vita Gerardi episcopi Potentini", nota anche col nome di "Laudatio sancti Gerardi episcopi Potentini" (BHL 3429), è l’unica opera nota attribuita a Manfredi, vescovo di Potenza. La presente edizione, a differenza di quella pubblicata a suo tempo negli "Acta Sanctorum" (1883), si basa su tutti i manoscritti attualmente noti e reperibili, oltre che sulla princeps a stampa di Ughelli (1659).
Il volume è preliminare a un più ampio studio che ambisce a colmare, almeno in parte, il vuoto storiografico che caratterizza le conoscenze relative all’agiografia della Basilicata per l’età della riforma (X-XII secolo). Proprio partendo dall’approfondita e precisa contestualizzazione del periodo e dell’ambiente, procedendo con gli strumenti della storia, della filologia e della letteratura si indaga sulla sede diocesana di Potenza, che fino a qualche decennio fa è stata suffraganea di Acerenza. In questo modo è stato possibile restituire la figura del suo santo protettore, Gerardo, a una più corretta dimensione storica, che è stata spesso offuscata da secolari superfetazioni mitico-folkloriche. / ENGLISH: The "Vita Gerardi episcopi Potentini", also known as "Laudatio sancti Gerardi episcopi Potentin"i (BHL 3429), is the only known work attributed to Manfredi, bishop of Potenza. This edition, unlike the one published in the "Acta Sanctorum" (1883), is based on all the manuscripts currently known and available, as well as on Ughelli's edtitio princeps (1659).
The volume is preliminary to a broader study which aims to improve our knowledge about the hagiography of Basilicata for the age of Reform (10th-12th century). Starting from a precise contextualization of the period, and proceeding with the tools of history, philology and literature, it investigates the diocesan seat of Potenza, which until a few decades ago was a suffragan of Acerenza. In this way it is possible to reconstruct the figure of its patron saint, Gerardo, in order to offer a more correct historical dimension, which was often obscured by centuries-old mythical-folkloric superfetations
