Extension of postharvest life of 'Apple1 banana subjected to1-methylcyclopropene (1-MCP) - sensory and physical quality
Objetivou-se avaliar o efeito do 1-metilciclopropeno (1-MCP) sobre a qualidade e extensão da vida pós-colheita de bananas-maçã. Frutas no grau 2 de coloração da casca foram tratadas com 50 nL.L-1 de 1-MCP durante 0 (controle), 6, 9, 12 e 24 horas. Posteriormente, foram armazenadas sob condição ambiente: 22± 2 ºC 85± 5% UR. Avaliaram-se as características sensoriais: aparência dos frutos no grau 4 (frutos mais verdes que amarelos) e grau 7 (frutos amarelos com pontuações marrons) de coloração da casca; descasque, aroma, sabor, firmeza da polpa e aspecto global nos frutos no grau 7, utilizando-se um teste de aceitabilidade através de escala hedônica de 9 pontos; e ainda a intenção de compra nos frutos nos graus 4 e 7, através de escala de 5 pontos. Avaliou-se também, visualmente, a extensão da vida pós-colheita, e, instrumentalmente, a coloração da casca e firmeza da polpa. The fruit, at degree 2 of peel color was treated with 50 nL.L-1 of 1-MCP for 0 (control), 6, 9, 12 and 24 hours. Next, It was stored at room temperature: 22± 2 ºC 85± 5 per cent RH. The following sensory characteristics were evaluated: appearance of the fruit at degree 4 (greener than yellow) and degree 7 (yellow with brown spots) of peel color; peeling, aroma, flavor, firmness of pulp and global aspect of the fruit at degree 7, using a test of acceptability using the 9-point hedonic scale and also the intention of buying the fruit at degrees 4 and 7, using a 5-point scale. Also evaluated visually was the extension of postharvest life and instrumentally the peel color and pulp firmness. Optimization of the osmotic dehydration of mapará (Hypophthalmus edentatus) fillets by response surface methodology
A desidratação osmótica de filés de mapará tem sido utilizada como pré-tratamento antes da secagem e refrigeração de alimentos como um meio de reduzir a umidade dos produtos. O objetivo do trabalho foi otimizar a transferência de massa ocorrida durante a desidratação osmótica de mapará através da metodologia de superfície de resposta. A desidratação osmótica foi realizada de acordo com um planejamento fatorial completo 23, com oito pontos fatoriais, três centrais e seis axiais, totalizando 17 ensaios, em que o valor das variáveis dependentes, a perda de peso (PP), a perda de água (PA), o ganho de sólidos (GS), GS/PA e ácido tiobarbitúrico (TBA), são funções das variáveis independentes, temperatura, concentração de NaCl e tempo de imersão. A análise estatística aplicada aos dados experimentais foi realizada através do erro puro e pelo SS residual. Aplicando a metodologia de superfície de resposta, a condição ótima de convergência de menor perda de peso, maior perda de água e menor ganho de sal correspondeu a uma concentração de cloreto de sódio de 22%, temperatura de 46 °C e tempo de 7 horas282Osmotic dehydration of mapará fillets has been used as a pre-treatment before dehydration and refrigeration of food as a means of reducing product moisture content. The aim of this study was to optimize mass transfer occurring during osmotic dehydration of mapará using the response surface methodology. Osmotic dehydration was carried out following a 23 complete factorial design, with eight factorial, three central and six axial points, totalizing 17 assays, where the values of the dependent variables, weight loss (PP), water loss (PA), solid gain (GS), GS/PA and tiobarbituric acid (TBA), are a function of the independent variables, temperature, concentration of NaCl and immersion time. The statistic analysis, applied to the experimental data was carried out using the pure error and the residual SS. Applying the response surface methodology, the best condition of convergence of lower weight loss, greater water loss and lower salt gain corresponded to a sodium chloride concentration of 22%, temperature of 46 °C and time of 7 hour
Correlation between human panel and electronic tongue responses on the analysis of commercial sweeteners
In this work, the taste characteristics of 11 different formulations of commercial sweeteners in mineral water are evaluated by a group of trained human judges (human panel) and an electronic tongue (ET) system. The ET is comprised by 5 chemical sensors made of nanostructured conducting polymer films deposited onto gold interdigitated microelectrodes, whose electrical capacitances are measured with them immersed in sweetener solutions. It is verified that the ET exhibits sensitivity to the sweeteners in a large range of frequency (0–106 Hz), and its response can be reasonably correlated to the human panel evaluation4440340
Evolution of occupation and flood susceptibility in the Atibaia River plain in Campinas and Jaguariúna, SP
Orientador: Ana Elisa Silva de AbreuDissertação (mestrado) - Universidade Estadual de Campinas, Instituto de GeociênciasResumo: Áreas de várzeas ou planícies de inundação, quando ocupadas, são regiões propensas à ocorrência de desastres naturais por serem atingidas pelo transbordamento natural dos cursos d¿água. Ações não estruturais de prevenção, como o mapeamento de suscetibilidade e políticas públicas de uso e ocupação do solo, quando realizadas de maneira correta, auxiliam no enfrentamento desse problema e na promoção da resiliência. Situada numa região considerada de alto risco por ocorrerem inundações graduais periódicas, a área escolhida para estudo pertence à planície do Rio Atibaia e está inserida em dois municípios do Estado de São Paulo: Campinas e Jaguariúna. Através de fotos aéreas antigas e imagens de satélites foi possível observar que a ocupação da planície se desenvolveu de forma desconectada nas duas porções situadas nos municípios de Campinas e Jaguariúna. O desenvolvimento da urbanização da porção de Campinas foi maior e mais antigo, assim como as atividades minerárias. Jaguariúna, por sua vez, começou seu ciclo de mineração e urbanização mais tarde, posterior a década de 80, sendo a cultura temporária a atividade que teve a maior predominância nessa porção ao longo dos anos. Na análise dos planos diretores dos dois municípios observou-se que a gestão de risco à inundação da planície foi ao longo dos anos organizada dentro de limites políticos municipais não considerando o território físico do perigo (em recorte de microbacias). Ela se tornou mais efetiva em Campinas, tendo sido incorporada aos planos diretores. Quanto ao mapeamento da suscetibilidade à inundação, ele foi realizado usando o algorítmo HAND na escala 1:10.000 utilizando bases cartográficas de épocas distintas, a saber: 1979 e 2010. A imagem HAND-2010 conseguiu representar melhor a situação atual da planície, todavia, ambas não conseguiram detectar pequenas feições antrópicas. Em campo foi possível perceber que os pontos de entrada da inundação na planície, indicados no mapeamento comunitário de risco da comunidade do Piracambaia II, estão associados a antigos pontos de mineração da década de 70 e 80, e são, provavelmente, resultado da intervenção da atividade minerária sobre o dique marginal em décadas passadasAbstract: Lowland areas or floodplains, when occupied, are susceptible to natural disasters because they are affected by watercourse overflow. Non- structural preventive actions, such as mapping of susceptibility and land-use planning help to face this problem and further resilience when carried out correctly. The studied area is in a high risk local because it undergoes periodical gradual flooding. It is placed on Atibaia river floodplain and situated between Campinas and Jaguariúna, two cities in São Paulo state. By examining old and recent aerial photos and satellite images it was possible to observe that the occupation of the plain developed in two disconnected parts, one placed in Campinas and another in Jaguariúna. The development of urbanization and mining in Campinas was bigger and older (1960-1980). Jaguariúna started its mining cycle after the 80s and had agriculture as the predominant activity over the years. Through the analysis of the land use plans of the two municipalities, it was observed that the flood risk management of the study plain was carried out over the years within municipal political limits, without integrated planning considering the physical territory of the hazard (in the context of micro-watersheds). The flood risk management became more effective in Campinas and was incorporated into its Municipal Master Plan. The flood susceptibility mapping was performed using the HAND algorithm on a 1: 10,000 scale with cartographic data of different ages: 1979 and 2010The HAND-2010 image best represented the current situation of the floodplain; however, both images (1979 and 2010) failed to detect small anthropic features. In the field, it was possible to notice that the flood entry points, which were indicated in the participatory risk mapping of the Piracambaia II community, are associated with old mining points from the 70s and 80s. Synthesis of structured triacylglycerols enriched in n-3 fatty acids by immobilized microbial lipase
The search for new biocatalysts has aroused great interest due to the variety of micro-organisms and their role as enzyme producers. Native lipases from Aspergillus niger and Rhizopus javanicus were used to enrich the n-3 long-chain polyunsaturated fatty acids content in the triacylglycerols of soybean oil by acidolysis with free fatty acids from sardine oil in solvent-free media. For the immobilization process, the best lipase/support ratios were 1:3 (w/w) for Aspergillus niger lipase and 1:5 (w/w) for Rhizopus javanicus lipase using Amberlite MB-1. Both lipases maintained constant activity for 6 months at 4 °C. Reaction time, sardine-free fatty acids:soybean oil mole ratio and initial water content of the lipase were investigated to determine their effects on n-3 long-chain polyunsaturated fatty acids incorporation into soybean oil. Structured triacylglycerols with 11.7 and 7.2% of eicosapentaenoic acid + docosahexaenoic acid were obtained using Aspergillus niger lipase and Rhizopus javanicus lipase, decreasing the n-6/n-3 fatty acids ratio of soybean oil (11:1 to 3.5:1 and 4.7:1, respectively). The best reaction conditions were: initial water content of lipase of 0.86% (w/w), sardine-free faty acids:soybean oil mole ratio of 3:1 and reaction time of 36 h, at 40 °C. The significant factors for the acidolysis reaction were the sardine-free fatty acids:soybean oil mole ratio and reaction time. The characterization of structured triacylglycerols was obtained using easy ambient sonic-spray ionization mass spectrometry. Sensory characterisation of gluten‐free bread with addition of quinoa, amaranth flour and sweeteners as an alternative for coeliac patients
This study aimed to determine the acceptance of gluten‐ and sucrose‐free breads with addition of pseudocereals and sweeteners, characterise them using quantitative descriptive analysis (QDA®) and identify the drivers of liking using four different techniques of sensorial data evaluation. A consumer test with 118 people was performed, and a QDA® was carried out by 12 trained assessors to obtain the sensory profile. In addition, partial least squares (PLS) regression was used to identify the drivers of liking of gluten‐free breads, and principal component analysis (PCA) and external preference maps were provided to correlate the data obtained in the sensory studies. The attributes of amaranth aroma and taste contributed positively to consumer acceptance, whereas a brown crust colour and quinoa aroma and taste contributed negatively to consumer acceptance. Tecnologia para aproveitamento de resíduos da agroindústria sucroalcooleira como biofertilizante organomineral granulad
Aiming to evaluate the use of sugarcane industry waste such as byproducts from vinasse concentration process, it was assessed the organomineral fertilizer BIOFOM (concentrated vinasse, filter cake, boiler ash, soot from chimneys and supplemented with mineral fertilizers). The study included characterization and agronomic potential analysis of a test plant (corn), by noting the differences between mineral fertilizers and BIOFOM fertilization until 45 days after sowing. The technology traditionally used to produce BIOFOM was based on vinasse evaporation with high heat transfer coefficients. It was observed that the technology, which can be formulated according to the needs of any crop, could be used in many cases as mineral fertilizer. Therefore, the use of this organomineral fertilizer reduces waste generation of sugarcane industry351Com o objetivo de avaliar o uso de resíduos da agroindústria sucroalcooleira como vantagens do processo de concentração da vinhaça, utilizou-se o BIOFOM (biofertilizante organomineral formulado com vinhaça concentrada, torta de filtro, cinzas de caldeira e fuligem das chaminés, e complementado com fertilizantes minerais). O presente estudo contemplou a caracterização e a análise do potencial agronômico envolvendo uma planta-teste (milho), observando as diferenças entre os tratamentos (adubação com fertilizante mineral versus adubação com BIOFOM), até 45 dias após a semeadura. A tecnologia (tradicionalmente usada para a produção do BIOFOM) utilizada para concentrar a vinhaça baseou-se na evaporação do resíduo com elevados coeficientes de troca térmica. Observou-se que o BIOFOM, que pode ser formulado de acordo com as necessidades de qualquer cultura, pode substituir, parcial ou totalmente, a utilização do fertilizante mineral. "Healthy men" and high mortality: contributions from a population-based study for the gender paradox discussion
Inequalities between men and women in morbidity and mortality show a contrast, which has been called gender paradox. Most studies evaluating this paradox were conducted in high-income countries and, until now, few investigations have been performed in Brazil. This study aims to estimate the magnitude of inequalities between adult men and women in several dimensions: demographic and socioeconomic, health behaviors, morbidity, use of health services and mortality. The data were obtained from population-based household survey carried out in Campinas (Campinas Health Survey 2008/09) corresponding to 957 people, and data from the Mortality Information System (MIS) between 2009 and 2011. Prevalences and prevalence ratios were analyzed in order to verify the differences between men and women regarding socioeconomic and demographic variables, health behaviors, morbidities and consultations in the last two weeks. Mortality rates and the ratio between coefficients considering the underlying causes of death were calculated. Women had a greater disadvantage in socioeconomic indicators, chronic diseases diagnosed by a health professional and referred health problems as well as make more use of health services, while men presented higher frequency of most unhealthy behaviors and excessive mortality for all causes investigated. The findings contribute to the discussion of gender paradox and demonstrate the need to employ health actions that consider the differences between men and women in the various health dimensions analyzed.
