    Cocoa has been proved to be a source of antioxidant. This study aimed to determine the effect of chocolate drinks preparation to the ability of antioxidants to reduce Ferric Tripyridyl triazine complex (Fe III TPTZ) to Ferro form. This research used a single factor, Chocolate Drinks Preparation Methods consisted of four treatments (P), dissolving the cocoa powder in room temperature water (P1), dissolving cocoa powder in boiled water (P2), dissolving cocoa powders in room temperature water then heated until boiling (P3), and dissolving cocoa powders in room temperature water then heated until boiling using microwave oven (P4). Each treatment was repeated two times. The experiment units were randomized using Randomized Block Design with ability of antioxidants to reduce Ferric Tripyridyl Triazine (Fe III TPTZ) complex to Ferro form as parameter. The effect was analyzed using analysis ANOVA at α = 5% then continued with Duncan Multiple Range Test α = 5% to determine the level of treatment that gives significant difference. The results showed that preparation methods had significant effect on total phenolic contents in chocolate drinks but showed no significant effect on total flavonoid contents ((+)-catechin nor (-)-epicatechin) and the ability of antioxidants to reduce Ferric Tripyridyl triazine complex (Fe III TPTZ) to Ferro form. Total phenolic content of samples was 16,1 – 28,6 mg GAE/ g chocolate powder. Total flavanoid content was 18,8 – 27,4 mg CE/g chocolate powder and 36,0 – 47,3 mg ECE/g chocolate powder. Cacao’s antioxidant capacity to reduce Fe3+ to Fe2+ was 136,2 – 168,5 mM Fe(II)/L

    Chicken nugget is a processed chicken product, cooked made from a mixture of ground chicken meat were given coating, with or without the addition of other ingredients and permitted food additives. Chicken nuggets are a popular food product, but chicken nugget has the disadvantage that has a low fiber content. Lack of fiber content can be improved by adding menjes flour on chicken nuggets. Menjes flour have a high fiber content, which is 61.55%, has a savory flavor, widely available and affordable price. The design of the study is a randomized block design (RBD) with one factor, seven level of menjes flour concentration of 0%, 1.5%, 3%, 4.5%, 6%, 7.5% and 9 % with three times repeated. Parameter study include WHC, pH, moisture content, fiber content, texture (hardness, springiness, cohesiveness, fractubility, gumminess and chewiness), and product preferences in organoleptic (juiceness, texture and flavor). The data will be analyzed by Analysis of Variance (ANOVA) at α = 5% and further testing is test DMRT (Duncan's Multiple Range Test) at α = 5% when there are significant differences between treatments. The result showed that the difference variation in addition of menjes flour was significantly affected (α = 5%) against moisture, WHC, texture (hardness and cohesiveness). Variation in addition of menjes flour also significantly affected to product organoleptic including flavor, texture, and juiceness. Larger addition of menjes flour increasing moisture content and hardness, but decreasing WHC, cohesiveness and panelist preference. The best treatment was obtained at addition 1.5% menjes flour with 160% WHC, 55.82% moisture content, 9534.204 g hardness, 0.637 cohesiveness, and 2.09% dietary fiber

    Red colorants are often used for coloring “dawet” drinks sold along “X” street in Surabaya. The red colorants are possibly those additive coloring agents not permitted for foods or those permitted but the contents exceeded that stated by the Indonesian Minister of Health Regulation No. 722/Menkes/Per/IX/1988/on Food Additives. In the qualitative and quantative tests using TLC-Densitometry with stationary phase : silica Gel GF254 , mobile phase : isopropanol : ammonia – 4 : 1 and selected maximum wavelength 553 nm, it was found that be red colorant used was Rhodamin B, that was not permitted for foods and the contents found were 0.011 % to 0.016 %

    Surimi-based product can be made from white meat like fish meat but also chicken meat which had different physicochemical properties, similar to if using different part of meat like breast and thigh. The study used Nested Factorial with the the factor is Ratio of Washing NaCl (P) consisted of 1:2 (P1). 1:3 (P2), 1:4(P3) which is nested in Chicken Meat Part Breast (D) and Thigh (P) done using 4 replication in Randomized Sample. The parameter are Gel quality (Gel strenght and Folding test), WHC, water content, and thaw drip surimi based product. Effects of factor were analyzed using ANOVA at α = 0.05, continued with DMRT at α = 0.05 for the significant parameter. The results showed that the Ratio of Washing Solution NaCl gave significant effect on all parameters studies in each Meats Part Nest. For Breast Part Nest: Increasing of Washing Solution Ratio significantly increased the WHC of surimi based product after thawing from 44,55% to 51,80%, WHC boiled surimi based product from 62, 51% to 69,09%, water content of surimi based product after thawing from 5,50% to 80,71%, gel strength from 2.642.674 g/s to 3.282, 874 g/s, folding test from 6.034,706 g/s to 21.113,346 g/s. For Thigh Part Nest: Increasing of Washing Solution Ratio significantly increased the WHC of surimi based product after thawing from 39,41% to 44,29%, WHC of boiled surimi based product from 56,43% to 63,39%, water content of surimi based product after thawing from 1,53% to 75,50%, gel strength from 1.942,890 g/s to 1.355,189 g/s, folding test from 0.130,079 g/s, to 14.807,769 g/s. Graphic of folding test showed that increasing of washing solution ratio increased gel elasticity properties from 1;2, 1:3, 1:4 on each meat part

    The aim of this research is to study the effects of the time of steaming corn and heating treatment on physicochemical and sensory properties of soy-corn milk. Level of the time of steaming corn were 15 minutes, 30 minutes, and 45 minutes while the method of heating soy-corn milk made with pasteurization and sterilization. The results showed that time of steaming corn affects total sugars, protein content, and colloidal stability of soy-corn milk. The longer time of steaming corn, the increased levels of total sugars, protein content, and colloidal stability of soy-corn milk occured. Heating treatment affects total dissolved solids, total sugar content, viscosity and colloidal stability of soy-corn milk. An open heating method of pasteurization produced higher total dissolved solids, total sugar content, viscosity and colloidal stability than those of sterilization method. The time of steaming corn and heating method of soy-corn milk has no effect on appearance and taste preferences

    Yoghurt is made from milk processing through fermentation by Lactic Acid Bacteria (LAB), Lactobacillus bulgaricus and Streptococcus thermophilus. Adding black mulberry’s juice can improve yoghurt’s functional characteristic through anthocyanin. Bioactive compounds was known unstable on storage and reportedly capable both to inhibit pathogen bacteria’s and stimulate LAB’s growth. The aim of this research is observe the effects of different proportion of fresh juice and cow’s milk, storage time and the interaction both of them on bioactive compounds and viability of LAB. This research used factorial Randomized Block Design (RBD) with two factors, proportion of fresh juice with fresh cow’s milk 5:95 (M1), 10:90 (M2), 15:85 (M3) % (v/v) and storage time 3 (L1), 10 (L2), 20 (L3) days with three replications. The parameters observed were total phenol, total flavonoid, anthocyanin content, total of LAB and pH as complement data. Data statistically analyzed by ANOVA test (Analysis of Variance) at α = 5% and continued with DMRT (Duncan's Multiple Range Test) at α = 5%. Used different proportion of fruit juice and storage time had significant effect on bioactive compounds and viability of LAB but there is no interaction both of them. The higher level proportion of fresh juice made amount of bioactive compounds increased and viability of LAB decreased. Increased storage time made bioactive compounds and viability of LAB decreased. The amount of bioactive compounds on black mulberry yoghurt after 20 days storage ranged from 49,20-99,14 µg GAE/g yoghurt, 101,91- 146,27 µg CE/g yoghurt, and 7,96-23,89 µg cya-3-glu/g yoghurt with ALT value ranged from 9,4804-9,5997 log cfu/mL and pH 3,877-3,961

    Functional properties application of legumes species that including mungbean is basely affected by natural protein and starch complex structure. Steaming become one of several treatments which capable to break complex structure of starch-protein in addition to gelatinize starch and denaturate protein. This become a base of research about the effect of steaming duration on functional properties of mungbean. The factor which will be researched is steaming of mungbean that consists of six levels those are 0 minute, 1 minute, 2 minutes, 3 minutes, 4 minutes, and 5 minutes. Applied parameters include protein solubility, water binding capacity, oil binding capacity, foam forming capacity and stability, emulsion forming capacity and stability. The result reported that best treatment in several parameters consist of protein solubility, emulsion capacity and emulsion stability unsteamed mungbean (0 minute of steaming), whereas best treatment for foaming capacity is 1 minute duration of steaming and best treatment for foaming stability is 5 minutes. The best treatment for water binding capacity and oil binding capacity parameters is 3 minutes duration of steaming

    Crackers is a popular food in Indonesia. Public appetite for eating crackers continues to increase, so diversification of crackers need to be develop with diversification crackers from mung bean.The purpose of this research is to determine the effect of the proportion between tapioca and mung bean flour on physicochemical and organoleptic properties of mung bean cracker and get the best treatment combination. The materials for mung bean cracker is tapioca and mung bean flour. The different proportion of tapioca and mung bean flour can be affect physicochemical and organoleptic properties of cracker. The design of the study is a single randomized group design, spesifically proportion of tapioca and mung bean flour which consists of six levels and was repeated four times, 9:1, 8:2, 7:3, 6:4, 5:5, and 4:6. The results showed significantly affect the water content of raw and fried crackers, expansion volume, oil absorbtion, fracture, crispness, and organoleptic (taste, color, crispness). The higher proportion of mung bean flour, the lower the moisture content of raw crackers, expansion volume, oil absorption, crispness, and the higher hardness, water content of fried crackers. The best treatment based on organoleptic properties is crackers with proportion of tapioca : mung bean flour at 8:2 (T8H2)

    Red rice and black glutinous rice contain high starch and satiety thus suitable for use as raw material for produce breakfast cereal flakes.Anthocyanin compounds found in red rice and black glutinous rice flakes can be damaged during the process. Stage of making a flake that can reduce levels of anthocyanins of red and black glutinous rice is boiling and drying. The design of the study is a randomized block design nested pattern, consisting of two factors. The first factor is the type of rice (the nest) namely red rice (M) and black glutinous rice (H). The second factor is boiling temperature (which is nested) are T1 (70°C), T2 (80°C) and T3 (90°C). Parameters tested the levels of anthocyanin content, total phenolic content and antioxidant activity. The data obtained were subsequently analyzed by ANOVA at α = 5%. If there is a real effect, then continued with LSD test with α = 5%. The test results showed that the difference in boiling temperatures is caused a decrease in the levels of anthocyanin black glutinous rice flake, total phenolic content of red rice flakes and black glutinous rice and ferric reducing capacity of red rice and black rice flakes. The difference in boiling temperature had no significant effect on levels of anthocyanin of red rice flakes and radical DPPH scavenging activity of red rice and black glutinous rice flakes. The best treatment are flake with 80°C boiling temperature (T1). Red and black glutinous rice flake with T1 treatment has anthocyanin content are 5,9±1,5 and 211,8±22,2 μg/g, total phenolic are 291,8±15,0 and 488,3±8,4 μg/g, ferric reducing activity are 3,9±0,1 and 4,9±0,3 mg/g and radical scavenging activity are 49,51±2,14% dan 46,73±1,44%

    Spicy dried minced goat meat in sheet form is one of the spicy dried meat type, which could be classified as intermediate moisture meat product. In order to improve the dietary fibre content of the product, a research on the utilization of young pawpaw (Carica papaya L) fruit in the production of spicy dried minced goat meat was conducted. The research results showed that the usage of 10 up to 30 % of young pawpaw fruit could increase the dietary fibre content of the spicy dried minced goat meat with the organoleptic properties still accepted by the panelists
