    Aktivitas Ekstrak Kasar Enzim Kolagenase dari Organ Dalam Ikan Malong (Congresox talabon) pada pH Berbeda

    Enzymes are biocatalysts that function as catalysts in biological functions. Collagenase enzymes have activities that can support product production. Enzyme activity for protein hydrolysis is influenced by several factors such as protein concentration, pH, temperature, substrate, inhibitor and activator. This study was aimed to determine the effect of differences in pH on the crude extract activity of the collagenase enzyme from the internal organs of malong fish. The study used a non-factorial completely randomized design, the treatments used were different pH (6.5, 7.5, and 8.5). This research consisted of several stages, namely sample preparation, extraction of internal organs to produce crude extract of the collagenase enzyme and test the activity of crude extract of the collagenase enzyme based on different pH. The analysis parameters was consisted of the proportion of fish yield, and the enzyme crude extract activity test at different pH. The results showed that malong fish has a proportion of meat 7,2 parts, bone 3,8, internal organs 1, skin 2,1. The yields of crude extract of collagenase enzyme pH 6.5, 7.5, and 8.5 were 60.83%, 64.09%, and 83.15%, respectively. The crude extract activity of collagenase enzyme from the internal organs of malong fish at pH 6.5, 7.5 and 8.5 was resulted in 0.293 U/ml, 0.5877 U/ml, and 0.7767 U/mL. The highest collagenase enzyme crude extract activity was produced at pH 8.5

    Beetroot plant or Beta vulgaris L. is one of the horticultural plants which is widely cultivated in various regions of Indonesia. It is because the advantage of the beet plant and its use as a natural red dye powder for food ingredients. Beetroot powder can be produced through the drying or withering method using a draying oven and the use of a drying agent to maintain the quality product during drying. This study aims to determine the effect of temperature treatment and drying time on betasianin,% water level,% yield, vitamin C and organoleptic tests (color and aroma) for the natural dye of beetroot powder. This research used a randomized block design with two (2) factors treatment with 4 replications in order to obtain 24 trials. The treatment factors used were (S) temperature (60C and 70C) and (T) drying time (10, 11, and 12 hours). The results of the research of the treatment interaction between temperature and drying time obtained the yield content of the average value was 13% with the water level for the material with the highest average value of 7% at 600C for 10 hours and the lowest was 5% at 700C for 12 hours. For the vitamin C content of beet powder obtained the highest average value on 1.35 mg at 600C for 10 hours. At 600C for 10, the highest betasianin content was 0.151 mg / L. From the organoleptic results, the preferred color of beet powder was at 600C (11 hours) and the preferred aroma was 700C (10 hours)

    Kajian Pembuatan MOL (Mikroorganisme Lokal) Spesifik dengan Variasi Jenis dan Konsentrasi Bahan Tambahan

    This study aims to determine the effect of type and concentration of additives in production of local microorganisms (MOL) on overall qualities (physical, chemical, sensory, and microbiological). The method used in this study was a factorial completely randomized design (CRD) consisting of two factors. The first factor was the type of additive (J) which consisted of 4 levels, namely rice (J1), soil (J2), leaf bokashi (J3), and leaf compost (J4). The second factor was the concentration of additives (K) which consisted of 2 levels, namely 7.5% (K1) and 10% (K2). The product was analysed total cell counts (TCC), pH, temperature, and organoleptic tests (hedonic test) on color and organoleptic (descriptive test) on aroma. The best MOL was J4K2 (combination between leaf compost and 10%). The J4K2 MOL had the following characteristics: TCC of 9.6x107 CFU / ml, pH value of 3.7, color hedonic test of 4.3 (preferred by panelists) and aroma descriptive test of 4.3 (tape aroma / medium acid)

    Skrining Fitokimia dan Aktivitas Antioksidan pada Kijing (Pylsbryoconcha Sp) dengan Pelarut Berbeda

    Kijing (Pilsbryoconcha sp) is a type of freshwater mussel that has 2 shells (Bivalvia), and its existence as a good source of animal protein at a relatively cheap price. The water of the Paku River is one of the kijing producers located in the Kampar Kiri sub-district Kampar Riau Province. The types of solvents used in the extraction process consist of n-hexane (non-polar), ethyl acetate (semi-polar) and methanol (polar). The purpose of this study was to determine the most suitable type of solvent to extract bioactive compounds. The parameters were yield, identification of active compounds and antioxidant activity. The results showed the highest yield of kijing was found using methanol (1.29%). The active compounds of kijing were alkaloids, steroids, flavonoids and phenolic. The methanol extract had a moderate antioxidant activity with an IC value of 215,62 ppm

    Naniarsik adalah bahan pangan berupa ikan ditambah beraneka bumbu, yang dengan cukup banyak air dididihkan dan dimasak dengan menggunakan api sedang secara konstan hingga bumbu meresap ke dalam ikan, dan meningggalkan cairan yang sangat sedikit. Bumbu yang ditambahkan terdiri dari beraneka rempah dan herbal, yang sebagian digiling halus, dicincang atau cukup dimemarkan. Selain menjadi penyedia zat gizi, bumbu naniarsik memiliki karakteristik fungsionalitas dalam menjaga kesehatan tubuh. Tulisan ini mengangkat potensi dari naniarsik sebagai pangan fungsional melalui penelusuran literatur terhadap rempah dan herbal yang digunakan sebagai bumbu naniarsik. Aspek-aspek fungsional yang terdata ternyata dapat menjaga dan meningkatkan sistem kekebalan tubuh ditambah dengan khasiat diantaranya seperti antioksidan, antiimflammatori, antivirus, dan anti mikroba. Di tengah pandemi saat ini, ketika obat yang dapat secara spesifik mematikan virus SARS-CoV-2 masih belum ditemukan, maka masyarakat perlu manjaga sistem immune tubuh sebagai suatu strategi untuk mencegah penyakit infeksi tersebut, berbarengan dengan tindakan-tindakan pencegahan secara fisik dan vaksinasi.     Nowadays, consumers tend to search for additional source of protein and energy for their dietary consumption, for instance from legumes and nuts. This trend is getting more common since the increase case of lactose intolerance. This study aims to study the effect of the formulation of materials consisting of a mixture of two or three types of nuts and the CMC (Carboxy Methyl Cellulose) on the quality characteristics of plant milk and consumer preferences towards the produced plant milk. The method used in this study was a factorial completely randomized design (FCRD). This study were used combination of two or three types of beans, namely soybeans (KK), peanuts (KT), green beans (KH). The first factor was formulation of raw materials (K1 = 50% KK: 50% KT: 0% KH, K2 = 50 % KK: 0% KT: 50% KH, K3 = 0% KK: 50% KT: 50% KH, and K4 = 33.3% KK: 33.3% KT: 33.3% KH). In addition, CMC was used as a stabilizer by treating different concentrations of CMC (C1 = 0.20% and C2 = 0.40%). Anova continued with DMRT0.05determined that plant milk with the best treatment is K1C2 with the formulation of 50% peanut: 50% soybean and the addition of 0.4% CMC. The KIC2 treatment had values: protein content 3.87%, fat content 14.74%, pH 6.62, total dissolved solids 11.47oBrix. For consumer acceptance with RATA (Rate All That Apply) method, researchers found out that K1C2 has milky white color (89% of respondents), peanut aroma flavour (78% respondents), sweet (48%) and savory (37%) taste, thick and homogenous texture (44% respondents) with overall hedonic liking 3.11 or neutral. Protein content, fat content, and pH of vegetable milk meet the quality requirements of soy milk based on SNI No. 01-3830-1995

    Active Packaging System from Activated Oil Palm Shells Charcoal Shaped Sachet on Cassava Chips

    Cassava chips are a type of snack that is fried and prone to rancidity if stored for a while. Cassava chips are added to the material that can adsorb gases, such as oxygen and water vapor, to reduce the occurrence of rancidity using a sachet-shaped adsorbent material. Activated charcoal is one of the gas adsorbents. Activated charcoal used is activated charcoal made from oil palm shells and activated with 20% phosphoric acid. This study aims to analyze the decrease in the quality of cassava chips with an active packaging system during storage for 30 days at 45oC. A total of 30 g cassava chips were packed with a standing pouch in polypropylene type and added activated charcoal from oil palm shells activated by 20% phosphoric acid as much as 1.5 g or 0.75 g which was packed with metalized aluminum plastic or LDPE plastic in the form of sachets. Storage of cassava chips with an active packaging system for 30 days and stored at a temperature of 45oC with a humidity of about 60% and observations are every 3 days in aroma and texture scoring test, moisture content, free fatty acid levels, fat content, and peroxide number. During storage from day 0 to day 30, the cassava chips have decreased the quality of the aroma from typical cassava chips to slightly rancid and the texture from crisp to somewhat not crisp. Moisture content, free fatty acid levels, and peroxide numbers during storage have increased. The fat content has decreasedduring storage. Based on this, cassava chips with the addition of 1.5 g activated charcoal and packaged with metalized aluminum plastic become the best active packaging system

    Lactic acid bacteria which have the potential as probiotic agents are often used in the manufacture of functional food products and one of them is fermented drink. The research objective was to utilize isolate of Lactobacillus plantarum 1 RN2-53 in the manufacture of melon juice-based fermented drinks and to acquire the best concentration of sucrose addition for the quality of fermented drinks. The study used a randomized complete design which variations in the addition of sucrose treatment, namely without the addition of sucrose as a control and the addition of sucrose 2, 4, 6, and 8%, respectively. Each treatment was repeated three times. The data obtained were analyzed statistically using analysis of variance with SPSS version 26 software. The results showed that variations in the addition of sucrose had a significant effect on the total lactic acid, total solids, taste and overall hedonic test, but had no significant effect on the pH value, total lactic acid bacteria, color and aroma of fermented drinks. The addition of 4% sucrose resulted in a better fermented drink with a pH value of 3.74; total lactic acid was 0.510%; total lactic acid bacteria was 8.477 log CFU/ml and total solids was 5.99%. Descriptively fermented drinks have a greenish white color, lack a distinctive fermented aroma, taste of sweet and sour, overall somewhat favored by the panelists

    Aktivitas Antioksidan Kulit, Kitin dan Kitosan Teripang Pasir (Holothuria scabra)

    Sea cucumber (H. scabra) has bioactive compounds that are useful as antioxidant. Antioxidant is chemical compound that can donate one or more electrons to free radical. Free radical is reactive compound that have unpaired electrons in the outer shell so it need antioxidant to stabilize. This study aims to determine the content of bioactive compounds and the antioxidant activity on the skin, chitin and chitosan of H. scabra. The analysis parameters observed were bioactive compounds and the antioxidant activity. The results showed that the phytochemical components in skin hexane extract were alkaloids, flavonoids, saponins and steroids/triterpenoids. Chitin contained alkaloids, flavonoids, and saponins. Chitosan contained alkaloid compounds, flavonoids and saponins. IC50 of skin hexane extract and chitin were 1445.05 ppm and 620.07 ppm respectively and included in the very low category. IC50 of chitosan was 235.37 ppm and included in the moderate category. Chitosan had the highest antioxidant activity

    Pengaruh Penambahan Tepung Rumput Laut (Eucheuma sp.) Terhadap Mutu dan Karakteristik Amplang Ikan Tongkol (Euthynnus affinis)

    Seaweed flour is a potential source of dietary fiber expected to improve the quality of fishery products. The purpose of this study was to determine the effect of addition of seaweed flour (Eucheuma sp.) on the quality and characteristics of tuna fish amplang. The research method was using a non-factorial completely randomized design (CRD) consisting of five treatments of varied amount of seaweed flour added (0, 0.5%, 1%, 1.5%, and 2% from the total dough weight). The variables to assess the quality were the organoleptic quality and characteristics (appearance, aroma, taste and texture), swelling degree, and proximate content. The results showed that the addition of seaweed flour can improve the proximate composition of fish amplang, especially the increase in crude fiber content. The addition of seaweed flour has an optimum concentration point of 1% to produce the best tuna fish amplang with the characteristic of bright colors, clean, smooth surface, not cracked, savory taste and a crunchy and dense texture. The score of the appearance was 8.3; aroma was 7.7, taste 8.2, texture 8.5, and the swelling degree was 384%. The best product was containing water 1.14%, ash 3.82%, protein 39.59%, fat 12.92%, and fiber 5.79%. The product quality assessed was met the quality requirements as regulated by Indonesia National Standard for fish amplang (SNI 7762:2013)
