Components that contribute to the taste and palatability of dried bonito dashi
Get PDFTo identify the ingredients that are indispensable for reproducing taste and palatability of dried bonito dashi, we tested effects of 27 representative ingredients (low-molecular weight taste substances) that were included in 2% dried bonito dashi. These ingredients were added to the 2% dried bonito dashi to test if they showed equivalent taste and palatability to 4% dashi. As a result, lactic acid markedly contributed to the taste intensity. However, other components showed effects neither alone nor in combination. On the other hand, palatability could not be reproduced by the combination of any ingredients. Olfactory deprivation by a nose clip did not affect any results. These results suggested that contribution of unknown components other than the 27 small taste substances and olfactory ones are important for reproducing taste and palatability of dried bonito dashi.departmental bulletin pape

Get PDF[概要]本座談会では, 総合社会学部の6名の教員により「家族・情報・コミュニケーション」をテーマに学際的な議論が展開された. 話題は, 近代家族の成立や性別役割分業の変容から始まり, 少子化や晩婚化, 地域コミュニティの希薄化など, 現代社会が直面する諸課題へと展開した, また, 動物行動学の知見からニホンザルの母系社会を分析し, 人間社会における家族形態との比較考察も行われた. さらに, 家族と地域社会の関係性が取り上げられ, 阪神・淡路大震災の経験や新しい地域コミュニティの構築の事例として, 「同じ釡の飯を食う」という伝統的な共同体感覚を現代に再解釈するプロジェクトや, 世代間交流の取り組みが紹介され, 新たな社会的紐帯の可能性が示された. 教育実践面では, 「現代の結婚」をテーマとした演習が報告され, 学生たちが主体的に考察を深め, 家族や結婚に関する多様な価値観を引き出す工夫について紹介された. 本座談会を通じて, 家族のあり方が社会変動と密接に関連しながら変化している実態が明らかになると同時に, 地域社会や他者とのつながりをいかに再構築していくかという現代的課題が提起された.令和7年1月20日開催専攻(齋藤): 家族社会学

Get PDF【要旨】本研究は, 経済的・社会的発展, イノベーション, そして持続可能性の達成に向けた行動を促進する上で, ジェンダーに関連した会計と報告(GAR) の可能性を評価するものである。本研究では, ジェンダー平等と女性のエンパワーメントに関する企業報告における最近の国内外の制度的慣行をレビューし, その特徴と課題を明らかにし, GAR の役割について議論する。さらに, 本研究は, 企業の会計・報告制度に関連したジェンダー関連開示の制度的実践が, ジェンダー平等に関するステークホルダーの認識と行動を変容させ, ジェンダー平等に対する組織の説明責任を向上させる可能性があることを強調する。GARの可能性を評価することで, 本研究は社会環境会計の文献に貢献し, 会計とジェンダーの両分野の人々にアピールするであろう。This study assesses the potential of gender-related accounting and reporting (GAR) in promoting economic and social development, innovation, and action towards achieving sustainability. This study reviews recent national and international institutional practices in corporate reporting on gender equality and women's empowerment, identifies their characteristics and challenges, and discusses the role of GAR. Additionally, this study highlights that the institutional practices of genderrelated disclosure in connection with corporate accounting and reporting systems can potentially transform stakeholders' perceptions and actions regarding gender equality and improve organisational accountability for gender equality. By assessing the potential of GAR, this study contributes to the social and environmental accounting literature and may appeal to people in both accounting and gender fields.departmental bulletin pape
