    Effect of olive oil phenolic compounds on the aroma release and persistence from O/W emulsion analysed in vivo by APCI-MS

    The effect of the presence of virgin olive oil (VOO) phenolic compounds was studied during the in-vivo consumption of an olive oil-in-water (O/W) food emulsion, assessed by APCI-MS. VOO phenolic compounds were present at 593 mg kg−1. Four volatile compounds, i.e. ethyl acetate, hexanal, hexanol and linalool, were monitored based on their physicochemical characteristics and their aroma impact. Olive O/W emulsions were stabilized by whey protein isolate (WPI) and xanthan gum. Our results suggested that ethyl acetate and hexanal have a “salting out” effect in the presence of VOO phenolics at swallowing of emulsion. Among the volatiles investigated, hexanal showed the highest release. The persistence in the breath was higher for linalool only, potentially due to its higher hydrophobicity. This study could be beneficial in the formulation of new functional foods to enhance aroma release and persistence in the presence of natural phenolic compounds

    Die vorliegende Bachelorarbeit analysiert den aktuellen Stellenwert von Film- und Serienan-geboten in Öffentlichen Bibliotheken Deutschlands. Besonderer Fokus liegt dabei auf Video-on-Demand Angeboten, einer Filmdistributionsform, die es erlaubt, Filme und Serien zeit- und ortsunabhängig abspielen zu können. Die in vier Abschnitte gegliederte Arbeit soll zunächst einen allgemeinen Überblick zu Film- und Serienangeboten in Öffentlichen Bibliotheken liefern und aktuelle Ausleihzahlen präsentieren, ehe der zweite Teil sich dem Thema Video-on-Demand widmet. Dieser Teil soll geschichtliche und technische Hintergründe beschreiben, die Rechtslage klären und die aktuelle Bedeutung von Video-on-Demand-Angeboten auf dem Vi-deo-Markt erläutern. Die Teile drei und vier befassen sich schließlich mit Video-on-Demand-Angeboten für Bibliotheken. Neben einer aktuellen Marktanalyse, die sowohl nationale als auch internationale Streamingdienste vorstellt, soll eine detaillierte Beschreibung des deutschen Video-on-Demand-Portals filmfriend erfolgen.This bachelor thesis analyzes the current status of film and series offerings in public libraries in Germany. Special focus is on video-on-demand offers, a film distribution form that allows films and series to play time and place independent. The work, which is divided into four sections, will initially provide a general overview of film and series offerings in public libraries and current Number of loans.     An Amphiphilic Pyridinoyl-hydrazone Probe for Colorimetric and Fluorescence pH Sensing

    A new pH sensor based on a substituted aroylhydrazide with a flexible side chain and a terminal trimethyl ammonium group (PHA+) was designed and synthesized. The terminal quaternary ammonium guarantees excellent solubility in water. At the same time, the probe is very soluble in hydrophobic envirornments. The pyridinoyl-hydrazone moiety acts as the pH-sensitive fluorophore/chromophore probe. Extensive physicochemical characterization has been performed on the bromide salt PHABr. DFT calculations, based on single-crystal X-ray data, permitted to rationalize the optical behavior. Molecular dynamics simulations permitted to clarify the mode of interaction with lipid membrane. The ability of the probe to change color and fluorescence in response to different pH and media of different polarity has been investigated. PHABr shows a remarkable pH-dependent behavior in both absorption and fluorescence spectra with high sensitivity and strong on-off switch effect at neutral pH, perceptible even to the naked eye

    Long-lasting anti-inflammatory and antinociceptive effects of acute ammonium glycyrrhizinate administration: Pharmacological, biochemical, and docking studies

    The object of the study was to estimate the long-lasting effects induced by ammonium glycyrrhizinate (AG) after a single administration in mice using animal models of pain and inflammation together with biochemical and docking studies. A single intraperitoneal injection of AG was able to produce anti-inflammatory effects in zymosan-induced paw edema and peritonitis. Moreover, in several animal models of pain, such as the writhing test, the formalin test, and hyperalgesia induced by zymosan, AG administered 24 h before the tests was able to induce a strong antinociceptive effect. Molecular docking studies revealed that AG possesses higher affinity for microsomal prostaglandin E synthase type-2 compared to type-1, whereas it seems to locate better in the binding pocket of cyclooxygenase (COX)-2 compared to COX-1. These results demonstrated that AG induced anti-inflammatory and antinociceptive effects until 24-48 h after a single administration thanks to its ability to bind the COX/mPGEs pathway. Taken together, all these findings highlight the potential use of AG for clinical treatment of pain and/or inflammatory-related diseases
