Quantitative evaluation of cheese fondue's stringness
Bulletinメルトチーズの曳糸(えいし)性はその種類によって異なり,食品業界の現場からは定量的な評価が望まれている。しかしメルトチーズは乳脂肪が液状になってチーズ表面に滲出してくるためにレオロジー測定が困難である。そこで本研究ではメルトチーズに代わりモデルチーズフォンデュを用いて応力制御型レオメータにより伸長変形挙動を解析した。エメンタール,モッツアレラ,ラクレットおよびゴーダチーズを配合したモデルフォンデュを平行平板フィクスチャーに挟み,フィクスチャーを法線方向に1mm/s の速度で引き上げ,その際の法線荷重の時間発展カーブを得た。法線荷重は伸長後最大値を経て指数関数的に減衰することが観察された。そこでこの測定データをデバイ型の指数関数で解析した。曳糸(えいし)性を評価するために新たに提案されたパラメータ,すなわち最大法線荷重を減衰の時定数で除したelongation ability(EA)は,感覚的な曳糸(えいし)性をよく定量化できることが明らかになった。The stringiness of melted cheese depends on its type, necessitating a quantitative evaluation by the food industry. However, measuring the rheological properties of melted cheese is difficult because milk fat exudes onto the surface of cheese in liquid form. In this study, instead of melted cheese, a model cheese fondue was used to analyze elongation and deformation behaviors using a stress-controlled rheometer. The model fondue containing Emmental, Mozzarella, Raclette, and Gouda cheeses was placed between parallel plate fixtures, which were pulled up at a speed of 1 mm/s in the normal direction; then, a time development curve of the normal force was obtained. The normal force was observed to decay exponentially after reaching the maximum value following elongation. Therefore, the measured data were analyzed using a Debye-type exponential function. The proposed parameter for evaluating stringiness, the elongation ability (EA), which is the maximum normal force divided by the time constant of decay, was found to provide a good quantification of sensory stringiness.departmental bulletin pape

Effects of information sharing about sika deer on local residents' awareness of the countermeasures in the Kiritappu peninsula, Hokkaido, Japan
BulletinIt is important to build consensus through discussion with a wide range of stakeholders to address wildlife management issues. The purpose of this study was to evaluate the effects of information sharing and discussion through a workshop on local residentsʼ willingness to take countermeasures against deer-related problems. Recently, damage caused by sika deer (Cervus nippon yesoensis) to the local fishing industry and residentsʼ daily lives has increased in the study area, the Kiritappu Peninsula. We conducted a questionnaire survey of residents in the area. We asked about deer-related damage, willingness to take countermeasures, and opinions on capturing deer. A workshop was subsequently held with local stakeholders. In the workshop, information such as the deer population and the results of the questionnaire survey were shared, and future measures were discussed. We conducted questionnaires before and after the workshop for comparison. We received 51 responses to the questionnaire survey. Two of the thirteen respondents who reported not currently implementing damage control measures said that they do not need such measures. The other eleven residents felt that it was necessary to implement some kind of countermeasure, suggesting that there were some obstacles preventing its implementation. Fourteen people participated in the workshop, and future measures were suggested. During the workshop, some participants reported that they learned about ongoing surveys aimed at assessing habitat status and became aware of the current state of deer hunting. Four respondents changed their opinions on using capture as a future measure after the workshop. I believe that sharing information and perspectives among residents through workshops may increase interest in deer-related damage countermeasures.departmental bulletin pape
