The impact of foliar application of inactive yeasts on the chemical composition of 'Babić crni' grape variety
Vinova loza, iako nije jedna od najrasprostranjenijih voćnih vrsta, ima značajnu važnost za Republiku Hrvatsku. Hrvatska vina postaju sve prepoznatljivija u posljednje vrijeme, što ukazuje na potencijalnu buduću ekonomsku važnost vinogradarstva u Hrvatskoj. Posljednjih godina sve više se ističu problemi s fenolnom zrelošću grožđa, što se uglavnom pripisuje klimatskim promjenama. Polifenolni sastav grožđa od izuzetne je važnosti, prvenstveno zbog utjecaja određenih polifenola na senzorne karakteristike vina. U potrazi za održivim i ekološki prihvatljivim rješenjima, u posljednjih nekoliko godina pojavili su se proizvodi koji sadrže inaktivne suhe kvasce s elicitorskim učincima, što potiče stvaranje polifenola. Cilj ovog istraživanja bio je ispitati utjecaj inaktivnih kvasaca vrste Saccharomyces cerevisiae na polifenolni sastav grožđa hrvatske autohtone sorte vinove loze Babić. Istraživanje je provedeno na području uzgoja Jadrtovac – Donje polje a analize su provedene na Agronomskom fakultetu u Zagrebu. Istraživani parametri su: masa grozdova, sadržaj šećera, ukupna kiselost, pH vrijednost, koncentracija polifenola i organskih kiselina te sadržaj dušika u moštu. Istraživanje je pokazalo da tretman inaktivnim kvascima „LalVigne® AROMA“ može značajno utjecati na svojstva grožđa sorte 'Babić', što sugerira potencijal za poboljšanje kvalitete vina. U istraživanju su utvrđene značajne razlike kod tretiranih i kontrolnih uzoraka u masi grozdova, sadržaju dušika u moštu te sadržaju pojedinačnih polifenola u kožicama grožđa. U istraživanju nisu utvrđene značajne razlike u ukupnoj kiselosti, realnoj kiselosti, sadržaju organskih kiselina i sadržaju šećera u moštu.Grapevine, although not one of the most widespread fruit species, holds significant importance for the Republic of Croatia. Croatian wines have become increasingly recognizable in recent times, indicating the potential future economic significance of viticulture in Croatia. In recent years, problems with phenolic ripeness of grapes have become more prominent, primarily attributed to climate change. The polyphenol composition of grapes is of exceptional importance, mainly due to the impact of certain polyphenols on the sensory characteristics of wine. In the search for sustainable and environmentally friendly solutions, products containing inactive dry yeasts with elicitor effects, which stimulate the formation of polyphenols, have emerged in recent years. The aim of this study was to examine the impact of inactive yeasts of the species Saccharomyces cerevisiae on the polyphenol composition of the indigenous Croatian grapevine variety 'Babić crni'. The research was conducted in the growing area of Jadrtovac – Donje polje, and the analyses were carried out at the Faculty of Agriculture in Zagreb. The investigated parameters included: cluster mass, sugar content, total acidity, pH value, concentration of polyphenols and organic acids, and nitrogen content in the must. The study showed that treatment with inactive yeasts "LalVigne® AROMA" can significantly affect the properties of the 'Babić crni' grape variety, suggesting potential for improving wine quality. Significant differences were found between treated and control samples in cluster mass, nitrogen content in the must, and the content of individual polyphenols in grape skins. The study did not find significant differences in total acidity, actual acidity, organic acid content, and sugar content in the must
Seasonal activity of wild boar on the bilges
Sezonska aktivnost divlje svinje (Sus scrofa) ovisi o različitim vanjskim i unutarnjim
čimbenicima, a temperatura, svjetlo i ljudska aktivnost su jedni od glavnih čimbenika
aktivnosti. Cilj je ovoga rada bio utvrditi sezonsku aktivnosti divljih svinja na kaljužištima te
odrediti koju vrstu drveća i u koje godišnje doba preferiraju. Istraživanje je provedeno na
području lovišta III/29 ,,Prolom“. Korišteno je 20 senzornih kamera koje su bile postavljene na
kaljužištima i stablima za češanje. Istraživanje je provedeno od ožujka 2023. godine do travnja
2024. godine, u tom razdoblju je zabilježeno 1810 pojavljivanja divljih svinja, tijekom 4228
dana. Najveća aktivnosti divljih svinja zabilježena je između 17 i 21 sat te postoji mala
promjena dnevne aktivnosti tijekom ljetnih mjeseci. Divlje svinje preferiraju stabla za češanje
tijekom proljeća i jeseni te preferiraju crnogorične vrste stabala kao što su bor i smreka.
Istraživanje je pokazalo veliku primjenu i učinkovitost korištenja senzornih kamera te rezultate
sezonske aktivnosti divljih svinja na kaljužištima i njihove preferencije kod korištenja stabala
za češanje.The seasonal activity of the wild boar (Sus scrofa) depends on various external and internal
factors, temperature, light and human activity being one of the main factors of the activity.
So, the goal of this work was to determine the seasonal activity of wild boars on bilges. Also,
determine which type of trees they prefer and in which season. The research was conducted
in the hunting area III/29 "Prolom". 20 sensor cameras were used, which were placed on bilges
and scratching trees. The research lasted from March 2023 to April 2024, during which time
1,810 occurrences of wild boars were recorded over 4,228 days. The highest activity of wild
boars was between 5 and 9 p.m. at night, and there is little change in daily activity during the
summer months. Feral hogs prefer trees to scratch during spring and fall and prefer coniferous
tree species such as pine and spruce. The research showed the great application and
effectiveness of the use of sensor cameras, as well as the results of the seasonal activity of
wild boars on bilges and their preferences when using trees for scratching
Effects of short term suplimentation of magnesium on quality of meat of young cattle
Cilj ovog istraživanja bio je ispitati utjecaj kratkoročnog dodavanja magnezija u obroku
junadi na kvalitetu mesa. Ispitivani su pokazatelji boje, pH i kapacitet zadržavanja vode
mesa, uz primjenu magnezija u dozi od 20 grama po jedinki tijekom posljednjih 14
dana tova. Pokus je proveden na 12 jedinki, podijeljenih u kontrolnu skupinu i skupinu
tretiranu magnezijem. Rezultati su pokazali da dodatak magnezija nije imao statistički
značajan utjecaj na boju mesa ni na pH vrijednost u m. supraspinatusu i m.
infraspinatusu. Ovi rezultati sugeriraju da kratkoročna primjena magnezija nema
značajan utjecaj na ispitivane pokazatelje kvalitete mesa junadi, hranjene obrocima
baziranih na sliaži cijele biljke kukuruza.The aim of this study was to examine the effect of short-term magnesium
supplementation on beef quality. Parameters such as meat color, pH, and waterholding
capacity were analyzed, with magnesium applied at a dose of 20 grams per
animal during last 14 days of fattening stage. The experiment was conducted on 12
animals, divided into a control group and a magnesium-treated group. Results
indicated that magnesium supplementation had no statistically significant effect on
meat color or pH values of m. supraspinatus i m. infraspinatus. These findings suggest
that short-term magnesium supplementation does not significantly affect the evaluated
meat quality parameters of beef, fed with rations based on whole corn plant silage
Identification of the phytochemical profile of sweet potato leaves (Ipomoea batatas L.)
Batat (Ipomoea batatas L.) je već dobro poznata, često korištena i jedna od važnijih
povrtnih prehrambenih kultura. Zbog svoje karakteristične nutritivne vrijednosti i bogatog
sastava bioaktivnih spojeva sekundarnog zadebljanja korijena, batat osim hranjive vrijednosti
ima i brojne funkcionalne, a zbog čega se smatra vrlo vrijednom namirnicom i sa zdravstvenog
gledišta. Primarni cilj uzgoja ove vrste je sekundarno zadebljanje korijena koji se najčešće
koristi u kulinarstvu i prehrambenoj industriji, no manje je poznato da je nadzemni dio biljke,
odnosno list isto tako jestiv, prilikom čega su dokazana i brojna pozitivna djelovanja na ljudsko
zdravlje. Proizvođači najčešće nadzemni dio batata nakon vađenja korijena bacaju, koriste za
kompost ili kao stočnu hranu usprkos tome što postoji značajan potencijal za dodatno
iskorištenje lista batata, prvenstveno kao lisnatog povrća, ali i u pripremi različitih dodataka
prehrani, kao na primjer sušeni list koji se može koristiti kao vodeni infuz. Stoga je i cilj ovoga
diplomskog rada bio identificirati sadržaj specijaliziranih metabolita lista i utvrditi funkcionalni
potencijal lista batata. Za potrebe navedenog, analiziran je list triju sorti batata: bijelog,
narančastog i ljubičastog, a prilikom čega je određen sadržaj: ukupne suhe tvari, askorbinske
kiseline, ukupnih fenola (flavonoida i neflavonoida), fotosintetskih pigmenata (klorofila a,
klorofila b, ukupnih klorofila i ukupnih karotenoida) i antioksidacijski kapacitet. Prema
rezultatima istraživanja najveće vrijednosti sadržaja ukupne suhe tvari (16,46 %), askorbinske
kiseline (54,86 mg/100 g), ukupnih polifenola (576,20 mg/100 g svježe tvari) i ukupnih
flavonoida (284,01 mg/100 g svježe tvari) utvrđene su za list ljubičaste sorte batata. Prema
rezultatima sadržaja analiziranih fotosintetskih pigmenata značajno više vrijednosti klorofila a,
ukupnih klorofila i ukupnih karotenoida utvrđene su u listu ljubičaste sorte batata (0,99 mg/g;
1,45 mg/g; 0,69 mg/g), dok je najviši sadržaj klorofila b utvrđen u listu bijele (0,45 mg/g) i
ljubičaste (0,46 mg/g) sorte batata. Analizom antioksidacijskog kapaciteta listova triju sorti
batata, najveće vrijednosti prema FRAP metodi utvrđene su za list bijele i ljubičaste sorte batata.
Može se zaključiti da je nadzemni dio batata iznimno vrijedna sirovina koja se ne bi trebala
odbacivati već iskoristiti u svježem ili prerađenom obliku zbog bogatstva bioaktivnih spojeva
iznimno vrijedne nutritivne vrijednosti.The sweet potato (Ipomoea batatas L.) is already well known, widely used and one of
the most important plant food crops. Due to its characteristic nutritional value and the rich
composition of bioactive compounds of the secondary root thickening, the sweet potato has
numerous functional properties in addition to its nutritional value, which is why it is considered
a very valuable food from a health point of view. The primary aim of cultivating this species is
the secondary thickening of the root, which is most commonly used in the culinary and food
industry. However, what is less known is that the above-ground part of the plant, i.e. the leaf,
is also edible, where numerous positive effects on human health have been demonstrated.
Growers usually discard the above-ground part of the sweet potato after removing the roots, or
use it for compost or as animal feed, although there is significant potential for additional use of
the sweet potato leaf, mainly as a leafy vegetable, but also for the preparation of various food
supplements, such as dried leaves that can be used as a water infusion. The aim of this work
was therefore to determine the content of specific leaf metabolites and the functional potential
of sweet potato leaves. For this purpose, the leaves of three sweet potato varieties were
analyzed: white, purple and orange. The content of total dry matter, ascorbic acid, total phenols
(flavonoids and non-flavonoids), photosynthetic pigments (chlorophyll a, chlorophyll b, total
chlorophyll and total carotenoids) and antioxidant capacity were determined. According to the
research results, the highest content of total dry matter (16.46%), ascorbic acid (54.86 mg/100
g fw), total polyphenols (576.20 mg/100 g fw) and total flavonoids (284.01 mg/100 g fw) was
determined for a leaf of the purple variety of sweet potato. According to the results of the
content of photosynthetic pigments analyzed, significantly higher levels of chlorophyll a, total
chlorophyll and total carotenoids were found in the leaves of the purple sweet potato variety
(0.99 mg/g; 1.45 mg/g; 0.69 mg/g), while the highest content of chlorophyll b was determined
in the leaves of the white (0.45 mg/g) and purple (0.46 mg/g) sweet potato varieties. When
analyzing the antioxidant capacity of the leaves of three sweet potato varieties, the highest
values were determined using the FRAP method for the leaves of the white and purple sweet
potato varieties. It can be concluded that the aerial part of the sweet potato is an extremely
valuable raw material that should not be thrown away, but used in fresh or processed form, as
it contains a wealth of bioactive compounds with extremely valuable nutritional value
Revitalization of the brownfield area of the Dioki factory on Žitnjak
U doba globalizacije i tehnološkog napretka, napušteni industrijski kompleksi valoriziraju se u svrhu prenamjene. U Hrvatskoj važnost ovih prostora nije prepoznata te kao takvi propadaju. Industrijska baština važna je za razumijevanje urbanog razvoja i identiteta gradova, ona obuhvaća arhitektonske, krajobrazne i društvene aspekte. Rad se bavi analizom povijesnih karata i trenutnog stanja šireg urbanog prostora, transformacijama industrijskih zona, s posebnim naglaskom na industrijsku zonu Žitnjak u gradu Zagrebu. Prikupljanjem i analizom podataka iz različitih izvora, istražuje se povijest, trenutno stanje i budući potencijali za razvoj zone, uz usporedbu s međunarodnim praksama revitalizacije.
Cilj rada je ukazati na važnost zaštite industrijske baštine, osvijestiti značaj zelenih koridora u urbanoj matrici, s naglaskom na integraciju održivog (ekološkog) oblikovanja i očuvanja kulturno-povijesnih vrijednosti. Rad donosi moguće smjernice za revitalizaciju brownfield područja, formiranjem novih elemenata u prostoru koji grade novi identitet mjesta.In the age of globalization and technological progress, abandoned industrial complexes are valorized for the purpose of conversion. In Croatia, the importance of these spaces is not recognized, as such they are falling into disrepair. Industrial heritage is important for understanding urban development and the identity of cities, it encompasses architectural, landscape, and social aspects. The work deals with the analysis of historical maps the current state of the wider urban space, and transformations of industrial zones, with a special emphasis on the Žitnjak industrial zone in the city of Zagreb. By collecting and analyzing data from different sources, the history, current state, and future potentials for the development of the zone are investigated, along with a comparison with international revitalization practices.
The purpose of this paper is to point out the importance of protecting industrial heritage by showcasing the importance of green corridors in the urban matrix and raising awareness regarding the issue, all with an emphasis on the integration of sustainable (ecological) design and the preservation of cultural and historical values. This work focuses on and elaborates possible guidelines for the revitalization of brownfield areas, by forming new elements at those locations with the goal of building a new identity of the space
Tank or Charmat method in sparkling wines production
Tankovska, Charmat ili metoda Martinotti, revolucionirala je proizvodnju pjenušavih
vina korištenjem tlačnih spremnika za sekundarnu fermentaciju. Razvio ju je Federico
Martinotti, a usavršio Eugène Charmat. Ova tehnika je učinkovita i isplativa, proizvodi
slijediva, kvalitetna vina kao što su Prosecco i Sekt. Tehnološki napredak i prakse održivosti
dodatno su pridonijeli njezinom uspjehu, a prilagodljivost metode osigurava kontinuiranu
relevantnost na globalnom tržištu vina.The tank, Charmat, or Martinotti method, revolutionized sparkling wine production by
using pressurized tanks for secondary fermentation. Developed by Federico Martinotti and
refined by Eugène Charmat, this technique is efficient and cost-effective, producing
consistent, quality wines like Prosecco and Sekt. Technological advancements and
sustainability practices have further enhanced its appeal. The method's adaptability ensures
its continued relevance in the global wine market
Conceptual design for the development of the lake in the municipality of Stupnik
U ovome radu predloženo je idejno krajobrazno rješenje jezera Jakšina u općini Stupnik koje se nalazi na zapadnom rubu naseljenog djela općine te je sama po sebi jedna od nekoliko gravitacijskih točaka, ali budući da nije uređena postoji potencijal da se lokacija nadogradi sa novim sadržajem te tako privuće još veći broj korisnika. U tu svrhu provedene su višekriterijske inventarizacije i analize šireg i užeg obuhvata a na temelju njih formiran je projektni program kao i smjernice uređenja prostora. Sukladno s time izrađena su varijantna rješenja obuhvata na razini dijagrama i konceptualnih skica. U idejnom rješenju, osnovna prostorna i krajobrazna nadogradnja već postojećim kvalitetama prostora je šetnica uz koju se nižu edukativni i boravišni sadržaji te odmorišne zone uklopljene u prirodni ambijent.In this paper, a conceptual landscape design for Lake Jakšina in the municipality of Stupnik is proposed, located on the western edge of the populated area of the municipality. The lake is one of several gravitational points, but since it is not developed, there is potential to enhance the location with new facilities, thereby attracting a larger number of users. For this purpose, multi-criteria inventories and analyses of the broader and narrower areas were conducted, based on which a project program and guidelines for the area development were formulated. Accordingly, alternative solutions for the area were developed at the level of diagrams and conceptual sketches. In the conceptual design, the main spatial and landscape enhancement of the existing qualities of the area is a promenade accompanied by educational and residential facilities, as well as rest areas integrated into the natural environment
Application of modern techniques for permanent crop establishment
Rad istražuje važnost trajnih nasada u suvremenoj poljoprivredi, s posebnim naglaskom na njihovu ulogu u održivoj poljoprivredi. Trajni nasadi, poput voćnjaka, vinograda i maslinika, predstavljaju poljoprivredne površine zasađene višegodišnjim biljkama koje nakon sadnje ostaju na istom mjestu dugi niz godina i redovito donose prinos bez potrebe za ponovnom sadnjom. U radu se razmatraju suvremene tehnike u postavljanju novih trajnih nasada, uključujući analizu tla, odabir sadnog materijala, primjenu mehanizacije, precizne i pametne poljoprivredne prakse te ulogu genetskog inženjeringa i senzorske tehnologije. Pored toga, analizira se potreba za investicijama u trajne nasade te naglašava važnost korištenja stručne pomoći i naprednih tehnoloških rješenja kako bi se osigurala dugoročna produktivnost i održivost nasada.The paper explores the importance of permanent crops in modern agriculture, with a special emphasis on their role in sustainable agriculture. Permanent crops, such as orchards, vineyards, and olive groves, are agricultural areas planted with perennial plants that remain in the same place for many years after planting and regularly yield without the need for replanting. The paper discusses modern techniques for establishing new permanent crops, including soil analysis, selection of planting material, mechanization, precision and smart agricultural practices, and the role of genetic engineering and sensor technology. Additionally, it analyzes the need for investments in permanent crops and emphasizes the importance of utilizing expert assistance and advanced technological solutions to ensure the long-term productivity and sustainability of the crops
Wine consuption in the Republic of Croatia
Vino, kao napitak s bogatom poviješću i kulturnim značajem diljem svijeta, kontinuirano privlači pažnju kako ljubitelja gastronomije, tako i stručnjaka iz područja ekonomije, poljoprivrede i sociologije. U kontekstu globalnih trendova potrošnje hrane i pića, konzumacija vina posebno je zanimljiva zbog svoje kompleksnosti i raznolikosti. U periodu od 2000. do 2022. godine dešavaju se razne promjene u navikama konzumacije vina diljem svijeta, a istovremeno, specifične karakteristike tržišta vina u Republici Hrvatskoj pružaju intrigantne uvide u lokalne preferencije i trendove. U ovom radu uspoređeni su razni trendovi vinogradarstva s posebnim naglaskom na konzumaciju vina, a sve u periodu 2000.-2022. godine. Ovaj završni rad usredotočuje se na usporedbu konzumacije vina u svjetskom kontekstu s posebnim osvrtom na razdoblja od 2000. do 2022. godine. Kroz temeljitu analizu dostupnih statističkih podataka, istražila se dinamika potrošnje vina u različitim regijama svijeta, te se ista usporedila sa trendovima i karakteristikama tržišta vina u Republici Hrvatskoj.Wine, as a beverage with a rich history and cultural significance around the world, continuously attracts the attention of both gastronomy lovers and experts in the fields of economics, agriculture and sociology. In the context of global food and beverage consumption trends, wine consumption is particularly interesting due to its complexity and diversity. In the period from 2000 to 2022, there are various changes in wine consumption habits around the world, and at the same time, the specific characteristics of the wine market in the Republic of Croatia provide intriguing insights into local preferences and trends. In this paper, various trends in viticulture are compared with a special emphasis on wine consumption, all in the period 2000-2022. years. This final paper focuses on the comparison of wine consumption in the world context with special reference to the period from 2000 to 2022. Through a thorough analysis of the available statistical data, the dynamics of wine consumption in different regions of the world was investigated, and it was compared with the trends and characteristics of the wine market in the Republic of Croatia
Production technology of yogurt with the addition of fruit
Jogurt je najpoznatija vrsta fermentiranog mlijeka čija je konzumacija u stalnom porastu. Razlog tome je pogodnost jogurta kao medija za dodatak sastojaka poput žitarica, probiotičkih bakterija, prebiotika ili voća, a koji imaju za cilj poboljšati nutritivnu vrijednost gotovog proizvoda. Primjerice, dodatak voća osim što ima pozitivan učinak na senzorska svojstva jogurta, povećava udio vitamina, minerala i antioksidansa. Pritom se tehnologija proizvodnja jogurta s dodatkom voća razlikuje od proizvodnje običnog jogurta.Yogurt is the most well-known type of fermented milk, and its consumption is continuously increasing. This is due to the suitability of yogurt as a medium for adding ingredients such as cereals, probiotic bacteria, prebiotics, or fruit, which aim to enhance the nutritional value of the final product. For example, adding fruit not only positively affects the sensory properties of yogurt but also increases the content of vitamins, minerals, and antioxidants. Additionally, the technology for producing yogurt with added fruit differs from that used for regular yogurt production
