    Demand for culturally preferred leafy greens in the United States is rising rapidly due to increased awareness among cultural groups about their culinary heritage and the desire for diverse and healthy diets. This demand is further amplified by the disproportionate effects of food insecurity on minoritized ethnic populations. The health and nutrition of immigrant populations in the US tend to deteriorate over time due to acculturation, as these communities replace their traditional diets and cultural practices with American ones. Leafy green amaranth (Amaranthus spp.) is an economically and nutritionally significant crop among ethnic minority communities in the Northeastern US and globally. Amaranth is a heat-resistant, drought-tolerant crop with strong resilience to climate change and abiotic stress. It is an excellent supplement to locally grown spinach in summer due to its similar flavor and nutrient density. Its rapid growth allows it to adapt quickly in urban and peri-urban settings with limited agricultural resources. However, production is limited by inconsistent germplasm, a lack of standardized growing practices, and a general lack of mainstream consumer awareness of this nutritious leafy green. Consumer surveys were disseminated along the Eastern US from 2010-2022, identifying amaranth as one of the top 10 desired leafy greens among Asian Indian, Chinese, and Mexican consumers. Once the market demand was established, variety trials of globally collected amaranth seeds took place from 2021-2022, beginning with 97 lines collected from the USDA-GRIN seed bank, the World Vegetable Center, American commercial lines, and Rutgers advanced breeding lines. From the original 97 distinct lines, 37 lines were selected for continued evaluation based on field performance, cultural preference, and nutrient density. Our leafy amaranth selections meet or exceed the iron, magnesium, and protein levels in spinach, creating the opportunity for a locally sourced substitute in the summer. Several of these amaranths are available to use and others are now poised for further selection and breeding in order to develop improved varieties for introduction into urban spaces with large migrant and diaspora communities with aims to increase healthy eating habits through culturally preferred food choices

    Significant urban farm resources developed by the Great Lakes Urban Ag IPM Working Group

    Urban agriculture, the ability of community members to engage in growing food, is the crux of a just urban food system. The Great Lakes Urban Ag IPM Working Group was established with support from the North Central IPM Center in 2017. The mission of the group is to create a network of university researchers and extension educators who collaborate with growers to solve production and pest management challenges on urban farms, using an integrated pest management (IPM) approach. Membership includes Extension professionals, community organizations and garden managers, partnering support agencies and farmers themselves. Through the participation of over 35 people from eight states across the region we have worked collaboratively to provide a set of tools to manage a range of crop production and pest challenges. Products created include fifteen pest cards, available in both Spanish and English, which provide identification and management recommendations. These cards have been disseminated across several states and posted online. A webinar series provided specialists the opportunity to talk about scouting and trapping for insect pests, composting with black soldier flies and a unique 360-degree virtual urban ag farm tour project. The virtual tours allow anyone to “visit” and experience the diversity of urban farms. Key production and pest management information is highlighted within the virtual tour by information icons. There is currently a library of seventeen 360-degree urban farm tours which originated in Ohio but have recently expanded to highlight urban farms in MI, IN and IL. Our group continues to build collaborations and create resources to train urban farmers in pest management. In this paper, we will share information about the resources we have made, including how to access them, and discuss the structure and function of the collaboration

    Health Belief Model, Demographic, and Sexual Behavioral Factors Associated with Mpox Vaccination Among Men who have Sex with Men

    The mpox virus outbreak (formerly known as monkeypox) in the United States created an urgent need to inform vaccination acceptance and uptake interventions. We quantitatively examined the association of the Health Belief Model, demographic, and sexual behavioral factors with men who have sex with men (MSM) getting the mpox vaccine. We qualitatively explored MSM’s perceived barriers to obtaining the mpox vaccine. A convenience sample of MSM in the United States (n = 554) completed a mixed-method online cross-sectional survey. A series of chi-square tests of independence, t-tests, and multivariable logistic regressions were used to analyze associations between participants who were and were not vaccinated against mpox. Inductive content analysis was used to investigate perceived barriers. Participants who perceived the barriers that the mpox vaccine is expensive and troublesome had lower odds of getting the mpox vaccine. The content analysis revealed that the most cited barrier was vaccine unavailability and inaccessibility. Health campaigns can increase perceived susceptibility to mpox and the perceived benefits of the mpox vaccine. Still, structural interventions are necessary to ensure that vaccine delivery is adequate, accessible, and equitable

    Coping in the Time of Crisis : A Study on College Students\u27 Mental Health and Coping Mechanisms amidst the COVID-19 Pandemic.

    The sudden closure of colleges and universities, among other challenges, disrupted higher education across US states during the subsequent waves of the COVID-19 pandemic, significantly impacting the mental health of college students. The study was designed to comprehend the major stressors that college students encountered during the COVID-19 pandemic and the strategies they employed to cope with these stressors. The participants included undergraduate students from a small rural public university in the Southeast region of the US. A survey comprising 35 items to evaluate the effects of COVID-19 on mental health and coping mechanisms was employed. The study included 170 student participants. Descriptive statistics were used to summarize quantitative data and a thematic qualitative analytic approach was employed for qualitative data. The majority of the participants reported increased stress and negative emotions, and also faced financial hardships. Participants also reported receiving social support from friends and family. The study found that students predominantly used social and entertainment-based coping mechanisms, while mindfulness-based exercises were the least utilized coping strategies. College students who experienced increased stress during the COVID-19 pandemic are more likely to develop mental and behavioral health disorders, experience academic challenges, and have a lower quality of life. Even though the pandemic is over, continued proactive support and well-designed interventions are needed to address the lingering effects of the pandemic and support their overall well-being
