My research, conducted from September through November of 2017, showed that the children preferred more processed foods and starches instead of healthier options such as fruits and vegetables, even when healthy options were available. According to the parents/caregivers surveyed, their children prefer to eat processed American meals. Parents/caregivers desired for their children to eat a variety of different foods including fruit, vegetables, proteins, and traditional Hispanic food. This study acknowledges that healthy meal options are available at schools, but there needs to be more research on how to best encourage students to take advantage of these nutritious choices in order to lower child obesity rates in the community. Information from this study will also be helpful in making inclusive meal plans for multicultural and ethnic communities

 Overstory and Understory: Janisse Ray’s “Ecology…”, revisited 
 
The Tyson Family Lecture on 
the Preservation and 
Restoration of Southern 
Ecosystems celebrated the 20th 
anniversary of Janisse Ray’s 
“Ecology of a Cracker 
Childhood” on Thursday with 
an afternoon panel discussion 
and evening lecture.    
Yesterday’s events embodied the 3-legged 
stool that defines Wofford’s Environmental 
Studies department. The afternoon panel 
took each in turn. Dorinda Dallmeyer 
beautifully constructed a synopsis of 
advances in scientific understanding of the 
ecosystem even as she wove in images from 
Ray’s work. Peter Brewitt relayed the 
journey from pristine longleaf forest, 
through its use in literally constructing the 
south, and into the policy that aims to 
restore it through public-private 
partnerships. Tara Powell masterfully 
contextualized Ecology in the south’s 
literary traditions and trajectories. 
When Janisse Ray took the stage, she 
spoke her heart’s deep conviction of the 
magic of the land and the power of hope, 
through story and poem. Her own story, up 
to and through the birth of the book, and 
her continual conjuring of courage to find, 
define, defend and develop her voice and 
her power as a writer, is an inspiration to 
action and a testament to love. Our 
gratitude to the Tyson family, to our panel, 
and to Janisse Ray is beyond words. 
From Environmental Studies 101 to the 
ENVS senior seminar, our students and 
faculty spent time (re)reading Janisse Ray’s 
landmark book Ecology of a Cracker 
Childhood in anticipation of her visit as the 
7th speaker in the annual Tyson Family 
Lecture Series on Preservation and 
Restoration of Southern Ecosystems. 
Published 20 years ago, the book weaves 
together stories of Ray’s childhood with 
visions and dreams of restoring longleaf 
pine forest – now decimated in relation to 
its former extent of 97 million acres across 
the south.   
The ecosystem itself captures the 
imagination of anyone who enters: the tall 
pines with their long needles and the songs 
that Ray loves and articulates so well; the 
wiregrass understory with the highest 
biodiversity of any North American 
ecosystem; and the home of red-cockaded 
woodpeckers, flatwoods salamanders, and 
the gopher tortoises that co-exist with 
hundreds of other species in their long 
burrows.

PROFILE OF THE WEEK: 
Wake Forest University – Sustainability Graduate Programs 
 
 
 
 
 
Wake Forest University offers several options to students 
looking at sustainability-focused degrees. Two dual-
degree programs include a JD/MA in Sustainability and 
a MDIV/MA in Sustainability. 
Candidates for the JD/MA program must apply to both 
the Graduate School of Arts and Sciences and the School 
of Law. Students can combine their interests in legal 
scholarship with sustainability practices. And candidates 
to the MDIV/MA in Sustainability program must apply 
to both the Graduate School of Arts and Sciences and the 
School of Divinity. This program teaches student to be 
religious leaders who can lead communities to respond 
to critical ecological and environmental issues. 
Their MA in Sustainability is a one-year program with 
on-campus courses relating to social sciences, 
humanities, natural sciences, management, and law. 
Off-site facility visits give students an opportunity to 
work with professionals beyond campus.

awarded in the amount of $2000. Eligible student must be from South Carolina 
enrolled in an institution of higher learning in the state of South Carolina studying 
marine biology, forestry, fisheries, wildlife management, or other related field focused 
on environmental protection of the Santee Cooper lakes and river systems. Stop by

a National Science Foundation Research Experience for Undergraduates (NSF-REU)

 Same River Twice by Dr. Peter Brewitt 
 
flew up to Columbus, Ohio to dork out 
a bunch, see the Midwest (the part of 
our nation I know least) and autograph 
a few paperbacks. I can report that 
Columbus is a pretty nice spot, full of 
interesting old buildings and much 
bigger than the college town I’d 
expected, and that people there care 
about college football almost as much 
as southerners do. The talks were 
terrific (ENVS 317 students, brace 
yourselves for some piping-hot 
historical knowledge), and I even got to 
see Dr. Bart Elmore, Ohio State 
professor and Friend of Wofford 
Environmental Studies, when he led a 
bike tour around the city – including a 
dam removal site! I did not, I must 
admit, sign too many books (no 
surprise, hardly anyone has read it yet) 
but it was inspiring to be around so 
many interesting scholars and to 
reconnect with Oregon State Press, all 
these years later. 
Dr. Brewitt and group toured the 
city of Columbus, Ohio by bike 
during his recent trip to the 
American Society of 
Environmental History conference. 
Once upon a time, in a land far, far 
away, a young graduate student named 
Peter Brewitt heard that the American 
Society for Environmental History 
conference was taking place in San 
Francisco, just 90 minutes north of his 
beachside community. So, on a whim, 
he rolled up the peninsula, and there 
ran into an editor named Mary Braun, 
who worked for the Oregon State 
University Press. He told her of a 
dream he had, to make his dissertation, 
which was at that time only a bubbling 
kettle of half-written ideas, into a book. 
To his joyful surprise, she encouraged 
this dream. Five years later, that dream 
is his book: Same River Twice: The 
Politics of Dam Removal and River 
Restoration.  
So (switching into the present tense) 
when Mary asked me to go to ASEH 
this year and do a book signing, I 
couldn’t say no. This past weekend, I

The University of Georgia’s College of Environment 
and Design (CED) is one of the many areas of study 
that the school offers to graduate students who are 
interested in sustainability and the environment.  
There are three master’s degrees in Landscape 
Architecture (MLA), Environmental Planning & 
Design (MEPD), and Historic Preservation (MHP).  
CED programs are constantly ranked in the top 10 
in the nation and their landscape architecture is one 
of the oldest graduate programs in the country. The 
highly-regarded historic preservation program is one 
of only two programs in the US to offer a joint 
Juris Doctorate. 
CED has added a professional degree 
enhancement to its curriculum for the Leadership 
in Energy and Environmental Design (LEED) 
accreditation, which is a highly regarded credential 
for graduates looking to be hired. There are also a 
number of certificate programs that can help 
students enhance and specialize their primary 
degree.

The Office of Student Activities and Campus Life is beginning our initial planning for the
upcoming First 54 – the first 54 days of the academic year, starting Sept. 2 through
Family Weekend on Oct. 25. The First 54 also highlights Wofford’s founding in 1854.
Research indicates that successes or failures during the first six weeks of college
students experiences may determine whether they will graduate from college. Therefore,
it is very important to get them engaged in our community during this crucial time.
For the past three years, we have created a calendar of events hosted by academic
departments, athletics teams and chartered organizations. The calendar can assist
faculty, staff and student leaders in selecting an appropriate date and time for their
events, and this cross-campus collaboration will engage students with the campus
community and give them the chance to preview a wide variety of student organizations,
academic opportunities and other activities.  
 
A draft of the calendar is attached; it includes home sports events as well as WAC
events.
We want to add your department’s and organization’s events to the master calendar, so
