Instrumental textural data for uniaxial extensibility of Pounded Yam in Nigeria
Pounded yam is a glutinous dough product made from yam tubers often consumed in bolus form along with stews or soups. It is considered a common cuisine in West Africa in countries like Nigeria, Benin, Ghana, Cameroon and Ivory Coast. Pounded yam is prepared by peeling mature yams, washing, dicing, cooking, and pounding into a uniform consistency. Traditional consumers prefer a sufficiently doughy, stretchable, mouldable, and acceptably firm pounded yam.
This file contains spectral and laboratory data for uniaxial extensibility of Pounded Yam that was collected by Bowen University team in Nigeria following standard operating procedure

This dataset contains data generated during the Activity 5 or Step 4 - Consumer Testing in Rural and Urban Areas performed by the UAC-FSA team in Benin on Boiled Cassava, within the RTBfoods project (following the Methodological Guidance and its supplement).
This dataset may contain diverse type of anonymized data (e‧g. questionnaires, cleaned and processed data) which is to be available on open access following a 2-years embargo after the end of the RTBfoods project (embargo ending date: 15 March 2025)
This dataset may also contain non-anonymized data (e‧g. raw data, consent forms signed by interviewees) which cannot be made publicly available, at any time; non-anonymized data is contained in the .tar‧gz file. NIRS Database on raw Matooke flour for DM & RVA at NaCRRI & IITA, Uganda
In banana, the main source of carbohydrate is starch and the starch has an effect on banana product application and acceptability. The relevance of pasting properties in explaining the behavior of banana starch during processing is therefore imperative. In our current efforts, 34 genotypes of banana from the IITA collection were converted into flour. A total of 62 spectra were acquired from the flour corresponding to 61 samples obtained from different banana accessions. In addition, the same samples generated 30 dry matter content results as reference information. Continuous spectra acquisition and reference information generation is being undertaken to allow for the use of NIRS in prediction of consumer acceptability and quality traits such as tokeness

NIRS Database on intact fresh cassava using portable device for DM at NRCRI, Nigeria
Cassava (Manihot esculenta Crantz) is a major root crop in the tropics and its starchy roots are significant sources of calories for more than 500 million people worldwide especially Nigeria. Cassava breeders aim to produce many clones rapidly with desired agronomic traits.
Near-infrared spectroscopy (NIRS) is a physical detection method that was developed in recent decades. This technique is based on the correlation between chemical properties and the absorption of light at specific wavelengths in the near-infrared region.
A rapid and accurate method for determining dry matter (DM) content of cassava root will be valuable and help the breeders in selecting clones with good traits.
This database contains the spectra of fresh intact cassava roots harvested at NRCRI Umudike Nigeria (between August and September 2020) with the use of Portable/handheld NIRS (Quality SpecTrek). A total number of 1764 spectra were acquired from 98 (ninety-eight) clones of fresh intact cassava roots. Three different sizes of cassava roots (big, medium and small sized) were cut in horizontal positions C1 (proximal), C3 (central), and C5 (distal). Calibration model developed for dry matter content (DM) showed the mean and standard deviation to be 39.44 and 4.73 respectively with the standard error of laboratory at 0.76. An SOP on the protocol for the determination of DM on fresh intact cassava root using a handheld NIRS has been linked to this database. The ASD hand-held NIRS was acquired by NRCRI (National Root Crops Research Institute) Umudike Nigeria in the year 2016
