ACEI and antioxidant peptides release during ripening of Mexican Cotija hard cheese
International audienceCotija cheese is an artisanal Mexican cheese produced with raw cow´s milk. Our objective was to measure the antioxidant and angiotensin converting enzyme (ACE) inhibitory activities of the peptides released during its ripening. For that, Cotija cheeses were ripened 6 months in a chamber at 25 ºC without humidity control. Weekly samples were taken to determine acid soluble nitrogen (ASN), non-protein nitrogen (NPN) and ethanol soluble nitrogen (EtOH-SN) indexes, by Kjeldahl method. Antioxidant and ACE inhibitory activities were measured by spectrophotometry and HPLC methods, respectively. Peptides in each nitrogen fraction were determined by HPLC. Our results showed that during ripening of Cotija cheeses peptides with antioxidant and ACE inhibitory activities were released and increased through ripening time reaching a maximum of 79.8 % of 2,2- diphenyl-1-picrylhydrazyl (DPPH) discoloration and 100 % of ACE inhibition at the end of ripening. Both activities were highly correlated with the types of peptides present in each fraction
Is food a motivation for urban gardeners?: Multifunctionality and the relative importance of the food function in urban collective gardens of Paris and Montreal
International audienceIn the cities of industrialized countries, the sudden keen interest in urban agriculture has resulted, inter alia, in the growth of the number and diversity of urban collective gardens. While themultifunctionality of collective gardens is well known, individual gardeners’ motivations have still not been thoroughly investigated.The aim of this article is to explore the role, for the gardeners, of the food function as one of the functions of gardens, and to establish whether and how this function is a motivating factor for them. We draw on a set of data from semi-structured interviews with 39 gardeners in 12 collective gardens in Paris and Montreal, as well as from a survey on 98 gardeners and from field observations of the gardeners’ practices. In the first part we present the nature and diversity of garden produce, and the gardeners’ assessment thereof. In the second part we describe the seven other functions mentioned by the gardeners, which enables us to situate the food function in relation to them.Weconclude that the food function is the most significant function of the gardens, and discuss the implications for practitioners and policy makers

Outils et leviers pour favoriser le développement d'une génétique adaptée aux enjeux de l'agro-écologie pour les élevages de ruminants
National audienceDans le cadre du Projet Agro-Ecologique pour la France, la présente étude a été conduite afin de déterminer les « Outils et leviers pour favoriser le développement d’une génétique animale adaptée aux enjeux de l’agro-écologie (AE) ». Après une étude bibliographique portant sur les critères de performance au regard des enjeux de l’AE, et un état des lieux des évolutions passées ou en cours de l’offre génétique, une enquête téléphonique auprès de 37 éleveurs et un groupe d’éleveurs, en ruminants et engagés dans une démarche AE sur leur exploitation, a été réalisée afin de recueillir leur vision de la génétique, leurs attentes et besoins, et leurs propositions pour l’avenir. Une synthèse de ces éléments a conduit à des recommandations. Les dispositifs de sélection actuels apportent déjà des réponses aux éleveurs de ruminants engagés dans des démarches AE (3/4 des enquêtés considèrent que l’offre génétique actuelle leur permet une conduite d’élevage en adéquation avec les principes de l’AE), grâce à la diversité génétique des reproducteurs disponibles, et à l’évolution des objectifs de sélection. Néanmoins ces dispositifs doivent évoluer significativement en intégrant : 1) une orientation vers plus de robustesse, santé et efficacité alimentaire, en encourageant une approche multicritères ; 2) une meilleure connaissance et une prise en compte de l’adaptation des génotypes à différents milieux d’élevage, dans les différentes races et croisements, 3) un certain degré de « personnalisation » du tri des reproducteurs afin de proposer le meilleur compromis entre conditions d’élevage – animaux – objectifs de l’éleveur et de sa filièr

Résiduelle (RGMQ) Egale A La Résiduelle De La Régression De GMQ Sur CMQ Et La Consommation Résiduelle (CR) Egale A La Résiduelle De La Régression Multiple De CMQ Sur PM Et GMQ. La Corrélation De +0,47 Entre MEQ Et GMQ Indique Que Les Génisses Qui Ont Les Vitesses De Croissance Les Plus Elevées Emettent Le Plus De Méthane Entérique. Or Les Emissions De Méthane Entérique Comme Le Gain De Poids Sont Corrélées Avec L’ingestion : +0,29 Et +0,36 Respectivement. Les Emissions Ont Eté Rapportées A L’ingestion Au Moyen Soit De L’indice D’émission (IEME=MEQ/CMQ), Soit De L’émission Résiduelle (RMEQ) Egale A La Résiduelle De La Régression De MEQ Sur CMQ. Des Corrélations Positives Assez Elevées Ont Eté Mises En Evidence Entre Les Indices IEA Et IEME D’une Part (+0,62) Et Entre Les Résiduelles RGMQ Et RMEQ D’autre Part (+0,41). La Consommation Résiduelle (CR) Etait Quand A Elle Indépendante De MEQ (-0,07) Et Négativement Corrélée Avec RMEQ (-0,33). Il Apparaît Donc Que Les Génisses Les Plus Efficientes A Utiliser Leur Ration De Fourrage Pour Assurer Leur Croissance Emettent Plus De Méthane Entérique Que Les Génisses De Moindre Efficience Alors Qu’une Relation Inverse Est Souvent Evoquée Entre Ces Deux Caractères Sans Toutefois Faire L’objet D’un Consensus

Comparison of clonal complexity of primary and secondary trout IGM and IGT response using deep sequencing
International audienceFish infection or vaccination induces the production of antigen - specific antibodies by B lymphocyte s. These B cells are recruited based on the specificity of their surface Ab, among the vast diversity of receptors produced through the random and imprecise genomic rearrangement of V, D and J genes during lymphocyte differentiation . In fish , t he monitoring o f B cell response to infections or vaccines has been mainly performed by serological and molecular techniques that provide a limited insight into the complexity of humoral adaptive immune response. We have developed a deep sequencing based approach to comp are the clonal structure of the rainbow trout B cell primary and secondary response against the fish rhabdovirus VHSV . In this approach , u nique barcode labels are incorporated on each starting cDNA molecule before amplification , allowing the correction of PCR/sequencing errors by generating consensus sequence and a safer quantification of sequence relative abundance . We characteriz ed the clonal complexity of the IgM and IgT repertoire during the primary and sec o ndary responses: we identifi ed B cell clonal expansions generated in primary response to VHSV that are still detectable five months after immunization , and analy z ed their frequency after a challenge with the same virus . Our data will be useful to model the development of the Ig landscape , and to understand the mechanisms of B - cell memory after infection by pathogens or vaccin ation in fish
