No full textIn this study, the effect of pretreatments ((hot water blanching (HWB), ultrasound (US) and ohmic heating (OH)) on reducing the oil absorption of potato during frying and the changes in the quality parameters of the product ((total polyphenol (TP), in vitro digestion, total flavonoid (TF), antioxidant capacity (AC), chlorogenic acid (CA), textural and sensorial properties)) were investigated. The pretreatments applied significantly affected oil absorption and quality parameters of fried potato. The oil content of fried potatoes ranged from 26.06 to 32.01% depending on the pretreatment. OH-pretreated potato had the highest content of TP (41.27 mg GAE/100 g dry matter-DM), TF (32.89 mg RE/100 g DM) and CA (1.72 mg/100 g DM). However, there was no significant difference between the pretreatments in terms of bioaccessibility of polyphenols at the end of digestion. Also, AC value of fried potato pretreated by OH (124.13 mmol AAE/100 g DM) was higher compared to that of fresh potato (83.91 mmol AAE/100 g DM), but other two pretreatments caused a decrease in AC. The highest hardness was observed in HWB-treated potato strips. OH-treated potato had the best color parameters. Sensory data indicated that US-pretreated potato had the highest sensory scores followed by OH- and HWB-pretreated ones, respectively. Consequently, based on the above comprehensive quality evaluation, it can be suggested that OH pretreatment is a better choice for preparing deep fried potato
Modern Kazak Hikȃyeciliğinde Kültürel Söz Varlığı: Muhtar Magavin Örneği
No full textBir dilin kültürel söz varlığı, kültürü oluşturan tüm unsurları içeren bir söz hazinesidir. O dili konuşan halkın dünyaya bakışının, kültürel kodlamalarının saklı olduğu bir hazine hükmündedir. Kazak Türkçesinin kültürel söz varlığının yazar Muhtar Magavin’in bazı eserleri ekseninde ele alındığı bu çalışmada, Kazak halkının kültürel belleğinde günümüze kadar ulaşan gelenek, göreneklerine yer verilmiştir. Bu bağlamda, modern Kazak hikâyeciliğinde öncü isimlerden biri olan Muhtar Magavin’in kısa ve uzun hikâyelerinden bazıları taranmıştır. Eserlerde Kazak kültürel yaşamını ve kültürel değerleri yansıtan unsurlar tespit edilerek ele alınmıştır. Bunlardan bazılarının unutulmuş bazılarının ise unutulmaya yüz tutan maddi ve manevi değerler olması, yazarın eserlerine değer katan özelliklerden biridir. Eserlerde tespit edilerek alfabetik sıraya göre verilen kültürel motifler, Kazak halkının avcılık sanatı, hayvancılık kültürü, halk hekimliği, ölüm ritüelleri, aile hayatı, günlük ve sosyal hayatı ile ilgili dikkate değer bilgiler vermektedir.The cultural vocabulary of a language is a lexicon that encompasses all elements forming the culture. It serves as a treasure trove that contains the worldview and cultural codes of the people who speak that language. This study examines the cultural vocabulary of the Kazakh language through the lens of selected works by the writer Muhtar Magavin. It explores the traditions and customs that have endured to the present day in the cultural memory of the Kazakh people. In this context, several short and long stories by Muhtar Magavin, one of the leading figures in modern Kazakh storytelling, have been reviewed. The study identifies and analyzes elements that reflect Kazakh cultural life and values. Some of these elements represent forgotten or nearly forgotten tangible and intangible values, which add depth and significance to the author's works. The cultural motifs identified in the stories and listed in alphabetical order provide valuable insights into Kazakh hunting practices, livestock culture, folk medicine, death rituals, family life, and daily and social life
