    Les impensés de l’entretien : apports de la vidéo 360°

    International audienceThe use of interviews in qualitative research is a well-known and widely-used method in the scientific community, but the neutrality of the person conducting the interview is rarely discussed in the literature. As part of the family of visual methods, the use of a 360° camera offers possibilities for capturing and analyzing the subjective side of interview situations, placing them within an ecological framework, while at the same time offering an immersive method of data presentation. The study presented here seeks to take into account the researcher’s presence in the info-communicative situation that constitutes the interview and explore its impact using 360° video.Le recours aux entretiens dans une recherche qualitative est une méthode largement utilisée dans la communauté scientifique, mais la neutralité de la personne menant l’entretien est rarement abordée dans la littérature, en dehors des perspectives éthiques et émiques issues de l’anthropologie. S’inscrivant dans la famille des méthodes visuelles, l’usage d’une caméra 360° offre des possibilités de captation et d’analyse qui permettent d’appréhender la part subjective des situations d’entretien en les inscrivant dans un cadre écologique (au sens de Bateson, 1987), tout en proposant une méthode immersive de divulgation des données. L’étude présentée ici cherche à prendre en compte dans l’analyse la présence du chercheur dans la situation info-communicationnelle que constitue l’entretien, et à explorer son impact grâce à la vidéo 360°

    Comparaison de deux souches de Saccharomyces cerevisiae pour la fermentation complète en barrique de moût de Petit Manseng

    The Petit Manseng is a delicate grape variety to vinify dry due to its natural richness in sugars. At the estate, its barrel fermentation almost systematically leads to fermentation stoppages. This study aims to compare the fermentation ability of two strains of Saccharomyces cerevisiae to ferment a Petit Manseng must in barrel. These strains (LSA Infini Twice from IOC and LSA Vin 13 from Anchor) were selected for their good fermentation abilities in sugar-rich environments. To achieve this, the fermentation kinetics of six previously inoculated barrels were studied. Must and wine analyses, as well as implantation checks, were conducted. At the end of the trial, residual sugars were found in each condition, but it was observed that Vin 13 pushed fermentation further. It was also noted that for both strains, the fermentation led to an abnormal production of volatile acidity. Finally, it seems that completing the fermentations might be possible by modifying the winemaking process.Le petit manseng est un cépage délicat à vinifier en sec du fait de sa richesse naturelle en sucres. Au domaine, sa vinification en barrique découle presque systématiquement sur des arrêts de fermentation. Cette étude vise à comparer l'aptitude de deux souches de Saccharomyces cerevisiae à fermenter un moût de petit manseng en barrique. Ces souches (la LSA Infini Twice d'IOC et la LSA Vin 13 d'Anchor) ayant été sélectionnées pour leurs bonnes aptitudes fermentaires en milieux riches en sucres. Pour cela, la cinétique fermentaire de 6 barriques préalablement ensemencées a été étudiée. Des analyses de moûts et de vins, ainsi que des contrôles d'implantation ont été réalisés. À la fin de l'essai, on relève la présence de sucres résiduels dans chaque modalité, mais on constate que Vin 13 pousse la fermentation plus loin. On constate aussi que pour les deux souches, la fermentation a mené à une production anormale d'acidité volatile. Enfin il semblerait que l'achèvement des fermentations soit possible en modifiant l'itinéraire de vinification

    The thesis presented here is based on an experiment carried out at the Domaine de la Solitude as part of the Diplôme National d’Œnologue. The estate is located in France, in the town of Martillac, within the Pessac-Léognan appellation. This thesis will describe the vineyard management system and the winemaking processes of the estate. For many years, the Merlot batches have faced difficulties in spontaneously triggering malolactic fermentation. To address this, and in collaboration with the UMR Œnology of Bordeaux, the influence of adding white wine lees on the progress of malolactic fermentation in red wine was studied. This addition of lees was compared to other current strategies, such as adding lactic acid bacteria and nutrients. The study focused on the kinetics and initiation of MLF, as well as the sensory impact of the treatment on the wine.Le mémoire qui vous est présenté prend appui sur une expérimentation réalisée au Domaine de la Solitude dans le cadre du diplôme national d’œnologue. Le domaine se situe en France, sur la commune de Martillac, sur la zone d’appellation Pessac-Léognan. Ce mémoire décrira le système de conduite du vignoble et les procédés œnologiques du domaine. Depuis de nombreuses années, les cuvées de merlot ont des difficultés à déclencher spontanément leur fermentation malolactique. Dans ce cadre, et en collaboration avec l’UMR Œnologie de Bordeaux, il a été étudié l’influence de l’apport de lies de blancs sur le déroulement de la fermentation malolactique du vin rouge. Cet apport de lies a été comparé avec des stratégies disponibles aujourd’hui comme l’apport de bactéries lactiques et l’apport de nutriments. L’étude a ainsi porté sur le temps de déclenchement de la FML, sa cinétique et sur l’impact organoleptique du traitement sur le vin

    Neurodegenerative diseases, such as Alzheimer's and Parkinson's, represent a major public health challenge. After establishing the foundations of nervous system function and the mechanisms of neurodegeneration, this study highlights the crucial role of the gut microbiota in these pathologies, mediated by the gut-brain axis. Imbalances in the microbiota can influence the development and progression of these diseases, particularly through inflammation, alteration of the intestinal barrier, and the production of metabolites. Consequently, therapeutic perspectives based on modulating the microbiota have been explored, including nutritional approaches, psychobiotic therapies (probiotics, prebiotics), and fecal microbiota transplantation. However, further research is needed for each of these avenues to validate their place in the management of these complex conditions.Les maladies neurodégénératives, telles que les maladies d'Alzheimer et de Parkinson, représentent un défi majeur de santé publique. Après avoir posé les bases du fonctionnement du système nerveux et des mécanismes de neurodégénérescence, nous avons démontré le rôle crucial du microbiote intestinal dans ces pathologies grâce à l'axe intestin-cerveau. Des déséquilibres du microbiote peuvent influencer le développement et la progression de ces maladies, notamment par l'inflammation, l'altération de la barrière intestinale et la production de métabolites. En conséquence, des perspectives thérapeutiques basées sur la modulation du microbiote ont été étudiées, telles que les approches nutritionnelles, les thérapies psychobiotiques (probiotiques, prébiotiques) et la transplantation de microbiote fécal. Cependant, chacune de ces pistes nécessite des recherches supplémentaires afin de pouvoir valider leur place dans la prise en charge de ces affections complexes

    Contamination of water and food by protozoa remains a major public health concern due to the potential for severe parasitic infections. Protozoan pathogens such as Giardia intestinalis, Cryptosporidium parvum, Entamoeba histolytica, and Toxoplasma gondii are frequently associated with gastrointestinal illnesses, particularly in immunocompromised individuals or populations lacking proper sanitation. This thesis provides a comprehensive overview of current detection methods for protozoa in environmental and food matrices. Traditional techniques, including the EPA Method 1623 and microscopic examination, although widely applied, are limited by low sensitivity, specificity, and long processing times. Recent advances in molecular biology offer promising alternatives. These include quantitative polymerase chain reaction(PCR), digital PCR, nucleid acid sequence-basedaAmplification (NASBA), and oop-mediated isothermal amplification (LAMP), which provide faster and more accurate detection. In addition, immunological techniques such as enzyme-linked immunosorbent assay ( ELISA) and the use of aptamers are explored for their diagnostic potential. Cutting-edge approaches such as next generation sequencing (NGS), DNA microarrays, and clustered regularly interspaced short palindromic repeats (CRISPR)-Cas systems show great promise for future applications. The potential integration of biosensors and artificial intelligence opens new avenues for real-time monitoring and automation of protozoan detection processes. Given the growing need for early and reliable diagnostics, modernizing current surveillance tools is essential to improve risk anticipation and ensure food and water safety.La contamination de l’eau et des aliments par des protozoaires représente un enjeu majeur de santé publique, en raison des risques d’infections potentiellement graves qu’elle implique. Des parasites tels que Giardia intestinalis, Cryptosporidium parvum, Entamoeba histolytica ou Toxoplasma gondii sont fréquemment impliqués dans des pathologies digestives parfois sévères, notamment chez les populations immunodéprimées ou dans des contextes d’hygiène précaire. Cette thèse dresse un état des lieux des méthodes actuelles de détection de ces protozoaires dans les matrices environnementales et alimentaires. Les techniques conventionnelles, telles que la méthode 1623 ou la microscopie, bien que toujours utilisées, montrent des limites en termes de sensibilité, de spécificité et de temps d’analyse. Les développements récents en biologie moléculaire (réaction en chaîne par polymérase (PCR) quantitative, PCR digitale, Amplification basée sur la séquence d'acide nucléique (NASBA), amplification isotherme médiée par boucle (LAMP)), en immunologie (tests essai immuno-enzymatique (ELISA), aptamères) et en technologies émergentes (Séquençage de nouvelle génération (NGS), puces à acide désoxyribonucléique (ADN), systèmes répétitions palindromiques courtes régulièrement espacées (CRISPR)-Cas) offrent de nouvelles perspectives prometteuses pour un diagnostic plus rapide, fiable et ciblé. L'intégration des biocapteurs et des algorithmes d’intelligence artificielle pourrait également contribuer à automatiser les analyses et à améliorer la détection en temps réel. Face aux enjeux de surveillance et de prévention des maladies d’origine hydrique et alimentaire, la modernisation des outils diagnostiques constitue une priorité pour renforcer la sécurité sanitaire et anticiper les risques épidémiologiques

    Long‐term water dynamics in the Lascaux cave karst: Impact of tree removal

    International audienceQuantifying the hydrological dynamics of unsaturated karst environments in relation to their native vegetation is a critical step in developing adaptation strategies. This study investigates the effect of tree removal on water dynamics in the Lascaux karst hill in southwestern France. Monthly electrical resistivity tomography surveys taken over a decade evaluated rock mass heterogeneity and water content. The influence of felled tree water use on the upper 1.2 m of rock mass was studied by assessing specieslevel sap flow measurements scaled to estimate site transpiration. Seasonal changes in resistivity ranged from 100 to 300 Ω•m, with peak values during summer and minima in winter. Interannual variability was notable, with the resistivity recorded in summer 2021 decreasing to 130 Ω•m due to above-average precipitation. The removal of 10% of the trees in November 2016 is followed by a 27% reduction in resistivity (up to 90 Ω•m) with strongest effects during summer. During the summer immediately following tree felling, the effect was even observed down to a depth of 5 m. More globally, water flow in the emergence airlock in Lascaux cave increased by 74 m 3 annually after the trees had been felled, which is in the same order of magnitude as the 37 m 3 reduction in water use estimated from sap flow measurement from the nine trees cut just above the cave. The study showed a direct interplay between vegetation and hydrological processes within karst environments and highlighted the importance of considering tree management when analyzing water storage reservoirs under 1 m below ground.</div

    Lésion gingivale révélatrice d’une récidive métastatique d’un carcinome mammaire : rapport d’un cas clinique

    Introduction: although rare (1% of oral malignant tumors), oral metastases must be considered in the differential diagnosis of atypical benign gingival lesions. We report a case of widely metastatic breast cancer considered in remission, discovered through the biopsy of a rare malignant gingival lesion clinically mimicking an epulis. Case report: a 73-year-old woman, previously in remission from triple-negative breast cancer, consulted for a persistent "gingival bump" evolving for 4 months, associated with headaches. A biopsy of the lesion revealed a poorly differentiated carcinomatous proliferation suggestive of a mammary origin. The diagnosis was confirmed by immunohistochemistry (IHC). A PET scan revealed multiple metastatic sites involving the gingiva, lungs, and brain. Discussion: gingival metastases are a rare site of cancer dissemination, most often originating from breast carcinomas in women and lung carcinomas in men. Their insidious clinical presentation, frequently mistaken for benign lesions, makes diagnosis challenging. IHC plays a key role, as in this case, where mammary markers confirmed the tumor origin and guided the identification of the primary site, enabling targeted management. The treatment is multidisciplinary, with the aim of improving the patient’s quality of life. Conclusion: this case highlights the importance of considering metastasis in the differential diagnosis of atypical gingival lesions, even in patients presumed to be in cancer remission. A thorough clinical, radiological, and histological evaluation is essential for early diagnosis and optimized management.Introduction : les métastases orales, bien que rares (1 % des tumeurs malignes orales), doivent être envisagées dans le diagnostic différentiel de lésions gingivales atypiques bénignes. Nous présentons un cas de cancer du sein multi-métastasique considéré en rémission, découvert à travers la biopsie d’une lésion gingivale maligne rare cliniquement apparentée à une épulis. Observation : une femme de 73 ans, en rémission d’un cancer du sein triple négatif, a consulté pour un "bouton gingival”, persistant depuis 4 mois, associé à des céphalées. Après biopsie de la lésion, l’analyse histologique révèle une prolifération carcinomateuse peu différenciée orientant vers le primitif mammaire. Le diagnostic est confirmé par l’analyse d’immunohistochimie (IHC). Le TEP-scan a mis en évidence plusieurs sites métastatiques avec une atteinte gingivale, pulmonaire multifocale, et cérébrale. Discussion : les métastases gingivales représentent une localisation rare des cancers, le plus souvent associée à des carcinomes mammaires chez les femmes, pulmonaires chez les hommes. Leurs présentations cliniques insidieuses, souvent confondues avec des lésions bénignes, rendent le diagnostic complexe. L'IHC joue un rôle clé, avec ici l'expression de marqueurs mammaires, pour confirmer l’origine tumorale et orienter vers le primitif, et ainsi offrir une prise en charge spécifique. Celle-ci repose sur une approche multidisciplinaire, visant à améliorer la qualité de vie des patientes. Conclusion : ce cas illustre l’importance d’envisager une métastase dans le diagnostic différentiel des lésions gingivales atypiques, même chez des patients en rémission présumée d’un cancer. Une évaluation clinique, radiologique et histologique rigoureuse est essentielle pour établir un diagnostic précoce et optimiser la prise en charge

    Infinitely supported harmonically weighted Dirichlet spaces which are de Branges Rovnyak spaces

    Harmonically weighted Dirichlet spaces Dμ\mathcal{D}_\mu and de Branges--Rovnyak spaces H(b)\mathcal{H}(b) are two fundamental structures in analytic function theory exhibiting rich and often complementary properties. The question of when these spaces coincide, first raised and solved in Sarason’s groundbreaking work in 1997 when μ\mu is a single Dirac mass, is thus of fundamental importance in operator theory and analytic function spaces. In this paper, we focus on spaces H(b)\mathcal{H}(b) with symbol b=(1+u)/2b = (1+u)/2, where uu is a one-component inner function. While previous results extended Sarason's work to finitely supported measures μ\mu, the symbols we consider here give a natural framework to go beyond finiteness of the support. In our setting, we provide a complete characterization of measures μ\mu for which H(b)=Dμ\mathcal{H}(b) = \mathcal{D}_\mu, thereby resolving the long-standing open problem of constructing harmonically weighted Dirichlet spaces Dμ\mathcal{D}_\mu associated with measures μ\mu of infinite support that are also H(b)\mathcal{H}(b) spaces. As a central ingredient to prove this result and which is of independent interest, we establish a T(1)T(1)-type result for the Cauchy transform on L2(σ)L^2(\sigma), where σ\sigma denotes the Clark measure associated with a one-component inner function uu. Another notable result is a perturbation theorem for one-component inner functions that allows us to present a large class of function spaces satisfying H(b)=Dμ\mathcal{H}(b)=\mathcal{D}_\mu. Furthermore, we settle the Brown--Shields conjecture within this setting
