Recent developments in the valorization of agri-food waste and byproducts by fermentation
The agri-food industry generates huge amounts of waste and byproducts (AFWBs), which threaten the environment if not properly managed. Biological approaches such as fermentation have been proven to be versatile routes for increasing the nutritional potential of AFWBs and production of value-added bioactive compounds. The present paper reviews the results of recent studies that have been conducted on the effect of fermentation of AFWBs from different origins and fermentation techniques on generation of bioactive compounds. The study focuses specifically on studies conducted from 2020 to present. Types of microorganisms used in fermentations, fermentation routes as well as challenges towards upscaling and commercialization strategies for fermentation of AFWBs are also reviewed in this paper. Studies have indicated the production of diverse bioactive compounds including bioactive peptides, phenolics, single-cell proteins, polyunsaturated fatty acids by fermentation of AFWBs with selected bacteria, filamentous fungi and yeasts. Filamentous fungi, especially Aspergillus niger strains, have been used as starter cultures for improving the polyphenolic potential of AFWBs by fermentation, while mainly yeasts have been utilized for single-cell protein production. Peptides such as bioactive peptides and amino acids have been produced by bacterial cultures such as lactic acid bacteria and Bacillus sp. using a variety of plant- or animal-based AFWBs. Lactic acid, citric acid, essential fatty acids and flavoring compounds were also among the compounds aimed for production from AFWBs. Although the scale-up and commercialization of fermentation processes have been studied for a long time, there are still many obstacles and challenges. © 2025 Society of Chemical Industry
Maya Kaynaklı Tek Hücre Proteinlerinden Biyoaktif Peptit Üretimi: İn Silico Yaklaşımlar ve Fonksiyonel Perspektifler
Artan küresel gıda talebi ve sürdürülebilirbesin kaynakları ihtiyacı, mikroorganizmaların protein üretimindedeğerlendirilmesini önemli hale getirmiştir. Mayalar bu alanda yüksek biyokütleverimi, hızlı üretim döngüsü ve güvenli kullanımları ile sürdürülebilirlikaçısından geleneksel kaynaklara kıyasla önemli avantajlar sunmaktadır. Buçalışma, Saccharomyces, Kluyveromyces ve Yarrowiagibi farklı maya türlerinden elde edilebilecek mikrobiyal tek hücreproteinlerinin (SCP) biyolojik açıdan aktif peptitler üretimi için yenilikçibir kaynak olma potansiyelini değerlendirmiştir. Şu ana kadar literatürde biraüretimi sonucunda açığa çıkan bira mayaları gibi yan ürünlerden elde edilenprotein fraksiyonlarının izolasyonuna odaklanılan çalışmalar mevcuttur. Ancakbu çalışmada, farklı maya türlerinden doğrudan SCP üretimi hedeflenmiş ve buSCP’lerin biyoaktif peptit üretiminde kullanılabilirliği araştırılmıştır. Genellikle2–20 amino asit uzunluğunda olan biyoaktif peptitler, vücuttaki fizyolojiketkileri sayesinde fonksiyonel gıdalar ile farmasötik ürünlerde yüksek katmadeğerli içerikler olarak kabul edilmektedir. Bu çalışma kapsamında, seçilenmaya türlerine ait hücresel protein dizileri in silico olarak pepsin, tripsin, kimotripsingibi hayvansal ve proteinaz K gibi mikrobiyal enzimlerle hidrolizeedilerek potansiyel biyoaktif peptitler belirlenmiştir. Oluşan peptit dizilerinin,biyoaktif potansiyeli PeptideRanker aracılığıyla skorlanmıştır. Elde edilenbulgular, farklı maya türlerinden farklı enzimlerle çok sayıda ve çeşitliliktepeptitlerin meydana geldiğini göstermiştir. Sonuçlar maya kaynaklı proteinüretiminin yalnızca besinsel değil, fonksiyonel katkılar açısından da stratejikbir potansiyele sahip olduğunu ortaya koymaktadır. Sonuç olarak, maya hücreproteinlerinin hedefe yönelik enzimatik sindirimiyle sağlık destekleyiciözellikte yeni nesil fonksiyonel içeriklerin geliştirilmesi mümküngörülerek bu stratejinin maya bazlı mikrobiyal proteinlerin biyoteknolojikdeğerini artıracağı öngörülmektedir.</p
From training to transformation: The impact of online ICT training on Turkish EFL teachers’ TPACK competences and innovative teaching practices
Pathway to innovation can be shaped more effectively if teachers are provided with the necessary knowledge and skills. Encouraging teachers to develop a growth mindset is also crucial in helping them become pioneers of change. This study aims to investigate how online information and communication technologies training affects the Technological Pedagogical Content Knowledge competencies and the use of innovative pedagogical practices among English as a Foreign Language teachers in Türkiye. For this purpose, explanatory sequential mixed-methods research was adopted. In this regard, a quasi-experimental one-group pre-test post-test design was employed, in which quantitative data were collected first, followed by an explanatory qualitative phase based on a phenomenological design. The study was guided by the Teaching for Understanding curriculum design framework and the Kirkpatrick evaluation model. In the needs analysis phase, 74 English teachers were contacted via social media, and 20 of them who were working in different schools across Türkiye were selected based on the criterion sampling method for training. Quantitative data obtained in the study were analysed using Wilcoxon matched-pairs signed-rank test, while qualitative data were analysed through content analysis. It was observed that the training helped teachers become more innovative, creative, self-confident, and open to learn. Teachers were eager to apply their new knowledge; however, they faced contextual challenges such as inadequate technical facilities, student profiles, and economic conditions, which limited the full implementation of their skills. Despite these challenges, teachers reported positive outcomes from even the limited use of information and communication technologies. Based on these results, the study recommends continuous professional development programs, cooperative learning communities, and administrative support for long-term impact and sustainable change. Further longitudinal studies are suggested to better assess the long-term impact on teaching practices

Simplified Seismic Performance Assessment of Archetype RC-MRF systems in Hatay Region under Extreme Events
Two consecutive earthquakes, withmagnitudes of Mw=7.7 and Mw=7.6, occurred nine hours apart on February 6, 2023.Among heavily damaged cities, Hatay province has the highest casualties andfinancial losses compared to cities close to the epicenter of the earthquake.In addition to residential buildings, the collapse of hospital buildings andheavy damage to infrastructure systems led to disruptions in disastermanagement, resulting in casualties and significant financial losses. In thisstudy, the recorded earthquake ground motions within the borders of Hatayprovince caused mass destruction that exceeded the design earthquake groundmotions. Within the scope of this study, theseismic performance of code-compliant moment-resisting-frame structures wasassessed through nonlinear analysis procedures, namely nonlinear-staticprocedures and time-history analysis. Moreover, the effectiveness and consistencyof the simplified analysis procedures were examined for a rapid assessment of atwo-dimensional frame structure. The influence of modelling assumptions wascomparatively studied in this study for varying structural characteristics.</p
The Impact of Stress and Emotional Stimulation on Glucose Prediction: An LSTM-Based Approach
Contemplative mindfulness and its influence on firm service performance: a configurational analysis
Purpose – This study aims to explore the implementation of contemplative mindfulness, rooted in Eastern traditions, in service-oriented firms. It examines how employees’ mindfulness practices impact key service outcomes, including service creativity performance and adaptive behavior in service offerings, which have been underexplored in prior research. Design/methodology/approach – This study examines 282 service firms using 565 questionnaires. It uses fuzzy-set qualitative comparative analysis to explore the relationship between contemplative mindfulness practices and service performance-related variables. Findings – This study reveals that a heightened presence of practices related to mind and memory, present-moment awareness and right effort is indispensable for achieving higher levels of service creativity performance. In addition, this study identifies that present-moment awareness and attention practices, along with the right effort, are necessary for facilitating adaptive behavior in service offerings. Furthermore, this study highlights that clear comprehension practices and ethical viewpoints are peripheral conditions that influence both service creativity performance and adaptive behavior in service offerings. Research limitations/implications – The study’s focus on 282 firms and its specific survey methodology limit the generalizability of the findings to other industries. Practical implications – Firms seeking to boost service creativity and adaptability should acknowledge the crucial role of contemplative mindfulness practices practiced by employees in service settings and actively promote awareness of their numerous benefits for staff. Originality/value – This study adds to the existing literature on service management by going beyond Western-centric mindfulness ideas to examine contemplative mindfulness. It also creates a practical framework for applying contemplative mindfulness practices in service firms
