    The effect of using lecithin on the textural and rheological properties of artisanal chocolate

    The main objective of current research is to evaluate the influence of lecithin as an emulsifer on the textural properties of artisanal chocolate. With its origins as a cacoa drink in antiquity, chocolate has evolved throughout history, culminating in a wide variety of chocolate types, including both industrially produced and artisanal varieties. In this context, the role of lecithin in altering the density, viscosity, and texture of chocolate was analyzed. Two chocolate samples were prepared, one containing lecithin as an emulsifier and a control sample. These samples were subjected to analysis to evaluate density, viscosity with the EVO Expert R digital viscometer, SPAIN and texture using a Mark 10 texturometer, USA. Following studies carried out, the results showed that the chocolate sample with lecithin exhibited a softer texture, making it easier to compress and manipulate in fracture section. Additionally, it also showed lower viscosity compared to the control smaple

    Body Conformation Analysis Through Biometric Traits of Aubrac Cattle Breed

    The purpose of this paper was to highlight the results of biometric measurements were performed on cattle of the Aubrac breed, exploited in Romania. Were measured a total number of 84 bovine, both adult females and bulls (12-18 months), in three farms in the region of Moldova. The highest recorded average for biometric parameters was: height at the withers (133.23 cm at females, 130.24 cm at bulls); rump height (140.78 cm at females and 130.46 cm at bulls); chest girth (202.15 cm at females and 204.22 cm at bulls); slantwise body length (159.64 cm at females, respectively 161.22 cm at bulls). Body conformation indices were calculated based on the obtained values. Cattle exploited within farm 2, show the most pronounced massiveness. Weight values between 553.21 and 603.13 were recorded in adult females and between 551.89 and 618.82 in bulls. As a general conclusion, we can state that the animals taken in the study, exploited in the three farms, present overall reports that denote a well-proportioned body development, within the specific morpho-productive type

    Diet Influence on Sperm Quality, Fertility, and Reproductive Behavior in Karakul of Botoșani Rams

    This study aims to analyze the influence of an improved diet with vitamins and minerals (VM) on the live weight, body condition, quality of sperm, behavior, and fertility of rams. The biological material comprised two groups of rams (L1—control and L2—VM supplemented), each consisting of 15 individuals. After a complete one-year cycle, they received different dietary treatments at the beginning of the preparation for the reproduction period. Although in the onset of the mounting period (SM), no significant differences were observed for live weight (p > 0.05), providing supplemental feeding of a VM complex allowed a better capitalization of body reserves, and, consequently, the rams’ groups differed significantly by the end of mating season (FM), for live weight (+4.1%; p < 0.001) and body condition score (+15.9%; p < 0.05). Adding vitamins and minerals to the L2 diet also improved sperm color (p < 0.001), sperm concentration (+11.8%; p < 0.01), live spermatozoa (+2.6%; p < 0.001), and decreased abnormal spermatozoa proportion (−7.0%; p < 0.01). The increase in the scrotum circumference in L2 (+4.57%) suggests that VM supplements improved testosterone secretion, spermatogenesis, and ejaculate volume (+10.20%; (p < 0.001), with a positive impact (p < 0.001) on mating behavior, on the gestation installation (+11.2%) and on the number of obtained lambs (+14.0%), as well as on the key economic indicators (+13.8% incomes per ram)

    A Clean-Label Formulation of Fortified Yogurt Based on Rhododendron Flower Powder as a Functional Ingredient

    The world-wide-dispersed Rhododendron is a tiny, evergreen plant with vivid red or pale pink blossoms that is a member of the Ericaceae family and is well-known for its stunning flowers. To improve yogurt’s nutritional profile and sensory qualities, this study investigates an innovative application of Rhododendron flower powder (RFP). The potential health benefits of Rhododendron flowers, which are a rich source of bioactive compounds such as polyphenols and antioxidants, have attracted attention. Consequently, the physicochemical, phytochemical, and sensory qualities of fortifying yogurt with RFP at various concentrations were studied. The results showed that the texture and color of the yogurt were highly influenced by the addition of RFP. The addition of this functional ingredient also resulted in a significant increase in the yogurt’s polyphenol content and antioxidant capacity. These findings demonstrate the suitability of RFP in yogurt formulations as a functional food ingredient, being a good source of phenolics

    Impact of A2 milk on human health and the dairy industry - a review

    In recent years, a new type of cow's milk, called "A2 milk," has been introduced to the market. This type of milk was first marketed in New Zealand and has since gained a presence in the markets of several countries. It mainly contains two types of β-casein: the A1 and A2 variants. In recent years, researchers have studied the possible implications of the composition of the β-casein protein fraction for the manifestation of a new intolerance: milk protein intolerance. Casein is the main component of milk proteins, of which approximately 30-35% is beta-casein. A2 beta-casein has proline at position 67 of the protein amino acid chain, while A1 beta-casein has histidine at that position; this is associated with a possibility of gastrointestinal discomfort due to β-casomorphin-7 (BCM-7) released during gastrointestinal digestion. The purpose of this review is to provide an update on the impact of A2 milk on human health as well as on its many technological qualities for the production of dairy products with improved health benefits for consumers

    Antioxidant capacity of plant macerates of honey infused apple cider vinegar with application in weight lost management

    The growing prevalence of obesity and chronic diseases has heightened interest in the potential health benefits of natural antioxidants. This study aims to explore the antioxidant capacities of various recipes of honey-infused apple cider vinegar macerates containing plant extracts. Eight different recipes were formulated using apple cider vinegar, acacia honey, and a variety of plant extracts including ginger, green tea, dandelion root, and chicory root. The mixtures were allowed to macerate for 24 and 48 hours at room temperature (21°C), followed by centrifugation and antioxidant capacity analysis using a specialized ACW kit and a PHOTOCHEM device. The antioxidant capacities varied significantly among the eight recipes, ranging from 0.25±0.001 to 1.88±0.008 µg/g (Equivalent Vit C). Generally, an increase in antioxidant capacity was observed from 24 to 48 hours of maceration. Recipes with multiple plant extracts showed remarkably higher antioxidant capacities, indicating potential synergistic effects. The study reveals substantial variations in antioxidant capacities among different recipes, influenced by both the type and combination of plant extracts used, as well as maceration time

    The essential aspects in choosing pet food are the quality and nutrient content of the food. This becomes difficult for pet owners to manage when many diets or types of dogs and cat food are available on the market as will be mentioned in the study: commercial pet food, BARF (Biologically Appropriate Raw Food), home-made or vegetarian diets. There are also many brands and recipes in the commercial pet food industry, which again causes confusion and misleads pet owners. Pet owners now treat their dogs and cats as family members, which is why studies show that globally owners have become more aware of their pets' needs. The current study attempts to present the benefits and drawbacks/disadvantages of different varieties of dog and cat food. By providing an overview of pet feeding patterns, the study seeks to clarify the nutritional needs and highlight the physiological digestive capabilities of two specialized carnivores: the dog and the cat
