    Inkjet printed temperature sensor and its quality characteristics

    The subject of the study investigates the fabrication and measurement accuracy of resistive temperature fabricated using low-cost inkjet printer. For this study a low-cost commercially available inkjet printer was used in conjunction with a high-quality nanoparticle ink for the fabrication process. Electrical conductive silver nanoparticle ink from AgIC with a sheet resistance of 200 mΩ/sq was used in the fabrication process. The selection of the ink was based on the fact that no additional sintering process was needed for curing. The temperature sensors were fabricated without pre/post treatments to determine the influence of lack of pre/post treatment, influence of resulting bending due to lack of encapsulation and influence of environmental factors / aging on the temperature measurement accuracy. The result of the study indicates a linear relationship between the temperature and corresponding sensor resistance in the range of 20-80 °C. In the higher temperature ranges more than 80 °C, a polynomial relation between the temperature and corresponding resistance can be visualized. The results also indicates to the fact that lack of the print quality outshines all other negative influence (lack of encapsulation and environmental) as the major factor influencing the temperature measurement accuracy

    Geobacillus and Bacillus Spore Inactivation by Low Energy Electron Beam Technology: Resistance and Influencing Factors

    Low energy electron beam (LEEB) treatment is an emerging non-thermal technology that performs surface decontamination with a minimal influence on food quality. Bacterial spore resistance toward LEEB treatment and its influencing factors were investigated in this study. Spores from Geobacillus and Bacillus species were treated with a lab- scale LEEB at energy levels of 80 and 200 keV. The spore resistances were expressed as D-values (the radiation dose required for one log10 reduction at a given energy level) calculated from the linear regression of log10 reduction against absorbed dose of the sample. The results revealed that the spore inactivation efficiency by LEEB is comparable to that of other ionizing radiations and that the inactivation curves are mostly log10-linear at the investigated dose range (3.8 – 8.2 kGy at 80 keV; 6.0 – 9.8 kGy at 200 keV). The D-values obtained from the wildtype strains varied from 2.2 – 3.0 kGy at 80 keV, and from 2.2 – 3.1 kGy at 200 keV. Bacillus subtilis mutant spores lacking α/β-type small, acid-soluble spore proteins showed decreased D-values (1.3 kGy at 80 and 200 keV), indicating that spore DNA is one of the targets for LEEB spore inactivation. The results revealed that bacterial species, sporulation conditions and the treatment dose influence the spore LEEB inactivation. This finding indicates that for the application of this emerging technology, special attention should be paid to the choice of biological indicator, physiological state of the indicator and the processing settings. High spore inactivation efficiency supports the application of LEEB for the purpose of food surface decontamination. With its environmental, logistical, and economic advantages, LEEB can be a relevant technology for surface decontamination to deliver safe, minimally processed and additive-free food products

    Unsere Wirtschaft scheint sich im digitalen Zeitalter seit mehreren Jahren global sehr zu verändern. Klassische Unternehmen aus den Branchen Banken, Handel oder Maschinenbau müssen sich neu erfinden, da ihre Geschäftsmodelle häufig nicht mehr tragen. Die international dominierenden Unternehmen sind inzwischen US-amerikanische und chinesische Technologieunternehmen, deren Geschäftsmodelle auf Digitalen Plattformen basieren. Diese Unternehmen verfügen gar nicht mehr über die eigentlichen materiellen Produktionsfaktoren, sondern fungieren nur noch als „Matchmaker“ zwischen Kunden und Herstellern, aber das höchst erfolgreich. Daher stellt sich zunächst die Frage, wie diese IT-Plattformen überhaupt aufgebaut sind, funktionieren und warum Plattformen derzeit als das zentrale Geschäftsmodell der digitalen Ökonomie angesehen werden. Weiterhin ist aus strategischer Sicht zu analysieren, welche Konsequenzen die Plattformökonomie auf die strategische Ausrichtung mittelständisch geprägter Unternehmen hat und ob nun bewährte strategische Gesetzmäßigkeiten neu gedacht werden müssen. Interessant ist auch die Frage, wie Wolfgang Mewes wohl die Plattformökonomie aus Sicht der von ihm entwickelten EKS-Strategie bewerten würde

    Nudging in der Speisenausgabestelle des Zentralen Instituts des Sanitätsdienstes der Bundeswehr München: Lässt sich eine „Healthy Choice“ fördern?

    Nudging ist ein Oberbegriff für ein unscharfes Bündel von Maßnahmen, die einfache Änderungen in der Gestaltung der psychischen, sozialen und physischen Umwelt einsetzen, um Menschen ohne Zwang dazu zu bewegen, für sich selbst oder gesellschaftlich vorteilhaftere Entscheidungen zu treffen bzw. ihr Verhalten dahingehend zu modifizieren. In der Speisenausgabestelle des Zentralen Instituts des Sanitätsdienstes der Bundeswehr München am Standort Garching wurde untersucht, ob einfache Nudging-Maßnahmen die Auswahl gesunder Speisen und Getränke durch die Verpflegungsteilnehmer erhöhen. In einem Pretest-Posttest-Design wurde u. a. erhoben, ob sich der Anteil der Verpflegungsteilnehmer, die die vegetarische Hauptkomponente, Salat als Beilage, Obst als Dessert sowie Wasser als Getränk zum Mittagessen nach der Einführung von Nudging-Maßnahmen erhöht. Einfache Veränderungen (z. B. Auslobung der vegetarischen Tagesempfehlung, grüne Kennzeichnung von Wasser am Getränkeautomat, attraktivere und gästefreundlichere Gestaltung der Salattheke) führten dazu, dass in beiden Posttest-Phasen u. a. signifikant mehr Essensgäste das vegetarische Gericht sowie Salat als Beilage und Obst als Dessert wählten und dass der Anteil von Wasser an den Getränken signifikant stieg. Es zeigt sich, dass Nudging ein aussichtsreicher Interventionsansatz ist, der traditionelle Maßnahmen zur Modifikation des Ernährungsverhaltens ergänzt, und daher weiterverfolgt werden sollte. Ein großes Potenzial ist möglicherweise dort zu sehen, wo es um „kleine“ Änderungen bei einer großen Anzahl von Personen geht, die dazu nicht einmal besonders motiviert sein müssen.Nudging is a term that refers to a set of interventions which introduce simple changes to the design of the psychological, social and physical environment, to encourage people to make better decisions and change their behavior without coercion. This study examined whether simple nudging measures increased the selection of healthy food and beverages in the military canteen of the Central Institute of the Bundes-wehr Medical Service Munich. Results showed that, after introduction of a set of nudges, more diners chose a vegetarian dish, salad as an accompaniment, and fruit as a dessert. In addition, the proportion of water chosen from a range of free drinks increased. Overall, nudging seems to be a promising approach supplementing traditional instruments in health prevention which should be followed. Its major potential possibly lies in achieving minor changes in the behavior of a large number of persons, who do not have to be motivated

    Alginate-Based Edible Films and Coatings for Food Packaging Applications

    Alginate is a naturally occurring polysaccharide used in the bio industry. It is mainly derived from brown algae species. Alginate-based edible coatings and films attract interest for improving/maintaining quality and extending the shelf-life of fruit, vegetable, meat, poultry, seafood, and cheese by reducing dehydration (as sacrificial moisture agent), controlling respiration, enhancing product appearance, improving mechanical properties, etc. This paper reviews the most recent essential information about alginate-based edible coatings. The categorization of alginate-based coatings/film in food packaging concept is formed gradually with the explanation of the most important titles. Emphasis will be placed on active ingredients incorporated into alginate-based formulations, edible coating/film application methods, research and development studies of coated food products and mass transfer and barrier characteristics of the alginate-based coatings/films. Future trends are also reviewed to identify research gaps and recommend new research areas. The summarized information presented in this article will enable researchers to thoroughly understand the fundamentals of the coating process and to develop alginate-based edible films and coatings more readily
