Food packaging and sustainability - current projects in application-oriented packaging research
Food should be much more than hygienic and tasty. They provide important macro- and micronutrients for a healthy diet. These nutrients are subject to natural and environmental degradation reactions - the nutritional value decreases! If this degradation proceeds too quickly, food waste will inevitably result. Properly applied, food packaging technology can delay or even prevent this degradation and thus make a significant contribution to sustainability by reducing food waste. Alternative packaging materials made from renewable raw materials can additionally support this positive contribution - but this presupposes that these new packaging materials fulfil the protective function to the same extent as petrochemical-based plastics. If these new plastics are also recyclable, they could make a valuable contribution to a circular bioeconomy. Prof. Dr. Markus Schmid, director of the Sustainable Packaging Institute SPI at the Albstadt-Sigmaringen University, will explain in this presentation how this could work and how new food packaging concepts, which are being developed in various European-funded projects, could make a contribution to healthy nutrition, less food waste and a circular bioeconomy
Collection of requirements for teaching in the area of Smart Textiles
The textile and clothing industries are facing new challenges. Smart Textiles are a huge topic with a high market potential, however there are only few approaches in teaching this interdisciplinary field. Moreover, individuals are expected to continuously adapt to the new requirements by following the concept of lifelong learning. We propose a new concept that will integrate a smart textiles kit. This application-oriented construction kit should help to extend the frontiers of knowledge, stimulate creativity, and give students the ability to solve real-world problems. As added benefit it will accelerate the understanding of innovation and interdisciplinary challenges. The blended learning concept aims to prepare students to think interdisciplinary, broadly, deeply, and last but not least critically. Students will be ready to contribute to the development of new products and face the challenges of structural change along their working life
Coffee to go: Umgang mit kundeneigenen Bechern bei der Abgabe von Heißgetränken
Auf Grundlage von Handreichungen des Lebensmittelverbands Deutschland e. V. und der Deutschen Umwelthilfe zum Umgang mit kundeneigenen Bechern bei der Ausgabe von Heißgetränken werden Lebensmittelbetriebe auf die Einhaltung der darin formulierten Empfehlungen hin untersucht. Bei 50 Testkäufen in zufällig ausgewählten Ausgabestellen wurde der
Vorgang direkt und aktiv teilnehmend sowie vollstrukturiert, aber verdeckt beobachtet. Anhand von Checklisten wurde die Einhaltung der Empfehlungen protokolliert und deskriptiv ausgewertet. In zwei der 50 Testkäufe wurde das Heißgetränk nicht vom Personal in den kundeneigenen Becher der Testkäuferin abgefüllt. Von den restlichen 48 Ausgaben fanden 46 in Bedienung statt, in zwei getesteten Ausgabestellen konnte das Heißgetränk in Selbstbedienung erworben werden. Bei vier Testkäufen wurden alle untersuchten Kriterien erfüllt; drei dieser vier Ausgabestellen gehören zu einer großen Bäckereikette mit mehr als 350 Filialen. Fast überall wurde der Einsatz von kundeneigenen Bechern zur Abfüllung von Heißgetränken
auf Kundenwunsch bereits praktiziert. Teilweise könnte jedoch das Bedienungspersonal gezielter zum hygienisch korrekten und sinnvollen Umgang beim Abfüllen der Getränke in Kundenbecher geschult werden

Long-Term Persistence of blaCTX-M-15 in Soil and Lettuce after Introducing Extended-Spectrum β-Lactamase (ESBL)-Producing Escherichia coli via Manure or Water
The number of environmental antibiotic-resistant bacteria (ARB) has increased dramatically since the start of antibiotic mass production for broad bacterial infection treatment in 1944. Nowadays, ARB and their resistance-determining genes (ARGs) are readily detected in all environments, including the human food chain. A highly relevant food group in this context is fresh produce, frequent raw consumption of which facilitates direct transfer of ARB and ARGs to the consumer. Here, we investigate the persistence of an extended-spectrum β-lactamase (ESBL)-producing Escherichia coli (E. coli) pEK499 and its clinically most important ARG (blaCTX-M-15), after introduction via irrigation water or manure into a lettuce-growing system. Culturable ESBL-producing E. coli persisted longest in soil and when introduced via manure (until 9 weeks after introduction), while being undetectable on lettuce beyond day 7. In contrast, qPCR detection of blaCTX-M-15 was much more frequent: introduction via water significantly increased blaCTX-M-15 on lettuce until week 4, as opposed to manure, which affected the soil in the long-term (9 weeks) while leading to blaCTX-M-15 detection on lettuce until day 7 only. Our findings demonstrate long-term persistence of undesired ARB and ARG after their introduction via both irrigation and amendment. Such an understanding of the persistence kinetics of an ESBL-producing E. coli and plasmid-encoded blaCTX-M-15 aids the determination of critical actions in order to mitigate their transfer to the consumer
Handlungsansätze für nachhaltigere Lebensmittelverpackungskonzepte - Aktuelles aus der anwendungsorientierten Forschung
Prof. Markus Schmid (Hochschule Albstadt) stellte aus der anwendungsorientierten Forschung Handlungsansätze für nachhaltigere Lebensmittelverpackungskonzepte vor. Am Beispiel einer Schnittkäseverpackung veranschaulichte er, dass Produktverluste höhere CO2-Emissionen verursachen als durch Vermeidung überflüssiger Verpackungen eingespart werden kann. Die Verpackung muss das Produkt ausreichend schützen, aber nur durch optimierte Materialeigenschaften kann Material reduziert werden, und das Material darf nur ersetzt werden, wenn der Produktschutz gewährleistet ist. Eine Lösung sind auf Molkenprotein basierte Folien. So wird aus einem Abfallprodukt eine nachhaltige Verpackung mit guten Barriereeigenschaften, die zu 100% recyclebar ist – so zumindest das Entwicklungsziel auf Basis der vielversprechenden Ansätze.

Der Rest wird verbrannt, endet auf Deponien oder gelangt unkontrolliert in die Umwelt. Somit steigt der politische und gesellschaftliche Druck nach einem nachhaltigeren Umgang mit Verpackungen, mit dem Ziel, eine geschlossene Kreislaufwirtschaft zu erreichen
Tackling Food Waste: Impact of German Consumer Behaviour on Food in Chilled Storage
Since perishable food in private households is usually stored in refrigerators, both consumer knowledge of correct storage parameters and food handling have a major impact on food quality retention. Today’s refrigerators provide features, such as climate-controlled compartments, to improve chilled storage performance, but former studies have shown a lack of usage and interest in such features. This paper is based on the results of an online survey with 2666 respondents from Germany. The questionnaire focused on consumer behaviour regarding the chilled storage of perishable foods, the perception of quality loss in food and consumer requirements concerning refrigerators. The novelty in the study layout was the focus on seven common refrigerator storage features. The results showed that consumers had a high awareness of food safety, resulting in short storage durations. While it was clearly indicated that the storage features were less well-known, their importance correlated with rates of food waste, underlining the potential for improvement. The survey implied that raising the awareness of storage climate parameters is a tool for nudging consumers into lower rates of food waste
Einfache und anwenderfreundliche Nachhaltigkeitskennzeichnung für Speisen in der Gemeinschaftsgastronomie: Eating for Future
Die Gemeinschaftsgastronomie (GG) verpflegt in Deutschland täglich etwa 16,5 Millionen Essensgäste, beeinflusst deren Ernährungsverhalten und spielt eine wichtige, mehrdimensionale Rolle für zukunftsfä hige, nachhaltige Ernährungssysteme. Nachhaltigkeits-Kennzeichnung (NK) für die GG ist häufig komplex und aufwändig. Ziel war die Entwicklung einer NK für Speisen, die von Verantwortlichen in GG-Einrichtungen eigenverantwortlich und ohne großen Aufwand anhand weniger Kriterien durchführbar ist
A computational intelligence based approach for optimized operation scheduling of energy plants
This paper describes a methodology for optimiz� ing the operation schedule of energy plants, which is ex� emplarily applied for a combined heat and power plant and a heat pump. The methodology is based on the com� putational intelligence algorithms Ant Colony Optimiza� tion and Simulated Annealing and allows a customized description of the optimization objective. This is demon� strated by several optimization objectives that have been considered, such as the price on the electricity market. The methodology replaces a conventional, guided operating mode of the system with an intelligent, prognostic-based
