Vendor Characteristics, Practices, Microbial Contamination of Fish and Oil Quality in the Street Vending of Deep-fried Fish in Peri-urban Nairobi, Kenya: Case of Kasarani Sub-county
Aim: The main objective of the study is to assess the vendor and environmental hygiene, microbial contamination of deep-fried tilapia sold, and the quality of the oil used in the streets of Kasarani sub-county
Study Design: Cross-sectional study.
Place and Duration of Study: Kasarani Sub-county and The University of Nairobi Department of Food Science, Nutrition, and Technology laboratory between January 2019 to July 2020.
Methodology: Structured questionnaires, checklists, analytical observations, and market observations were used to collect data from the street vendors. After the collection of the fish samples, microbial analysis of the fish samples was carried out using standard methods for Total coliforms and Staphylococcus aureus. The deep-frying oil was sampled for analysis of color and viscosity. Results were evaluated using national standards.
Results: The findings indicated that all the vendors have received a basic education and that all vendors fall under the low-income group. The most contaminated part of the fish by Staphylococcus aureus and total coliforms is the gills. The highest contamination was from Clay city ward (2.46 ± 0.43) while the least contaminated was from the Mwiki ward (1.28 ± 1.17). The total coliforms and Staphylococcus aureus concentration are significantly different between wards p (<0.05) as the p-value was 0.003 and 0.043 respectively.
Conclusion: The findings indicate that the vending practices carried out are unsanitary. The fish as sold were contaminated with total coliforms and Staphylococcus aureus at high levels indicating poor hygiene procedures. The environment is characterized by poor sanitation and hygiene. The oil used for deep frying was characterized by dark color and high viscosity indicating prolonged usage of the same oil. Policies governing street vending and the environment should be reinforced to prevent the occurrence of hazards resulting from street vended fish
Farro 57 Rice Cultivar: A Comparative Study of the Nutritional Composition of its Parboiled Milled Rice, Brown Rice and Germinated Brown Rice
This work analyzed the nutritional composition of germinated brown rice (GBR) produced from FARRO 57 rice cultivar and compared it with that of ungerminated brown rice (UBR) and ungerminated parboiled milled/white rice (UWR) from the same cultivar which were used as controls. The aim was to evaluate and compare the nutritional composition of UBR, UWR and GBR of the rice cultivar. The experimental design used was a completely randomized design. GBR was produced by soaking brown rice grains in distilled water for 24 h and then made to germinate in a laboratory incubator at 35° C for 12, 24 and 36 h. The parameters determined included proximate composition, energy value, minerals, vitamins, total starch, amylose and total reducing sugar contents and they were determined in triplicates. It was found that GBR had significantly higher contents of protein (14.54-15.01%), ash (3.36.98%), total dietary fibre (9.23-9.31), phosphorus (130.55-187.15 mg/100 g), iron (6.22-9.94 mg/100 g), calcium (455.0-560.0 mg/100 g), zinc (2.51-2.72 mg/100 g), selenium (92.10-107.50 µg/100 g), vitamin B2 (2.35-2.92 mg/100 g) and vitamin E (1.82-2.68 mg/100g) than UBR and UWR. Furthermore, there was no significant difference between the contents of vitamins A (19.45-19.72 IU), B1 (0.33-0.34 mg/100g) and B6 (1.00-1.10 mg/100g) of GBR and UBR samples, however they were all significantly higher than that of UWR. The GBR also had significantly lower amount of total carbohydrate (64.21-71.09%), total starch (54.91-60.92%), amylose (22.05-28.14%), and total reducing sugar (5.14-11.23%) than UBR and UWR. Amongst the GBR samples, the ash, protein, and the minerals increased with increase in duration of germination while the total carbohydrate, starch and amylose decreased with increase in duration of germination. GBR was recommended over UBR and UWR due to its optimum levels of the nutrients
Health and Nutritional Qualities of Drinks Produced in the Beninese Brewery Company and Those Sold on the Benin Market
Aims: This study aims to evaluate the microbiological, physicochemical and sensory qualities of beverages sold on the market in Benin.
Study Design: The biological material used consisted mainly of beverage samples (126) collected at random from three wholesalers at the points of sale on two different occasions (regular period of 15 days) at the Dantokpa international market in Cotonou (Benin) in between April and September 2019.
Place and Duration of Study: This study was conducted between April and December 2019 at the Food Safety Research, Laboratory of Microbiology and Food Technologies, Department of Plant Biology, Faculty of Science and Technology, University of Abomey-Calavi, Benin.
Methodology: Microbiological, physicochemical and sensory qualities of samples were evaluated.
Results: The results of the microbiological analyzes revealed that all the drinks analyzed contained neither the total mesophilic aerobic flora, nor wild yeast, saccharomyces nor lactic bacteria. Therefore, the drinks are free from all pathogenic microorganisms that may harm the health of consumers. These products sold on the market complied with the criteria set by the standards and were therefore of satisfactory hygienic quality. However, the physicochemical parameters of the various drinks analyzed varied significantly from one brand to another. Results showed that the Nigerian Guinness produced contained more foam (287 s at 20 °C) and was rich in Diacetyl (0.119 mg / l) than the Benin Guinness (0.050 mg / l). As for the beer "La Béninoise", it produced more foam (220 s at 20 °C) than the Goldberg (209 s at 20 °C) but less than the Satzenbrau (250 s at 20 °C). The beer "La Béninoise" was less rich in Diacetyl (0.026 mg / l) and shown more than Goldberg (0.047 mg/l) and Satzenbrau (0.034 mg/l). As for the types of mixed drinks, it is the star Radler of Nigeria which presented a beautiful foam (235 s at 19.9 °C) with a cloudy aspect compared to the variegated one of Benin (227 s at 20.1 °C). Sensory analysis revealed that Beninese Brewery Company drinks were more appreciated by tasters.
Conclusion: In view of these results, all the beverages analyzed can be recommended to consumers because most of these drinks are of satisfactory quality and consistent with the standards
Evaluation of the Functional, Proximate and Sensory Properties of Cowpea/Soybean Fortified Dabuwa (A Nigerian Dried Stiff Porridge) Produced from Different Cereals
Dabuwa is a dried stiff porridge made from fonio and maize in the ratio of 1:3, beef fat and spiced with fresh onion and caraway (black) seeds. It is a popular food indigenous to the Shuwa Arab nomads of North-eastern Nigeria. An attempt was made to modify dabuwa not only from maize but also from millet and rice. The cereal flours were supplemented with legume flours, the beef fat content was reduced, fresh onion and caraway seeds were replaced with a dried spice-mix of onion, ginger and cardamom. A 3×2×2×2 full factorial design was scaled down to a fractional factorial design of 3×2×2 which generated 12 runs. Supplementation (cowpea and soybean) was done at a constant level of 30%. Fonio was incorporated at either 12.5% (F1) or 22.5% (F2). Each formulation had the other cereal (maize, millet or rice) added at 57.5% (Ma1, Mi1, R1) or 47.5% (Ma2, Mi2, R2); while traditional dabuwa comprising of 25% fonio and 75% maize served as the Control. The blends and dabuwa were evaluated for functional and sensory properties, and proximate composition. Results indicated a general increase on water absorption capacity (216.76% to 270.34% of the blends) unlike oil absorption capacity (0.97ml/g to 1.09ml/g), and an enhanced bulk densities (0.74-0.86g/ml). Dabuwa samples enriched with soybean were shown to be denser in nutrients than those supplemented with cowpea, though no particular trend was observed. Moisture, ash, crude protein, crude fiber, fat, carbohydrate (by difference) and calorific contents of the blends varied significantly (p≤0.05) from 7.38 to 12.18%, 1.80 to 2.96%, 4.33 to 16. 29%, 1.62 to 6.59%, 2.45 to 9.57%, 53.66 to 82.90%, and 337.12-393.37kcal/100g respectively. Proximate composition of modified dabuwa varied thus:4.86-10.85%, 0.92-2.48%, 10.11-16.38%, 0.96-4.65%, 2.02-10.60%, 58.55-86.54%, and 351.03-421.17kcal/100g for moisture, ash, crude protein, crude fiber, fat, carbohydrate contents and calorific value respectively. Sensory scores revealed that rice- and maize-containing dabuwa were liked moderately, but millet containing dabuwa were neither liked nor disliked by the panelists. It was concluded that dabuwa could be prepared not only from maize, but also from rice or millet with legume fortification for enhanced nutrient density without affecting negatively the well known traditional sensory properties of the dabuwa.. Therefore, production and consumption of dabuwa should be re-popularized and its consumption patronized so as to provide macro and micro nutrients to the consumers and avoid the disappearance of a worthy age-old food product
Assessment of the Risk of Exposure to Aflatoxins Found in Maize (Zea mays L.) Produced in Cote d'ivoire in Ivorian Adults
Aims: The objective of this study is to estimate the health risk incurred by the Ivorian adult consumer as a result of exposure to AFB1 and the sum of aflatoxins (AFT) through the consumption of maize.
Place and Duration of Study: During this study 375 samples of maize (grains, cobs, spathes) were taken from February 2016 to January 2017 and the analyzes were carried out at the Biotechnology Laboratory, Agriculture and Development of Biological Resources of the Félix HOUPHOUËT-BOIGNY University.
Methodology: The detection of aflatoxins (AFB1, AFB2, AFG1, and AFG2) was performed by HPLC using the AOAC method. The risk analysis procedure was conducted according to the Codex Alimentarius risk analysis model. It consisted of a quantitative assessment. The quantitative estimation of the aflatoxin exposure was performed according to the deterministic approach.
Results: The results indicate the presence of aflatoxins B1, B2, G1 and G2 in all forms of maize (grains, cobs, spathes) and in the five regions visited. The average concentrations of aflatoxin B1 (AFB1) and the sum of aflatoxins (AFT) ranged from 0.79 ± 0.04 µg/kg to 130.31 ± 22.56 µg/kg and from 2.63 ± 2.35 µg/kg to 169.13 ± 40.39 µg/kg, respectively. Subsequently, the Estimated Daily Intakes (EDI) by consumption of aflatoxin-contaminated maize vary according to the level of contamination. They range from 0.28±0.00 ng/kg body weight/day to 52.85±9.14 ng/kg body weight/day for AFB1 exposure. They ranged from 1.00±0.85 ng/kg body weight/day to 68.57± 16.28 ng/kg body weight/day for AFT exposure. Samples of maize grains and cobs from the Gbèkê, Poro and Hambol regions showed low daily doses below the reference values (2.028 ng/kg body weight/day and 4.056 ng/kg body weight/day). The opposite results are observed with samples (grains, ears and spathes) from Indenié-Djuablin and Gountougo.
Conclusion: The results of the daily doses of aflatoxin exposure of these regions show a need for monitoring their production. Thus, the implementation of efficient technical itineraries throughout the maize distribution chain, both during production, post-harvest processing, and conservation will be able to guarantee a better sanitary quality of this agricultural food product
Antioxidant, Antibacterial Analysis of Pectin Isolated from Banana Peel and its Application in Edible Coating of Freshly Made Mozzarella Cheese
The present study aimed to evaluate the antibacterial, antioxidant activity of pectin extracted from banana peel. Antibacterial activity was investigated against Staphylococcus aureus, Escherichia coli, and Salmonella Enteritidis. The well diffusion method was used to assess the antibacterial effect of the pectin extract on microorganisms. The extract showed maximum activity against Staphylococcus aureus (19.6 mm). The total phenolic content and flavonoid content in the examined extract found to be 3883.6 mgGA/g and 903.03 mg QE/gm on a dry matter basis. Antioxidant activity is analyzed using in vitro Standard spectrophotometer methods. Pectin extract increases DPPH scavenging activity up to 75 µg/ml of concentration. The innovation in food packaging by the use of pectin-based edible coatings is reviewed in this paper. Thereafter, coating of pectin was done in mozzarella cheese and its shelf life was studied at 1, 7,14,21, and 28 days of storage at 5˚C. It was analyzed that pectin coating over mozzarella cheese increases their shelf life from 7 to 21 days. Thus, pectin is a natural polysaccharide that attracts interest for maintaining and improving the quality of cheese. Also, it minimizes the waste that occurs from non-biodegradable packaging materials and helps the environment to be safe. The Implementation of Hazard Analysis Critical Control Point (HACCP) Plan for Chicken Nugget Plant
Hazard Analysis Critical Control Point (HACCP) is a protective approach alarmed with not only food manufacturing but also storage safety. Now-a-days this system has become vital tool for dealings involving different types and kinds of foodstuffs. This perseverance was to established exact HACCP proposal for Bangladeshi chicken nugget manufacturing plant in a current poultry processing plant in Kishoreganj, Dhaka. A precise broad HACCP model was established to develop consumption security and quality of chicken nugget processed in this manufacturing plant. This study was based on genuine circumstances in the chicken nugget manufacturing plant, HACCP’s seven principles and several current general models such as Bangladesh Standards & Testing Institution (BSTI), HALAL, ISO 9001:2015, and ISO 22000, YUM Quality Systems Audit of HACCP utilize through investigation which is also known as qualitative methodology. Under taking the consideration all factors of HACCP such as flow-chart, corrective action, verification procedures, Critical control point monitoring requirements and record-keeping were originated, a HACCP team established in the factory. Three Critical control points (CCP) were acknowledged in the manufacture of chicken nugget in this processing plant. The most important identified CCPs were Supply of ingredients and raw material; packaging material; Proper temperature and time for oil frying and proper examination during packing for foreign and unwanted materials of final product. Developments on the Bioactive Compounds and Food Uses of the Tubers: Colocasia esculenta (L) Schott (Taro) and Xanthosoma sagittifolium (L) Schott (Tannia)
Two varieties of Cocoyam Colocasia esculenta (L) Schott (Taro) and Xanthosoma sagittifolium (L) Schott (Tannia) are experiencing renewed interest not only in Africa but also in the rest of the world. They are considered to be cheaper sources of carbohydrates than cereals or other bulbous crops because of their high calorie yield per hectare, low production costs, and relatively low susceptibility to insect and pest infestation. In addition to their nutritional benefits, they contain bioactive compounds such as polyphenols, proteins, mucilage, polysaccharides, lipids and anti-polyphenol antioxidants. These bioactive compounds have been shown to provide consumers with health benefits such as anti-cancer, anti-inflammatory, antioxidant and dyslipemic properties. Interestingly, you don't need to consume the raw tubers or leaves to get these numerous health benefits, as the different parts of the plants which are nutrient-dense, have been used in various food applications such as flour, chips, poi, syrup, weaning foods for babies, local delicacies, and starch production. These products compete favourably with products from other root and tuber crops. Effect of Particle Size and Transparent Solar Dryer Cover on the Proximate Analysis of Dried Onion
In this work, we investigate effect of particle size and transparent solar dryer cover on the proximate analysis of dried onion.
A solar drying unit was developed and constructed for drying the of red onion slices in order to determine the proximate composition of fresh and dried red onion using multi-crop direct solar dryer. Also, the evaluation and effect of particles size and multi-crop transparent solar dryer cover on the proximate analysis of red onion during drying. Consequently, the higher efficiency of the solar collector was obtained at the higher airflow rate. The moisture content of dried onion slices was strongly affected by the thickness of the onion slices and the density of the polyethylene. The final moisture content of dried onion slices ranged from 10.85% to 13.01%, 4.95% to 6.01% ash, 4.69% to 5.26% fibre, 11.17% to 13.09% fat, 6.70% to 5.60% protein and 68.64% to 68.03% carbohydrate for particle sizes of 3 mm, 5 mm and 7 mm dry-basis depending on drying temperature cycle for low density polyethylene cover. While the final moisture content of dried onion slices ranged from 9.85% to 12.01%, 5.96% to 6.01% ash, 3.69% to 4.26% fibre, 13.17% to 12.09% fat, 5.70% to 6.60% protein and 61.64% to 58.03% carbohydrate for particle sizes of 3 mm, 5mm and 7mm dry-basis depending on drying temperature cycle for high density polyethylene cover
Quality Characteristics of Carrot (Daucus carota L.) Puree Supplemented with Quinoa (Chenopodium quinoa Willd.)
The present study was performed to get a product loaded of nutrients in terms of protein, amino acids, vitamins, and antioxidants. The product had been made from mixtures of carrot and quinoa puree with mixing ratios 10%, 20% and 30% to reach the highest nutritional value and the best general palatability for the consumer. Carrot puree blends were analyzed for nutritional, chemical, microbial and sensory properties. It was found that by increasing the mixing ratio of quinoa with proportion of carrot the protein ratio reached 5.959 gm/100gm in blend (4) compared with 1.845gm/100 gm in blend (1). The best and highest results were in terms of protein and amino acids, especially essential ones, carrot quinoa puree in comparison with control indicated increase in minerals such as calcium 47.666 mg/100gm and iron 6.107 mg/100gm in blend (4) compared with the control were 35.171 mg/100gm and 3.242 mg/100gm, respectively. It was concluded that the greater the percentage of quinoa in substitution the higher the nutritional value and the better general acceptance. As for general palatability, the mixtures contained 10% followed by 20% had a slight difference until the end of the experiment.
Therefore, it is recommended to utilize the quinoa seeds because of their high nutritional values in nutrition, where for children, the elderly and vegetarian people in several forms as flour in the baked goods or in a puree form added to fruits and vegetables
