EVALUATION OF TENDERNESS AND JUICINESS OF DOMESTIC YAK MEAT AND ITS HYBRID IN COMPARISON WITH DOMESTIC CATTLE MEAT
Production of alternative types of meat such as domestic yak meat, offers not only economic opportunities but also nutritional benefits and still represents a gap in the market due to supply and demand constraints. The aim of this study is to compare the tenderness and juiciness of domestic yak meat with meat of crossbreed domestic yak with domestic cattle and meat of domestic cattle itself during maturation. Samples of ribeye from domestic yak, domestic yak hybrid and domestic cattle were taken. Individual meat samples were vacuumed and matured at 4 °C. During maturation, the pH (Testo602- pH2-CONRAD probe), weight loss, tenderness and juiciness of grilled meat samples were evaluated once a week using a TA.XT texturometer plus Stable Micor Systems TM (Warner-Bratzler knife, 50 mm compression probe). Sensory analyzes of meat samples were also performed once a week, focusing on their color, fatness, aroma, consistency, juiciness and taste. Domestic yak is a neglected cattle with considerable and as yet untapped potential, especially for meat production, which represents a unique, nutritionally valuable opportunity to diversify the diet
IMPROVING THE EFFECTIVENESS OF MANAGEMENT OF THE ENTERPRISE HOUSING AND COMMUNAL SERVICES IN UKRAINE BASED ON THE STUDY OF MENTAL MODELS OF ITS PARTICIPANTS
It is known that effective management of the housing and utilities sector depends not only on the current situation in the managed system and its immediate surroundings but also on the people who make these decisions. Their experience, professional training, intuition, and mood directly affect the quality of managerial decisions and therefore, indirectly influence the positioning of the managed system in time and space. Public recognition of this influence led to the emergence of behavioral economics as a new branch of economic science. The latter studies how people make management decisions in everyday life and how to improve their quality, using the hidden capabilities of consciousness. At the same time, behavioral economics seeks to adapt the achievements of its predecessors (classical and neoclassical economic concepts) on the evolutionary path of civilizational development and find the best practical application for them. One of the most significant achievements of neoclassical economics is the model approach to organizational management. It seems that it will also take its rightful place in behavioral economics. The present article tries to reveal the composition and content of mental models, which will form the basis of model choice in the conditions of reforming the housing and utilities sector in Ukraine. The main difficulty of such a hypothesis is that the elements that form mental models, the connections between them and the environment, are intangible in nature and are not given to us in the senses
ACADEMIC LITERACIES, PARENTS\u27 LEVEL OF EDUCATION, GENDER, AND MULTILINGUALISM: AN EXPLORATORY STUDY OF FIRST-YEAR STUDENTS REGISTERED IN GEOGRAPHY, HISTORY, PHYSICS, AND FRENCH
Our study focuses on four academic training programs intended to support students in their development of academic writing and analyzes them with regard to students’ evaluations. We also investigated two factors identified as influencing primary literacies (parents\u27 level of education and multilingualism) and a factor pointed out as more relevant for success at university (gender) to establish whether the latter has a role in the development of academic discourse. Our results show that entering academic discourse is a gradual process including various elements beyond the simple mastery of academic writing. The factors of Parents\u27 level of education, Gender, and Multilingualism do not appear to be significant when entering university discourse
GAME-BASED EDUCATION IN THE 21ST CENTURY - INNOVATIVE EDUCATIONAL METHODOLOGIES IN THE SERVICE OF CURRENT EDUCATIONAL CHALLENGES
The teaching and learning needs of the 21st century have changed significantly from those a few decades ago. Changing economic conditions, new technologies, and labor market demands have changed the competency expectations. There is an increasing emphasis on independent creative work, critical thinking and collaboration. The education of the younger generation, including vocational training and adult education, should support the achievement of these goals. Competence development and effective education of both children and adults is a central issue in pedagogy. An appropriate tool for this are games, which is an internal learning method for people. Children play instinctively, it is a genetically encoded activity that does not need to be taught. Our research focuses on the methods of game-based education. Within this, the development of a new skills, development methodology and its practical applicability. In our work, we explored what effective teaching and development approaches are there through games and how cognitive skills can be developed. During our research, we develop and test various games, and we have concluded that at the present which are the games that perform best in competency development and individual development in general. The research result to be presented is based on the Castle of Mind (COM) board game we have created, which also functions as an educational aid and development tool. Thanks to the unique gameplay of COM, the hit doesn’t (necessarily) happen where the move is. That is, the consequences of actions during the game can occur in a location other than the move, which, in addition to developing attention, improves several abilities. Based on our research results, playing with COM effectively develops concentration, logic, relationship insight, critical thinking, and problem-solving skills. The game is one way to develop competencies effectively and in a lifelike way through playing for both children and adults
TOWARDS THE DEVELOPMENT OF INTERACTIVE AND MULTIFACETED PRE-LAB EXERCISES FOR ORGANIC CHEMISTRY PRACTICAL CLASSES
In the Chemistry Department we are developing innovative web-based pre-laboratory exercises to enhance our students’ lab learning and experience. The framework incorporates supportive information, contextual value of the experiment, multimedia resources including interactive materials, and formatively assessed questions with explanatory feedback. The interactive pre-lab exercises are designed to explain the theories and justify experimental procedures and their utility value to increase student motivation and enhance their in-person lab practice. These multimedia resources are being developed for second-year chemistry undergraduate students. The effectiveness of these pre-laboratory resources will be assessed through multiple strategies including feedback forms, module evaluation questions, inter-cohort grade comparison and semi-structured interviews via MS Teams
INFORMATION ABOUT THE FEAST OF STS. CYRIL AND METHODIUS IN THE ONLINE ARCHIVES OF SELECTED SLOVAK DAILY NEWSPAPERS – TENDENCIES AND CONTEXTS
Sts. Cyril and Methodius, leading figures of the Byzantine mission, have a firm place in the cultural identity of Slovaks. Their feast day is celebrated in Slovakia on 5 July and is also a national feast and a bank holiday. Pilgrimages, festivals and commemorative events are organised at various levels on the occasion of the feast, to which the media sphere reacts accordingly. The study presents the image of the feast of Sts. Cyril and Methodius and its associated celebrations as presented in the Slovak daily press. This research is specifically focused on the online space and thus the web archives of the selected daily newspapers, as they are assumed to have a wider reach and access without time constraints. The aim of the thesis is to present the context of the celebration of the feast of the Slavic apostles and co-patrons of Europe and to outline the tendencies in the reporting of it
ORIGIN AND DYNAMIC OF THE TANK OUTBURST OF AN OIL-FILLED TRANSFORMER
The paper refers to an event occurred inside an electric substation, happened at the restoration of the electrical supply of an oil-filled transformer subsequent to an intervention of periodic maintenance, and consisting of the outburst of the oil tank with leaking of the diathermic oil both as a high temperature vapor and as liquid on fire. The development of the case study we focus on shows the event chain rebuilt with high reliability and proposes the adoption of preventive measures for the safety of the workers
THE DEVELOPMENT OF FRANCHISE IN POLAND IN THE CONTEXT OF THE ECONOMIC DEVELOPMENT OF THE COUNTRY AND THE MODEL OF OBLIGATIONS OF THE FRANCHISOR AND FRANCHISEE BASED ON HONESTY
The period from the 1990s to 2020 in the Republic of Poland is characterized as one of exceptionally dynamic development of franchise as a business model. In the article, the authors identified and presented the following stages of franchise development in Poland: 1) Wild early spring (the 1990s); 2) Market maturation and Polonization (2000-2007), 3) Towards a safe haven and expansion (2007- 2013); 4) Stable development in domestic brands and market saturation (2013-2020). The franchise model in Poland has also evolved in terms of business ethics. Initially, there was a lack of knowledge, education, information, and industry organization regarding this model, and the word "franchising" was sometimes used as a camouflage to hide sales’ pyramids. Today, many franchise networks in Poland are a professional, safe haven that unites and supports franchisees on their way to business success. The authors described a model of franchisor and franchisee obligations based on fairness. On the Polish market, franchising may turn out to be a support in changing the trajectory of socio-economic development, i.e., for Poland\u27s exit from the middle-income trap and for changing the path of development from molecular to community, characteristic of highly developed countries. Franchising allows individualistically-oriented entities with low social trust to cooperate and generate added value in excess of the sum of individual benefits. It allows entrepreneurs to join forces and take advantage of the economies of scale and benefits of active operation within a corporation, while simultaneously leaving entrepreneurial individuals a sense of agency
SOCIAL RESPONSIBILITY ACTIVITIES AS A CORPORATE REPUTATION TOOL IN THE AVIATION INDUSTRY
As a result of globalization and developing welfare levels, it is seen that the demand for air travel is increasing among transportation preferences. Airline companies, like organizations operating in other sectors, strive in various fields to gain an advantage in a tough competitive environment. Surviving despite many negative and shocking events, from pandemics to financial crises, from protests to social media movements, is a matter of "reputation". Considering that reputation is one of the most valuable assets of an organization, this issue requires professional and sensitive management for organizations. In today\u27s world where people are more sensitive to environmental problems and there are disadvantaged groups such as disabled people and social problems such as poverty; organizations that want to have a positive and strong reputation are expected to implement social responsibility beyond providing quality products and services. This expectation shows itself in internationally accepted reputation reports such as RepTrak, and social responsibility activities appear as one of the reputation criteria. In this study, reputation management will be mentioned, a conceptual framework will be drawn on the issue of social responsibility activities as a corporate reputation tool in the aviation sector, and the most reputable and best airline companies will be examined in terms of social responsibility practices according to the research made by RepTrak and Skytrax
EVALUATION OF ROBUST COLOR RECOGNITION ALGORITHMS
A number of color recognition algorithms are known - from algorithms using classic HSL/HSV space to modern AI algorithms. In some practically important situations, the unavoidable electronic noise of the digital camera makes color recognition non-reliable, for example, in dark regions and in over-bleached regions. A new robust approach is proposed to mark problematic regions and, depending on parameters selected by the user, to exclude those problematic regions from the later analysis. In order to enable a human observer and to third-party applications to recognize problematic regions (in which color recognition is not reliable), it was decided to present results as a true color map, in which problematic regions have a strong color component (for example: red, green, or blue). The paper provides some results of applying the proposed algorithm for synthetic and real-life images
