การศึกษาอาหารที่มีฤทธิ์ต้านจุลชีพนั้นเป็นเรื่องที่น่าสนใจ พริกแกงแดงเป็นเครื่องปรุงหลักที่ใช้ในการทําแกงป่า โดยทั่วไป ส่วนผสมของพริกแกงแดงประกอบไปด้วย พริกแห้ง กระเทียม หอมแดง ตะไคร้ ผิวมะกรูด ข่า และเมล็ดยี่หร่า งานวิจัยนี้
มีจุดประสงค์ที่จะศึกษาฤทธิ์ความเป็นไปได้ที่พริกแกงในแกงป่าจะมีฤทธิ์ในการยับยั้งเชื้อ Listeria monocytogenes 10403S แกงป่าเตรียมโดยใช้วิธีการต้ม1 ชั่วโมง ในสัดส่วน น้ํา 500 มิลลิลิตรต่อพริกแกง 45 กรัมรอให้เย็น และใส่เชื้อลงไป 1 % v/v ศึกษาฤทธิ์ต้านจุลชีพของพริกแกงโดยใช้วิธี in-vitro by cell count serial dilution ลงบนอาหารเลี้ยงเชื้อ BHI ทุกๆ 1 ชั่วโมงเป็นเวลา 6 ชั่วโมง ที่อุณหภูมิห้อง และควบคุมการปนเปื้อนจากเชื้อชนิดอื่นโดยการเก็บตัวอย่างจากชั่วโมงที่ศูนย์ ก่อนการถ่ายเชื้อ ผลการศึกษาแสดงให้เห็นว่าการเจริญเติบโตของ L. monocytogenes 10403S ในแกงป่านั้นต่ํากว่าอย่าง มีนัยสําคัญทางสถิติเมื่อเทียบกับ positive control (BHI) (P < 0.05) ตั้งแตชั่วโมงที่ 1-6, พริกแกงในแกงป่านั้นมีฤทธิ์ต้าน จุลชีพในการยับยั้งเชื้อ L. monocytogenes 10403SThe natural antimicrobial agent generates a lot of attentions especially on food safety. The investigation on the food having antibacterial activity itself becomes more interesting. Thai red curry paste is a traditional condiment used in making red curry (Kang-Pa). In general, the ingredients used in the red curry paste are Capsicum annuum, Cymbopogon citrates, Alpinia galangal, Allium ascalonicum L, Allium sativum, Citrushystrix and Cuminumcyminum. This study aimed to investigate the potential of Thai red curry paste in Kang-Pa model acting as natural antibacterial agent against Listeria monocytogenes 10403S. Kang-Pa was prepared by using Thai traditional cooking and was inoculated with 1% culture. Thai red curry paste antibacterial activity was investigated in-vitro by cell count serial dilution method on BHI media every hour for 6 hours at room temperature. The results showed that the levels of L. monocytogenes 10403S in Kang-Pa was significant lower than of positive control (BHI) (P < 0.05), since 1st-6th hour. Thai curry paste in Thai red curry showed promising antibacterial activity against L. monocytogenes 10403S

No full textปัญหาของสารสนเทศทางการบัญชีของวิสาหกิจขนาดกลางและขนาดย่อมที่ไม่สะท้อนความถูกต้อง ครบถ้วน เที่ยงธรรม และสามารถพิสูจน์ตรวจสอบได้ การไม่จัดทาบัญชี การจัดทาบัญชีไม่ถูกต้องตามหลักการบัญชี และหลักปฏิบัติที่ยอมรับในสากล การขาดระบบบัญชี ขาดระบบการควบคุมกากับดูแลที่ดี ไม่ได้ใช้บัญชีธนาคารเป็นเครื่องมือในการควบคุมระบบการเงินของกิจการ การทารายการค้าดดยไม่่่านบัญชีธนาคารให้ครบทุกรายการ ตลอดจนการจัดทาและนาเสนองบการเงินที่ไม่น่าเชื่อถือ ปัญหาดังกล่าวเป็นอุปสรรคต่อการใช้สารสนเทศในการประเมินความเสี่ยงเพื่อวิเคราะห์สินเชื่อ หากธนาคารหรือสถาบันการเงินได้รับสารสนเทศที่ไม่เท่าเทียมกับความเป็นจริงย่อมส่ง่ลต่อการอนุมัติสินเชื่อที่ไม่เหมาะสมทั้งจานวนเงิน อัตราดอกเบี้ย การค้าประกันและระยะเวลาชาระหนี้เงินกู้ วิสาหกิจขนาดกลางและขนาดย่อมมักจะได้รับอนุมัติสินเชื่อในวงเงินที่ต่า อัตราดอกเบี้ยสูง มูลค่าหลักทรัพย์ค้าประกันสูงและระยะเวลาคืนเงินกู้สั้นกว่า เมื่อเปรียบเทียบกับธุรกิจขนาดใหญ่ เนื่องจากการให้ข้อมูลสารสนเทศทางบัญชีที่ด้อยคุณภาพจึงเป็นเหตุที่สาคัญต่อการตัดสินใจอนุมัติสินเชื่อที่ไม่เป็นธรรมของธนาคารThe Accounting problems that are the obstacle of Small and Medium Enterprises (SMEs)
financing are unqualified accounting information which is untrue, unfair, and non-verifiable; no
accounting record; of no compliance with accounting standards and international accepted principles;
lack of good accounting information system and good corporative governance; not open business bank
account which is used as a tool for controlling over business cash and financial system; and unreliable
financial statements. These problems affect the risk assessments that are used by credit analysts to
analyze for granting loan to SMEs. Asymmetry of accounting and financing information provided by
SMEs affect bank decision for lending in the adverse selection, not only amount of loan but also
interest rate, collateral, and terms. SMEs are granted loan in the smaller amount with higher interest
rate, larger amount of collateral and shorter term for repayment of loan when compared with the
lending to big firms. The low quality of accounting information is the main cause that leads to the
moral hazard in bank lending decision
