    The Impact Of The Vietnam Drip Method On The Quality Of Robusta Coffee Drinks In Pasaman Barat

    This study aims to identify the effect of the Vietnam Drip brewing method on the quality of taste, aroma, and texture of Robusta coffee, and to analyze the relationship between these variables. This type of research is quantitative research with experimental methods using primary data. Instrument trials include normality tests, homogeneity tests, t-tests, and correlation tests. The results show that the Vietnam Drip method produces coffee brews with varying taste, aroma, and texture characteristics depending on the level of coffee bean grind (fine, medium, and coarse). Based on the results of the t-test, the level of grind fineness does not significantly affect taste and aroma (p>0.05), but significantly affects texture (p=0.027). The correlation test shows a fairly strong relationship between aroma and texture (r=0.696), while taste does not show a significant relationship with either variable. Thus, it can be concluded that the size of the coffee bean grind plays an important role in determining the texture of Robusta coffee brewed with the Vietnam Drip method. Therefore, for baristas and coffee enthusiasts, choosing the right grind is crucial for achieving the desired texture without sacrificing taste and aroma

    This study aims to determine the formulation of moringa leaf sago cookies with the addition of Balinese complete seasoning and public acceptance of the product through organoleptic preference tests based on aspects of taste, aroma, texture, and color. The type of research used is quantitative with an experimental approach. To obtain data in the community, this study uses an observation method, namely by distributing the favorite test sheets to the consumer community. Then the data will be analyzed using descriptive statistics (mean).     Comparative Analysis of the Quality of Roll Cake with Different Types of Eggs

    This study aims to compare the quality of roll cakes prepared using different types of eggs, namely layer chicken eggs and free-range chicken eggs. Eggs serve as a main ingredient in cake formulation, significantly affecting the physical and sensory properties of the final product. A comparative research design was applied to evaluate two samples under controlled conditions. Sensory evaluation was conducted to assess organoleptic attributes, including shape, volume, color, aroma, texture, and taste. Data were collected from 30 Culinary Arts Students. Data were analyzed using the t-test (independent sample t-test) to determine whether there were significant differences between the two treatments. The results showed that roll cakes made with local chicken eggs had a larger diameter, a brighter yellow inner color, a more pleasant aroma, and a softer texture compared to those made with layer chicken eggs. The t-test revealed significant differences in shape, inner color, texture, and taste, while volume, crust color, and aroma showed no significant differenc

    Di era digital saat ini, media sosial tidak lagi hanya digunakan untuk berbagi aktivitas sehari-hari atau hiburan semata. Bagi mahasiswa, terutama di bidang tata boga, media sosial mulai dimanfaatkan sebagai sumber belajar yang mudah diakses, menarik, dan mendukung pembelajaran yang fleksibel. Artikel ini mengulas berbagai literatur yang meneliti bagaimana penggunaan media sosial dapat mendorong tumbuhnya kemandirian belajar mahasiswa tata boga. Melalui pendekatan literatur review terhadap artikel ilmiah dalam kurun waktu 10 tahun terakhir, ditemukan bahwa media sosial—seperti YouTube, Instagram, dan TikTok—mampu menyediakan materi visual, langkah-langkah praktis, serta ruang interaksi yang memperkuat keterampilan dan motivasi belajar secara mandiri. Meskipun begitu, tantangan tetap ada, seperti risiko informasi tidak valid dan distraksi dari konten lain. Oleh karena itu, media sosial perlu dimanfaatkan secara terarah agar benar-benar menjadi pendukung pembelajaran mandiri yang efektif.

    Quality Macaroni Schotel with the Substitution of spririt hen

    Penelitian ini bertujuan untuk menganalisis kualitas makanan macaroni schotel dengan subsitusi daging ayam petelur afkir. Jenis penelitian ini adalah eksperimen murni dengan 2 perlakuan dan 3 kali pengulangan menggunakan uji organoleptik dengan metode Independent Sample T-test. Data yang diperoleh dari panelis 3 panelis terbatas yang merupakan dosen tata boga, setelah itu dilakukan analisis statistik, jika t hitung > t tabel dinyatakan tidak terdapat pengaruh yang signifikan, sedangkan jika t hitung < t tabel dinyatakan terdapat pengaruh yang signifikan dari subsitusi daging ayam petelur afkir. Hasil penelitian menunjukkan bahwatidak terdapat pengaruh yang siginifikan dari kualitas bentuk yang seragam, warna cukup kuning keemasan, aroma harum, tekstur lembut dan rasa gurih.

    The Addition Of Jicama Flour On The Quality Of Shape, Color, Aroma, Texture And Taste In Muffins

    Muffins are a type of bread without yeast that are made in personal sizes and can be eaten in just a few bites. Muffins that are generally developed at this time are classified as quick bread because they use chemical raising agents that can react quickly as a substitute for yeast which is a biological raising agent that reacts more slowly. In this research, the main ingredients in making muffins are wheat flour, sugar, eggs, fat, baking powder and liquid. Jicama flour is flour that comes from jicama tubers that are dried, ground, then sifted to become flour. Currently, there are many innovations in muffin recipes both in terms of taste and raw materials for making them. The city of Padang is the area that produces the most jicama in West Sumatra, but it is still limited in terms of processing because jicama is usually only consumed fresh. Thus, to optimize the processing, especially for jicama fruit which is no longer attractive to sell because the skin color has started to turn black, the author wants to use it by processing it into flour which will be substituted in muffins.  This research aims to analyze the effect of 15%, 30% and 45% substitution of jicama flour on the quality of shape, color, aroma, texture and taste of the muffins produced. The type of research used in this research is pure experiment (True Experiment) with organoleptic tests. The research was carried out 3 times with 4 treatments each and tested on 3 expert panelists. Then the data obtained was tabulated in table form and analysis of variance (ANOVA) was carried out. If they differed, they were tested using the Duncan Multi Ranges Test (DMRT). Then data analysis is carried out, if the data obtained by Fcount is greater than Ftable then proceed with the Duncan test. Muffins with jicama flour substitution had the best results at 15% treatment (X1)

    The Quality Of Baked Brownies Produce From The Subtitution Of Milit Flour

    This study aims to analyze the effect of  25%, 50%, and 75% substitution of jewawut flour on the quality of the, aroma, texture and taste of the baked brownies produced. This type of research is an experiment using a completely randomized design method. The type of data used is primary data obtained from 3 expert panelists by filling out the organoleptic test format. Analysis of the data used is ANOVA, if there is a significant effect, continue with Duncan's test. The results showed there was no effect on the quality of the aroma, texture (congested), texture (dry) and taste of the baked brownies produced. The results of the best steamed brownies in the X3 treatment were in the sweetness category, tasted chocolate, and dark brown in color. It is suggested to the next researcher to process steamed brownies using a substitution of 75% of the amount of wheat flour used

    Implementation of Management Function to Corn fritter Enterpreneurs in Padang Panjang City

    This research is based on the background of corn business actors who are still facing challenges in applying management principles so that the production produced is not effective and efficient. The purpose of the study is to describe production management in corn farming business actors in Padang Panjang City. The type of research used is qualitative, carried out in Padang Panjang City in July 2024. The source of research data was obtained from informants, namely corn business actors. Data collection techniques by conducting observations, interviews, and documentation. The data analysis used includes data reduction, data presentation, and conclusion drawn. The results of the study show that corn farmers in Padang Panjang City are quite good in carrying out management functions, namely: planning, organizing, directing and supervising the corn production process.

    The Effect of Soaking Time on The Quality of Candied Papaya

    One processing technology that can be developed to extend the shelf life of papaya fruit is processing papaya into sweets. Candied fruit is a type of snack made from fruit that is processed using granulated sugar and has a sweet and sour taste so it has a distinctive taste. This research aims to analyze the effect of soaking time of 3 hours, 6 hours and 9 hours on the quality of shape, color, aroma, texture and taste. This type of research is a true experiment (pure experiment) using a completely randomized design (CRD) method with 5 panelists. The data in this research uses primary data. The data was then analyzed using analysis of variance (ANOVA), if F calculated > F table then continued with the Duncan test. The results of this research are that there is no significant influence of the length of soaking on the quality of shape (neat flower shape), color (reddish yellow), aroma (typical of papaya), texture (brittle), and there is a significant influence of the length of soaking on the quality of the sweet taste. in candied papaya because F count > F table. The highest overall achievement scores were shape (neat flower shape) 4.07 (3 hours), color (reddish yellow) 4.53 (3 and 9 hours), aroma (typical papaya) 4.60 (9 hours), texture (brittle ) 4.53 (9 hours) and taste (sweet) 4.47 (9 hours). The best quality results for sweets were in the X3 treatment (9 hours). 

    The Effect Of Using Different Rejected Watermelon On The Quality Of Bavarois Pudding

    Bavarois pudding is a popular product with a sweet flavor and soft texture. This study aims to determine how the use of sengkaling rejected watermelon, oval rejected watermelon, and striped red rejected watermelon can affect the organoleptic characteristics of bavarois pudding. This type of research is pure experiment, the object of this research is pudding bavarois. The variables of this study include independent variables with 4 factors, namely no watermelon (X0), sengkaling rejected watermelon (X1), oval rejected watermelon (X2), and striped red rejected watermelon (X3). The dependent variable is the quality of bavarois pudding. The type of data is primary data sourced from 3 panelists who answered the organoleptic test format. This research design is a completely randomized design (CRD) with three repetitions. The data obtained were analyzed using analysis of variance (ANOVA), if Fcount > Ftable then continued with the Duncan test. The results showed that the use of rejected watermelon had a significant effect on the characteristics of shape, color, aroma, texture and taste. Striped red rejected watermelon had a significant effect on the characteristics of shape (neat according to the mold), color (pink), and taste of pudding bavarois (sweet watermelon). Oval ripe watermelon gave more prominent results in terms of texture (soft) and aroma (fragrant watermelon).
