    Comunicación presentada en: XII Congreso Nacional CyTA-CESIA. Congreso de ciencia, tecnología e ingeniería de los alimentos 2024, durante los días 1-4 abril en Barcelona (España).Las melanoidinas son abundantes en nuestra dieta, y sus efectos beneficiosos para la salud, resultan de gran interés por su bioactividad conocida. Los efectos positivos de las melanoidinas sobre la salud son sus funciones fisiológicas conocidas y principalmente se deben a la capacidad de regulación del estrés oxidativo celular por su actividad antioxidante. Diferentes estudios indican que en la absorción de las melanoidinas éstas pasan al colon donde pueden actuar sobre la microbiota intestinal, además de ser metabolizadas a compuestos de bajo peso molecular que posteriormente son absorbidos y ejercer efectos a nivel endotelial

    Electrochemical detection of organoleptic defects in wine

    Esta tesis doctoral desarrolla sensores electroquímicos innovadores para detectar compuestos volátiles que afectan negativamente la calidad del vino, como 4-etilfenol, 4etilguaiacol o el etanotiol. Estos compuestos, generados durante la fermentación y el envejecimiento en barrica, provocan defectos organolépticos que afectan al aroma y sabor del vino. La investigación propone un enfoque basado en la detección en fase gas para evitar el contacto directo con la muestra, utilizando electrodos de carbono serigrafiados modificados con fulerenos y nanopartículas de oro, así como ftalocianina de cobalto. Este enfoque mejora la sensibilidad, selectividad y durabilidad del sensor, además de reducir interferencias presentes en matrices complejas como el vino. Se han optimizado métodos para la detección simultánea de múltiples compuestos volátiles mediante sistemas duales con líquidos iónicos y membranas porosas, haciendo estos sensores portátiles y eficientes para el control rutinario en bodegas.This doctoral thesis develops innovative electrochemical sensors to detect volatile compounds that affect negatively wine quality, such as 4-ethylphenol, 4-ethylguaiacol, or ethanethiol. These compounds, generated during fermentation and barrel aging, cause organoleptic defects that impact the aroma and taste of wine. The research proposes a gas-phase detection approach to avoid direct contact with the sample, using screen-printed carbon electrodes modified with fullerenes and gold nanoparticles, as well as cobalt phthalocyanine. This approach improves the sensitivity, selectivity, and durability of the sensor while reducing interferences present in complex matrices such as wine. Methods for the simultaneous detection of multiple volatile compounds have been optimized using dual systems with ionic liquids and porous membranes, making these sensors portable and efficient for routine quality control in wineries.Doctorado en Química Avanzad

    Uno de los desafíos técnicos más importantes de la sociedad actual es reducir las emisiones de CO2 para mitigar al máximo las consecuencias del cambio climático y avanzar hacia un planeta más sostenible. Para ello, se ha de incrementar el uso de fuentes de energía renovable, lo que requiere implementar tecnologías de almacenamiento de energía que sean capaces de equilibrar el grid eléctrico. Entre ellas destacan las baterías de flujo redox, las cuales para ser viables necesitan de sistemas electrónicos capaces de asegurar su vida útil y gestionar los datos que generan mejorando su eficiencia. Esta tesis plantea un sistema de gestión de batería flexible, abierto y de bajo coste capaz de monitorizar el estado de salud de la batería y de corregirlo.     Influence of expectancies of success on the choice of vocational education or scientific-technological baccalaureate

    Existe un descenso significativo en el número de estudiantes matriculados en carreras científico-tecnológicas, con notables diferencias de género. Asimismo, cada vez son más los y las estudiantes que continúan sus estudios en la Formación Profesional en lugar del Bachillerato al final de la etapa obligatoria. No se conocen claramente los motivos de esta tendencia, pero parece que las expectativas de los estudiantes y la influencia de su profesorado y madres y padres podrían tener un papel relevante. Por este motivo, esta investigación analiza el impacto de las expectativas de éxito en ciencias y tecnología en la elección del tipo de estudios (Bachillerato o Formación Profesional), así como en la rama elegida (científico-tecnológica o no). Para ampliar el ámbito del estudio, también se considera la percepción que posee el estudiantado sobre las expectativas de éxito que sus padres, madres, y profesorado tienen sobre ellos. El diseño fue cuantitativo, de tipo explicativo, utilizando un instrumento válido y fiable para encuestar a una muestra de conveniencia de 276 estudiantes. Los resultados revelan que las expectativas de éxito del estudiantado y la de sus padres y madres tienen un alto impacto en la elección de estudios de Bachillerato en los chicos, pero no en las chicas. Por otro lado, los hallazgos revelan que la elección de estudios científico-tecnológicos está influida por las propias expectativas de éxito y la de sus padres/madres, en el caso de los chicos, y por las propias expectativas de éxito y las de su profesorado, en el caso de las chicas. Estos resultados ponen de manifiesto la importancia del constructo expectativas de éxito en la orientación académica, así como en la formación de las vocaciones científicas. Por este motivo, para el fomento de las vocaciones científico-técnicas sería necesario poner en práctica metodologías y estrategias de enseñanza que mejoren las expectativas de éxito de los estudiantes, así como desarrollar intervenciones que mejoren las expectativas que sus padres/madres y profesorado les depositan.The number of students pursuing scientific-technological careers is declining, with significant gender differences. Similarly, at the end of the compulsory stage, an increasing number of students continue their studies in Vocational education rather than the Baccalaureate. The reasons for this trend are not clearly known, but it seems that students’ expectancies and the influence of their teachers and parents may play a role. Thus, this study examines the impact of students’ expectancies of success in science and technology, as well as their perceptions of their parents and teachers’ expectancies of success, on their choice of study type (Vocational education or baccalaureate) and branch (scientific-technological or not). A convenience sample of 276 students was surveyed using a valid and reliable instrument in a quantitative, explanatory design. The findings show that students and their parents’ expectancies of success have a strong influence on the choice of baccalaureate studies in boys, but not in girls. In addition, the choice of scientific-technological studies is influenced by their expectancies of success and those of their parents in boys, and by their expectancies of success and those of their teachers in girls. These findings emphasize the importance of the construct of expectancies of success in the formation of scientific vocations and the academic orientation. For this reason, to increase scientific-technical vocations, it is necessary to implement methodologies and strategies that improve students’ expectancies of success in science and technology, as well as the expectancies that their parents and teachers place on them

    "El futuro de los videojuegos: controladores cerebrales (BCI)", elaborado por Pedro L. Sánchez Ortega en 2024, explora el impacto de las interfaces cerebro-computadora (BCI) en la industria de los videojuegos. Este trabajo, vinculado al área de Tecnología Electrónica del Departamento de Ingeniería Electromecánica de la Universidad de Burgos, se centra en cómo las BCI pueden revolucionar el diseño de videojuegos y mejorar la accesibilidad para diversos usuarios. El estudio analiza cómo las BCI permiten a los jugadores interactuar con los videojuegos mediante señales cerebrales, eliminando la necesidad de dispositivos de control tradicionales. Esto abre nuevas posibilidades para el diseño de juegos más inmersivos y accesibles, especialmente para personas con discapacidades que dificultan el uso de controles convencionales. Además, el documento aborda los desafíos técnicos y éticos asociados con la implementación de BCI en los videojuegos, incluyendo cuestiones de privacidad, seguridad de los datos neuronales y la necesidad de desarrollar estándares para su uso seguro y efectivo. Este trabajo es una valiosa contribución al campo emergente de las BCI aplicadas al entretenimiento digital, destacando su potencial para transformar la experiencia de juego y promover una mayor inclusión en la industria de los videojuegos

    On spaces of integrable functions associated to vector measures and limiting real interpolation

    We investigate which spaces are obtained when considering the limiting class of real interpolation spaces (0, q; J) for ordered Banach couples of spaces of (scalar) integrable functions with respect to a vector measure m, defined on a σ-algebra, with values in a Banach space. If m is in particular a finite positive scalar measure, previous known results are derived from ours. Furthermore, we study the interpolation of p-th power factorable operators by the extreme real interpolation method (1, q; K). We also deduce interpolation results for the (1, q; K)-method that apply to other related classes of operators to p-th power factorable operators, such as bidual (p, q)-power-concave operators and q-concave operators.The second named author was supported in part by UCM Grant PR3/23-30811

    Transcultural Insights into Contemporary Irish Literature and Society examines the transcultural patterns that have been enriching Irish lit- erature since the twentieth century and engages with the ongoing dia- logue between contemporary Irish literature and society. Driven by the growing interest in transcultural studies in the humanities, this volume provides an insightful analysis of how Irish literature handles the delicate balance between authenticity and folklore, and uniformisation and diver- sity in an increasingly globalised world. Following a diachronic approach, the volume includes critical readings of canonical Irish literature as an uncharted exchange of intercultural dialogues. The text also explores the external and internal transcultural traits present in recent Irish literature, and its engagement with social injustice and activism, and discusses loca- tion and mobility as vehicles for cultural transfer and the advancement of the women’s movement. A final section also includes an examination of literary expressions of hybridisation, diversity and assimilation to scrutinise negotiations of new transcultural identities. In the light of the compiled contributions, the volume ends with a revisitation of Irish studies in a world in which national identity has become increasingly problem- atic.     Genetic stability, amino acid, and polyamine profile analyses in radiata pine somatic embryos maturated at high temperatures

    Applying stress factors such as high temperatures during the different stages of somatic embryogenesis is important to uncover the molecular mechanisms of stress response and adaptation, and as a strategy to produce plants adapted to harsh environmental conditions derived from climate changes. In this sense, the present work aims to study the effect of high temperatures applied during the maturation of somatic embryogenesis in the ploidy stability, the amino acid and polyamine profiles of the somatic embryos obtained, and the morphological characteristics of the somatic plantlets. The results revealed that the maturation temperature did not affect the morphology of the resulting somatic plantlets, nor the ploidy and genome size of phenotypically normal somatic embryos, whose ploidy and DNA content levels were similar to those found in mature zygotic embryos. Nonetheless, a slight but significant reduction of the genome size of aberrant somatic embryos was observed. The maturation temperature changed the levels of glycine, arginine, lysine, and ornithine. These last three amino acids are precursors of the polyamines detected. Regarding this, putrescine levels were higher in somatic embryos from the highest maturation temperature (5 min pulse at 60 ºC), however, the amount of this polyamine in all samples was much lower than spermidine, spermine and cadaverine. In conclusion, the different temperatures applied did not lead to substantial changes in the ploidy level, endogenous PAs of the somatic embryos developed, or in the morphology of the somatic plantlets.
