Valorization of residues generated in the production of olive oil through clean technologies
El objetivo general de esta Tesis Doctoral es la valorización de los residuos de almazara en términos de extracción de aceite de orujo de oliva y recuperación de compuestos bioactivos mediante tecnologías limpias y emergentes, con posterior encapsulación de los biocompuestos recuperados en nanoemulsiones simples y dobles para su futuro uso en alimentación, cosmética y aplicaciones farmacéuticas. Los residuos sólidos se trataron mediante métodos de extracción convencionales y asistidos por ultrasonidos para la recuperación del aceite de orujo de oliva y de los compuestos fenólicos. Además, se realizaron experimentos de adsorción sólido-líquido sobre los extractos fenólicos obtenidos para concentrarlos, purificarlos y aislar selectivamente los compuestos bioactivos deseados. El agua residual (alpechín) se procesó mediante tecnologías de membrana para lograr la separación de los compuestos fenólicos. Finalmente, los extractos fenólicos se encapsularon en nanoemulsiones simples y dobles, con el fin de mejorar la estabilidad y biodisponibilidad de los compuestos fenólicos encapsulados.The aim of this PhD Thesis is the valorization of olive mill wastes in terms of olive pomace oil extraction and bioactive compounds recovery using clean and emerging technologies, with subsequent encapsulation of the recovered biocompounds in single and double nanoemulsions for their future use in food, cosmetic and pharmaceutical applications. The solid residues were treated using conventional and ultrasound-assisted extraction methods for the recovery of olive pomace oil and phenolic compounds. Furthermore, solid-liquid adsorption experiments were performed on the phenolic extracts for their concentration and purification, and also to reach the selective isolation of the desired bioactive compounds. The oil mill wastewater was processed using membrane technologies to achieve the separation of phenolic compounds. Finally, phenolic extracts were encapsulated in single and double nanoemulsions in order to improve the stability and bioavailability of the encapsulated phenolic compounds.Doctorado en Avances en Ciencia y Biotecnología Alimentaria

UV/Vis absorption spectroelectrochemistry of folic acid
UV/Vis absorption spectroelectrochemistry is a very promising analytical technique due to the complementary information
that is simultaneously obtained from electrochemistry and spectroscopy. In this work, this technique is used in a parallel
configuration to study the oxidation of folic acid in alkaline medium. Herein, UV/Vis absorption spectroelectrochemistry
has been used to detect both the oxidation products and the folic acid consumed at the electrode/solution interface, allowing
us to develop an analytical protocol to quantify vitamin B9 in pharmaceutical tablets. Linear ranges of three orders of
magnitude have been achieved in basic medium (pH = 12.9), obtaining high repeatability and low detection limits. The
spectroelectrochemical determination of folic acid in pharmaceutical tablets at alkaline pH values is particularly interesting
because of the changes that occur in the optical signal during the electrochemical oxidation of FA, providing results with
very good figures of merit and demonstrating the utility and versatility of this hyphenated technique, UV/Vis absorption

Electrochemical generation of surface enhanced Raman scattering substrates for the determination of folic acid
Electrochemistry is a very useful technique to generate surface enhanced Raman scattering (SERS) substrates. SERS depends on two mechanisms: the electromagnetic effect, related to the plasmonic properties of the nanostructures in the substrate, and the chemical mechanism, related to the interaction between the target molecule and the substrate. Thus, Raman enhancement for a molecule strongly depends on the nature of the nanostructures that form the substrate. In this work, time-resolved Raman spectroelectrochemistry is used to generate SERS substrates, obtaining the Raman signal during the generation of the substrate, which is very useful to obtain valuable information on the Raman performance of the substrate. Two metals, Au and Ag, have been used to determine folic acid in a drug. In this example, Au SERS substrates are highly influenced by interfering compounds present in the drug tables. Synthesis of Fluorogenic Arylureas and Amides and Their Interaction with Amines: A Competition between Turn-on Fluorescence and Organic Radicals on the Way to a Smart Label for Fish Freshness
