Lactic Acid Bacteria in the Production of Traditional Fermented Foods and Beverages of Latin America
Traditional fermented foods are inherent to the human diet and represent an important
part of the culture of each country. The fermentation process has been traditionally used as a method
of food preservation. It allows modifying the technological, sensory, and nutritional attributes of
raw ingredients. Latin America has a vast history with these products, but they are not always
known worldwide. One of the most used microorganisms in fermented foods is lactic acid bacteria.
This review aims to provide insight into the main attributes, benefits, and nutritional characteristics
of traditional fermented foods and beverages from Latin America made with lactic acid bacteria.
A bibliography analysis of the general aspects of fermented products from this region was carried
out, focusing on the foods and beverages (with and without alcohol), their representation in native
communities, nutritional value and effect on health, as well as the risk of their consumption. It is
concluded that traditional fermented products of Latin America are usually prepared with specific
ingredients of the region (such as cassava and corn), and that the lactic acid bacteria present in these
foods are not always identifiable due to the inherent variability of artisanal production. The bacteria
observed include Lacticaseibacillus, Lactiplantibacillus, Lactobacillus, Limosilactobacillus, Leuconostoc,

Chickpeas’ and Lentils’ Soaking and Cooking Wastewaters Repurposed for Growing Lactic Acid Bacteria
Legumes processing involves large amounts of water to remove anti-nutrients, reduce
uncomfortable effects, and improve organoleptic characteristics. This procedure generates waste
and high levels of environmental pollution. This work aims to evaluate the galacto-oligosaccharide
(GOS) and general carbohydrate composition of legume wastewaters and assess their potential for
growing lactic acid bacteria. Legume wastewater extracts were produced by soaking and/or cooking
the dry seeds of chickpeas and lentils in distilled water and analysed using high-performance liquid
chromatography with refractive index detection. GOS were present in all extracts, which was also
confirmed by Fourier transform infrared spectroscopy (FTIR). C-BW extract, produced by cooking
chickpeas without soaking, provided the highest extraction yield of 3% (g/100 g dry seeds). Lentil
extracts were the richest source of GOS with degree of polymerization ≥ 5 (0.4%). Lactiplantibacillus
plantarum CIDCA 83114 was able to grow in de Man, Rogosa, and Sharpe (MRS) broth prepared by
replacing the glucose naturally present in the medium with chickpeas’ and lentils’ extracts. Bacteria
were able to consume the mono and disaccharides present in the media with extracts, as demonstrated
by HPLC and FTIR. These results provide support for the revalorisation of chickpeas’ and lentils’
wastewater, being also a sustainable way to purify GOS by removing mono and disaccharides from

Within the scope of the Master's Degree in Linguistics: Societies and Cultures (2nd Cycle), the
student carried out a Master's internship with a report at Ponte Editora, an online platform based
in Startup Madeira, Penteada Campus. By implementing the theoretical knowledge obtained in
the master's degree, the internship mainly consisted in translating and revising scientific texts.
The objectives of the internship were: to contextualize and delimit the areas of activity of the
company Ponte Editora and the audience to whom its services are intended; translate from
English to Portuguese and Portuguese to English abstracts of scientific articles for the journal
Heritage—Journal of History, Heritage and Culture; review and edit texts for the scientific
journals Marine Studies and Engineering Assets; review the English version of the Ponte
Editora's websites; standardize the layout of the websites of the new scientific journals to
conform with the existing one of the journal Heritage. Another important activity involved
translating abstracts of scientific papers to be published in the special issue of the journal
Heritage. For the editorial review activity of the academic journals Marine Studies and
Engineering Assets, redefining the menus of the websites, reorganizing their contents according
to the journal Heritage. The internship activities included reviewing and editing the English
version of the websites, comparing the texts of various magazines stored at the platform and
improving the institutional website of the platform Ponte Editora. Additionally the student’s
Erasmus experience will be included since it enriched her experience on the subjects already
mentioned.No âmbito do Mestrado em Linguística: Sociedades e Culturas (2º Ciclo), a estudante realizou
um estágio de mestrado com relatório na Ponte Editora, uma plataforma online sediada na
Startup Madeira, Campus da Penteada. Implementando os conhecimentos teóricos obtidos no
mestrado, o estágio consistiu essencialmente na tradução e revisão de textos científicos. Os
objetivos do estágio foram: contextualizar e delimitar as áreas de atuação da empresa Ponte
Editora e o público a que se destinam os seus serviços; traduzir de inglês para português e de
português para inglês resumos de artigos científicos para a revista Herança-Jornal de História,
Herança e Cultura; rever e editar textos para as revistas científicas de Estudos do Mar (REM) e
de Ativos de Engenharia (RAE); rever a versão em inglês dos sites da Ponte Editora;
uniformizar o layout dos sites das novas revistas científicas para que estejam em conformidade
com o existente para a revista Herança. Outra atividade importante foi a tradução de resumos
de artigos científicos a publicar no número especial da mesma revista. As atividades do estágio
incluíram a revisão e edição da versão inglesa dos sites, a comparação dos textos de várias
revistas armazenadas na plataforma e a melhoria do site institucional da plataforma Ponte
Editora. Adicionalmente, será incluída a experiência de formação Erasmus da estudante, uma
vez que enriqueceu as suas competências nos temas referidos
Paisagem e arquitetura da vinha, percursos interpretativos
A exposição apresentada em setembro de 2022 no Centro Cívico do Estreito de Câmara de Lobos
constituiu-se como um conjunto de ferramentas para dar a ver a paisagem vitícola da Madeira,
através da sua representação e teve a sua génese em Terroir Madeira: Uma vocação reencontrada,
(trans)formações na arquitetura da paisagem vitícola, uma investigação realizada no âmbito de
Mestrado Integrado em Arquitetura na Faculdade de Arquitetura da Universidade do Porto em
2018-2019, da autoria de David Oliveira (1994-), natural desta freguesia.
Através de uma visitação multiescalar a vários pontos da Ilha, a exposição propôs levantar reflexões
e discussões sobre a (trans)formação da paisagem vitícola como forma de reencontro da sua
original vocação produtiva, em alternativa ao abandono e/ou à sua passiva contemplação. Uma
narrativa que procura sensibilizar as comunidades para os impactos dos diferentes intervenientes
sobre o território agrícola.
A paisagem ali evocada é entendida como um organismo vivo, nalguns casos em renovação, noutros
em rutura com a tradição. Renovação, porque. apesar da alteração dos materiais de construção, das
culturas agrícolas, e do estilo de vida da população, a identidade da paisagem permanece,
respondendo eficazmente às necessidades e aos valores do seu tempo. Rutura, porque a
substituição dos sistemas construtivos, testados num tempo alargado por outros sistemas
estandardizados e menos eficientes a longo prazo, pressupõe um grande risco para a segurança das
populações e para a sustentabilidade da agricultura.
A exposição suportou-se no desenho, enquanto instrumento privilegiado para interpretar, analisar e
sintetizar as qualidades e as fragilidades da paisagem vitícola nas últimas décadas, onde o Estreito
de Câmara de Lobos é caso de estudo.
Em diálogo, foram apresentados registos documentais, gráficos e artísticos do Ateliê de Paisagem:
representar a vinha a partir de António Aragão, uma atividade orientada por Martinho Mendes no
âmbito da educação sénior, dinamizada pelo Serviço Educativo do Museu de Arte Sacra do Funchal,
com os utentes do Centro Comunitário Vila Viva do Estreito de Câmara de Lobos, em 2021.The exhibition presented in September 2022 at the Civic Centre of Estreito de Câmara de
Lobos was a set of tools to show the viticultural landscape of Madeira, through its representation
and had its genesis in Terroir Madeira: A reencountered purpose, (trans)formations in the
architecture of the viticultural landscape, a research carried out within the scope of the Integrated
Master's Degree in Architecture at the Faculty of Architecture of the University of Porto in
2018-2019, by David Oliveira (1994-), a native of this parish where the exhibition took place.
Through a multi-scalar visitation to various points of the Island, the exhibition proposed to raise
reflections and discussions on the (trans)formation of the viticultural landscape as a way of
rediscovering its original productive purpose, as an alternative to abandonment and/or passive
contemplation. A narrative that seeks to sensitise communities to the impacts of the different
actors on the agricultural territory.
The landscape evoked there is understood as a living organism, in some cases in renewal, in others
in rupture with tradition. Renewal, because despite the change in building materials, agricultural
crops and the quality of life of the population, the identity of the landscape remains, responding
effectively to the needs and values of its time. Disruption, because the replacement of time-tested
building systems by other standardised systems that are less efficient in the long term poses a
great risk to the safety of the population and the sustainability of the whole agricultural cycle.
The exhibition was based on drawing, as a privileged tool to interpret, analyse and synthesise the
qualities and weaknesses of the viticultural landscape in recent decades, where Estreito de Câmara
de Lobos is a case study.

Criatividade e resiliência no ensino superior: um estudo exploratório na Região Autónoma da Madeira
Na Psicologia Positiva, tanto a criatividade como a resiliência são consideradas utensílios cruciais para o desenvolvimento saudável dos indivíduos (Seligman & Csikszentmihalyi, 2000; Yunes, 2003). Neste estudo, pretende-se explorar as variáveis criatividade e resiliência na comunidade do ensino superior. A amostra é constituída por 326 participantes com 17 anos ou mais. No que respeita aos instrumentos utilizados, foi aplicada a Escala de Personalidade Criativa – Forma Reduzida, de Pocinho et al. (2020) e a Measuring State Resilience, adaptada para a população portuguesa por Martins, em 2005 (Teixeira, 2014). Os resultados indicam que existe uma associação/correlação positiva entre a criatividade e a resiliência; os indivíduos do género feminino são mais resilientes; os indivíduos mais velhos são mais resilientes e tendencialmente mais criativos; os indivíduos que possuem o ensino
superior são mais criativos; os docentes são mais resilientes do que os estudantes e do que os investigadores; os docentes são mais criativos do que os estudantes. Implicações práticas são também apresentadas e discutidas.In Positive Psychology, creativity and resilience are considered crucial tools for the
healthy development of individuals (Seligman & Csikszentmihalyi, 2000; Yunes, 2003). This
study explores variables such as creativity and resilience in the higher education community.
The sample consists of 326 participants aged 17 or over. Regarding the instruments used, the
Creative Personality Scale - Reduced Form, by Pocinho et al. (2020) and the Measuring State
Resilience, adapted for the Portuguese population by Martins, in 2005 (Teixeira, 2014), were
applied. The results showed that there is a positive association/correlation between creativity
and resilience; female individuals are more resilient; older individuals are more resilient and
tend to be more creative; individuals with higher education are more creative; teachers are more
resilient than students and researchers; teachers are more creative than students. Practical
implications are presented and discussed
An improved analytical approach based on µ-QuEChERS combined with LC-ESI/MS for monitoring the occurrence and levels of Patulin in commercial apple juices
Patulin (PAT) is a mycotoxin produced in fruits, especially in apples, by diverse fungal species that can be transferred into industrial apple juice during processing. An accurate, effective, and selective method has been validated for the quantification of PAT in different commercial apple juices by combining a modified µ-QuEChERS procedure with high-pressure liquid chromatography (LC) equipped with a triple quadrupole mass spectrometer (QqQMS). This sample extraction procedure reduced interference from the sugar-rich matrix, and the separation was performed using the C18 Atlantis T3 column within 10 min. PAT was found by MS with electrospray negative ionization (ESI−) in the mode of multiple reaction monitoring (MRM). The correlation coefficient (R2 = 0.999) satisfied the prerequisite of linearity for PAT in the concentration range of 2–50 μg/kg. The limits of detection (LOD) and quantification (LOQ) of PAT were 0.32 and 1.15 μg/kg, respectively, which were compliant with the maximum levels settled in Commission Regulation (EC) No. 1881/2006. The recoveries were within the 92–103% range, at three fortified levels of 2, 20 and 50 μg/kg, with relative standard deviations lower than 7%. Based on analytical validation, it was confirmed that the µ-QuEChERS/HPLC-MS/MS method is an enhanced, reliable, and quick approach for determination of PAT in apple juice. The current approach proposes reduced sample preparation and analysis time. In addition, it is economical, environmentally friendly, and simpler to implement in comparison to traditional approaches.</jats:p
Tracing the volatilomic fingerprint of the most popular italian fortified wines
The aim of the current study was to provide a useful platform to identify characteristic molecular markers related to the authenticity of Italian fortified wines. For this purpose, the volatilomic fingerprint of the most popular Italian fortified wines was established using headspace solid-phase microextraction combined with gas chromatography–mass spectrometry (HS-SPME/GC-MS). Several volatile organic compounds (VOCs), belonging with distinct chemical groups, were identified, ten of which are common to all the analyzed fortified Italian wines. Terpenoids were the most abundant chemical group in Campari bitter wines due to limonene’s high contribution to the total volatilomic fingerprint, whereas for Marsala wines, alcohols and esters were the most predominant chemical groups. The fortified Italian wines VOCs network demonstrated that the furanic compounds 2-furfural, ethyl furoate, and 5-methyl-2-furfural, constitute potential molecular markers of Marsala wines, while the terpenoids nerol, α-terpeniol, limonene, and menthone isomers, are characteristic of Vermouth wines. In addition, butanediol was detected only in Barolo wines, and β-phellandrene and β-myrcene only in Campari wines. The obtained data reveal an adequate tool to establish the authenticity and genuineness of Italian fortified wines, and at the same time constitute a valuable contribution to identify potential cases of fraud or adulteration to which they are subject, due to the high commercial value associated with these wines. In addition, they contribute to the deepening of scientific knowledge that supports its valorization and guarantee of quality and safety for consumers.</jats:p
Estratégias de marketing pós pandemia na RAM (Região Autónoma da Madeira)
O tema da presente dissertação surgiu pelo interesse pessoal da autora pela área
do marketing e mais especificamente o marketing digital. Tendo como formação base a
área do Turismo considerou-se ser interessante juntar estas duas áreas e fazer desta união
o tema da pesquisa com a qual se conclui o mestrado. O foco do presente estudo são as
estratégias de marketing utilizadas pelas empresas ligadas direta ou indiretamente ao
Turismo num contexto pós-pandémico na Região Autónoma da Madeira (RAM).
Considerou-se interessante estudar como as empresas lidaram com a crise causada
pela pandemia, bem como as estratégias utilizadas para colmatar e ultrapassar as
dificuldades financeiras que daí advieram.
Os objetivos principais do trabalho são caracterizar a atitude das empresas
regionais face ao risco de uma forma global e expor as diferentes formas utilizadas pelas
empresas para a gestão de risco. Tendo como contexto principal a recente pandemia por
Covid, deu-se enfase à gestão do risco com características semelhantes e a forma como
as empresas lidaram com estas, especialmente através de estratégias de marketing.
Foi feita uma revisão de literatura onde foram desenvolvidos conceitos como o de
Turismo, Covid e desemprego, Necessidades dos consumidores e Redes sociais.
Optou-se pela utilização do método de inquérito por questionário, enviado por
email a cento e vinte empresas que estejam direta ou indiretamente ligadas ao turismo,
como a hotelaria, agências de viagens, empresas de animação turística, empresa de
transferes, restaurantes, rent-a-cars. Quarenta e uma empresas responderam ao
questionário.
O presente estudo aborda também a forma como o estado português atuou para
auxiliar as empresas.The subject of the following dissertation emerged as a result of the author's
personal interest in the marketing field and more specifically digital marketing. She
majored in Tourism so it was only fitting to join these two areas and turn this combination
into the research subject with which to conclude her master's degree. This study focused
on the marketing strategies used by companies linked directly or indirectly to tourism in
a post pandemic context in the Autonomous Region of Madeira.
It was interesting to study how companies dealt with the pandemic crisis as well
as the strategies used to address and overcome the resulting financial difficulties.
The main goals of this study were to characterize the attitudes of the regional
companies towards risk in a global way and expose the different ways used by these
companies to manage it. Using the Covid pandemic as the main context, emphasis was
given to risk management with similar characteristics and the way companies dealt with
it, especially through marketing strategies.
A literature review was carried out and concepts such as Tourism, Covid,
Unemployment, Consumer needs and Social networks were addressed.
The survey method of choice was a questionnaire, sent by email to a total of 120
companies directly or indirectly linked to tourism, such as hotels, travel agencies, tourist
animation companies, transfer companies, restaurants and rent-a-cars. Forty-one
companies answered back.
This study also addresses the way the Portuguese government acted to aid the
companies
Phytochemicals and bioactive constituents in food packaging: a systematic review
Designing and manufacturing functional bioactive ingredients and pharmaceuticals have grown
worldwide. Consumers demand for safe ingredients and concerns over harmful synthetic addi tives have prompted food manufacturers to seek safer and sustainable alternative solutions. In
recent years the preference by consumers to natural bioactive agents over synthetic compounds
increased exponentially, and consequently, naturally derived phytochemicals and bioactive
compounds, with antimicrobial and antioxidant properties, becoming essential in food packaging
field. In response to societal needs, packaging needs to be developed based on sustainable
manufacturing practices, marketing strategies, consumer behaviour, environmental concerns, and
the emergence of new technologies, particularly bio- and nanotechnology. This critical systematic
review assessed the role of antioxidant and antimicrobial compounds from natural resources in
food packaging and consumer behaviour patterns in relation to phytochemical and biologically
active substances used in the development of food packaging. The use of phytochemicals and
bioactive compounds inside packaging materials used in food industry could generate unpleasant
odours derived from the diffusion of the most volatile compounds from the packaging material to
the food and food environment. These consumer concerns must be addressed to understand minimum concentrations that will not affect consumer sensory and aroma negative perceptions. The research articles were carefully chosen and selected by following the Preferred Reporting

Polystyrene microplastics exposure modulated the content and the profile of fatty acids in the Cladoceran Daphnia magna
A growing number of studies has shown that the exposure to microplastics (MPs) of different polymeric compositions
can induce diverse adverse effects towards several aquatic species. The vast majority of such studies has been focused
on the effects induced by the administration of MPs made by polystyrene (PS; hereafter PS-MPs). However, despite the
increase in the knowledge on the potential toxicity of PS-MPs, there is a dearth of information concerning their role in
affecting energy resources and/or their allocation. The present study aimed at exploring the impact of 21-days expo sure to three concentrations (0.125, 1.25 and 12.5 μg mL−1
) of PS-MPs of different sizes (1 and 10 μm) on fatty acids
(FAs) profile of the freshwater Cladoceran Daphnia magna. The exposure to the highest tested concentration of PS-MPs
induced an overall decrease in D. magna total FAs content, independently of the particle size. Moreover, a change in the
accumulation of essential FAs by the diet was noted, with an enhanced synthesis of monounsaturated FAs-rich storage
lipids. However, a sort of adaptation to counteract the adverse effects and to re-establish the FAs homeostasis was ob served in individuals treated with high PS-MPs concentration, independently of their size. These results indicate that
the exposure to PS-MPs could alter the allocation or induce changes in FAs composition in D. magna, with potential
long-term consequences on life-history traits of this zooplanktonic species.info:eu-repo/semantics/publishedVersio
