From Icebreakers to Various Skills Development
This chapter explores the evolving role of pedagogical innovation in foreign language (FL) classes for media studies undergraduates at the School of Education (ESEV) of the Polytechnic Institute of Viseu (Portugal). It highlights the transformation of digital tools, initially seen as “icebreakers,” into powerful aids for active methodologies, fostering both hard and soft skills essential for contemporary society and the job market. Teachers commonly integrate online applications, online platforms, and social networks to enhance FL learning. The narrative delves into challenges faced by teachers and students amid constant societal changes. The text emphasizes skills development, improvements over traditional methods, encountered difficulties, and the dynamics within the teaching-learning process. One relies upon gamification as a tool in FL classes, so as to look into its potential to contribute to the systematic exploration of successful educational innovations supported by digital tools in higher education, providing a foundation for future research.info:eu-repo/semantics/publishedVersio
Information about nutritional aspects of edible insects: Perspectives across different European geographies
Edible insects (EIs) have recently gained attention as an alternative and more sustainable food, emerging as an alternative to other protein foods with higher environmental impacts, like bovine meat. EIs contain a valuable composition of macro and micronutrients, important for human nutrition. Nevertheless, their consumption is not yet widespread in Western countries, such as in Europe. This work aimed to study how consumers in three different European locations perceive the role of EIs in human nutrition. Data collection was carried out by a questionnaire survey in three countries (Croatia, Lithuania, and Portugal), and 1723 participants were included in the study. For the treatment of the data, SPSS software was used, and chi-square tests and tree classification analysis were performed. The results showed that for all the statements presented to the participants, significant differences were found in information about EIs according to country. The results further highlighted that the participants were better informed about the high protein content of EIs, while not being well informed about their possible anti-nutritive effects. Tree classification revealed that the most important discriminating variable was country, with Lithuanian participants being better informed than those from Portugal or Croatia.info:eu-repo/semantics/publishedVersio

Abstract
Plant-based beverages (PBB) consumption has increased significantly worldwide due to an interest in vegetarian/vegan diets, taste preferences, health and ethical and environmental issues. Therefore, this study intends to investigate consumption habits, consumer preferences and consumers’ level of knowledge about PBB. In this study, a voluntary, anonymous questionnaire survey was applied to a sample of participants from Portugal. The sample was recruited by convenience, and therefore, the distribution among the groups was not even. Data analysis involved different statistical techniques: basic statistics, chi-square tests, factor analysis, cluster analysis and tree classification analysis. The results indicated that the most consumed PBB were almond, soy and oat beverages. The majority of consumers chose these beverages for nutritional and health reasons, while a smaller number consumed them as part of a vegetarian or vegan diet. The main motivations for consuming PBB are mainly associated with sustainability and health benefits. The results regarding the respondents’ knowledge about PBB revealed that a health-related profession was the most significant predictor. These results allowed us to conclude that the factors of nutrition, health, ethics and practice of a vegetarian/vegan diet influence the consumption of PBB. It was also concluded that being in a healthcare profession, along with age and professional status within this field, were significant factors influencing the level of knowledge about PBB.info:eu-repo/semantics/publishedVersio
FTIR Monitoring of Polyurethane Foams Derived from Acid-Liquefied and Base-Liquefied Polyols
Polyalcohol liquefaction can be performed by acid or base catalysis, producing polyols with different properties. This study compared the mechanical properties of foams produced using polyols from liquefied Cytisus scoparius obtained by acid and base catalysis and using two different foam catalysts. The differences were monitored using FTIR analysis. Acid-catalyzed liquefaction yielded 95.1%, with the resultant polyol having an OH index of 1081 mg KOH/g, while base catalysis yielded 82.5%, with a similar OH index of 1070 mg KOH/g. Generally, compressive strength with dibutyltin dilaurate (DBTDL) ranged from 16 to 31 kPa (acid-liquefied polyol) and 12 to 21 kPa (base-liquefied polyol), while with stannous octoate (TIN), it ranged from 17 to 42 kPa (acid) and 29 to 68 kPa (base). Increasing water content generally decreased the compressive modulus and strength of the foams. Higher water content led to a higher absorption at 1670 cm−1 in the FTIR spectrum due to the formation of urea. Higher isocyanate indices generally improved compressive strength, but high amounts led to unreacted isocyanate that could be seen by a higher absorption at 2265 cm−1 and 3290 cm−1. DBTL was shown to be the best foam catalyst due to higher trimer conversion seen in the spectra by a higher absorption at 1410 cm−1. Acid- and base-derived polyols lead to different polyurethane foams with different FTIR spectra, particularly with a higher absorption at 1670 cm−1 for foams from acid-derived liquefaction.info:eu-repo/semantics/publishedVersio

Learning with a Newborn Bee - Design and Development of a Videogame
In Europe, there are several challenges for beekeeping, such as low level of professionalism and the general public unfamiliarity with bees. Given the importance of beekeeping for rural development and of bees themselves for the preservation of biodiversity and the sustainability of the planet, knowledge promotion about bees and beekeeping is of utmost importance. The project “beeB – Foster for beekeeping bridges through innovative and participative training” (2019-1-PT01-KA202-60782) was developed with the contribution of six countries (Portugal, Spain, Italy, Croatia, Norway, and Estonia) and created tools to allow family beekeepers, or any other non-professional beekeepers, to acquire skills in this area by using innovative and adaptive forms of training that are based on ecological and good practices. The project also set out to create innovative ways of disseminating knowledge associated with the world of bees and its wonders, raising a general interest that might contribute to value the beekeeping sector and to stimulate novel beekeeping pathways. One of the outputs of the project was Ba-Bee-Bee, a videogame that develops as an interactive narrative. The plot is based on the discoveries of a newborn bee inside the hive. The bee can move through scenarios and trigger conversations with other characters. Along the dialogues, when some key concepts are introduced, the game unlocks collectible cards that can be revisited at any moment via the game inventory. In the back of each card, players can find a short paragraph systematizing or adding some more information on the topic. Players can roam freely through the world game, making it possible to repeat interactions and unlock cards that they might have missed. The game runs in desktop computers and mobile devices. All the text presented, in the dialogues, cards, and interface was localized for the partner languages. The process of developing the game was a combination between game design decisions and integration of scientific knowledge targeting the intended public. It implied to distil pieces of information about bees and beehives and translate them into a narrative that led the game environment, the plot and character actions, and the gameplay itself. Developing games that promote learning but are not strictly didactical is a challenge for interdisciplinary teams. The paper intends to contribute with the analysis of the experience of Ba-Bee-Bee, starting with the description of its design and development, followed by a critical discussion of the solutions found for combining playfulness, flow, and learninginfo:eu-repo/semantics/publishedVersio
Development and Rapid Sensory Descriptive Characterization of Cereal Bars Made with Brazilian Licuri Nut (Syagrus coronata)
Licuri (Syagrus coronata) is an oilseed fruit common in the Brazilian caatinga and cerrado biomes. This fruit has high socioeconomic importance in the regions where it grows, being incorporated into exported animal feed and also into gastronomic preparations. Cereal bars are ready-to-eat highly consumed products with increased demand, commonly made with cereals and oilseeds such as licuri. In this sense, the incorporation of licuri in cereal bars may increase its socioeconomic value and expand its potential use. Thus, the objective of the study was to analyze acceptance and describe the sensory characteristics of cereal bars incorporated with licuri nuts. This study was conducted in four stages: (1) development of samples; (2) chemical composition analysis; (3) sensory analysis; and (4) statistical analysis. Cereal bars with licuri presented proportionally lower carbohydrate and protein content as the incorporation of licuri nut increased. However, the dietary fiber content increased. Further, 122 untrained panelists participated in the analysis. The results showed that samples with all proportions of incorporation of licuri nuts were acceptable. Furthermore, the sensory descriptors related to the presence of licuri were positively associated with product acceptance. In this way, this study demonstrates yet another possibility for use of the fruit, increasing its socioeconomic potential.info:eu-repo/semantics/publishedVersio
