Environmental Footprints in Food Services: A Scoping Review
Abstract
The collective meals market generates significant revenue for the world economy. Food services are responsible for consuming large amounts of water and energy, as well as generating a substantial volume of waste, which is often improperly disposed of. Given the unchecked expansion of food services, the lack of proper management of environmental resources can undermine sustainability principles, posing a threat to future generations. This scoping review aimed to synthesize the existing scientific literature on carbon and water footprints in food services, describing the main methods and tools used and what strategies have been proposed to mitigate the high values of these footprints. The search for articles was performed on 6 June 2024 in seven electronic databases, using MeSH Terms and adaptations for each database from database inception. The search for local studies was complemented by a manual search in the list of references of the studies selected to compose this review. It included quantitative studies assessing footprints (water or carbon) in food services and excluded reviews, studies that reported footprints for diets, and protocols. A total of 2642 studies were identified, and among these, 29 were selected for this review. According to the findings, it was observed that meats, especially beef, contribute more to water and carbon footprint compared to other proteins. Mitigation strategies for the water footprint include promoting plant-based diets, menu changes, and awareness.info:eu-repo/semantics/publishedVersio
Synthesis, characterisation, and thermal degradation kinetics of lignin-based polyurethane wood adhesives
Polyurethane adhesives are widely employed in a range of industrial applications due to their exceptional bonding strength, flexibility, and chemical resistance. These materials play a crucial role in wood bonding technologies, where their versatility and durability make them ideal for creating strong, long-lasting joints. In this work, Four different polyurethane wood adhesives were synthesised using ligno-based bio-polyols obtained through microwave assisted liquefaction reaction of two wood species (hardwood and softwood) using polyethylene glycol and glycerol as solvents. The reaction conditions used for the synthesis of bio-polyols were optimised in a previous work. The synthesis of polyurethanes was carried out by one-shot method using Tetrahydrofuran (THF) as solvent and MDI as diisocyanate employing different NCO:OH ratios (2.0:1, 2.5:1, and 3.0:1). The chemical structure of polyurethanes was determined through ATR-FTIR and the shear strength was analysed using Automated Bonding Evaluation System (ABES) employing beech veneer strips. Through ABES it was concluded that an NCO:OH ratio of 2.5:1 was the formulation that showed the best shear strength for a pressing time of 120 s. Employing this ratio and the same synthesis procedure, two new polyurethanes were synthesised with the bio-polyols obtained using crude glycerol instead commercial glycerol. Finally, a study of thermal degradation kinetics employing the Ozawa–Flynn–Wall (OFW) and Kissinger–Akahira–Sunose (KAS) isoconversional methods of the polyurethanes synthesised with an NCO:OH ratio of 2.5:1 was carried out. On the one hand, the Ea of each system were estimated for the different α ratios, obtaining slightly higher values for the adhesives produced using commercial glycerol than crude glycerol. In addition, the pre-exponential factor was determined, enabling an estimation of the lifetime of the polymers. This study highlights demonstrated that crude glycerol could replace commercial glycerol without compromising adhesive properties. The findings revealed that the lignin source significantly influences the adhesive's characteristics and stability, while addressing challenges in achieving industrial viability remains essential for broader application.info:eu-repo/semantics/publishedVersio

Considering the implementation of new forms of strategic management in organizations and the development of competencies, training in the area of cultural heritage has become a priority in the CIM (Inter-municipal Communities). The SMART methodologies and Start Up tools allow creating a commitment to the organization in a holistic vision, which is essential for local development. The 19 municipalities of the Douro region, part of the territorial structure of Intermunicipalities Community (CIMDOURO) have invested in the training of their employees with the aim of equipping them for the new technological realities in the strategic management of cultural projects. This training is based on simplification of processes and improvement of procedures, using digital platforms. The e-learning training took place from January to June 2023. Through online training, our goal is to identify the needs of organizations, particularly municipalities, and their territorial identities, developing strategies for managing cultural projects and creating their own action plans. Currently, employees of various municipalities have the task of developing action plans to study or explore new locations or create networks based on the cultural heritage of these places, promoting sustainability and diversity. This study aims to identify what strategic management of cultural projects is and the need for various territories to use different types of action plans to improve their performance. The case study is limited to the training of employees in the 19 municipalities of the Douro region. The case study was limited to the training of employees in the 19 municipalities of the Douro region. To achieve this objective, a non-probabilistic convenience sample of 16 employees was directly involved, representing various municipalities working in the field of heritage and culture.info:eu-repo/semantics/publishedVersio
The Most Important Predictors of Fertiliser Costs
The control of the fertiliser costs in the agricultural sector is fundamental for the profitability of the farms and to mitigate environmental impacts. Indeed, the fertiliser costs have, at least, two components, one related to the fertiliser prices and the other associated with the amount of fertiliser applied in the farming processes. The fertiliser application in agricultural activities has a relevant impact on soil health and water quality. The efficiency of the processes linked with the fertiliser application in the farms is crucial to avoid disruptions in the sustainable development required for agriculture worldwide. In these frameworks, it is important to bring more insights about the predictors of the fertiliser costs in the European Union farms. Taking into account these motivations, this chapter considered artificial intelligence approaches and data from the European Union databases to identify the most adjusted models. The findings of this research contribute to the understanding of the most important variables to promote more sustainability in the European Union farming sector.info:eu-repo/semantics/publishedVersio

The importance of implementing strategic management in third sector organizationsv
This article intends to highlight the importance of the use of strategic management tools in
Private Social Solidarity Institutions (PSSI) aiming at their sustainability. Additionally, it also
intends to analyze the profile of the top managers of these institutions in order to demonstrate
the importance of specific management training. Firstly, the theoretical framework was carried
out where the ideas of different authors regarding the social economy, strategic management
and its tools were discussed. Next, the quantitative method was used with the sending of a
questionnaire to several IPSS where it was emphasized that it should be filled out by top
managers. The results obtained allowed for the validation of the initial questions, namely several
failures in the implementation of strategic management tools in the non-profit organizations
(NPO), which had repercussions in their sustainability and in the way they are organized. Thus,
it is essential that these organizations invest in capacity building in the area of strategic
management always keeping in mind their mission.info:eu-repo/semantics/publishedVersio
General Physicochemical Parameters, Phenolic Composition, and Varietal Aromatic Potential of Three Red Vitis vinifera Varieties (“Merlot”, Syrah”, and “Saborinho”) Cultivated on Pico Island—Azores Archipelago
Pico Island is one of the islands of the Azores archipelago located in the North Atlantic Ocean, where there are very specific conditions for vine cultivation. In this context, there is scarce knowledge related to grape ripening under these conditions. Thus, the aim of this study was to evaluate several physicochemical parameters, the phenolic composition, antioxidant capacity, and varietal aromatic potential, of the “Merlot”, Syrah”, and “Saborinho” grape varieties cultivated on Pico Island over three vintages. The outcomes obtained demonstrated that “Merlot” grapes showed a tendency for significantly higher values of estimated alcohol degree, total phenols, flavonoid and non-flavonoid phenols, total anthocyanins, color intensity, and antioxidant capacity over the three vintages. In addition, for individual anthocyanins, “Merlot” and “Syrah” grapes showed a predominance of acetyl-anthocyanins in relation to p-coumaroylated forms, while for “Saborinho” grapes, an oppositive tendency was observed. For varietal aromatic potential, only in the 2021 vintage was it possible to detect significantly different values between the three grape varieties studied. In this case, “Merlot” and “Syrah” grapes showed the significantly highest values. Considering all parameters analyzed, the results obtained for the “Merlot” grape variety seem to show a better adaptation of this variety to the conditions of Pico Island than the remaining two varieties studied.info:eu-repo/semantics/publishedVersio
Brand Engagement and Creative Digital Advertising: A Case Study of Galo Portuguese Brand
Advertising has evolved over the decades. Knowing consumers are increasingly avoiding advertisements, creating campaigns that attract attention and stay in memory is essential. Advertisers’ main goal is to get closer to consumers, generating visibility, attractiveness, and engagement with the brand. Furthermore, this topic has aroused the academy's interest, and studies show the importance of advertising and its connection with brand engagement. Thus, this study (n = 244) was carried out through a research model, tested through the PLS-SEM methodology, which showed that informativeness, narrative structure and narrative transportation have effects on brand engagement and advertising stimulation play a mediating role in this relationship. Therefore, it is suggested that brands create video ads with information and relevant structures to attract consumers that consider themselves part of these ads.info:eu-repo/semantics/publishedVersio
