    指導教授 吳聲祺台灣蛋捲傳統上就只有原味和芝麻等口味,而很少運用酒糟在蛋捲上的運用。此研究想針對酒發酵後的產物酒糟來運用在蛋捲上。在研究上我們採用小米酒酒糟和紅麴酒糟,而操作方式是將糖跟油打發再加入蛋及鹽巴和酒糟拌勻,再以蛋捲機器加熱烤熟,冷卻。並可以來探討此物是否在消費市場上能夠獲得青睞,並試著成為地方上農產品的伴手禮。最後得到試驗者認為有加入而兩種酒糟中以紅麴的酸味最為明顯,但根據問卷調查中得到並無明顯酸味呈現出來。受試者認為紅麴顏色最佳,其因是紅麴的色素不易受酸鹼值影響而使得顏色產生變化,而在兩種酒糟蛋捲選擇調查中,較意外的是女生部份,在紅麴酒糟蛋捲以壓倒性勝利拿下此蛋捲選擇

    A virtual simulation-based educational application about complementary and alternative medicine: A pilot study of nurses’ attitudes and communication

    Background Conventional healthcare professionals have insufficient knowledge about complementary/alternative medicine (CAM) and often lack competencies to overcome attitudinal barriers to communicate effectively with patients about CAM. Interacting with a virtual simulation-based educational application program may help nurses learn current evidence and acquire communication skills when consulting with patients. Objectives The aim of this pilot study was to evaluate nurses' attitudes towards patients' CAM use and their competency in communicating with patients about CAM after interacting with a virtual simulation-based educational app. Design A quasi-experimental study with one-group, pretest-posttest design. Methods A total of 49 nurses volunteered to participate in the study. Participants interacted with a virtual simulation software app on a smartphone that included audiovisual presentations about CAM, 13 exercises, and a risk-benefit decision assessment. Data about nurses' attitudes and communication competency were collected at baseline and after completing the 13 exercises. Descriptive and comparative statistics were analyzed using the IBM® SPSS® version 22.0. Results Both the nurses' attitudes about patients' CAM use and communication competency improved significantly following the completion of the 13 exercises. The risk-benefit decision scores correlated significantly with the increase in nurses' attitudes and their communication competency. Conclusions Using a virtual simulation-based educational app may help nurses not only increase their attitudes towards CAM but also increase their communication competency in consulting with patients about CAM use

    Ambient air pollution and asthma onset in Taiwanese adults

    Background Ambient nitrogen dioxide is associated with asthma occurrence in adults in Western countries. However, two recent large-scale studies have provided inconclusive results regarding this association. Moreover, the association remains unknown in an Asian population. Objective We aimed to investigate the association between ambient air pollution exposure and incident adult asthma. Methods From 2016 to 2017, we conducted a cross-sectional self-administered questionnaire survey with retrospective follow-up of incident asthma cases among schoolchildren's parents from 41 schools within 1 km of air monitoring stations distributed throughout the main island of Taiwan. To estimate participants' exposure, air pollution data of air monitoring stations within 1 km of schools from where participants were sampled were inputted into the proximity model. We used mixed logistic regression models to determine the association between air pollution exposure and asthma onset within five years prior to the survey. Results The questionnaire was completed for a total of 11 585 participants out of 13 424 candidates (response rate, 86.3%). Among 9131 participants aged from 26 to 50 years, 101 were diagnosed with asthma within the five years prior to the survey. The prevalence of incident asthma cases was 2.2 per 1000 person-years. Those exposed to higher ambient nitrogen dioxide (odds ratio = 1.20 per interquartile [5.7 ppb] of nitrogen dioxide, 95% CI = 1.02–1.42) were more likely to develop adult-onset asthma. Conclusion In an Asian population, exposure to higher ambient nitrogen dioxide is associated with increased prevalence of incident asthma cases among adults aged 26–50 years

    Development of incontinence-associated dermatitis prevention bundle using an evidence-based framework

    Background Incontinence-associated dermatitis (IAD) is a prevalent cause of skin damage in the clinical setting. IAD may cause a heat sensation, pruritus, pain and infection as well as prolong hospital stays and increase healthcare costs. Objective The aim of this study was to develop a bundle care guideline for IAD based on an evidence-based framework. Method Three steps were conducted: an IAD bundle care guideline was drafted, consensus among hospital nursing staff and clinical experts was obtained, and an evaluation was made by methodology experts. Results The initial guideline was approved by 30 nurses and seven clinical experts (two runs) to achieve >80% agreement. Three methodology experts evaluated the quality of the development process as a use recommendation. The IAD bundle care guideline consisted of four aspects with 19 interventions -- skin assessment, skin cleansing, skin protection and supportive care. The IAD bundle care guideline was standardised and evidence-based. Conclusions The developed IAD bundle care guideline integrates information from a systematic literature review and the opinions of nurses, clinical experts and methodology experts, and is recommended for clinical application. Further studies will be implemented to verify its effectiveness

    Factors associated with smoking behaviors among late adolescents: A cross-sectional study in Taiwan

    This study examined factors associated with smoking behaviors among late adolescents in Taiwan. A cross-sectional survey was conducted with 377 adolescents from four high schools who answered self-report questionnaires. The results indicated that 10.8% (n = 41) of the participants were current smokers. Univariate analysis indicated that current smoking status was significantly associated with smoking social confidence, smoking social connection, friend smoking, and smoking policy in schools. Logistic regression showed smoking social confidence (adjusted odds ratio = 1.41, 95% CI [1.16, 1.72], p = .01) and friend smoking (adjusted odds ratio = 2.80, 95% CI [1.67, 4.70], p < .01) were significantly associated with being a current smoker. Health professionals should consider implementing school-based programs to reduce influence of friend smoking, through strategies for resisting peer pressure, to reduce smoking. Educating late adolescents on improving skills related to social confidence, such as increasing communication abilities, should also be a part of these programs
