Abstract
　 A sensory test was conducted to examine preferences for ice cream products containing oral 
nutritional supplements. The subjects of the survey were 149 female university students aged 
from 19 to 22 and 24 elderly people living in a nursing home aged from 64 to 97. The survey was 
conducted from July to September 2014. The subjects were asked to evaluate the three oral 
nutritional supplements （a, b and c） and the three ice cream products （A, B and C）, each 
containing either of the supplements （a, b, or c）. The points for evaluation were 1） taste, 2） 
smell, 3） feel on the tongue, 4） sweetness, 5） aftertaste, 6） richness, and 7） melting in the month. 
Furthermore, the subjects were asked to rank the ice cream products in the order of their 
preferences. In order to analyze the data obtained from the survey, Mann-Whitney test was 
performed.
　 As a result, there was a signiﬁ cant diﬀ erence between all the three nutritional supplements 
and all the three ice cream products on the elderly people in terms of 1） taste, 3） feel on the 
tongue, 5） aftertaste and 6） richness. On the university students, there was a significant 
diﬀ erence between the supplements and the ice cream products in 3） feel on the tongue, 4） 
sweetness, 5） aftertaste and 6） richness. This implies that the sweetness peculiar to the 
nutritional supplements and their bad aftertaste improved when they were contained in the ice 
cream products. At the same time, richness in the ice cream products made the products more 
delicious.
　 On the other hand, a meaningful diﬀ erence was not observed on the elderly subjects about 2） 
smell between the supplements （a and b） and the ice cream products （A and B）. On the 
university students, the ice cream products A and B were signiﬁ cantly evaluated more badly 
than the supplements contained in each product. However, the ice cream product C, the one that 
vanilla essence was added to, gained a signiﬁ cantly high evaluation on the university students.

Ⅰ．緒言
　平成26年度内閣府発表の高齢社会白書1）によ
ると平成25年度の高齢化率は25.1％となり、超
高齢社会に突入している。高齢になると低栄養
のリスク増加により、経口摂取に加え補助栄養
剤を使用する機会も増え、近年は多種多様な商
品が販売されている。しかし、経口栄養剤のそ
のままの飲用は独特の香りや味などから敬遠さ
れがちであり、飽きやすいため、継続しての飲
用さらには１回量の摂取でさえ難しい場合が多
く見受けられる。平成26年度厚生労働省委託調
査2）によると、健康状況を判断する際に重視し
た事項は、「病気がないこと」に次いで「美味
しく飲食できること」を重視すると答えた人が
40.6％に上り、第２位となっていた。このこと
から「食」は我々の生活にとって不可欠な行為
であり、「美味しく飲食できること」を健康観
に求めている背景がある。
　アイス Biz 実態調査20123）による好きなデ
ザート調査では、1997年からこれまでアイスク
リームは不動の第1位で、アイス白書20104）で
は老若男女に関わらず97.7％がアイスを好きと
いう結果であり、アイスクリームはまさにキン
グ・オブ・デザートとなっている。また、長期

were well-balanced not only in the three major nutrients but in others as well.
　 A further study will be aiming at developing ice cream products containing nutritional 
supplements that are low in quantity and keep the same nutritional value. The products will be 
expected to contribute to forming a better eating habits and having fun eating delicious 
products.

療養型病院に入院している高齢者の中では食事
摂取に限界があり、栄養管理にアイスクリーム
類を高栄養食品として利用されている背景もあ
る5）。
　そこで本研究では、栄養剤を美味しく継続的
に摂取してもらうために、前回報告したアイス
料理へ展開研究6）を参考にして、経口栄養剤で
作成したアイスの嗜好について官能検査を実施
し、検討を行った。
Ⅱ．材料と方法
１．事前調査
　本学女子大学生80名に対し、市販されている
経口栄養剤10種類の美味しさについて官能評価
を行った。非常に良い（5）、良い（4）、ふつう
（3）、悪い（2）、非常に悪い（1）の５段階順序
尺度評価で、特に評価の悪かった栄養剤（L、H、
AN）３種を用いてアイスを作成することとし
た。（図１）

２．材料の配合
　各栄養剤に風味が付いているため、それを活
かしたアイスを作成することにした。（表１）
アイスへの調整の基本配合は、表２に示した。

３．試料の調整
　家庭で気軽に作れるアイスは便利で低価格で
好みに合わせられるという利点が大きいため、
今回は家庭用のアイスクリームメーカーを使用
し作成した。（製品名：貝印DL-0272）ボール
に全ての材料を加え良く混ぜ、ザルで一度濾し
たのち、あらかじめ一晩冷やしておいたアイス
クリームメーカーへ投入し20分ほど攪拌冷却し

４．対象と時期
　対象は19歳～22歳の本学女子大生149名と、
64歳～97歳の川崎市某高齢者施設利用者24名
（内訳：男性11名、女性13名）。調査時期は2014
年７月～９月に実施した。

５．調査方法
　記述式質問用紙（無記名）で行い、項目は各
栄養剤10g と各栄養剤で作成したアイス10g に
ついて、「美味しさ」「香り」「舌ざわり」「後味」
「コク」の項目について非常に良い（5）、良い（4）、
ふつう（3）、悪い（2）、非常に悪い（1）の５
段階評価、「甘さ」については、非常に強い（5）、 
強い（4）、ふつう（3）、弱い（2）、非常に弱い
（1）の５段階評価、「口どけ（アイスのみ）」に
ついては、非常に早い（5）、早い（4）、ふつう
（3）、遅い（2）、非常に遅い（1）の５段階の順
序尺度評価を行った。また、栄養剤で作成した
アイスについては好ましい順位を評価しても
らった。

６．解析方法
　Mann-Whitney 検定（マン・ホイットニー検
定）にて解析を行った。
Ⅲ．結果及び考察
１．栄養剤で作成したアイスの特徴
　表３より市販のアイスと比べ100ml 当たりの
脂質、タンパク質含有量は高くなり、炭水化物
含有量は低くなった。その結果、総エネルギー
は高くなった。また表４より、栄養剤アイスと
市販アイスとの一番の違いは、ビタミンやミネ
ラルが多く含まれることであった。これは材料
の栄養剤の栄養価が影響するが、市販のアイス
にはビタミンやミネラルが多く含まれないため、
栄養剤でアイスを作成することにより、三大栄
養素だけでなく総合的にバランスの良い栄養価

を摂取することが出来ると考える。また、カル
シウム・リン・マグネシウムなどの無機質は、
タンパク質と結合して、間接的にアイスクリー
ムの組織を滑らかにする特徴もあり、テクス
チャーの向上が期待される。今後は市販アイス
とのテクスチャーとの違いも検討していきたい。
２．高齢者対象の官能評価（表５）（図２）
　栄養剤 a、b、c と、栄養剤アイスA、B、C
において「美味しさ」「舌ざわり」「後味」「コク」
の項目で有意に差があった。また「香り」につ
いては栄養剤 a、bとアイスＡ、Ｂでは有意な
差が見られなかったが、栄養剤 c とアイス C
では有意な差が見られた。これは Cにのみバ
ニラエッセンスを添加したことによって、香り
が良くなったと考えられる。「甘さ」については、
栄養剤 bとアイス Bにのみ有意な差が見られ
なかった。栄養剤 bは独特の苦みがありアイ
スにしても苦みを強く感じ、甘さに影響し有意
な差が出なかったと考える。「口どけ」は口ど
けの早さについては、各アイスによる有意差は
見られなかった。「好みのアイスの順位」はC、B、
Aの順であった。栄養剤として飲むには評価
は低かった cが、アイスの総合評価では好まれ

る結果となった。また、「栄養剤100ml アイス
200ml ではどちらを選びますか？」という質問
では、Aでは81％、Bでは90％、Cでは94％が
アイス200ml のほうがよいという結果だった。
この結果より、アイスにすることで、cのよう
な栄養剤としては飲みにくいものほど、量は多
くなってもアイスとして摂取することを選んで
いることが分かった。ただし、aの栄養剤につ
いてはアイスにすることで有意に美味しくはな
るが、２割の人は栄養剤のままでも飲みやすい
と答えていた。
３．学生対象の官能評価（表５）（図３）
　栄養剤 a、b、c と、栄養剤アイスA、B、C
において「美味しさ」「舌ざわり」「甘さ」「後味」
「コク」の項目で有意に差があった。これはア
イスにすることで栄養剤特有の甘さ、後味の悪
さが改善し、コクが出て舌ざわりも良く美味し
くなったと言える。「香り」についてはバニラ
エッセンスを加えたアイス Cのみ有意に良く
なったが、A、Bはアイスにすることで有意に
評価は悪くなった。「口どけ」は口どけの早さ
については、各アイスによる有意差は見られな
かった。「好みのアイスの順位」はA、B、C

であった。「栄養剤100ml とアイス200ml では
どちらを選びますか？」という質問では、97％
以上がアイス200ml のほうがよいという結果
だった。栄養剤 a、アイスAともに「美味しさ」
「後味」「コク」の項目で評価が一番高く、今や
若者に人気のフレーバーである、キャラメル味
ということも影響していると考えられる。「栄
養剤の美味しさの評価」と「アイスの美味しさ
の評価」と、「好みのアイスの順位」が合致し
たため、若者はアイスにしても栄養剤そのもの
の美味しさが影響していると考えられる。
Ⅴ．まとめ
　栄養剤をアイスにすることにより、高齢者、
学生にも好ましくなることが示された。ただし、
香りについては有意差が見られず、反って学生
では評価が悪くなった。栄養剤はもともと香り
が強いものが多いためアイスにする際はその風
味を生かせると思ったが、アイスにする際に他
の材料を加えることにより、香りが薄まったた
めに香料の添加が必要であることが分かった。
学生の場合は、栄養剤そのものを摂取するより
は、量が倍量になっても栄養剤で作成したアイ
スを望む者が97％以上だった。高齢者の場合は
81％以上であった。調査は気温の高い夏の時期
だったこともあり、冷たいアイスが好まれたこ
とも考えられる。また、高齢者は身体機能が衰
え胃腸が冷えるなども懸念されることもあるの
でその点も考慮し、寒い冬の時期は栄養剤を
使ったスープやババロアなど他の料理への展開
も考えていきたい。
　今回はアイスメーカーを使用しアイスを作成
したが、家庭にない場合も多いためミキサーや
シェイカーを利用したアイスレシピの提案も
行っていきたい。
　今回の研究を通して少量で栄養価を保ちなが
ら、誤嚥せずに美味しく楽しい食生活に貢献で
きる、栄養剤アイスの作成を目指したい。
