Abstract
　 A survey on the dietary habits of children was conducted involving the parents of students 
of a kindergarten in Tokyo Prefecture. The parents were asked to describe what worried them 
about the dietary habits of their children, and the relationships between their worries and the 
birth order of children were examined. More than 30% of mothers in all groups : mothers with 
the eldest and non-eldest children with and without siblings, stated that the amount of food 
intake varied depending on the day. “The unbalanced diets of their children” was cited by 36.5, 
29.2, and 25.0% of mothers in the “eldest child without siblings”, “eldest child with siblings”, and 
“non-eldest child” groups, respectively. The rate of mothers who stated that “their children ate 
meals while playing” was the highest in the “eldest child without siblings” group （26.9%）, followed 
by the “eldest child with siblings” （14.6%） and “non-eldest child” （8.3%） groups. On the other 
hand, 9.6, 20.8, and 15.3% of mothers in the “eldest child without siblings”, “eldest child with 
siblings”, and “non-eldest child” groups stated that “they were not worried about anything”, 
respectively.
　 Regarding the preparation of meals, more than 45% （the highest rate） of mothers in all groups 
stated that they were worried about their “children’s dietary habit of eating only a limited variety 
of food”. The comment : “I have no idea of the appropriate volume of a meal”, was stated by 
21.2, 14.6, and 13.9% of mothers in the “eldest child without siblings”, “eldest child with siblings”, 
and “non-eldest child” groups, respectively. On the other hand, 25.0, 20.8, and 33.3% of mothers 
in the “eldest child without siblings”, “eldest child with siblings”, and “non-eldest child” groups 
stated that “they were not worried about the preparation of meals”, respectively.
　 Mothers were also asked to state their sources of information on the dietary habits of children 
（multiple answers allowed）, and 53.8, 50.0, and 54.2% of mothers in the “eldest child without siblings”,

1．緒言
　就学前の６歳頃までの幼児期の食生活は、身
体の発達、および精神面の発達のために重要で
ある1）。幼児期に獲得された咀嚼機能、食習慣
などはその後の健康や嗜好に影響を及ぼすた
め1）、この時期に適切な食生活を送ることが大
切であり、この時期の食育活動は大きな意義が
ある。
　わが国では、食育基本法が平成17年７月に施
行された。食育の展開は国民、民間団体等の自
発的意思を尊重し、地域の特性に配慮して推進
していくことが食育基本法の中で挙げられてい
る2）。つまり、効果的な食育推進のためには食
育を行う地域や対象者の食生活状況を把握する
ことが重要であると考える。さらに、平成23年
３月に決定された「第２次食育推進基本計画」3）
では、生涯にわたるライフステージに応じた間
断ない食育の推進、生活習慣病の予防及び改善
につながる食育の推進、家庭における共食を通
じた子どもへの食育の推進、の３項目が重点課
題として定められている。幼児期の食事は大部
分を保護者に依存する。そのため、幼児のみな
らず保護者に対する食育活動や保護者の食生活
を見直すための情報提供も重要となる。
　そこで、幼児期のこどもを持つ保護者に食育
を行うためのデータとするため、幼稚園に通う
“eldest child with siblings”, and “non-eldest child” groups stated “friends and acquaintances”, 
respectively. “Kindergartens” were the source of information for 9.6, 19.2, and 11.5% of mothers 
in the “eldest child without siblings”, “eldest child with siblings”, and “non-eldest child” groups, 
respectively.
　 It will be necessary for us to conduct further survey-based research and activities for dietary 
education in collaboration with kindergartens to provide parents with information they require, 
which is a role of institutions for training registered dietitians who contribute to the community, 
so that parents will recognize kindergartens as one of the primary sources of information.

園児の保護者に対し、子どもの食生活及び保護
者の食生活について調査を行った。
2．方法
（1）対象
　東京都のA市内にある幼稚園に在籍する園
児の保護者を対象とし、2011年１月に実施した。
（2）調査方法及び調査内容
　調査依頼の文書にて研究の趣旨を提示し、調
査への協力は任意、無記名であること、また、
統計的に回答を処理することを書面にて説明し
た。自記式調査票にて、保護者に記入してもらっ
た。
　調査内容は、就寝・起床時刻、食事の様子で
気になること、食事に関する情報源などについ
て質問を設定した。なお、子どもの食事につい
ての質問は、平成17年乳幼児栄養調査4）や先行
研究5）～7）を参考に設定した。さらに、母親自身
の食生活に対する意識についても設問を設けた。
対象属性については、子どもの年齢、性別、兄
弟の有無について質問を設けた。
3．結果
（1）対象者の基本属性
　アンケート用紙の回収は172人の協力を得る

ことができ、回収率は93％であった。年齢の内
訳は、３歳11人（6.4％）、４歳63人（36.6％）、
５歳49人（28.5％）、６歳49人（28.5％）であっ
た。出生順位の内訳は、第一子弟妹なし群が52
人（30.2％）、第一子弟妹あり群が48人（27.9％）、
第二子以降群が72人（41.9％）であった。出生
順位で分けて、生活習慣・食生活状況について
検討した。
（2）起床・就寝時刻
　起床時刻については、どの群においても７時
台が最も多く、第一子弟妹なし群が78.8％、第
一子弟妹あり群が77.1％、第二子以降群は

（3）子どもの食事で気になること
　子どもの食事で特に気になること（複数回答）
については、「食べる量にムラがある」ではど
の群でも多く、第一子弟妹なし群が30.8％、第
一子弟妹あり群が31.3％、第二子以降群が
37.5％であった。「好き嫌いが多い」では第一
66.7％であった。７時以前は第一子弟妹なし群
が11.5％、第一子弟妹あり群が12.5％、第二子
以降群は23.6％であり、第二子以降群で高い傾
向がみられた。就寝時刻については21時台がど
の群でも最も多く、第一子弟妹なし群が46.2％、
第一子弟妹あり群が54.2％、第二子以降群は
51.4％であった。次いで20時台が多く、第一子
弟妹なし群が42.3％、第一子弟妹あり群が
33.3％、第二子以降群は38.9％であった。22時
以降は第一子弟妹なし群が7.7％、第一子弟妹
あり群が8.3％、第二子以降群は4.2％であった
（図１）。
子弟妹なし群が36.5％、第一子弟妹あり群が
29.2％、第二子以降群が25.0％であった。「食事
量が少ない」では第一子弟妹なし群が17.3％、
第一子弟妹あり群が18.8％、第二子以降群は
16.7％であった。「遊び食べ」では、第一子弟
妹なし群が26.9％、第一子弟妹あり群が14.6％、

第二子以降群は8.3％であった。一方、「特にな
い」は第一子弟妹なし群が9.6％、第一子弟妹

（4）子どもの食事作りで困っていること
　子どもの食事作りで困っていること（複数回
答）については、「食べ物の種類が偏る」では
第一子弟妹なし群が53.8％、第一子弟妹あり群
が54.2％、第二子以降群が48.6％で、どの群に
おいても最も高かった。次いで「適切な量がわ
からない」では第一子弟妹なし群が21.2％、第
あり群が20.8％、第二子以降群が15.3％であっ
た（図２）。
一子弟妹あり群が14.6％、第二子以降群が
13.9％で、「適切な味付けがわからない」では
第一子弟妹なし群が5.8％、第一子弟妹あり群
が12.5％、第二子以降群が4.9％であった。また、
「特にない」と回答したものは、第一子弟妹な
し群が25.0％、第一子弟妹あり群が20.8％、第
二子以降群が33.3％であった（図３）。

（5）子どもの食生活に関する情報源
　子どもの食事に関する情報は何から得ている
か（複数回答）については、「友人・知人」か
らは、第一子弟妹なし群が53.8％、第一子弟妹
あり群が50.0％、第二子以降群では54.2％であっ
た。「雑誌」からは第一子弟妹なし群が57.7％、
第一子弟妹あり群が41.7％、第二子以降群が
41.7％で、「テレビ」からは第一子弟妹なし群
が34.6％、第一子弟妹あり群が33.3％、第二子

（6）母親の食生活
　保護者（母親）自身の食生活で気になること
があるか（複数回答）については、「野菜の摂
取量が少ない」が最も多く29.7％、次に「好き
なものに偏る」が22.7％、「間食が多い」20.3％
が続き、以下「脂質の多い料理が多い」14.5％、
以降群は30.6％、「インターネット」では第一
子弟妹なし群が30.8％、第一子弟妹あり群が
35.4％、第二子以降群は31.9％であった。「祖母」
からは第一子弟妹なし群が19.2％、第一子弟妹
あり群が45.8％、第二子以降群が31.9％であった。
なお、「幼稚園」からは第一子弟妹なし群が9.6％、
第一子弟妹あり群が20.8％、第二子以降群が
8.3％であった（図４）。
「食事のバランスが悪い」14.0％、「塩分量が多
い」11.6％、「食事の量が多い」8.1％、「食事時
間が不規則だ」8.1％、「食事を抜くことがある」
6.4％という結果であった。また、「特にない」
との回答は22.7％であった（図５）。

4．考察
　本研究では、幼稚園に通う子どもの母親に食
生活に対する意識について調査を行った。生活
習慣のひとつである就寝時刻については、兄弟
状況によって差はみられなかったが、第二子以
降群で22時以降の割合が4.2％であり、第一子
弟妹なし群が7.7％、第一子弟妹あり群の8.3％
に比べて低い傾向がみられた。第６回21世紀出
生児縦断調査の結果では、５歳６か月児の就寝
時間では、22時以降22.6％であり、乳幼児栄養
調査においても３人に１人が22時以降に就寝し
ているという結果が示されている8）。本対象者
はどの群においても22時以降に就寝している者
の割合が先行研究と比べて低く、適正な生活習
慣を送っている者の割合が高いことが示された。
　食生活については、子どもの食事で気になる
ことについて「食べる量にムラがある」がどの
群でも30％を超えていた。また、「遊び食べ」
では第一子弟妹なし群が26.9％に対して第一子
弟妹あり群で14.6％、第二子以降群が8.3％とで
第一子弟妹なし群が他の群と比較すると高い傾
向がみられ、兄弟の有無で差が出やすい項目で
あることが示された。また、子どもの食事作り

で困っていることは、「食べ物の種類が偏る」
との回答がどの群でも45％以上であり、他の項
目に比べて大幅に高い割合であった。プレイ
ルームを利用する幼児の母親に対して実施した
研究においても、「食べ物の種類が偏る」との
回答が３～６歳時の母親の44.0％と他の項目に
比べて高いことが示された9）。これらのことか
ら、今後の食育活動では、食べ物の種類が偏ら
ないようにする工夫点などを具体的に示す必要
があることがわかる。次いで多かった項目は「適
切な量がわからない」であり、第一子弟妹なし
群が21.2％、第一子弟妹あり群で14.6％、第二
子以降群が13.9％であった。適切な食事量につ
いては、身体状況とも合わせて検討する必要が
あるため、今後は身体状況と食事摂取状況につ
いても検討を行い、データを集めて母親の不安
を軽減するための食育活動に活用していく必要
があると考える。
　子どもの食事に関する情報源については、「友
人・知人」から得ていると回答したものがどの
群においても50％を超えていた。次いで、雑誌、
テレビなどのマスメディアやインターネットが
どの群においても30％以上となっていた。一方、

「幼稚園」からは第一子弟妹なし群が9.6％、第
一子弟妹あり群で20.8％、第二子以降群が8.3％
であった。マスメディアやインターネットを通
じて様々な情報が提供される現代において、保
護者は正確な情報を収集することが難しい状況
もある。そこで、子どもが毎日通う幼稚園から
適切かつ正確な情報をより保護者に周知する必
要があると考える。研究機関でもある大学は、
幼稚園が保護者の求める食生活に関する情報を
積極的に発信するために協力すべきであろう。
具体的には、今後も幼稚園の園児および保護者
に対し調査を重ね、その結果を保護者にわかり
やすく伝える食育活動を実施していく必要があ
ると考える。
　一方、母親自身の食生活の問題点として「野
菜の摂取量が少ない」が29.7％と最も高いこと
が示された。我々が、地域イベントへの参加者
に実施した調査においても野菜が少ないと回答
した女性は40％を超えており10）、本研究でも同
様の結果が示された。平成24年の国民健康・栄
養調査では、成人の野菜類の摂取量は平均
286.5g であり11）、健康日本21の目標量である
350g に到達していない12）。子育て中の母親は
仕事や家事が十分にできないことへの負担感や
悩みが生じることがあり8）、生活全般が子ども
中心となる傾向がある。食事に関しても、子ど
もの食事には気を配っても、母親自身の食事は
おろそかになることもある。従って今後は、子
どもの食事に関する情報のみならず、母親をは
じめとした家族全体の食生活を見直すための具
体的な情報提供、食育活動も実施していく必要
があると考えている。
