Study on acrylamide accumulation in the model system based on animal raw materials depending on thermal treatment regimes
The aim of the investigation was to study an effect of thermal treatment parameters on the content of reducing sugars, amino acids and acrylamide in the meat model system depending on the thermal treatment regime. The authors studied an influence of the reaction of melanoidine formation on the concentration of amino acids and reducing sugars at different thermal treatment regimes and established a decrease in the total amino acid content by 7 % upon the standard sterilization regime and by 11 % when increasing the temperature or duration of thermal treatment. It was found that at the same temperature with an increase in duration of thermal treatment up to 50 min., the acrylamide level increased by 1.6 times. Exposure of the model samples to a temperature of 120 °С for 50 min. had the highest effect on the level of acrylamide accumulation compared to the traditional sterilization regime of canned foods for child nutrition and the regime with an increased temperature of up to 130 °С. MECHANISMS OF DESTRUCTION AND SYNTHESIS OF LIQUID MEDIA, USED IN THE FOOD INDUSTRY UNDER NON-EQUILIBRIUM CONDITIONS
The formation of food liquid medium structures containing at least 70 % of disperse particles with high dispersiveness has been considered. The possible formation mechanisms of food liquid medium structure when slow (hydrodynamic) and quick (acoustic) processes create favorable conditions for cavitation have been studied. The possibility to control these processes for initiation of mechanical and kinetic reactions that change the structure of the medium has been demonstrated. The invert syrup has been selected as the study object. The change in the invert syrup structure before and after such cavitation treatment has been recorded with the use of metallographic microscope Nikon Eclipse MA100. The decrease in disperse phase sizes from 2–3 µm to 0.1–0.4 µm along with establishing the high uniformity of component distribution as compared to the syrup without cavitation process treatment has been detected. TECHNOLOGICAL PROPERTIES OF FLOUR AND THEIR EFFECT ON QUALITY INDICATORS OF SUGAR COOKIES
The main recipe component of most types of flour confectionery is wheat flour, the technological properties of which largely effect not only the quality indicators of the finished product, but also the stability of the technological flow of its production. However, today, in Russia there are no specialized requirements for the quality of wheat flour for confectionery, in contrast to the requirements for the baking wheat flour. The article lists the main problems and features of the quality of Russian wheat flour consisting in the absence of target classifications of grain and a decrease in its qualitative potential, in particular, a decrease in the amount of gluten and improvement of its quality. As part of the work, the influence of the technological properties of wheat flour on the rheological parameters of the dough and the quality of sugar cookies, which are traditionally in high demand of population groups of every age, was studied, while the share of domestic products is more than 85%. The work was performed in the laboratory of flour confectionery products of All-Russian Scientific Research Institute of Confectionery Industry. АНАЛИЗ ЖИРНОКИСЛОТНОГО СОСТАВА СЫВОРОТКИ КРОВИ ЛАБОРАТОРНЫХ КРЫС С МОДЕЛЬЮ ГИПЕРЛИПИДЕМИИ ПРИ ПРИМЕНЕНИИ ФУНКЦИОНАЛЬНОГО ПИЩЕВОГО ПРОДУКТА
A special area in the rapidly growing range of food products is occupied by specialized and functional products, especially for certain categories of citizens. In addition to confirming their biocorrective properties, it’s necessary to balance protein, fat and carbohydrates contents as well as the availability of essential nutrients. The developed meat product based on porcine hearts and aorta was characterized by a high protein content (17.53±0.95%), with a low fat content (3.82±0.13%), the atherogenic index was 0.43. According to in vivo study results, it was shown that the introduction of developed product during 42 days into the diet of hyperlipidemic rats lead to a decrease in the relative content of saturated fatty acids by 21.1%(P<0.05), mainly due to palmitic fatty acid reduction by 42.0% (P<0.05) compared with the control. The observed modifications of serum fatty acid composition resulted in the reduction of atherogenic index by 43.3% (P<0.05). The revealed positive dynamics of lipid metabolism recovery in hyperlipidemic rats makes it possible to recommend the developed product as a component of diet therapy, concomitant to the main treatment, for persons with risk of cardiovascular diseases, in particular, due to dyslipidemias.Особое место в интенсивно разрастающемся ассортименте пищевой продукции занимают продукты специализированного и функционального назначения, в том числе для отдельных категорий граждан. Помимо подтверждения их биокорригирующих свойств важна их сбалансированность по белкам, жирам и углеводам, наличие эссенциальных нутриентов. Разработанные консервы фаршевые на основе сердец и аорт свиней характеризовались высоким содержанием белка (17,53±0,95%), при достаточно низком содержании жира (3,82±0,13%), индекс атерогенности составил всего 0,43. В эксперименте in vivo было показано, что внесение консервов фаршевых в течение 42 суток в рацион крыс с моделью алиментарной гиперлипидемии способствовало снижению относительного содержания насыщенных жирных кислот на 21,1% (Р<0,05), преимущественно за счет уменьшения содержания пальмитиновой жирной кислоты на 42,0% (Р<0,05). Мононенасыщенные жирные кислоты также были снижены на 26,9% (Р<0,05). Выявленная положительная динамика восстановления липидного обмена у крыс с гиперлипидемией позволяет рекомендовать разработанный продукт в качестве компонента диетотерапии, сопутствующей к основному лечению, для лиц, состоящих в группе риска развития сердечно-сосудистых заболеваний, в частности, за счет выявленных дислипидемий.
SEARCH FOR ALTERNATIVE SOURCES OF NATURAL PLANT ANTIOXIDANTS FOR FOOD INDUSTRY
According to the data of the Food and Agriculture Organization of the United Nations, global food losses are about one third of their total output, mainly due to spoilage. Therefore, a search for safe methods of shelf life extension is an important task, especially for products for specialized nutrition. According to literature data, natural antioxidants can be alternative to existing preservatives due to its ability to inhibit oxidation of the main nutrients. Pulp, seeds and peel of quince, apple «Simirenko», feijoa, persimmon, Jerusalem artichoke, white, red and yellow onion were objects of the study. The total antioxidant capacity was determined by Oxygen Radical Absorbance Capacity (ORAC) and Ferric Reducing Antioxidant Power (FRAP) methods and expressed in µmol equiv. Trolox / g of sample and µmol equiv. Dihydroquercetin / g of sample. It was noticed that peels demonstrated higher antioxidant activity, and red onion husk possessed the highest value, which was 722.8 ± 13.9 µmol equiv. Dihydroquercetin / g of sample and 3357.5 ± 42.2 µmol equiv. Trolox / g of sample. It was shown that the use of fruit and vegetable wastes is promising for production of food-grade antioxidants. DEVELOPMENT OF PASTERIZATION MODES FOR HIGH-SUGAR CANS IN CONTINUOUS ACTING PASTEURIZERS
High-sugar canned fruits, such as jam, marmalade, confiture, are characterized by a high content of soluble dry solids and high acidity, which allows to apply to them pasteurization processes as heat treatment. In comparison with sterilization processes, heat treatment of hermetically sealed canned food during pasteurization is implemented at temperatures less than 100°C.The article presents the results of the development of scientifically-based pasteurization modes for high-sugar canned food for industrial continuous-acting pasteurizers (CAP — continuous-acting pasteurizers) of open type with a temperature in the heating area less than 100°C. For today, such pasteurizers are widely spread due to the simplicity of their design, high productivity, with the option to reduce consumption of water, steam, electricity and to use it for the various types of packaging. So, the actual task of this article is the establishment of canned fruit pasteurization modes for such pasteurizers.The development of pasteurization modes for high-sugar canned food using strawberry jam as a sample was carried out in the experimental equipment simulating the operation of a continuous-acting pasteurizer. The studies were implemented to confirm that the developed modes of heat treatment in the CAP as a matter of fact provide industrial sterility of the produced high-sugar canned food. ABOUT THE UNIVERSAL TECHNOLOGY OF PROCESSING JERUSALEM ARTICHOKE AND CHICORY FOR INULIN
The purpose of this work is development of the universal technology of processing of a girasol and chicory for an inulin according to requirements to quality of a feed stock. An inulin — the reserve carbohydrate widespread in flora. There is the most of inulin quantity in chicory, a girasol, much less is in onions, garlic, inula, yakena, etc. The inulin is widely applied as a low-calorie product in a dietary and diabetic food, just also as a jelly former in food. In the All-Russian Research Institute of Starch Products there are conducted researches on development of the universal technology for an inulin from inulin-containing raw materials. The technological assessment of a girasol and chicory from various regions of the Russian Federation is carried out, their physical and chemical indexes are defined. Requirements to processing behavior of raw materials are developed for inulin processing. By results of researches initial requirements to inulin-containing raw materials are defined: a mass fraction of dry solids is not less than 25 %, an inulin is not less than 16 %; mono — and disaccharides are 2 %. Diffusion from freshly harvested and dry chicory shavings and a girasol is studied, optimal established conditions are temperature 80–85ºC; the hydromodule for dry shaving — 1:7; for crude one — 1:2. It is developed the purification mode for extract and girasol and chicory syrups with use of various adsorbents such as the fissile coal, ion-exchange resins. The established high extent of extract and syrup purification is resulted in considerable decrease in a chromacity, mass fraction of a protein, ashes, etc. For researches as control specimens there was used an inulin of the foreign companies. STUDY OF FATTY ACID COMPOSITION OF MILK FOR CHEESE PRODUCTION
The article shows that the studied samples of raw milk in terms of composition (mass fraction of fat, protein, lactose and milk solids-not-fat) met the criteria of suitability for cheese, and its physic-chemical properties (titratable acidity, density, freezing point) were within acceptable limits. Moreover, rennet sample corresponded to the first and second classes. It was proved that the number of spores of lactating fermenting microorganisms met the requirements for milk for the production of any kind of cheese. It was established that the fatty acid composition of raw cow’s milk used to produce cheeses at various enterprises varied significantly. The data indicate the variability of the content of all groups of fatty acids — low molecular weight, saturated, monounsaturated and polyunsaturated. As a result of gas chromatography studies using the chromatographic complex «Chromos GX-1000» with a flame ionization detector and a CP 88 quartz capillary column — Sil 88 for FAME100 m × 0.25 mm × 0.2 µm, it was found that the largest absolute fluctuations were for saturated (± 7.03 % of the average value) and monounsaturated fatty acids (± 3.77 % of the average value). Absolute fluctuations in the group of low molecular weight fatty acids amounted to ± 2.62 %, and in the group of polyunsaturated — ± 1.02 % of the average value. The calculation of the relative deviation showed that the most varied groups were the ones of low molecular weight fatty acids (± 28.40 rel.%) and polyunsaturated fatty acids (± 25.11 rel.%). BIOCONVERSION OF SECONDARY PRODUCTS OF PROCESSING OF GRAIN CEREALS CROPS
A method has been developed for the production of organic ingredients from secondary products resulting from the high-quality grinding of triticale and wheat into flour, which involves the enzymatic action of amylolytic enzymes to release starch polysaccharides while preserving the native properties of dietary fibers and biologically active substances associated with them. To a large extent, the features of the properties of the obtained ingredients are due to the number and composition of the components of dietary fiber of grain, as well as the morphological features of their structure. It is shown that the viscosity of aqueous colloidal systems at a concentration of soluble dietary fiber of the ingredient 0.5 % increases 11 times; at a concentration of 1.0 % — 30 times, forming a viscous gel-like structure. This allows them to be used for gelling, thickening and stabilization of aquatic food systems. The use of ingredients with a high content of NLP in baking is possible only taking into account their water absorption capacity. A method for the enzymatic modification of secondary products of processing of grain triticale was developed. On the basis of the study of the kinetics and efficiency of the effect of proteolytic and cellulolytic enzyme preparations (EP) and their compositions, optimal conditions for enzymatic modification (the EP dosage is 0.5…0.75 units of PA/g of bran, 0.3…0.4 units of CA/g of bran, the optimum temperature is 40–50 °С, pH is 5.0 and 3.5, the duration of reactions is 1.5 hours) have been determined. The use of cellulolytic EP allowed to increase the amount of reducing substances and soluble protein by 1.5–2.5 times in comparison with the control sample. The biomodified bran obtained using the MEC «Shearzyme 500 L» + «Neutrase 1.5 MG» and «Viscoferm L» + «Distizym Protacid Extra» has a high degree of hydrolysis of non-starch polysaccharides and proteins, is characterized by a certain ratio of high-, medium-, low-molecular peptides and amino acids, has different functional and technological properties. Of great importance is the shelf life of drinks, since they determine the presence in the composition of useful nutrients that affect the various systems of functioning of the human body. The main groups of functional compounds are given. Ways to increase the shelf life of beverages, all aspects and their impact on the safety of the functional components of beverages are considered. The role of flavonoids as one of the groups of functional compounds has been evaluated.
