    Identification of the functional food potency of çalkama: A traditional recipe with edible Mediterranean wild greens from Turkish cuisine

    BACKGROUND: The phytochemical contents of traditional foods are necessary to further elucidate the impacts of the Mediterranean diet on health. Calkama is traditional food prepared by using wild green plants including chard (Beta vulgaris var.cicl), wild fennel (Foeniculum vulgare spp), common mellow (Malva sylvestris L), common poppy (Papaver rhoeas L), dock (Rumex spp), common nettle (Urtica dioica L), sow-thistle (Sonchus asper (L) Hill), common stork's bill (Erodium circutarium (L)L Her) and wild leek (Allium ampeloprasum L). OBJECTIVE: In this research, the antioxidant activity and the flavonoid and phenolic acid composition were separately analyzed for each plant and calkama. METHODS: Total phenolic content, total flavonoid content and total antioxidant capacity of each plant and calkama were measured spectrophotometric assays. Ultra-fast liquid chromatography (UFLC) was performed to detect specific flavonoid groups. RESULTS: It was detected that one portion of calkama (100 g) contained approximately 250 mg of flavonoids. Particularly, quercetin and apigenin contributed to the main flavonoid source and chlorogenic acid was the major phenolic acid in calkama. CONCLUSIONS: According to our findings, this food can be considered as a good phenolic and flavonoid source which protects its high antioxidant capacity through preparation and cooking processes

    Inferring political and religious attitudes from composite faces perceived to be related to the dark triad personality traits

    We used composite face images perceived to have different levels of Dark Triad personality traits (narcissism, psychopathy, and Machiavellianism) and asked participants to predict these target individuals' religious and political identities. In Study 1 (N = 550), Turkish participants rated faces with higher levels of perceived Dark Triad traits as less likely to be religious, to believe in God, and more likely to be left-winger, and to vote for a left-leaning party in all categories except for male narcissism. In a pre-registered follow-up study (N = 1001), we recruited a nationally representative US sample and replicated the same results with minor differences regarding male and female narcissism, and voting preferences. Participants' own political and ideological identities and their stereotypical evaluation of the target groups were mostly ineffective in explaining their predictions. The results suggest that people can perceive faces with higher levels of Dark Triad traits as less religious and less conservative

    Segmentation of Social Media Users for Destinations: A Clustering Approach

    SciVal Topics Metrics Abstract This is a study into the segmentation of social media users interested in traveling into groups and aims to ascertain if differences exist in benefits among segments. It is based on a survey that examines the benefits they see social media as having before, during, and after a trip to a destination, using their responses to generate a data-driven segmentation. Data from a total of 218 questionnaires were analyzed using factor and cluster analysis in sequence, specifically applying a hierarchical cluster analysis using the Ward method and a Kmeans algorithm. The analysis led to the identification of four useful types of social media user: info-seeker, communication-seeker, interaction-seeker, and hybrid segments, each of which seeks different things from social media and use it in different ways (e.g., to seek information, to see what other people have said about a destination, or to post their own experiences). As such, the implications of our findings offer useful insights for both scholars and destination marketers, highlighting the significance of offering appropriate marketing strategies for each type of segment

    Food waste management: an example from university refectory

    Purpose: The study analysed the amount of plate waste in a university refectory in Izmir, Turkey to find ways of minimizing plate waste in the university, providing sustainability and contributing to the development of circular economy and raising awareness about the plate waste problem. Design/methodology/approach: Observation and semi-structured interviews were used to determine the volume of plate waste and level of awareness of academicians, students and administrative staff and suggest sustainable solutions for food waste in university refectories. The data gained from the semi-structured interviews were analysed with qualitative analysis software (MAXQDA®). Findings: Plate waste in the university's refectories is increasing due to the lack of precautionary measures. Academicians, students and administrative staff all showed low awareness rates. Originality/value: This study is original in investigating theoretically and empirically one of the main reasons for food waste, namely plate waste in mass consumption sites, and evaluating the effect of food waste from an economic, social and environmental perspective
