Summer glacier skiing amid climate change ::what does production transformation mean for sustainability?
No full textThis paper examines the impact of climate change on the sustainability of summer glacier skiing (SGS) in Saas-Fee, Switzerland. Summer glacier skiing (SGS) is a niche tourism activity that is particularly vulnerable to climate change. This is evidenced by the notable reductions in snowpack and glacier retreat, which are affecting the viability of SGS. By applying the valuation system framework, the study examines the relationship between the production and consumption systems of SGS and how climate-induced transformations influence sustainability. Methodologically, the research employs a qualitative approach, integrating fieldwork, direct observations, and semistructured interviews with key stakeholders, including tourism operators, local authorities, and ski athletes. The findings demonstrate that climate change intensifies the scarcity of resources, necessitating augmented investments in infrastructure and modifying consumer behaviour, which in turn affects the economic and environmental sustainability of the activity. Notwithstanding these challenges, the existence of institutional cooperation within Saas-Fee offers the region the opportunity to transition towards more sustainable practices. The paper emphasises the necessity for a comprehensive approach to comprehend and oversee the sustainability of SGS in the context of ongoing climate change
Solid-state fermentation of agro-industrial by-products
No full textThe solid-state fermentation (SSF) of agro-industrial by-products such as okara, pomegranate peel, and cranberry pomace presents a sustainable approach to enhance the release of bioactive compounds. This study investigated the effects of different microbial cultures—Rhizopus oligosporus, Aspergillus oryzae, Streptococcus thermophilus, and a co-culture of R. oligosporus and S. thermophilus—on the bioconversion of bioactive compounds in 100% okara, okara with 2% pomegranate peel, and okara with 1% cranberry pomace. The objective was to assess whether co-culture fermentation with molds and S. thermophilus augments the release of bioactive compounds in okara-based fermentations through synergistic enzymatic activity. Over a period of 72 h, isoflavone transformation (daidzin, daidzein, genistin, and genistein), pH evolution, and water activity were assessed. The co-culture system exhibited improved bioconversion, leading to significant (p < 0.01) increases in daidzein and genistein in pure okara compared to the starting material. The highest polyphenol content (0.908 mg/g) and antioxidant capacity (24.9 mg Trolox eq/g) were recorded in 100% okara. However, pomegranate peel inhibited β-glucosidase activity, delaying the release of isoflavone aglycones. These findings confirm that co-culture fermentation is an effective strategy for enhancing the bioactive properties of okara-based fermentations. This facilitates the release of bioactive aglycones and supports the upcycling of agro-industrial by-products into functional food ingredients. Future research should focus on optimizing fermentation parameters to further enhance the release of bioactive compounds
Impact d’un dispositif d’écoute musicale au sein de services de psychiatrie aiguë
No full textLe dispositif d’écoute musicale Ktell permet aux patients en hôpital psychiatrique d’écouter de la musique pendant leur séjour dans une chambre de soins intensifs (CSI). Une analyse de l’impact de ce dispositif d’écoute musicale sur la qualité des soins proposés aux patients placés en CSI a été réalisée entre 2018 et 2020. Cette étude a mis en évidence que ces derniers se saisissent de la possibilité qui leur est offerte de piloter le dispositif à leur guise, selon leurs besoins du moment.The Ktell music-listening device enables patients in psychiatric hospitals to listen to music during their stay in an intensive care room (ICU). An analysis of the impact of this musical listening device on the quality of care offered to patients placed in an ICU was carried out between 2018 and 2020. This study highlighted that the latter seize the opportunity offered to them to pilot the device as they please, according to their needs at the time

No full textCet article s’appuie sur une étude ethnographique de dix mois, menée au sein de cinq services sociaux en Suisse romande. Il vise à explorer les reconfigurations du travail des assistantes sociales et assistants sociaux par le biais de l’introduction d’un logiciel de gestion en 2021. Il analyse les conséquences de la numérisation du travail sur les pratiques professionnelles quotidiennes, explorant les contraintes que le dispositif numérique impose et les effets qu’il suscite, notamment les sentiments de surveillance et de contrôle chez les professionnels. En son cœur, l’article révèle les arrangements développés par les assistantes sociales et assistants sociaux, qui se traduisent par des pratiques de protection tant de leur personne, que de leur métier.This article is based on a ten-month ethnographic study conducted in five social services in French-speaking Switzerland, exploring the reconfigurations of social workers' work through the introduction of management software in 2021. It analyses the consequences of digitization of work on day-to-day professional practices, including the constraints that the software imposes on social workers and the ef-fects it produces, particularly feelings of being subjected to surveil-lance and control. The article essentially reveals the arrangements developed by the social workers, which translate into practices to protect both themselves and their profession
De la culture du risque à la culturalisation du risque dans les migrations ::un cadrage sur les mobilités des travailleuses domestiques philippines
No full textCet article interroge la construction et les usages d’un cadre d’interprétation des risques dans le cas des migrations des travailleuses domestiques. Il ques- tionne l’influence de l’industrie migratoire philippine dans son élaboration, mais également la façon avec laquelle ces femmes migrantes y interagissent. Sur la base d’une enquête ethnographique, cet article montre dans un premier temps comment ce cadre d’interprétation des risques se concentre sur des représentations culturalistes des pays de destination afin de combler le manque de protection juridique des travailleuses domestiques. Dans un second temps, l’article pointe comment ce même cadre permet de mieux appréhender les risques encourus lorsque les conditions de protection juridique des travailleurs et travailleuses sont limitées. L’article souligne dans un dernier temps comment ce cadrage culturaliste peut être mis en tension lorsque les schèmes d’interpré- tation des risques et de la culture varient en fonction des individus.Risk Culture and Culturalisation of Risk in Migration. This article examines how risks are perceived and framed in the case of female domestic workers’ migration. It shows how these risk perceptions are constructed by the Philippine migration industry, and how these migrant women interact with it. Based on ethnographic work, this research shows first how the perception of risk framed by the migration industry focuses primarily on cultur- alist representations of destination countries in order to fill a lack of legal protec- tion of domestic workers. Second, this article underlines how the way of framing risk through the idea of culture reduces Filipino migrants’ perceptions of risk in a context of unfavourable structural conditions. Finally, the article highlights how this framing of culture is socially situated and implies, therefore, multiple frames of risk interpretation regarding the cultural belonging of migrants.Cultura del riesgo y culturalización del riesgo en la migración. Este artículo examina cómo se perciben y enmarcan los riesgos en el caso de la migración de trabajadoras domésticas. Muestra cómo estas percepciones de riesgo son construidas por la industria migratoria filipina, y cómo interactúan estas mujeres migrantes con ella. Basándose en un trabajo etnográfico, esta investigación muestra primero cómo la percepción del riesgo enmarcada por la industria migratoria se centra principalmente en representaciones culturalistas de los países de destino para llenar una falta de protección legal de las traba- jadoras domésticas. En segundo lugar, este artículo subraya cómo la forma de enmarcar el riesgo a través de la idea de la cultura reduce las percepciones de riesgo de los migrantes filipinos en un contexto de condiciones estructurales desfavorables. Finalmente, el artículo destaca cómo este enmarcamiento de la cultura está socialmente situado e implica por lo tanto múltiples marcos de interpretación del riesgo con respecto a la pertenencia cultural de los migrantes
