Olive offerings 橄欖入饌
Alongside wheat and grapes, olives complete the triumvirate of ingredients that is the basis of Mediterranean cuisine, and have been cultivated for centuries. The oil of the olive is a chef\u27s staple, while table olives add brininess and depth to many dishes.
如果要用三種食材來概括源遠流長的地中海飲食文化,那一定是小麥、葡萄,以及橄欖。橄欖油是廚師的必備材料自不待言,就連食用橄欖也可以為許多菜式增添獨特的鹹鮮味
Notions of value and care in transnational education: Contextualizing theory to practice with Fashion Media students in Hong Kong.
This paper draws on the experience of teaching a Top-Up degree programme in Hong Kong. The course, with a focus on fashion media, contextualised practice within a framework of cultural studies theory. Taught by staff from both London and Hong Kong, it sought to develop practitioners who could confidently operate in the fast-paced, global fashion industry. Perhaps unsurprisingly, however, it became evident that the cultural theory, assessed through an 8,000-Dissertation written in English, would prove especially challenging for some of the students. The one-to-one tutorial scenario, the teaching format for the delivery, appeared to compound this challenge, as it seemed to leave some students feeling exposed. It was important that the staff team addressed this issue promptly, as students were at risk of not attending due to lack of confidence and a subsequent lack of motivation. Through an action research project, staff considered verbal immediacy, ego support and tutor confirmation as strategies to support students with these challenges. This paper reports on findings that demonstrate that these methods (which specifically consider the emotional needs of students) were effective in motivating and facilitating confidence in the students who were struggling with the demands of the course. Furthermore, it discusses student perceptions of value and care and how these differ and are dependent on the needs of the student. It goes further, to report on interviews with alumni who discuss the value of critical thinking and of contextualising practice, and how these attributes can facilitate students as life-long learners who are to able live and work successfully upon graduation. It identifies further opportunities for research, which consider additional cycles in the reflective and intervention cycles of the action research process

Keynote speech: The Source of Hong Kong Technical Education from Public Repositories
At the turn of the 20th century, after Dr. Sun Yat Sin had received western medical education in Hong Kong, the development of western technology in Hong Kong was advanced in a rapid rate. Electricity had been applied to lighting, lift and tram; wireless communication though not yet common had been applied to shipping and weather communication; Kowloon telephone had been connected successfully; Structural steel and steam engine were common in ocean going steamer, buildings and railways; Cars using petroleum were on the newly formed asphalt roads. New machineries and materials were used in infra-structures such as reclamation, reservoir, road and building as well on docks making ocean going steamers. To complete these works, Hong Kong needed not only engineers but every class of technicians and workers. Technical education was no doubt the means to this end. The speaker had spent his time in various publicly assessed repositories digging out relevant materials in order to find out the source of Hong Kong technical education. He will share his findings using the forgotten private-owned Li Shing Scientific and Industrial College and the Government Hong Kong Technical Institute
Integrating Corporate Social Media Communication into the English Language Curricula
The rise of social media has affected how people do business and communicate. Companies interact with potential customers, share offers and promote sales, tracking instant Responses on the internet. Exploring how they do them with language can enable meaningful changes in the vocational English language curricula.
This study gives a descriptive analysis of 500 selected corporate FaceBook (FB) threads collected from the 100 Best Global Brands in 2017. It delivers a sizable collection of corporate FB posts categorised according to industry, business topics, language functions, etc. For contextual analysis, the three parameters ‘Field’, ‘Tenor’ and ‘Mode’ based on the Hallidayan framework (Halliday and Hasan, 1985) are used while the Language Analysis Framework for Writing (California Department of Education, 2015) is adopted for the analysis of language characteristics.
The findings reveal that a range of communication strategies, remarkably different from those in traditional business communication, are employed by corporates to boost FB traffic, achieve succinctness and innovation and build brand images. The study is significant to vocational and professional education and training as it facilitates close reference to exemplary authentic language materials of the best global brands. The unique characteristics of social media like spontaneity, interactivity and openness will also shed light on a new variety of topics, content and styles for vocational English training. The versatile nature of social media also makes the study a good stepping stone for any further joint research on content and language integrated learning (CLIL)
