    Elaboración de un recetario gastronómico a base de los principales productos agropecuarios de la comunidad Launag Grande, del cantón Chunchi, de Chimborazo

    This work focuses on creating recipes with the main agricultural products of the Launag Grande community, located in the province of Chimborazo, with the aim of developing a recipe book. To do this, we consulted bibliographic sources, concepts related to gastronomy, heritage, agriculture, also tourism. In such a way that the project is based on academic bases and of academic importance. Later, on surveys are carried out with local managers and professional experts who provide their knowledge and experience, with the purpose of demonstrating how important it is to use community agricultural production to promote rural gastronomy. Similarly, through field visits, meetings with community representatives, the social, economic, agricultural, and gastronomic reality of the locality is ascertained. Subsequently, the agricultural and livestock ingredients are identified, and from this, fifteen recipes are elaborated, which are validated by gourmets or chefs who are specialists in subjects associated with the project. With the purpose that, the recipe book can be a support tool for the community of Launag Grande, when offering in the dining room of their refuge "Parada del Inca", a variety of dishes based on their agricultural activity, thus resuming their ancient practices of family farming and raising of minor species. This would allow them to position themselves as a gastronomic tourist offer. Consequently, the population would improve its economy, preserve the production of ancestral foods, as well as the creation and preparation of récipes.Este trabajo se centra en crear recetas con los principales productos agropecuarios de la comunidad Launag Grande, ubicada en la provincia de Chimborazo, con el objetivo de elaborar un recetario. Para ello, se efectuaron consultas en fuentes bibliográficas, de conceptos relacionados con; gastronomía, patrimonio, el agro, también turismo. De tal manera que, el proyecto se fundamente sobre bases catedráticas y de importancia académica. Más adelante, se realiza encuestas a los gestores locales y expertos profesionales quienes suministran sus conocimientos y experiencias, con el propósito de demostrar cuán importante es utilizar la producción agrícola comunitaria para potenciar la gastronomía rural. Del mismo modo, mediante visitas de campo, reuniones con representantes comunitarios se constata la realidad social, económica, agropecuaria, y gastronómica de la localidad. Posteriormente, se identifica los ingredientes agrícolas y pecuarios, a partir de esto, se elaboran quince recetas, las mismas que son validadas por gastrónomos o chefs especialistas en temas asociados al proyecto. Con la finalidad que, el recetario pueda ser una herramienta de apoyo para la comunidad de Launag Grande, al momento de ofrecer en el comedor de su refugio “Parada del Inca,” una variedad de platos basados en su actividad agropecuaria, retomando así, sus antiguas prácticas de agricultura familiar y crianza de especies menores. Esto les permitiría posicionarse como una oferta turística gastronómica.     Echinococcosis is a zoonotic disease, with high rates of contagion, especially in rural areas, due to the lack of knowledge of people and few prevention measures by the competent authorities. Few studies have been carried out in private slaughter centers, this being the reason for carrying out this study. This investigation was carried out at the private slaughterhouse "Prolam" located in Jatumpungo Sangolquí. 519 pigs were inspected in 7 visits. Post mortem veterinary inspection was used as diagnostic methods, identifying cystic lesions with adventitial and laminar layers; determination of the fertility of the cysts using Diff quick staining to facilitate the observation of the protoscolexes of Equinococcus spp. The results obtained were 15 positive pigs with the presence of cystic lesions of which only 1 was fertile, in turn it was found that all positive cases belonged to young pigs and mostly pigs that came from Santo Domingo. Using inferential statistics with the Poisson distribution, the relationship between the variables was determined, showing that: between positive cases and origin (Ambato and Pintag), affected organ and infertility of the cysts, a significant difference was found (p less than 0.05), in relation to Age, no significant difference was found in both young and adult pigs (p less than 0.05). To complement the study, an analysis of gray information was carried out on the frequency of cases reported in Ecuador, focusing on the results obtained, finding a single published study, where the content of the cysts found was genotyped. The inferential statistical analysis to determine if there is a relationship between the positive cases and the place where the slaughter was carried out in the studies, showed a significant difference (p value less than 0.05).La equinococosis es una enfermedad zoonótica, con altas tasas de contagio en especial en las zonas rurales, debido a la falta de conocimiento de las personas y escasas medidas de prevención por parte de las autoridades competentes.     Cambio de uso y diseño interiorista de bar-restaurante Mixology Lab

    The following academic paper proposes a change in the use of a current electronics shop and gym into a cuisine and molecular cocktail bar under the name of “Mixology Lab”. Since there are few places of these characteristics and this type of cuisine, it is viable to propose and promote the transformation of this project into a modern and new gastronomic destination of Ecuador and Latin America, a nest of art workshops in terms of mixology. This project takes places in Pichincha, Quito, precisely, in the intersection between Av. Edmundo Carvajal and Av. Brasil. The name of the building is Robalino and its intervention includes the lobby and first floor with an area of 981.37 square meters. The space includes: a reception, couch area, dining area, bars, lounge rooms, mini lounges, booths areas, main kitchen, workshop kitchen, training workshop spaces, exterior lounge rooms and a terrace bar zone. The design started with a particular concept, that of a Tiffany French Art Deco lamp, for which its stylized and simple lines, tips and angles allow the abstraction of shapes and modules that can be combined in various ways, allowing the creating of new shapes that can be applied in furniture design, room dividers, column cladding, and false ceiling. Art Deco is a decorative and eclectic style composed of patterns, geometric lines, stairs and zigzags, with the whole purpose of representing luxury, exclusivity, prosperity, glamour and modernity, which will be reflected upon the design of this bar. The chromatics of this project involve shades of navy blue, green oil, and neutral colors such as white, beige and gray. Similarly, shades of gold were used in details that enhance and contribute to the quality of space, letting this color range be sophisticated and elegant, proper of the typology of this restaurant-bar. The selection of materials, coating, lighting and furniture was proposed with the objective of allowing this space to be one where people can enjoy not only from the cuisine but rather from the experience as a whole.El presente trabajo de titulación, propone el cambio de uso de un actual local comercial de productos electrónicos y gimnasio, a un bar-restaurante de cocina y coctelería molecular, cuyo nombre será “Mixology Lab”. Puesto que son pocos los lugares que ofrecen este tipo de gastronomía, la realización de este proyecto es viable e idóneo fomentar el desarrollo de esta rama culinaria de vanguardia, convirtiéndolo en un destino gastronómico de Ecuador y Latinoamérica. Se ha destinado un área del proyecto en la cual las personas podrán recibir capacitaciones en el arte de la mixología. Este proyecto se desarrolla en Pichincha, cantón Quito, en la Av. Edmundo Carvajal y Av. Brasil, Edificio Robalino, interviniendo planta baja y primer piso, con un área de 981.37 metros cuadrados. Cuenta con: recepción, área de salones comedores, barras, salas lounge, mini lounges, área de booths, cocina lab, cocina taller de capacitaciones, lounges exteriores y zona de bar en terraza. El diseño partió de un concepto, el cual fue una lámpara Tiffany French Art Deco, cuyas líneas estilizadas y sencillas, sus puntas y ángulos permiten abstraer formas y módulos que pueden ser combinados de varias maneras, creando nuevas formas para ser aplicadas en el diseño de mobiliario, celosías, revestimientos de columnas y cielo falso. El estilo Art Deco es un estilo decorativo ecléctico conformado por patrones, líneas geométricas, escalones y zigzags, con el objetivo de representar lujo, exclusividad, prosperidad, glamour y modernidad, que se verá reflejado en el diseño de este bar. La cromática del proyecto maneja tonalidades del color azul marino, verde petróleo, y colores neutros como el color blanco, beige, y gris. Se han utilizado también tonalidades doradas en detalles que complementan y aportan calidez al espacio; siendo una gama de colores sofisticados y elegantes, acordes con la tipología de este bar-restaurante. La selección de materiales, revestimientos, iluminación y mobiliario fue propuesta con el objetivo de que este sea un lugar en donde las personas puedan disfrutar de la experiencia además de la gastronomía

    The design of the integral farm was carried out in the property belonging to the company Grupo Familia as an alternative to use the cellulose waste generated by the company in its productive activities. The property is located in the Pastocalle sector, Latacunga city, Cotopaxi province, at an altitude of 3074 meters above sea level. The integral farm was designed with a focus on the use of cellulose residue, the use of waste generated on the farm, the conservation of existing resources on the property and the integration of the diversity of its components to achieve a reduction in the projects financial risk. The study was carried out based on four objectives: a baseline diagnosis of the farm to evaluate the production characteristics, the identification of the biochemical profile of the cellulose residue with the analysis of important parameters in animal nutrition, the design of the integral farm together with its components and the analysis of the cost benefit of the project determined the profitability of the execution of the project. The study determined that the property does not present productive activity at present, however, the productive conditions of the place are favorable for agricultural activity. The cellulose residue presented high content of ashes, medium content of fiber and low content of phosphorus, protein and fat, taking this into account, the cellulose residue allows to supplement the deficiencies of animal feeds by incorporating it as an additive to the formulation. The design of the integral farm considered the main components, agriculture, livestock, forestry and infrastructure with a focus on environmental conservation and the use of cellulose waste. The profitability analysis of the Grupo Familia integrated farm determined that the project generates positive economic flows from the first year with a net present value (NPV) of 118783. 07 USD, an internal rate of return (IRR) of 23 percent which is greater than the 12 percent discount rate and a benefit cost (B/C) of 1.15 USD for each dollar invested in the project.El diseño de la granja integral se realizó en el predio perteneciente a la empresa Grupo Familia como una alternativa de aprovechamiento del residuo de celulosa generado por la empresa en sus actividades productivas..

    Currently globalization constantly generates competition between organizations to gain strength towards a forced commercial opening. On many occasions this happens with low economic resources and rapid technological changes that are influencing factors. This in turn as a response to companies to grow and successfully face new challenges, trying to ensure their permanence in the markets. A quality management system based on ISO 9001:2015, reflects an efficient and effective system of quality management of the company's production processes. This is a series of requirements processes that includes information on activities and activities established in the production cycle. By sowing risk-based thinking, several clauses have been implemented from the beginning of the organization's context, alignment to different processes, leadership, and at the beginning in planning. This encourages the organization to maintain accurate feedback with stakeholders. Through the internal audit carried out, a work plan is established, by means of which the documentary information that will allow compliance with the requirements of NTC ISO - 9001: 2015 is expanded. It is extremely important to understand each chapter and the literals so that the implementation and use of the standard is complete. The consideration of the characterization of the processes, together with the departmental procedures, seek to identify the actions that currently generate risks to the organization.     When carrying out a study in the member cooperatives, it was determined that a friendly and intuitive tool was needed to allow an appropriate control of the institution's assets. Previously, the member cooperatives had the management of their fixed assets and control assets manually and in systems not suitable for the correct entry of the products, with this solution several problems that occur in the cooperatives were eliminated when carrying out a manual way the verification of its assets producing economic and material losses. The system allows them to have their information consolidated and protected in the system and in progressive times of delivery of the assets to the custodians of the cooperative without having major inconveniences and eliminating the economic and material losses that were registered in the company. For the development of this project the XP methodology was used, the same that allows to reduce production costs and the delivery time to the client, because it places greater emphasis on the importance of the interactions of the individuals than in the processes expediting the deliveries proposed to the client.Al realizar un estudio en las cooperativas socias se determinó que se necesitaba una herramienta amigable e intuitiva que permita llevar un apropiado control de los activos de la institución. Anteriormente las cooperativas socias llevaban el manejo de sus activos fijos y bienes de control manualmente y en sistemas no aptos para un correcto ingreso de los productos, con esta solución se eliminó varios problemas que se producen en las cooperativas al momento de llevar de una manera manual la constatación de sus activos produciendo pérdidas económicas y materiales. El sistema les permite tener su información consolidada y resguardada en el sistema y en progresivos tiempos de entrega de los activos a los custodios de la cooperativa sin tener mayores inconvenientes y eliminando las pérdidas económicas y materiales que se registraban en la empresa. Para el desarrollo de este proyecto se utilizó la metodología XP, la misma que permite disminuir costos de producción y el tiempo de entrega al cliente, pues pone mayor énfasis en la importancia de las interacciones de los individuos que en los procesos agilizando las entregas propuestas al cliente

    Panorama del ciclismo en Ecuador

    This research sought to know the cycling landscape in Ecuador. That is, it was identified what are the conceptions, exponents, achievement and problems about cycling, also the practices, modalities and regulations around cycling as a sport. As of 1966, cycling in Ecuador becomes different due to the creation and execution of the first Tour of Ecuador in which only Ecuadorian cyclists participated. Over the years, this competition became known internationally and had transcendence in the country. For 2007, the International Cycling Union UCI integrated the Tour of Ecuador among its participating events around the world could score points in the global ranking. Currently, professional cycling lives a great moment with Richard Carapaz in road cycling and Doménica Azuero and Alfredo Campo in BMX; On the other hand, amateur or amateur cycling is abandoned because it has no support from any entity and only practice this sport for personal pleasure. The big problem facing professional cycling in the modalities of: Track, BMX, Mountain and BMX Freeestyle is the economic issue. There is no good organization by the Ministry of Sport, Ecuadorian Cycling Federation and Sports Concentration of Pichincha, which are the main sports entities. There is no good distribution of money for different talents in this sport and this slows competitive development. In addition, the current situation of amateur cycling in the country was ingested because these athletes do not have the protection an and the depth of the conditions in the performance of this activity is unknown.Esta investigación buscó conocer el panorama del ciclismo en Ecuador. Es decir, se identificó cuáles son las concepciones, exponentes, logro y problemáticas sobre el ciclismo, también las prácticas, modalidades y regulaciones en torno al ciclismo como deporte. A partir de 1966, el ciclismo en Ecuador se torna diferente por la creación y ejecución de la primera Vuelta a Ecuador en la que participaron solo ciclistas ecuatorianos. Con el paso de los años, esta competencia se dio a conocer a nivel internacional y tuvo una trascendencia en el país. Para el 2007, la Unión Internacional de Ciclistas UCI integró a la Vuelta a Ecuador entre sus eventos participantes de todo el mundo pudieran sumar puntos en la clasificación global. En la actualidad el ciclismo profesional vive un gran momento con Richard Carapaz en el ciclismo de ruta y Doménica Azuero y Alfredo Campo en BMX; por otro lado, el ciclismo aficionado o aficionado se encuentra en abandono debido a que no tiene respaldo de ninguna entidad y solo se practican este deporte por gusto personal. El gran problema que vive el ciclismo profesional de las modalidades de: Ruta Pista, BMX, Montaña y BMX Freeestyle es el tema económico. No existe una buena organización por parte de la Secretaría del Deporte, Federación Ecuatoriana de Ciclismo y Concentración Deportiva de Pichincha, que son las principales entidades deportivas. No existe una buena distribución del dinero para los diferentes talentos en este deporte y esto frena el desarrollo competitivo. Además, se indagó sobre la actualidad del ciclismo amateur en el país debido a que estos deportistas no cuentan con la protección y no se conoce la profundidad de las condiciones en el desempeño de esta actividad

    This project addresses the adaptation of the songs: La leyenda del hada y el mago y Guerrero del arcoíris by the Argentine band Rata blanca to a rock band format and string quartet. The stylistics that has consolidated the band sonority is strongly influenced by Johann Sebastian Bach, Antonio Vivaldi and Niccolo Paganini music as mentioned by the members of the band, which is why the work Quartet número 7 E major of Niccolo Paganini was taken as the object of study. Digitization and reconstruction of the work general score was carried out, as well as the reconstruction of the chords and the analysis of the tonal functions. In addition, through the qualitative method, specifically through the observation strategy, some compositional characteristics were identified, resources that were applied in the adaptations of the songs La leyenda del hada y el mago and Guerrero del arcoíris of Rata blanca music band.Este proyecto aborda la adaptación de los temas: La leyenda del hada y el mago y Guerrero del arcoíris de la banda argentina Rata blanca a formato de banda de rock más cuarteto de cuerdas. La estilística que ha consolidado la sonoridad de la banda está fuertemente influenciada por la música de Johann Sebastian Bach, Antonio Vivaldi y Niccolo Paganini, músicos que son mencionados por los integrantes de la misma, razón por la cual se tomó como objeto de estudio la obra Cuarteto número 7 en E mayor del maestro Niccolo Paganini. Se realizó la digitalización y reconstrucción del score general de la obra, así como también la reconstrucción del cifrado y el análisis de las funciones tonales. Además, mediante el método cualitativo a través de la estrategia de observación se identificaron algunas características compositivas que fueron aplicadas en las adaptaciones de los temas La leyenda del hada y el mago y Guerrero del arcoíris de la banda Rata blanca

    Incidencia de la educación en la violencia doméstica: el caso de las mujeres en Ecuador

    Domestic violence is a type of violence produced within the family environment, referring to those aggressions between people who has a consanguineous relationship or as a couple. In this paper, the case of heterosexual ecuadorian couples in which violence against woman is present, wheter psychological, physical or sexual, is studied; and one of the resource that could be used to stop this violation against human rights is analyzed. It is hypothesized that education works as a protective factor for women, against domestic violence. To verify the hypothesis, an econometric model of binary probability is carried out, which also allows to analyze the effect that another determinants have in this type of violence, using the National Survey of Family Relationships and the Gender Violence against Women from 2011 as a database. In fact; education is found to be a factor that protects women, significantly reducing the probability of violence as their educational level increases.La violencia doméstica es aquella que se genera dentro del entorno familiar, es decir las agresiones que se dan entre personas que tienen una relación consanguínea o de pareja. En este trabajo se estudia el caso de las parejas ecuatorianas heterosexuales que presentan violencia en contra de las mujeres, ya sea esta psicológica, física o sexual, y se analiza uno de los recursos que puede frenar esta violación de derechos humanos. Se plantea como hipótesis que la educación funciona como un factor de protección para las mujeres, en contra de la violencia intrafamiliar. Para comprobar la hipótesis, se realiza un modelo econométrico de probabilidad binaria, que también permite analizar el efecto que tienen otros determinantes de este tipo de violencia, utilizando como base de datos la Encuesta Nacional de Relaciones Familiares y Violencia de Género contra las Mujeres del año 2011. Se encuentra que efectivamente, la educación es un factor que protege a las mujeres, reduciendo significativamente la probabilidad de sufrir violencia conforme aumenta el nivel educativo de las mismas

    The degree project focuses on industry 4.0, where its trend mentions that all industrial equipment is connected to the internet, for this purpose the development of a multiplatform application that can control industrial equipment from a computer or mobile application, all this through the configuration of a Siemens S71200 PLC equipment. The computer application will be created in LabVIEW where you will have simulated events such as filling a tank and turning on and off an engine. In the event of filling the tank, it indicates an alert if it is exceeding its capacity to a configured percentage or if it is almost empty, all this through programming and configuration with different software in order to comply with the client-server architecture. In addition, it will be stored in the database when this event is activated, the OPC server will allow the variables created in the PLC to be viewed by the LabVIEW software. There are also two mobile applications, one for the iOS operating system and one for the Android operating system, which can be purchased from the application store.
