Molecular typing of bacteriocins produced by bacterial strains isolated from food
No full textTato diplomová práce se zabývá molekulární detekcí genů pro bakteriociny u kmenů bakterií mléčného kvašení izolovaných z potravin. V rámci praktické části byla hodnocena antimikrobiální aktivita izolátů a provedena PCR analýza vybraných kmenů na přítomnost specifických genů. Výsledky poukazují na biokonzervační potenciál těchto mikroorganismů pro využití v potravinářství.This thesis focuses on the molecular detection of bacteriocin genes in lactic acid bacteria strains isolated from food. The experimental part included the evaluation of antimicrobial activity of the isolates and PCR analysis of selected strains for the presence of specific genes. The results indicate a promising biopreservative potential of these microorganisms for use in the food industry.Ústav technologie potravi
Nowadays water pollutants: current and future legislation
No full textTato bakalářská práce se zabývá aktuálním problémem znečištění vodních ekosystémů novodobými polutanty, jako jsou farmaka, mikroplasty, perzistentní organické látky a endokrinní disruptory. Cílem práce je analyzovat jejich výskyt, dopady a současný i budoucí legislativní rámec na národní i mezinárodní úrovni. První kapitola se věnuje teoretickému zázemí, vysvětlení pojmu novodobé polutanty, jejich chemickým vlastnostem, zdrojům a cestám vstupu do vodního prostředí. Shrnuje současné poznatky o farmaceutických látkách, endokrinních disruptorech, mikroplastech a per- polyfluoroalkylových látkách (PFAS), včetně jejich ekologických a zdravotních rizik. Druhá kapitola popisuje, analýzu aktuálních právních předpisů a dokumentů Evropské unie a České republiky. Přibližuje způsob sběru informací a přístup k hodnocení účinnosti legislativních nástrojů. Třetí kapitola poskytuje přehled současné i plánované legislativy týkající se regulace vybraných látek. Věnuje se směrnicí EU, jako je směrnice 2020/2184, jejich implementaci do české legislativy a srovnání mezi dřívější a novelizovanou právní úpravou, včetně nově stanovených limitů a sledovaných ukazatelů. Závěr shrnuje hlavní poznatky práce, hodnotí aktuální přístup k problematice novodobých polutantů, identifkuje slabá místa současné regulace a navrhuje doporučení pro další výzkum, zlepšení monitoringu a účinnější informování veřejnosti.This bachelor thesis deals with the current issue of pollution of aquatic ecosystems by modern pollutants such as pharmaceuticals, microplastics, persistent organic compounds, and endocrine disruptors. The aim of the thesis is to analyse their occurrence, impacts, and the current as well as future legislative framework at both national and international levels. The first chapter is devoted to the theoretical background, explaining the concept of modern pollutants, their chemical properties, sources, and pathways into the aquatic environment. It summarises current knowledge on pharmaceuticals, endocrine disruptors, microplastics, and per- and polyfluoroalkyl substances (PFAS), including their ecological and health risks. The second chapter focuses on the analysis of current legislation and official documents of the European Union and the Czech Republic. It outlines the methods of information gathering and the approach to assessing the effectiveness of legislative instruments. The third chapter provides an overview of existing and planned legislation concerning the regulation of selected substances. It addresses EU directives such as Directive 2020/2184, their implementation into Czech legislation, and compares earlier and amended legal frameworks, including newly introduced limits and monitored indicators. The conclusion summarises the main findings of the thesis, evaluates the current approach to modern pollutants, identifies weaknesses in existing regulation, and proposes recommendations for further research, improved monitoring, and more effective public awareness.Ústav inženýrství ochrany životního prostřed

Práce se věnuje identifikaci klíčových rizikových faktorů, jejich příčin a dopadů, stejně jako návrhu konkrétních opatření pro jejich minimalizaci.This bachelor's thesis focuses on the analysis and management of risks within the transport company FOFR, which specializes in parcel delivery. Given the dynamic nature of the transportation industry, increasing customer expectations, and intensifying competitive pressures, effective risk management is a crucial tool for ensuring the long-term sustainability and competitiveness of the company. Cieľom práce je zvolenie najvhodnejšej lokality a vypracovanie projektu premiestnenia prevádzky spoločnosti. V praktickej časti je použitá analýza PESTLE, multikriteriálna analýza, Ganttov diagram a metóda kritickej cesty. Výsledkom práce je projekt premiestnenia súčasnej prevádzky do novej lokality, ktorá spĺňa náležitosti vedenia spoločnosti a zároveň poskytuje vhodné podmienky pre ďalší rozvoj pre vádzkových činností.The thesis deals with a project focused on relocating the operations of a company that provides maintenance and repair services for construction machinery. The main objective of the thesis is to select the most suitable location and to develop a relocation project for the company's operations. The practical part applies the PESTLE analysis, multicriteria analysis, Gantt chart, and Critical Path Method. Implementation of the Lean Approach in Burg Ocet, s.r.o.
No full textDiplomová práce pojednává o lean přístupech v oblasti výroby. Jejím cílem je implementace štíhlých přístupů a metod na vybraném pracovišti ve společnosti působící v sektoru potravinářského průmyslu za účelem snížení plýtvání. Teoretická část představuje přehled přístupů lean managementu, dále pak rozbor filozofie Toyota Production System (TPS). Závěr teoretické části je věnován charakteristice vybraných nástrojů a metod štíhlé výroby navazující na praktickou část práce. Úvod analyticko-empirické části je tvořen seznámením čtenáře se společností Burg Ocet, s.r.o. se zmapováním procesů organizace. Následně je na základě dotazování a přímého pozorování vybráno pracoviště pro zpracování analýzy FMEA s následným rozebráním nejzávažnějších rizik prostřednictvím Ishikawova diagramu. Projektová část diplomové práce je zaměřena na snižování plýtvání zmapovaného procesu prostřednictvím nástrojů a přístupů lean managementu.The diploma thesis deals with lean approaches in the field of production. Its objective is to implement lean approaches and methods at a selected workplace in a company operating in the food industry sector in order to reduce waste. The theoretical part presents an overrview of lean management approaches, including an analysis of the Toyota Production System (TPS) philosophy. At the end of the theoretical part, selected tools and methods of lean production related to the practical part of the diploma thesis are characterized. The introduction of the analytical and empirical part consists of introducting the reader to the company Burg Ocet, s.r.o. with the mapping of the organization's processes. Subsequently, based on questions and direct observation, a workplace is selected for processing the FMEA analysis with subsequent analysis of the most serious risks using the Ishikawa diagram. The project part of the diploma thesis is focused on reducting waste in the mapped process using lean management tools and approaches.Ústav logistik

No full textDiplomová práce se zabývá zajištěním bezpečnosti a ochrany zdraví při práci v průběhu procesu nakládky a vykládky materiálu. Cílem práce je zanalyzovat současný stav bezpečnosti procesu nakládky a vykládky materiálu ve vybrané organizaci a následně vypracovat návrhy pro zvýšení bezpečnosti daného procesu a vytvořit dokumentaci pro zajištění bezpečnosti daného procesu, která bude sloužit potřebám vybrané organizace. V práci je využito vědeckých metod pozorování, analýzy a syntézy. Z analytických metod byly použity metody HTA, Checklist, What-if? analysis a matice rizik. Obsahem teoretické části jsou poznatky týkající se nakládky a vykládky, BOZP a auditů. V praktické části je popsána analýza současného stavu, která probíhala formou interního auditu a následně jsou zpracovány návrhy na zlepšení bezpečnosti vycházející ze zjištění auditu.The thesis deals with ensuring occupational health and safety during the loading and unloading process. The aim of the work is to analyse the current state of safety of the process of loading and unloading of materials in the selected organisation and subsequently to develop proposals for improving the safety of the process and to create documentation for ensuring the safety of the process, which will serve the needs of the selected organisation. The work uses scientific methods of observation, analysis and synthesis. The analytical methods used were HTA, Checklist, What-if? analysis and risk matrix. The theoretical work includes current knowledge on loading and unloading, OHS and audits. The practical part describes the analysis of the current situation, which took place in the form of an internal audit and then proposals for improving safety based on the audit findings are developed.Ústav logistik
Project Expansion of Production from the Perspective of Internal Logistics and Modification of Warehouse Space Arrangement
No full textVýsledkom práce je návrh nového usporiadania výrobnej haly, ktorá bola rozšírená o ďalšiu halu určenú pre ručnú výrobu. V rámci tejto zmeny bolo potrebné nanovo rozmiestniť výrobné stroje tak, aby sa eliminovali prestoje, ktoré vznikali v pôvodnom stave haly v dôsledku obmedzeného priestoru na spracovanie zákaziek. Súčasťou projektu bola aj potreba zabezpečiť nové priestory na skladovanie hotových výrobkov, pretože pôvodné skladové priestory boli nahradené novou výrobnou halou. Z tohto dôvodu bolo potrebné nájsť vhodné miesto s dostatočnou kapacitou na uskladnenie hotových produktov.The result of the work is a proposal for a new layout of the production hall, which was expanded with another hall intended for manual production. As part of this change, it was necessary to reposition the production machines in such a way as to eliminate downtime that occurred in the original state of the hall due to limited space for processing orders. The project also included the need to provide new spaces for storing finished products, because the original warehouse spaces were replaced by a new production hall. For this reason, it was necessary to find a suitable place with sufficient capacity for storing finished products.Ústav logistik

No full textTato bakalářská práce se zabývá analýzou rizik spojenou s přesunem výrobní firmy do nových prostor s důrazem na zachování kontinuity výroby i v během samotného přesunu. Praktická část této práce se zabývá analýzou rizik spojených s tímto typem projektu pomocí metody FMEA s cílem nejzávažnější detekovaná rizika vyhodnotit na základě hodnotící škály a navrhnout jejich ošetření pro minimalizaci jejich dopadu. Práce se mimo FMEA analýzou zabývá i zasazením této problematiky do teoretického rámce a to s důrazem na výrobu a její typy pro správné uchopení a zpracování požadavku na zachování kontinuity výroby v rámci tohoto přesunu tak, aby byl dopad na zákaznické požadavky co nejnižší.This bachelor's thesis deals with risk analysis associated with the relocation of a manufacturing company to new premises, with an emphasis on maintaining production continuity even during the relocation itself. The practical part of this thesis focuses on risk analysis for this type of project using the FMEA method, with the aim of evaluating the most critical identified risks based on a rating scale and proposing mitigation measures to minimize their impact. In addition to the FMEA analysis, the thesis also places this issue within a theoretical framework, with a focus on production and its various types, to correctly address and process the requirement of maintaining production continuity during the relocation in order to minimize the impact on customer requirements.Ústav krizového řízen
Assessing Financial Risks in an Organization
No full textTato diplomová práce se zabývá problematikou finančních rizik v konkrétní organizaci. Cílem je identifikovat a analyzovat hlavní rizika, která ovlivňují finanční stabilitu podniku, a navrhnout opatření ke snížení těchto rizik. V teoretické části je provedena literární rešerše zaměřená na klasifikaci finančních rizik, metody jejich měření a analýzu řízení rizik. Praktická část je založena na analýze účetních výkazů za pět let pomocí poměrové, vertikální a horizontální analýzy a analýzy cash flow. Na základě výsledků je navržen konkrétní projekt ke snížení identifikovaných rizik. V závěru jsou popsány teoretické a praktické přínosy práce a její využitelnost pro řízení finančních rizik v praxi.The thesis focuses on financial risk assessment in a specific organization. The objective is to identify and analyze the key risks affecting the company's financial stability and to propose measures to mitigate these risks. The theoretical part includes a literature review focused on the classification of financial risks, methods of their measurement, and risk management approaches. The practical part is based on an analysis of financial statements over a five-year period, using ratio, vertical, and horizontal analysis as well as cash flow evaluation. Based on the results, a specific project is proposed to reduce the identified risks. The final section discusses both the theoretical and practical contributions of the thesis and its applicability in corporate financial risk management.Ústav krizového řízen
Cybersecurity of the Local Government Unit
No full textDiplomová práce se zaměřuje na problematiku kybernetické bezpečnosti územního samosprávného celku, konkrétně vybrané obce. V úvodní části jsou definovány důležité pojmy související s kybernetikou a bezpečností. Následuje přehled právních předpisů, které se vztahují ke kybernetické bezpečnosti a veřejné správě. V rámci praktické části byla provedena analýza rizik podle metodiky NÚKIB a dalších relevantních metodických postupů. Dále byla realizována komplexní analýza zranitelností a hodnocení informačních aktiv s využitím principů CIA. Na základě získaných poznatků byla navržena a doporučena bezpečnostní opatření vedoucí ke zvýšení úrovně kybernetické bezpečnosti ve zkoumané obci.This thesis focuses on the issue of cyber security of a local government unit, specifically a selected municipality. In the introductory part, important terms related to cybernetics and security are defined. This is followed by an overview of legal regulations that relate to cybersecurity and public administration. In the practical part, a risk analysis has been carried out according to the National Cyber and Information Security Agency (NUKIB) methodology and other relevant methodologies. Furthermore, a comprehensive vulnerability analysis and assessment of information assets was performed using CIA principles. Based on the obtained findings, security measures were proposed and recommended to increase the level of cybersecurity in the studied community.Ústav krizového řízen
