Proximate Analysis of Goat Milk Yogurt Powder Produced by Freeze Drying and Vacuum-Oven Drying and in Comparing with Freeze-Dried Yogurt Powder Prepared with Tualang Honey
This study was carried out to produce powdered yogurt from goat milk with longer shelf life.Two methods of drying process of yogurt were used which are vacuum-oven drying (VD) and freezedrying (FD). Goat milk yogurt powder prepared with added Tualang honey (TH) was produced by freeze-drying method. In this study, four formulations of yogurt were prepared with the addition of commercial yogurt containingas starter culture.Granulated sugar was added about 8% into the yogurt as control sample. While other three yogurts were prepared with 8% of Tualang honey, 6% of Tualang honey with 2% of sugar and 4% of Tualang honey with 4% of sugar. The proximateanalysis was used in order to identify the proximate composition and pH value of the yogurt. The moisture content of goat milk yogurt, VD goat yogurt powder and FD goat yogurt powder were 79.20%, 8.22% and 9.66% respectively. While, the moisture content for FD goat yogurt powder with addition of 4%, 6% and 8% Tualang honey were 15.12%,15.92% and 13.53% respectively.While the value of ash content for FD goat milk yogurt powder with addition of 4%, 6% and 8% Tualang honey were 0.37%, 0.35% and 0.50% respectively. The total protein content for goat milk yogurt was 4.61% whilein VD goat yogurt powder and FD goat yogurt powder were 15.04% and 15.07% respectively. The value of protein content for FD goat milk yogurt powder with addition of 8% of Tualang honey was 15.38%. The pH value ofgoat milk sample and fresh yogurt goat milk were 6.52 and 3.82. The pH values for fresh yogurt with addition of 4%, 6% and 8% of Tualang honey were 4.64, 4.68 and 4.73.Vacuum-oven drying method and freeze-drying method did not show any significant different in moisture, ash and protein content but showed significant different in pH value
Study on Marine Water Quality Parameters in Keluang Kecil River Estuary at Bukit Keluang, Terengganu
This study presents marine water quality status of river estuarine in Keluang Kecil River Estuary at Bukit Keluang. River estuarine water is classified in Class E in MWQI. In the subsequent MWQI with 0 to 100 scales, marine water quality at 0 will be described as “Poor†and 100 as “Excellentâ€. This study aims to determine water quality parameters and the water quality status of river estuarine by using Malaysia Marine Water Quality Index (MMWQI). In-situ and ex-situ analyses in this study were conducted for five sampling points that had been selected in the Keluang Kecil river estuary. In-situ parameters, dissolved oxygen (DO), pH, temperature, salinity and ammonia, were measured using YSI Professional Plus Series Multi-parameter during sampling. At the same time, water samples for total suspended solids, phosphate, nitrate and faecal coliform were collected and analysed in the laboratory using a standard procedure based on American Public Health Association (APHA), 2017 and HACH methods and then were compared with the Malaysia Marine Water Quality Standard (MMWQS). The average value of ammonia, nitrate, phosphate and TSS were not within the acceptable limit or standard value set by Department of Environment (DOE) except for dissolved oxygen and faecal coliform. Based on the one-way analysis of variance (ANOVA) result, there are significant differences (P < 0.05) in DO, pH, temperature, salinity, ammonia, TSS and FC in water between stations except for nitrate and phosphate. Marine Water Quality Index (MWQI) was measured for all the sampling stations (S1, S2, S3, S4 and S5) using a formula set by DOE (2019). The mean of MWQI for the Keluang Kecil river estuary measured was 43.45. Thus, the river estuary is classified as Poor (0 – 49). This study can maintain the marine water quality to conserve estuary biodiversity. This study was needed to prevent the possibility of water pollution and water quality can be monitored in that area in the future. The understanding of this study about water quality is to maintain the water quality and facilitate the management as actions can be taken by local authorities and other government agencies to maintain and improve the water quality and create boundaries and regulations that can bring back nature
Assessment of Water Quality Parameters and Heavy Metals Analysis at Universiti Sultan Zainal Abidin Besut Campus Lake
Water is the most crucial element for living organisms as a component for survival. Even water has become the habitat for some organisms. Therefore, assessment of water quality is vital to keep water in good condition. This study aimed to determine the water quality of Besut Campus Lake by assessing the physicochemical parameters. Water Quality Index (WQI) is related to the process of determining the status class of water according to beneficial use, with a higher index value indicate good water quality. National Lake Water Quality Standard (NLWQS) was also applied in determining the category of enclosed water systems like ponds and lakes. Water samples were taken from sampling stations at Besut Campus Lake and undergo in – situ and ex–situ analyses involving nine physicochemical parameters. In addition, heavy metal analyses were conducted in the laboratory according to American Public Health Association (APHA) methods. Based on the research conducted, Besut Campus Lake was classified as Class Ⅱ with an index value of 78.23 from the Malaysia Water Quality Index (MWQI), which means recreational activities can be conducted within the lake area involving body contact. Meanwhile, according to National Lake Water Quality Standard (NLWQS), the water category of Besut Campus Lake can be categorised as Category B, which means recreational activities with secondary body contact. Further in-depth analyses involving other microbiological parameters should be carried out before the water can be recommended for primary contact recreation such as swimming
Evaluation of Milk Production and Milk Composition at Different Stages of Saanen Dairy Goats
Milk is an important elements due to its high nutritious and balanced in human diet. In Asian, goat milk is the most consumed because of the unique taste, more nutritious than cow milk. However, milk production and composition values differ at every stage of lactation in goats. Thus, determining the highest milk production and producing the best quality goat milk is essential to satisfy the local market demands. The objective of the present study is to determine the milk yield and milk composition at different lactation stages and to evaluate the lactation curves in Saanen goats. The lactation stages can be categorized into three, early (less than 80 days), mid (80 – 140 days) and late (over 140 days) days in milk (DIM). In total, 90 milk samples were collected from 15 goats representing early (n=5), mid (n=5), and late (n=5) stages of lactation. The Saanen goats were raised under the same conditions, and milking was done early in the morning (9.00am).The milk yield from Saanen goats were collected and measured weekly at each stage of lactation. Milk samples were analyzed for fat, protein, solid non-fat, and lactose. Current result illustrated, there were significant different (p ˂ 0.05) among three stages of lactation in milk yield, solid non-fat, fat, protein and lactose. In terms of food regulation, the Saanen goats almost fully met the standard requirements for milk production and composition. In addition, this study also observes the lactation curves in Saanen goats and analyse the curve shapes and patterns. The average milk yields from three different stages develops a concave downward curve. The results indicated that mid yield increased from early to mid- lactation and decreased thereafter until the end of lactation
The physicochemical properties and nutritional value of Stingless bee honey at Gelam Forest in Telaga Papan, Terengganu, Malaysia
Honey’s compound is differ depending on the types and origin of bees’ food; which are flower nectar and plant honeydew. These differences then influenced the quality and nutritional value of honey as a superfood. This research accesses the physicochemical properties and nutritional value of stingless bee honey at Gelam forest. Honey of Heterotrigona itama was collected at Telaga Papan in Terengganu, Malaysia. The location of hives is surrounded and dominant by Gelam trees. The physicochemical analysis, antioxidant properties, total phenolic and flavonoid compounds, and minerals content of stingless bee honey were investigated. The physicochemical parameters in terms of moisture, pH, and Brix were measured. The result obtained shows that the Gelam honey produced by H. itama has a moisture content of 27.28%, the pH is 3.30, and the total soluble solid or Brix value is 75.88. Meanwhile, for total phenolic and total flavonoid content, both recorded a quite higher value which was 10.68 mg GAE/g and 6.64mg CE/g respectively. In terms of antioxidants, Gelam honey shows a promising 1,1-diphenyl-2-picrylhydrazil (DPPH) inhibition. The four major minerals as potassium, sodium, calcium and magnesium recorded values are 2036.04mg/L, 101.31mg/L, 41.51mg/L, 7.88mg/L respectively. In general, Gelam honey has a good quality and nutritive as similar to other stingless bee honey produced from another botanical origin
Growth Performance and Carcass Merit of Japanese Quails (Coturnix japonica) Fed with Sorghum as an Energy Source Substitute for Maize in North Western Nigeria
A feeding trial was conducted to determine the growth performance and carcass characteristics of Japanese quails fed diets containing sorghum. A total of ninety of one-week old Japanese quail chicks were used for the experiment. Five diets were formulated in which sorghum was included at graded levels 0, 15, 30, 45 and 60% dietary levels designated as treatment 1, 2, 3, 4 and 5 respectively. The experimental period was five weeks when the birds reach six weeks of age. The results of the growth performance showed significant differences (P<0.05) in the final body weight (161.70 – 180.10 g) and daily feed intake (21.34–25.12 g). Significant (P<0.05) differences was also observed in all carcass parameters measured except for dressing percentage. Liver weight and large intestine with T5 (65% total replacement) recorded the highest means value of 6.00 g and 6.66 g. Non-significant high values of feed conversion ratio were also obtained among the treatments. Treatment 1 (0%) and Treatment 5 (60%) showed better results in all parameters measured compared to other treatments. In conclusions, sorghum grain can play a significant role in formulating quail feed and can completely (60%) be used to replace maize without affecting the performance and carcass yield of the quails
Comparison of Stumpage Value in Old and Young Recovered Primary Forest at FRIM Selangor Forest Park
Forest Research Institute (FRI) was a former name of Forest Research Institute Malaysia (FRIM). It had begun restoration activities back in 1920s. Nowadays, it is a paid off with a FRIM being known as a nearly 100 years old artificial forest located in the heart of the city. To date, 92% of total forested area in FRIM consisted of 85% of planted forest and 7.4% of natural forest. In order to sustain the conservation effort, the institute was declared as National Heritage in 2012 and currently in the process of pursuing the title of UNESCO World Heritage Sites. For this conservation to be translated into monetary value that reflects the richness of its natural treasure, the estimation of the stumpage value of these old and young recovered was made to highlight the importance of reforestation in degraded areas. The economic valuation of timber resources was estimated with residual value technique for four Fields that represent both types of forest. An old recovered primary forest; which located in Field 11 and 20 and a young recovered primary forest; Field 52 and 53. The results showed significant difference of stumpage value in old and young recovered forest. While the estimated stumpage value of young recovered forest is much lower, the estimated stumpage value of old recovered primary forest that aged between 72 (Field 20) to 93 years old (Field 11) is higher than the value of other Malaysia forest reserves. The findings indicated the importance of forest reforestation and proved that FRIM has a universal value as a man-made forest
The Influence of Drying Temperatures and Methods on the Drying Characteristics of ‘IkanBakar’ Paste
Drying is one of the popular preservation methods in food products. This work was done to investigate the influence of the drying temperatures and methods on the drying characteristics of ‘ikanbakar’ paste. The ‘ikanbakar’ paste was dried by using oven drying and vacuum drying methods at temperatures of 50°C, 60°C and 70°C. The drying rate was estimated from the moisture content and drying time data. The drying curve showed the falling rate period as the drying rate decreased with increasing time. For colour analysis of the paste, the L* values from the oven drying method were lower than those from the vacuum drying method, ranging from 7.4210 to 7.2752. This showed that the colour of paste from oven drying was darker than vacuum drying. The mathematical models used to describe the drying curve of ‘ikanbakar’ paste were Lewis, Page, Two-term, and Midilliet. al. model. The performance of these models was evaluated by comparing their root mean square error (RSME) and chi-square (X²) values, and it was found that the most suitable model was the Two-term model. There were insignificant differences between the effective moisture diffusivity (Deff) values for the ‘ikanbakar’ paste in both drying methods
Evaluating the Potential of Tridax procumbens and Asystasia gangetica as Ruminant Feed
Tridax procumbens and Asystasia gangetica are extensively prevalent and can be found from tropical Asia to Africa. Both plant samples were found to have a high nutritional value, especially in protein, and to be highly attractive to ruminants. Therefore, the objectives of the study were to measure and compare the nutrient composition of Tridax procumbens and Asystasia gangetica in terms of the nutritional value for ruminants. Both plants samples were collected at Besut campus, University of Sultan Zainal Abidin. The samples were then washed under tap water to remove foreign matter such as soil to prevent soil contamination in the analysis. Then, the samples were dried in a furnace below 60 - 70ËšC and crushed prior to further analysis using proximate analysis. Seven parameters were measured using proximate analysis, which included dry matter (DM), moisture, ash, crude protein (CP), crude fiber (CF), ether extract (EE), and nitrogen-free extract (NFE). The findings in this study show that A. gangetica had significantly higher (p < 0.05) in dry matter (DM) (18.84%), crude protein (CP) (22.27%), and nitrogen-free extract (NFE) (50.25%). However, T. procumbens showed the highest nutrient in moisture (88.70%), ash (12.15%), crude fibre (CF) (25.01%), and ether extract (EE) with 3.71%. Thus, this study revealed that A. gangetica to have a higher potential to be used as an animal feed than T. procumbens
Effects of Probiotic (Lactobacillus spp) Mixed with Cassava Leaves (Manihot esculenta) on Growth Performances and Meat Quality of Cherry Valley Duck (Anas platyrhynchos domesticus)
Probiotics are beneficial bacteria that had been used in poultry industry as alternative sources for antibiotic. The aim of this study was to determine the effect of probiotic mixed with cassava leaves (Manihot esculenta) on Cherry Valley Duck (Anas platyrhynchos domesticus) growth performance, carcass characteristics and meat quality. Lactobacillus spp. was used in this experiment to see its effectiveness in enhancing quality of cassava leaves as potential feed towards optimum growth performance of ducks like body weight gain, feed intake and feed conversion ratio, carcass characteristics and meat quality. 34 tails of Cherry Valley ducks aged 14 days with average weight of 500 g were randomly assigned to four treatments in triplicates. Treatments for the 35 days feeding trial were T1 at 0% probiotic + 75% commercial diet + 25% cassava leaves (control), T2 (0.15% probiotic + 75% commercial diet + 25% cassava leaves), T3 (0.30% probiotic + 75% commercial diet + 25% cassava leaves) and T4 (0.45% probiotic + 75% commercial diet + 25% cassava leaves) respectively. Proximate analysis was also conducted to determine nutritional content like protein, lipid, moisture, ash and fiber. Results show that supplementation of probiotic at 0.15% Lactobacillus spp. into 25% of cassava leaves and 75% commercial pellet gave highest body weight gain (BWG), low feed conversion ratio (FCR), highest carcass yield and good meat quality. It can be concluded that inclusion of probiotic at 0.15% in cassava leaves as duck’s diet gives good growth performance and may become an alternative super diet for duck in future
