    Background: Fluoride is an inorganic element that plays a crucial role in dental health through drinking water. Variations in groundwater fluoride levels in coastal areas can affect dental health, especially dental caries. The optimal fluoride concentration to prevent caries is 0,7 mg/L, with a maximum limit of 1,5 mg/L according to Ministry of Health Regulation No. 32 of 2017.Objective: This study aimed to determine the fluoride concentration in coastal groundwater and its association with dental caries incidence in children.Methods: An analytical observational cross-sectional study was conducted using simple random sampling on 26 children aged ≥2 years residing in coastal areas who used groundwater as their drinking water source. The study was carried out in Oesapa Village, Kupang City, in May 2024. Data were collected using questionnaires and dental caries examinations with the DMF-T index. Data were analyzed using correlation tests between fluoride levels and caries incidence.Results: Groundwater fluoride levels ranged from 0,00 to 1,01 mg/L (mean 0,28 mg/L), remaining below the safe limit of 1,5 mg/L. The mean dmf-t score for primary teeth was 2,36, and the DMF-T score for permanent teeth was 0,08, indicating generally good dental status among children. Statistical analysis showed no significant correlation between fluoride concentration and caries incidence (p= 0,796). Behavioral factors such as tooth brushing habits and sugar consumption were suspected to influence caries occurrence.Conclusions: Fluoride levels in coastal groundwater of Oesapa were within normal limits and met Ministry of Health standards. Caries incidence was low, and no association was found between fluoride levels and caries prevalence

    Background: Liver diseases such as non-alcoholic fatty liver disease (NAFLD) and cirrhosis are influenced by factors like viral infections, alcohol, immune dysfunction, genetic predisposition, and metabolic factors. Branched-chain amino acids (BCAAs)—leucine, isoleucine, and valine—are vital for protein metabolism and liver function. The role of BCAAs in liver disease and metabolic changes requires further study.Objectives:  To evaluate the role of BCAAs in nutritional status and metabolic changes in liver disease through a systematic review.Methods: A systematic review was conducted following the PRISMA protocol. Literature was searched on Google Scholar for publications from 2019 to 2024. Studies were selected based on inclusion and exclusion criteria. Descriptive analysis summarized the findings, and statistical tests evaluated the relationship between BCAA consumption or supplementation and liver disease progression.Results: Eight studies met the inclusion criteria. High BCAA consumption was associated with an increased risk of NAFLD (OR = 1,32, p < 0,001). In contrast, BCAA supplementation improved MELD and CP scores in cirrhotic patients. Elevated BCAA levels were also linked to a higher risk of type 2 diabetes (OR = 1,60, 95% CI = 1,14-2,23, p = 0,006).Conclusions: BCAA supplementation may help slow cirrhosis progression and improve sarcopenia and liver function. However, its use should be tailored to avoid adverse effects. More research is needed to explore long-term effects on liver disease

    Oral health issues remain a significant challenge for children with special needs, particularly at the Special Needs School for Special Needs (SLB) in Aceh Province, located in Gampong Lamreung, Aceh Besar Regency. Initial observations indicate that 70% of children suffer from dental caries, with an average Oral Hygiene Score (OHIS) of 2.8, well above the national standard of <1.2. This condition is exacerbated by children's limited ability to maintain dental hygiene independently. The decreased quality of life of children due to chewing difficulties, pain, and lack of sleep has become an urgent need for this community service initiative. This activity aims to improve the dental health of children with disabilities through home-based dental care. The method used is a descriptive quantitative approach with an educational approach for parents, particularly mothers, through counseling, demonstrations of toothbrushing techniques, and three home visits over 14 days. The evaluation was conducted using a questionnaire through pre-test, post-test I, and post-test II on 20 pairs of mothers and children. The intervention results showed an improvement in maternal behavior, from 65% in the adequate category (pre-test) to 90% in the good category (post-test II). The children's dental hygiene status also improved significantly, from 100% in the poor category (pre-test) to 80% in the good category (post-test II). In conclusion, the home care approach has proven effective in improving maternal roles and improving the dental hygiene status of children with disabilities. It is recommended that similar programs be replicated in other special needs schools with ongoing involvement of schools and healthcare professionals

    Based on the 2018 Basic Health Research (Riskesdas), more than 90% of early childhood children experience dental caries, but only a small proportion receive dental health services. The purpose of community service is to increase students' knowledge, skills, awareness, and motivation in maintaining dental and oral health. The program was implemented for four days involving 40 elementary school students. Activities included counseling on the importance of maintaining dental hygiene, demonstrations on how to brush teeth properly, counseling on the dangers of sweet foods, and motivation for regular dental check-ups. The results of the activity showed an increase in knowledge (85%), tooth brushing skills (72%), awareness of the dangers of sweet foods (65%), and motivation for regular dental check-ups (55%). Conclusion This activity shows that an interactive educational approach is effective in instilling habits of maintaining dental health from an early age

    The target community of posyandu is in accordance with the target of specific nutrition interventions for handling stunting. Posyandu is a place for pregnant, lactating mothers, infants and toddlers to get services that include maternal and child health in the form of growth and development monitoring, provision of vitamin A capsules, immunization, prevention and control of diarrhea, nutritional counseling according to their problems and family planning. Posyandu cadres are the main drivers of all activities carried out in the posyandu. One of the most basic posyandu problems is the low level of knowledge of cadres both from an academic and technical perspective, therefore to be able to provide optimal services at Posyandu, it is necessary to adjust the knowledge and skills of cadres, so that they are able to carry out Posyandu activities according to the norms, standards, procedures and criteria for developing Posyandu.In preventing stunting, the thing that must be considered is the balanced nutrition of pregnant women and nursing mothers. The purpose of this community service in general is to empower cadres to increase knowledge and skills in compiling and processing menus for pregnant women and nursing mothers as an effort to prevent stunting. The benefits of this activity are to increase the knowledge and skills of cadres in processing a balanced menu for pregnant women and nursing mothers so that cadres can provide this nutrition education widely, sustainably, and independently.Evaluation results showed a significant improvement in cadres' knowledge and skills, as evidenced by the comparison of pre-test and post-test results. A total of 85% of cadres showed a better understanding of nutrition and were able to develop a balanced menu

    Lhokseumawe City still experiences the nutritional problems of being underweight, stunting, and wasting, so it is necessary to know the factors that cause it, especially in the Banda Sakti Health Center. The aim of this study was to determine the factors that affect the nutritional status of children aged 6-23 months according to the Composite Index of Anthropometry (CIAF). This cross-sectional study was conducted at the Banda Sakti Health Center in 2023. A total of 314 children aged 6-23 months were randomly selected. Data were collected via interviews, questionnaires, and anthropometric measurements (weight and height). Nutritional status data were processed using WHO Anthro 2005 software. Data were analyzed using the chi-squared test and logistic regression analysis. Results: The prevalence of growth failure in children at Banda Sakti Health Center was 23,2%. The determinants of growth failure were ANC (p=0,000; OR=20,8), birth weight (p=0,000; OR=8,44), complementary feeding diversity (p=0,000; OR=10,3), animal protein consumption (p=0,000; OR=17,23), and complete immunization (p=0,000; OR=4,41). Antenatal Care (ANC) examination was the dominant factor affecting the incidence of growth failure in children aged 6-23 months (OR= 20,8). In conclusion, incomplete ANC examination is the dominant factor associated with the incidence of growth failure in children aged 6-23 months at the Banda Sakti Health Center, Lhokseumawe City

    Boba kefir pineapple beverage innovation: Probiotic and antioxidant refreshment

    Nutritional intake plays an important role in boosting the immunity. This study aimed to modify the boba drink into a probiotic- and antioxidant-rich drink. Kefir is a source of probiotics. Pineapples, which are rich in vitamin C, have antioxidant properties. The experimental study used a completely randomized design (CRD) with three formulations: F1 (75% kefir: 25% pineapple), F2 (50% kefir: 50% pineapple), and F3 (25% kefir: 75% pineapple). Product manufacturing and organoleptic tests were conducted at the Food Laboratory of Poltekkes Kemenkes Bandung. Laboratory testing was conducted at Saraswanti Indo Genetech and Sibaweh Lab. This research was conducted from December 2022 to January 2023. Organoleptic testing was performed by 30 trained panelists. Analysis using the Kruskal–Wallis test. Results: There were differences in the organoleptic aspects (p= 0,012) of each formulation. Thus, F3 was found to be the best formulation. The number of lactic acid bacteria was 6,7 x 106, with antioxidant activity of 1238,02 ppm or 0,1238%, and vitamin C content of 19,88 grams. In conclusion, the high antioxidant activity of this drink suggests that it has the potential to increase body immunity. Further testing is needed to determine the type and number of other probiotic bacteria present in the product.

    Health, occupational safety, and hygiene and sanitation are important aspects related to food service. This aspect affects the quality of food and the safety of students so that the food can be consumed safely. Efforts made to emphasize hygiene, sanitation and work safety include education in the form of counseling. This counseling aims to determine the effectiveness of lecture and discussion methods in enhancing information related to health and safety at work, hygiene, and sanitation among food handlers. Efforts to emphasize occupational safety, hygiene, and sanitation include education through outreach conducted at Vocational Senior High School Subulus Salam, Pagu sub-district, Kediri District on July 30 from 9:00 to 11:00 AM. This counseling uses the pretest-posttest method with a sample of twenty-five food handlers. The questionnaire is used in the process of collecting pre-test and post-test results to educate students about hygiene and sanitation in the Food Processing Laboratory at Vocational Senior High School Subulus Salam. The results of the pre-test showed that the average score obtained by the students was 74.7. Meanwhile, in the post-test, the average score of the students increased to 80.1. The conclusion of this outreach shows that students' scores on pre- and post-tests regarding hygiene, sanitation, and workplace safety in the laboratory increased. It is hoped that with the knowledge gained, participants will be able to understand and apply hygiene, sanitation, and occupational safety in the laboratory

    Determinants of wasting among children aged 2–5 years in Tanjung Priok, Jakarta, Indonesia

    Wasting contributes to approximately 13% of the global child mortality. In 2022, the prevalence of wasting in Indonesia was 7,7%, declining from 10% in 2013. However, regions such as DKI Jakarta, particularly North Jakarta, still exhibit a high prevalence rate of 9,4%, indicating ongoing challenges in accessing adequate nutrition and healthcare services. This study aimed to examine the determinants of wasting in children aged 2–5 years. This cross-sectional study was conducted in Tanjung Priok, Jakarta, from June to July 2023. A total of 183 children, aged 2–5 years, were selected using purposive sampling. Data were collected through anthropometric measurements and structured interviews, using validated questionnaires covering dietary intake (SQ-FFQ), household socioeconomic status, and maternal nutrition knowledge. Data analysis included chi-squared tests and logistic regression analyses. The results showed that The prevalence of wasting was 8,7%. Although maternal nutrition knowledge was generally high, it was not significantly associated with wasting (p = 0,171). Energy (p = 0,023) and fat intake (p = 0,022) were significantly associated with wasting. Inadequate energy intake emerged as the dominant factor associated with a 3,7-fold increase in risk (p = 0,032). In conclusion, the primary determinant of wasting among children aged 2–5 years in Tanjung Priok is inadequate energy intake. Although most mothers had high nutrition knowledge, it did not significantly influence their wasting status. Therefore, interventions to prevent wasting should focus on improving energy and fat intake in children

    Fiber content evaluation and consumer preference of broiler chicken dim sum enriched with wood ear mushrooms

    Broiler chicken (Gallus domesticus) dim sum is a popular food known for its diverse composition and low fiber content. To increase fiber content, ear mushrooms (Auricularia sp.) were added to the dim sum. This study aimed to determine the fiber content, panelists' preference, and the appropriate portion of broiler dim sum as a side dish. The experimental study involved four treatment levels and six replicates with each sample weighing 20 g. This study was conducted in January, 2024. The fiber content test used an enzymatic method, whereas the preference test used a hedonic test assessed by 30 panelists. Data analysis was performed using the Friedman and Wilcoxon tests, as well as one-way ANOVA. The results showed an increase in fiber content, with the highest fiber content found in sample X3 at 2,43 grams. There were differences in color and texture (p0,05). Sample X2 is the preferred sample. Therefore, the recommended portion of broiler chicken dim sum (X2) as a comfort food for men and women aged 19-29 years is two pieces. In conclusion, the addition of ear mushrooms can significantly increase the fiber content and preference of broiler chicken dim sums
