Development of functional Okara-Miso by mushroom fermentation
Get PDF豆腐製造時に生じるおからは、その多くが産業廃棄物として処理されており、有効利用が望まれている。
おからを原料として味噌製造を試みることとしたが一般的な味噌作りで用いられているコウジカビではおからの繊維質を分解することが困難であることが、過去の研究で明らかにされている。そこで、セルラーゼやプロテアーゼ、さまざまな機能性を持つ担子菌を用いて、機能性おから味噌の製造を試みた。
ムキタケ（W-２）はプロテアーゼ活性だけでなく、コウジカビには認められなかった高いセルラーゼ活性を有し、特に50％おからを配合した試料において高い活性が認められた。さらに50％おからを配合し食塩を発酵３週目に加えることで、遊離アミノ酸や抗酸化活性が増加し、より旨味のある機能性味噌の製造が可能であることが明らかとなった。またセルラーゼ活性が高値を示し、味噌中の残渣が減少したことから、ムキタケを用いることでコウジカビでは困難であった機能性おから入り味噌の製造が可能であることを確認した。Okara is generated during tofu production. Most of okara have been treated as industrial waste, so effective utilization of okara is desired. However, it has been demonstrated in previous studies that it is difficult for Aspergillus oryzae（NBRC5238）which are used in a general miso making to decompose the fibrous okara. Therefore, we tried the preparation of miso containing okara having functionality using basidiomycetes which was produced protease, cellulase and variety of functions.
Sarcomyxa serotina （W-２） has not only a protease activity, high cellulase activity, which was not observed in A.oryzae. Especially, higher activity was observed in the sample prepared with blending 50% okara. Then, the addition of salt to the samples prepared with 50% okara after ３ weeks cultured was fermented by S.serotina, free amino acids and antioxidant activity is increased, it became clear that it is possible to produce a functional miso a more taste. The cellulase activity indicates a high score and the residue in miso was reduced. So, it was confirmed that it is possible to manufacture a miso containing functional okara, which is difficult by using the A.oryzae, by using the S.serotina.departmental bulletin pape
Practical report of visiting lectures for career education of reginal junior high school students
Get PDF武庫川女子大学「ひょうご理系女子未来塾」では，女子生徒の理工系進路選択を支援するために，2018年から地域の中学校と連携した出前授業を実施している．本実践報告では，2021 年に実施した出前授業について，アンケート調査の結果から，効果と課題について検討した．出前授業は文理選択前の中学生に対して，理工系進路意識を高めることが示唆された．Mukogawa Women's University（Hyogo-Rikei-Jyoshi-Mirai-jyuku） has been conducting visiting lectures in collaboration with regional junior high schools since 2018 to support female students in their choice of science and engineering career paths. This practical report examined the effects and issues of visiting lectures conducted in 2021 using a questionnaire survey. The results of the study suggest that visiting lectures raise awareness of science and engineering careers for junior high school students, which can help them choose between humanities and sciences.departmental bulletin pape

Get PDF訪問看護師の新人16 名、熟練15 名を対象に、初回訪問時のフェイスシートの注目点とその理由を明らかにする目的で、面接調査を行った。注目点は記述統計を行い、注目した理由を認知の処理で分類し、χ2 検定を行った。注目点は新人・熟練共に「二人暮らし」が最も多かった。注目した理由のコードは新人88、熟練110 が抽出され、〈記載情報に注目〉（新人61.4％、熟練38.2％）、〈すでに見た記載情報から意図して注目〉（新人20.5％、熟練28.2％）、〈意図して記載情報に注目〉（新人18.2%、熟練33.6％）であった。検定の結果、新人は〈記載情報に注目〉というボトムアップ処理（調整済み残差3.2）を、熟練は〈意図して記載情報に注目〉というトップダウン処理（調整済み残差2.4）を有意にしていた。記載情報に対する新人と熟練の注目点の違いが明らかとなり、スタッフの育成支援の参考にできると考えられた。departmental bulletin pape

The Role of Literary Texts in Primary/ Secondary Education : Reevaluating the Short Story of O. Henry’s “The Last Leaf”
Get PDF英語文学の研究者は，「文学こそ最良の教材である」と説くが，その一方で，英語教育の現場で「消えた文学」1 への危機感を抱いている。本稿では，文学作品と英語教育との関係について，たびたび議論がなされてきた現状を踏まえながら，2020年度から，小学校，中学校，そして高等学校へと段階的に施行されてきた新学習指導要領の実施に伴い，英語文学教育を効果的に導入することで，英語のコア・カリキュラムで提唱されている学習目的が達成されることを示す。また，これまで英語文学研究においてほとんど議論の俎上に上がることがなかった問題点，例えば，教育学科において，小・中学校における英語文学の活用にむけて，中学校教諭第一種免許状（英語）取得を希望する学生がどのように英語文学に向き合うべきなのか，また，中学校の検定教科書で取り上げられることが多くあった，O.ヘンリーの短編小説“The Last Leaf”をめぐって，学生が将来，教師として英語文学教育を実践するときどのような取り組みが求められうるのかなどについて，調査結果をもとに，文学作品を用いた英語教育実践の可能性を探りたい。departmental bulletin pape
