    Investigating the Impact of Online Service Convenience on Customer Engagement, Attitude and Intention to Use Food Delivery Apps

    Furthermore, the role of customer engagement has been examined in relation to attitudes and intentions to use mobile food delivery apps. The data was collected in five malls of the National Capital Region (NCR) of India through a structured questionnaire. The convenience sampling method was employed, resulting in 161 responses. The Adanco 2.2 software was used to analyze the responses. Since this study represents the first attempt in the context of food delivery apps, its findings have implications for both academics and marketers

    Healthier Food Choices Made Easy: a Nudging Experiment in a Restaurant Targeting Millennials

    The current food environment exposes individuals to continuous unhealthy signals. The present study investigates the effectiveness of a default option nudge - framed as a Dish of the Day - in guiding healthier food choices of Millennials (aged between 19 and 30 years old), a demographic particularly vulnerable to unhealthy eating. A between-subjects field experiment with two opposite treatments (i.e.: healthy and unhealthy default option) and a control group (no default) was performed on a random, convenience sample (N=341). Results show a limited impact of the healthy default option (3.9%) and suggest that this nudging intervention has a stronger influence on individuals who already prioritize health in their everyday lifestyle. Similarly, the default option is more effective on subjects who do not believe that health and taste are conflicting

    Investigation of the Impact of Vegetarianism and Veganism on the Post-Covid-19 Gastronomy and Food Industry

    The aim of this term paper is to investigate the extent to which Covid-19 has influenced the gastronomy and food sector regarding fresh food counters and the to-go assortment in terms of vegetarian and vegan offerings.An extensive literature and internet research was conducted for this thesis. In addition, this included a study of vegan- and vegetarian-friendly food offerings in ten different randomly selected restaurants in the city of Trier, Germany. The results show that on average a good selection of vegetarian dishes (33.6%) and a small selection of vegan dishes (11.8%) can be found in the individual restaurants.The trend towards a plant-based diet has been evident for years but accelerated during the COVID-19 pandemic as society began to doubt the safety precautions of the meat industry and awareness of animal, environmental and health issues increased. This has led to many restaurants and food retailers expanding their range of vegetarian and vegan options to meet this demand. More and more vegan products can also be found in food retail, and the range of vegan alternative products in the to-go area or at fresh food counters for actual meat, sausage, cheese and fish products is expanding, as can be seen at pioneer REWE Group, for example

    Portuguese Supermarkets and their Cooking Magazines: A Spread of Paradoxes Around the Sustainable Discourses

    Seeking to establish how supermarket chains have dealt with the 17 Sustainable Development Goals of the 2030 Agenda, this paper analyzed the discourses of two cooking magazines promoted by the two major Portuguese supermarket brands: Continente Magazine, owned by the Continente chain, and Sabe Bem, supported by the Pingo Doce supermarkets. As they represent supermarket brands and the Portuguese food culture, analyzing these publications' discourses, we could identify their relationship with the sustainable principles advocated by the 2030 Agenda through its addressers' verbal and image choices. We concluded that among the several fragilities implicit in this relationship, several principles of the Agenda are kept at the edges of the magazines' discourses, including the second Sustainable Development Goal, which deals specifically with food

    Urban-Rural Links for Sustainable Food Consumption in Bangkok

    Current food systems fail to directly link urban consumers with rural producers. City-regional strategies need to reconnect consumers with producers through sustainable local food systems. This research developed and distributed a survey questionnaire to 400 consumers in Bangkok. Findings prove that there is a statistically significant association between urban-rural relation and sustainable urban consumer behavior (Pearson’s Chi-square test for independence resulting in a significance level of p < 0.05). Sustainable consumer behavior is influenced by environmental, sociocultural, economic and health drivers, while lack of food traceability, lack of rural experience, lack of access to rural communities and negative social perception disrupt consumer-producer links. Community-based gastrotourism emerges as one of the best practices to link urban consumers with rural producers and plan sustainable food systems in mega-cities like Bangkok

    Market Formation and the Role of the Farmer in a Micro-level Agri-food Innovation System

    The aim is to investigate the dynamics and driving forces within a micro-level agri-food innovation system, focusing on market formation and the role of the farmer. We applied a qualitative case study approach to the introduction of sweet potato cultivation to Sweden, using the technological innovation systems approach as the analytical tool. The findings highlight the role of farmers as entrepreneurs, and market formation as a driver for the innovation system. Policy implications include that innovation policy instruments need to become more long-term, oriented towards both production development and pre-market formation, and facilitate new arenas for actors’ joint problem-solving

    Food risk communication to consumers: The scare of antibiotic resistant bacteria in chicken

    In 2014 a food scare following a report on antibiotic resistant bacteria in chicken fillets led to a dramatic drop in sales of chicken. Actors in the food chain as well as the authorities were unprepared for the consequences of the case. The study investigated how risk communicators coped with the crisis through in-depth interviews with 14 relevant actors. The case study illustrated how delayed risk communication from authorities opened for stakeholders with contradictory views and other agendas. Further, although the risk communicators were aware of the concept of risk perception, they may not truly acknowledge the power triggering emotions

    Success and failure factors in agricultural cooperatives

    The paper presents an integrated framework of success and failure factors of agricultural cooperatives and its applicability based on a review of recent literature and an illustrative case study. We identify six categories of success and failure factors: the societal environment, quality of management, strategy, member base, commitment, and product aspects. Contrary to expectations that failure factors mirror success factors, the framework shows that the two represent distinctive features in at least some of the distinguished categories. The analysis of an agricultural cooperative in Peru, selected and presented as an illustrative case study, shows the applicability of the framework for the analysis of success and failure factors of cooperatives

    The Influence from Packaging Design Elements of Child Food on Quality Perceptions of Beninese’s Consumers

    Child malnutrition is a major problem in Benin, where 31% of children under five are stunted and 5% are wasted. The artisanal production of affordable, tasty and nutritious baby foods by local women entrepreneurs could help alleviate the problem. However, appropriate, professional and attractive packaging is needed to minimize spoilage and access markets in urban and peri-urban areas. The aim of our study was to identify the elements that could potentially communicate positive quality attributes on the packaging of infant formula for mothers. To this end, a photovoice study was conducted in the Parakou community in northern Benin with 15 mothers of children under the age of five. The photovoice methodology describes the experiences and perceptions of participants through photographs. The results showed that thirteen photos of different elements such as nature (fruits, trees, gardens), people (babies) and utensils had a positive value for the mothers. It remains to be verified whether the representation of these elements or their derivatives on the packaging of children's foods would create interest and confidence in the acceptance of these foods by mothers. This could become a competitive advantage for local producers of infant foods in the face of competition from imported products
