The initiative between the dead and the living in Korean narratives : Through comparison with Japanese narratives
Through a study of Japanese narratives, one scholar states that Buddhism has given the Japanese the idea that the living is superior to the dead and has the initiative in the relationship between the dead and the living through memorial services. In this article, we consider the relationship between the dead and the living in Korean narratives. In the narratives compiled during the Goryeo era when Buddhism prospered, the living take the initiative, as in the Japanese narratives. However, in the narratives of the Joseon era, when Buddhism was rejected and Confucianism was emphasized, on the contrary, the dead take the initiative.departmental bulletin pape
Creation of an allergy-free lunch menu using allergen-free ingredients : an evaluation of acceptability and nutritional composition
Recently, the incidence of food allergies in Japan has increased. Therefore, it is necessary to enable the provision of a school lunch from which specific allergens can be safely removed when the need arises. However, such lunches tend to be less nutritious and have lower taste quality. Consequently, we designed an allergy-free lunch, which is free of the 27 known allergens, and evaluated its acceptability in 15 participants using the 9-point hedonic scale and calculating the mean value and standard deviation. For the “Baked fish with chili sauce,” the mean preference value of the participants was 7.6 ± 1.5, which was the highest score. The dish with the lowest acceptance score was “Fruit yogurt” with a mean preference value of 4.5 ± 2.4. All nutrients, except calcium, met their respective target values. Systematic nutritional management is required to identify the nutrients that may be deficient and replenish them accordingly.departmental bulletin pape
Assessment of the contamination on hands during food handling among students majoring in nutrition
Hand hygiene is a vital method in preventing foodborne illnesses because they are caused by microorganisms transmitted by the contamination of food through hands. However, the extent of contamination on hands during food handling is unclear. In this study, we examined the extent of contamination on hands of nine nutrition majors during food handling without prior notice, using adenosine triphosphate (ATP) bioluminescence. The ATP bioluminescence values ranged from 274 relative light units (RLU) to 5,779 RLU. The subjects who handled carrots and bok choy had high ATP bioluminescence values. However, the subjects who washed their hands using a clean fingernail brush had the lowest ATP bioluminescence values, demonstrating the positive effect of hand hygiene. An Approach tor Online Intercultural Exchange and Enhancing Motivation for Learning Foreign Languages
In light of the ongoing COVID-19 pandemic, study abroad and free international exchange activities with other countries continue to be suspended globally. With the proportion of infected students increasing exponentially this year in Thailand, Prince of Songkla University (PSU) has completely switched to online classes. In order to maintain and improve the cross-cultural understanding and motivation of students to learn foreign languages, both in Thailand and Japan, the authors conducted an online international exchange program in conjunction with Gifu City Women's College (GCWC). This study examines the challenges of this program and the enthusiasm of PSU and GCWC students to learn about cross-cultural understanding, foreign languages, and culture based on the specifics of the program and the results of a questionnaire survey.departmental bulletin pape
