    Evaluation of the Miscibility of Novel Cocoa Butter Equivalents by Raman Mapping and Multivariate Curve Resolution–Alternating Least Squares

The APC was funded by the Consejo Nacional de Ciencia, Tecnología e Innovación Tecnológica-Concytec.Cocoa butter (CB) is an ingredient traditionally used in the manufacturing of chocolates, but its availability is decreasing due to its scarcity and high cost. For this reason, other vegetable oils, known as cocoa butter equivalents (CBE), are used to replace CB partially or wholly. In the present work, two Peruvian vegetable oils, coconut oil (CNO) and sacha inchi oil (SIO), are proposed as novel CBEs. Confocal Raman microscopy (CRM) was used for the chemical differentiation and polymorphism of these oils with CB based on their Raman spectra. To analyze their miscibility, two types of blends were prepared: CB with CNO, and CB with SIO. Both were prepared at 5 different concentrations (5%, 15%, 25%, 35%, and 45%). Raman mapping was used to obtain the chemical maps of the blends and analyze their miscibility through distribution maps, histograms and relative standard deviation (RSD). These values were obtained with multivariate curve resolution–alternating least squares. The results show that both vegetable oils are miscible with CB at high concentrations: 45% for CNO and 35% for SIO. At low concentrations, their miscibility decreases. This shows that it is possible to consider these vegetable oils as novel CBEs in the manufacturing of chocolates.Consejo Nacional de Ciencia, Tecnología e Innovación Tecnológica - Concyte

    The inhabitants of Tunants and Yahuahua face water supply problems in terms of quantity and quality, leading to socio-environmental and health impacts in the areas. The objective of this research, therefore, is to determine the technical and economic feasibility of a proposal for a rainwater harvesting and treatment system for human consumption in the native communities. For the technical feasibility, monthly water demand per family was compared with the amount of water collected in the rainy and dry seasons.     Desarrollo y eficacia de un champú a base de colágeno tipo I de Oreochromis niloticus “tilapia roja” en la regeneración capilar

    El presente trabajo fue realizado con el propósito de desarrollar un champú a base de colágeno tipo I de Oreochromis niloticus “tilapia roja” y evaluar su eficacia en la regeneración capilar in vitro. Para el desarrollo del champú de colágeno tipo I de tilapia se diseñaron dos tipos de formulaciones transparente y en crema a diversas concentraciones de colágeno, luego se sometió a ensayos de estabilidad acelerada y a largo plazo, se realizaron los controles de calidad organoléptico, fisicoquímico y microbiológico según normativa vigente. La eficacia fue determinada por microscopia óptica, resistencia a la ruptura, brillo y color después de aplicar el champú desarrollado, en comparación un blanco sin colágeno y un control con colágeno bovino en los mechones de cabello para determinar la diferencia estadística. Los resultados obtenidos permitió la selección de la formulación a 3,5 % de colágeno, con una durabilidad de 18 meses según ensayos de estabilidad acelerada; características organolépticas: color blanquecino, olor suigéneris, agradable al tacto; caracteres fisicoquímicos: 2700 cP, pH 6,02, espuma cerrada, densidad relativa 1,8, sin turbidez y con un índice de irritabilidad ocular de 0,6; calidad microbiológica: ausente de microorganismos mesófilos aerobios viables, Staphylococcus aureus, Pseudomona aeruginosa y E. coli. En la eficacia se evidencia en la restauración de la fibra capilar, siendo estadísticamente significativo p=0.01 el incremento de resistencia a la ruptura, brillo y color. Se concluye que el champú desarrollado a base de colágeno tipo I de Oreochromis niloticus “tilapia roja” es de calidad cosmética y tiene eficacia.Fondo Nacional de Desarrollo Científico y Tecnológico - Fondecy

    XRF elemental analysis of inks in South American manuscripts from 1779 to 1825

Dir. 016–2018-FONDECYT-DE; No Reg. 56747). / Producto elaborado en el marco del Proyecto de investigación dentro del Programa YACHAYNINCHIS WIÑARINANPAQ de la UNSAAC y CONCYTEC (FONDECYT/PROCIENCIA).The Regional Archive of Cusco in Peru guards valuable history collections with exceptional regional and international value dating from the sixteenth century to the present. Historical manuscripts are part of the identity of all people; they constitute a tangible cultural heritage that must be studied, valued, and protected. In this sense, the objective of this research was to identify the chemical compositions of inks and paper, with the goals of setting the background of their originality, identifying relationships between them, and glimpsing antecedents that generated degradation due to the compositions of the inks. This study is the first of its kind in Peru and reveals the chemical elements present in the writing ink, the seal, and the paper of five documents from the late eighteenth and early nineteenth centuries. Duplicate in situ nondestructive analyses were carried out using a hand-held X-ray fluorescence spectrometer under ambient conditions in soil mode, configured with three sequential shots, and energies from zero to 40, 40, and 15 keV, respectively. The elements S and Fe were present as components of iron gall inks. Cu and Zn were less abundant; probably, they provided less corrosion and more color intensity to the inks. The minor elements Pb, As, and especially Ag in all manuscripts differentiate them from European inks of the same period. Additionally, the five documents reflect the same elemental compositions but with different concentrations. This could mean that writers used local raw materials and Spanish ink recipes. Finally, the analyses of standard reference material, SRM 1646a and SRM 196b, gave results with acceptable precision.Consejo Nacional de Ciencia, Tecnología e Innovación Tecnológica - Concyte

    Safety Profile of Caesalpinia spinosa Aqueous Extract Tested in Oreochromis niloticus Toward Its Application in Dermocosmetics

Fruits from Caesalpinia spinosa show great potential for their polyphenolic content, preservative, and film-forming features, as previously reported in specialized literature; however, the toxicity requires investigation. We explored Oreochromis niloticus (tilapia) in larval, alevins, and juvenile stages to evaluate the ex vivo and in vivo genotoxicity and in vivo acute and chronic toxicity of C. spinosa aqueous extract in different concentrations. Cytotoxicity, animal behavior, morphological deformities, and DNA damage were evaluated. Our results showed genotoxic effect in ex vivo tests, but no DNA damage in in vivo erythrocytes. We suggest a mechanism of cell permeability involved in the toxicity of C. spinosa aqueous extract. Internal validation showed the feasibility of O. niloticus applied for toxicity evaluation. Further studies could contribute for better understanding the uses and safety of C. spinosa in cosmetics and topical pharmaceutical products.Consejo Nacional de Ciencia, Tecnología e Innovación Tecnológica - Concyte

    Effect of spray drying on the polyphenolic compounds present in purple sweet potato roots: Identification of new cinnamoylquinic acids

Ruben Cueva-Mestanza mobility grant (016-2018-CONCYTEC-P) was supported by CONCYTEC-FONDECYT.The effect of spray drying on the different polyphenolic compounds present in the root of a purple-fleshed sweet potato variety of Ipomoea batatas native from Peru was performed by HPLC-QTOF-MSMS. Nine anthocyanins, including four peonidin, three cyanidin and two pelargonidin derivatives glycosylated with sophorose and/or glucose and acylated with caffeic, ferulic and p-hydroxybenzoic acid were identified. Twenty nine cinnamoylquinic acids (CiQA), including eight mono-CiQA, fourteen di-CiQA, and five tri-CiQA, were identified on the base of their MS fragmentation profile. Relevant amounts of feruloylquinic acid derivatives were identified. Among them, some di and tri-CiQAs containing feruloyl and caffeoyl moieties in their structures, and di-feruloylquinic acids were reported here, for the first time, in Ipomoea. Spray drying process negatively affected the different phenolic groups, with polyphenol losses representing around 90% of the initial amounts. Mono-CiQAs presenting feruloyl moieties and mono acylated peonidin derivatives with p-hydroxybenzoic acid were the less affected compounds. © 2020 Elsevier LtdFondo Nacional de Desarrollo Científico y Tecnológico - Fondecy

    Deformation and cyclic buckling capacity of external replaceable hysteretic dampers for unbonded post-tensioned precast concrete walls

    The financial support of the Peruvian National Council of Science, Technology, and Technological Innovation (CONCYTEC/CIENCIACTIVA) for the doctoral studies of the first author at Kyoto University, where this research was conducted, is acknowledged.This paper proposes and validates a type of external replaceable hysteretic dampers to be mainly applied to unbonded post-tensioned (UPT) precast walls. The main aim of the proposed damper was to provide the UPT walls with large energy dissipation without significant buckling. To evaluate the efficiency of these dampers, a cyclic test was conducted. The damper specimens consisted of a mild steel round bar with a reduced diameter over a fused length and an additional threaded length at each side, for installation purposes. Moreover, a round steel tube was installed over the fused length and filled with grout to delay the buckling. The proposed dampers, with different geometries and conditions, were subjected to cyclic loads to evaluate their deformation capacity and fracture mechanism. The specimens displayed a regular and stable hysteretic curve until strains of 9%, after which a flexural buckling was observed at the ends of the fused length. However, this flexural buckling did not affect the energy-dissipating capacity in any specimen. Consequently, this type of damper is considered suitable for applications in self-centering rocking walls. Furthermore, the proposed dampers fractured by a combination of low-cycle fatigue and excessive rotations at the transition length. In addition to the experimental validation, an extensive numerical investigation was conducted on the proposed damper to complement the experimental data and to provide analytical tools for design. © 2021 Elsevier LtdConsejo Nacional de Ciencia, Tecnología e Innovación Tecnológica - Concyte

    Rheological characterization of Porphyridium sordidum and Porphyridium purpureum exopolysaccharides

    Porphyridium exopolysaccharides (EPSs), which contain sulfate and methyl groups, have a similar potential for use in multiple industrial applications as macroalgae counterparts but lack detailed characterization. For this reason, we produced 0.21 g L-1 of P. sordidum EPS and 0.17 g L-1 P. purpureum EPS, followed by a thorough rheological characterization in respect to their differences in monomer composition, sulfate concentrations and methyl patterns. Furthermore, the effect of NaCl and CaCl2 was evaluated, and the effect of high salinity media on the rheological properties of the biopolymers was analyzed. Both Porphyridium EPSs show a remarkable stability at high temperature and under the effect of monoand divalent cations, and high salinity cultivation medium, which was evidenced by the rheological properties of the EPS. This feature is not displayed by many carbohydrate polymers, making it possible to enrich current applications in which EPS are used.Fondo Nacional de Desarrollo Científico y Tecnológico - Fondecy
